Let’s talk savvy game day chicken for a minute. Game day chicken usually brings to mind wings: hot wings, sweet wings, bone-in wings, boneless wings and infamous Buffalo wings. All of those are great and can be found on almost every table at every game day in America. What if you had the recipe for a winning spread that includes chicken leg lollies and tasty thigh kabobs instead?
Not only can you have this recipe, you can make it rain or shine. So, if your game day is in the middle of summer, take this recipe to the grill, and if your game day is in the middle of the madness of March, the oven will work just fine. Your guests will be surprised at the versatility of chicken and their taste buds will be glad you stepped up to the plate. Now that’s what I call savvy cooking on game day!

Gameday Chicken
- 1 stick melted butter or 1 bottle butter meat injector
- 1/2 cup apple cider vinegar
- 2 tablespoons liquid smoke
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 2 tablespoons barbecue seasoning, plus additional for serving, divided
- salt, to taste
- pepper, to taste
Chicken Leg Lollies:
- 1 package chicken legs
Tasty Thigh Kebabs:
- 1 package boneless chicken thighs
- 1 package mini potatoes
- 1 onion
- 3 bell peppers or hot peppers
- kebab skewers
- To make marinade: Combine butter, vinegar, liquid smoke, garlic powder, onion powder and barbecue sauce. Season with salt and pepper, to taste.
- To make chicken leg lollies: Slice below meatiest part of chicken legs until bone is visible. Pop out bottom joint and push meat toward top, leaving clean, exposed bone. Place in gallon zip-top bag.
- To make kebabs: Cube chicken thigh meat and place in same zip-top bag as lollies. Add marinade and refrigerate at least 1 hour or longer, if possible.
- Heat grill or oven to 375 F. Cut potatoes, onion and peppers. Add thigh meat and veggies to skewers.
- Place kebabs on one pan and lollies on another. Pour marinade over both and cook 45 minutes.
- Serve on platters alongside additional barbecue sauce.
