Preheat oven to 300°F. Remove seeds from one small pumpkin using large spoon. To separate seeds from pumpkin fiber, place mixture in large bowl and fill with cold water. Stir mixture, and seeds will float to surface. Remove seeds with slotted spoon and pat dry on paper towels.
Place seeds in bowl and coat with 2 tablespoons vegetable oil. Spread on foil-lined baking sheet, coated with non-stick spray, and sprinkle with salt. Bake 30 to 40 minutes, or until lightly browned.
