- Green teas: Lightly steamed or dried
teas which are not fermented and retain the
fresh taste and green color of the tea leaf.
Brewed, they can be nearly colorless, as the
whites can be, or sage-green, light yellow to
light green. Green teas are brewed quite cool,
170-185 °F or cooler, and have a slightly
astringent, grassy taste, although the range
of tastes is extraordinarily wide. Their delicate
fragrance and flavor make them ideal for dishes
made with fish or fruit.

- Grilling: Outdoor cooking technique
in which food is cooked over direct, intense
heat. This cooking method is similar to oven
broiling.
