A recipe for Polynesian Papaya Stuffing
Ingredients
- 1 tablespoon vegetable oil
- 1 small onion, chopped
- 1 clove garlic, minced
- 1/2 cup sausage meat
- 1/2 teaspoon dried thyme
- 1/4 cup Whaler's Pineapple Paradise Rum
- 1/2 cup unseasoned bread crumbs
- 1 cup cubed papaya
- 2 egg whites
- 1 tablespoon minced fresh parsley
- Salt and pepper to taste
Preparation
In a sauté pan, over medium heat, heat oil. As soon as oil is hot, add onion and sauté 3 minutes. Add garlic and sauté 2 minutes more. Add sausage meat and thyme and cook for 5 minutes. Deglaze pan with rum; reduce liquid by 1/2. Add bread crumbs, papaya, egg whites, parsley and salt and pepper. Cook 2 minutes.
