Curried Sweet Potato Soup

A recipe for Curried Sweet Potato Soup
Ingredients
- 1 small onion, chopped
- 1 tablespoon finely chopped fresh ginger
- 1 tablespoon olive oil
- 1 teaspoon curry powder
- 1/4 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 pinch cayenne pepper
- 1 tablespoon sugar
- 1 quart chicken broth
- 3 cans (15 ounces each) Princella or Sugary Sam Cut Sweet Potatoes, drained
- Salt and pepper to taste
- 1 tablespoon fresh lime juice
- 1 tablespoon chopped fresh cilantro
- 2 tablespoons plain yogurt
Preparation
1. Sauté onion and ginger with olive oil in large saucepan
over medium heat until soft. Add spices and cook 1 minute.
2. Add sugar, chicken broth and sweet potatoes to spice
mixture. Cook until heated through.
3. Puree mixture in blender until smooth. Season to taste
with salt and pepper. Add lime juice just before serving.
Top with chopped cilantro and yogurt.
