Creamed Double Potatoes
Description
Mashed potatoes with flair. The sweet potatoes add
nutrition, color and flavor.
Ingredients
- 2 pounds baking potatoes, peeled and chunked
- 1 pound sweet potatoes or 2 (15-ounce) cans sweet potatoes,
- drained
- 1/2 cup light margarine
- 1 cup skim milk
- Salt and pepper, to taste
- Sliced green onions, optional
Preparation
In large pot, cover both types of potatoes with water and
boil for 10-15 minutes or until tender. Place potatoes in
bowl with margarine and milk. Beat until smooth. Season with
salt and pepper and sprinkle with green onions if desired.

Variations
Note: If using canned yams, add them at the end of the
recipe; they are already precooked.
