A recipe for Roasted Garlic Potato Soup

Ingredients

  • 3 tablespoons butter or margarine
  • 2 large leeks, sliced
  • 2 (13 3/4-ounce) cans vegetable or chicken broth
  • 1/8 teaspoon ground black pepper
  • 1 (4-ounce) pouch
  • Idahoan Roasted Garlic Mashed Potatoes, dry

Preparation
1. Melt butter in 3-quart saucepan over medium heat. Add sliced leeks and cook 5 minutes or until tender, stirring occasionally.

2. Add broth and pepper. Heat to boiling. Stir in dry mashed potatoes until mixture has thickened.
