Mediterranean Couscous Melange

Description
Home Style Entrées Oven Roasted Turkey Breast With Roasted Fruit Glaze and this colorful couscous are perfect partners.

Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced (1/4-inch) carrot
  • 3 cloves garlic, minced
  • 1/2 cup dried cranberries
  • 1-1/2 cups frozen peas, thawed
  • 1 bunch scallions or green onions, trimmed and sliced
  • 4 cups chicken broth
  • Salt and freshly ground black pepper to taste
  • 2 cups couscous

Preparation
1. Heat oil over medium-high heat in large saucepan. Add carrot and garlic and saute until softened, about 5 to 6 minutes. Add cranberries, peas, scallions, and saute 2 minutes more.

2. Pour in broth, season with salt and pepper, and bring to a boil. Remove from heat and stir in couscous. Cover pan and let stand for 10 minutes. Fluff mixture with spoon and serve hot.
