- India teas: The world's largest producer,
India has a remarkable variety of teas, from
the crisp Nilgiris, to the delicately fragrant
Darjeelings, the rich, hearty Assams, and hundreds
more. Nilgiris are exceptional black teas and
sometimes referred to as Blue Mountain teas,
an apt description of the topography. The teas
are often processed as oolongs and souchongs,
and sometimes as greens. Assams are usually
processed as black teas, but some manufacturers
create white Assams, still quite rare. Darjeeling
is perhaps India's most prized tea, and it has
been processed many ways, as a white, a green
or oolong. Makaibari is a Darjeeling that demands
separate attention for being a biodynamically-grown
organic tea of such exceptional flavor that
it never fails to excite the palate. It is wonderfully
fragrant and good for cooking.
