Chipotle Spiced Peanuts

A recipe for Chipotle Spiced Peanuts

Ingredients

  • 1 large egg white
  • 1 tablespoon water
  • 1 pound raw shelled peanuts
  • 1/2 cup superfine sugar
  • 1 tablespoon fine salt
  • 2 1/2 teaspoons ground chipotle powder
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons ground coriander
  • 1 teaspoon ground allspice

Preparation
Preheat oven to 300°F. Beat egg white and water in large bowl until frothy. Add peanuts and toss well to coat. Drain in colander for 8 minutes.

Combine sugar, salt, chipotle powder, cumin, coriander and allspice in a bowl. Toss peanuts with sugar mixture to coat. Spread peanuts on baking sheet(s) in single layer.

Bake 10 minutes. Shake baking sheet(s) to stir peanuts; reduce oven temperature to 275°F. Bake 55 minutes longer, shaking baking sheet(s) occasionally. Remove from oven and shake baking sheet(s) to loosen peanuts; allow to cool 30 minutes. Store in airtight container or freeze.
