Fried Lobster Po Boy Cheeseburgers

Servings: 2

Pimento Remoulade:

  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons minced pimentos
  • 1 tablespoon Dijon mustard
  • 1 tablespoon minced bread and butter pickles
  • 1 pepperoncino, seeded and minced
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon freshly squeezed lemon juice
  • 3 dashes hot sauce
  • kosher salt, to taste

Fried Lobster Tails:

  • 1/2 cup all-purpose flour
  • 1/2 teaspoon kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1 large egg
  • 1 tablespoon water
  • 2 dashes hot sauce
  • 1/4 cup potato chips, finely blended in food processor
  • 1/3 cup panko breadcrumbs
  • 1 tablespoon minced flat leaf Italian parsley
  • 2 Omaha Steaks Cold Water Lobster Tails (5 ounces each)

Cheeseburgers:

  • 1 pound Omaha Steaks Premium Ground Beef
  • salt, to taste
  • freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter, at room temperature
  • 2 brioche buns
  • 2 slices yellow cheddar cheese
  • 3 leaves romaine lettuce, shredded
  1. To make pimento remoulade: In small bowl, mix mayonnaise, pimentos, mustard, pickles, pepperoncino, paprika, garlic powder, black pepper, lemon juice and hot sauce until well-incorporated. Season with salt, to taste.
  2. To make fried lobster tails: Preheat grill to 400 F and add oil to 10-inch cast-iron pan, about 1/2-inch deep.
  3. In medium bowl, whisk flour, 1/4 teaspoon salt, 1/4 teaspoon pepper, garlic powder and smoked paprika until well-incorporated. Set aside.
  4. In separate medium bowl, whisk egg, water and hot sauce. Set aside.
  5. In third medium bowl, whisk potato chips, panko breadcrumbs and parsley until well-incorporated. Set aside.
  6. Cut lobster tails in half lengthwise, remove meat from shell and season with remaining kosher salt and black pepper.
  7. Toss halved lobster tails in flour mixture first, egg mixture second and potato chip mixture third, coating thoroughly.
  8. Fry lobster tails 3-4 minutes on each side until golden-brown and cooked through. Close grill lid between flipping.
  9. To make cheeseburgers: Preheat grill to 450 F using direct heat. Form ground beef into two 1/2-pound patties, each about 1/2-inch thick.
  10. Using thumb, make dimple in center of each patty to help cook evenly.
  11. Season both sides of burger with salt and pepper, to taste. Spread butter on each cut-side of buns.
  12. Grill burgers 4-5 minutes per side for medium doneness.
  13. Add one slice cheddar cheese on each burger, close lid and grill about 30 seconds to melt cheese. Remove patties from grill to clean plate. Place buns cut-sides down on grill grates and toast 20-30 seconds, or until well toasted, being careful to avoid burning.
  14. To assemble: Place desired amount of remoulade on buns. Place cheeseburgers on bottom buns. Top each with two fried lobster tail halves. Place handful shredded lettuce on lobster tails. Top with buns.

Grilled Shrimp Tostadas with Guacamole and Pico de Gallo

Prep time: 20 minutes
Cook time: 10 minutes
Servings: 4

Pico de Gallo:

  • 3/4 cup Roma tomatoes, diced into 1/4-inch pieces
  • 3 tablespoons white onion, diced into 1/4-inch pieces
  • 1 tablespoon fresh cilantro, chopped fine
  • 1 teaspoon jalapeno, minced fine, with seeds
  • 1 teaspoon fresh lime juice
  • 1/2 teaspoon sea salt

Guacamole:

  • 2 medium avocados, peeled, seeded and chopped into 1/2-inch pieces
  • 1 tablespoon fresh lime juice
  • 1/4 cup pico de gallo
  • 1 tablespoon fresh garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon jalapeno, minced
  • 1/2 teaspoon sea salt

Shrimp Tostadas:

  • 12 ounces Omaha Steaks Wild Argentinian Red Shrimp, thawed
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1 cup canned refried pinto beans or refried black beans
  • 4 tostada flats
  • 1 cup shredded romaine lettuce
  • 1 cup guacamole
  • 1 cup pico de gallo
  • 2 tablespoons shredded Cotija cheese
  • 4 cilantro sprigs
  • 4 lime wedges
  1. To make pico de gallo: In bowl, mix tomatoes, onion, cilantro, jalapeno, lime juice and salt. Cover and refrigerate until ready to use.
  2. To make guacamole: In bowl, mix avocados, lime juice, 1/4 cup pico de gallo, garlic, olive oil, jalapeno and salt. Cover and refrigerate until ready to use.
  3. To make shrimp tostadas: In bowl, combine shrimp, olive oil, chili powder, cumin and salt. Marinate in refrigerator at least 15 minutes or up to 2 hours.
  4. Preheat grill to medium-high heat. Clean and season grill grates. Grill shrimp 2-3 minutes per side until lightly charred and opaque.
  5. Heat refried beans and spread 2 tablespoons beans on each tostada flat.
  6. Spread shredded romaine lettuce on top of beans followed by guacamole and remaining pico de gallo.
  7. Top each tostada with 3-4 grilled shrimp and sprinkle with Cotija cheese. Garnish each tostada with one cilantro sprig and one lime wedge.

Southwest Steaks with Creamy Peppercorn Sauce and Parmesan-Herb Fries

Cook time: 25 minutes

Southwest Steak Rub:

  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ancho chili powder
  • 1/2 teaspoon ground chipotle pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin

Parmesan-Herb Fries:

  • 1 package (16 ounces) Omaha Steaks Steakhouse Fries
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 tablespoon fresh thyme leaves, minced
  • 1 tablespoon fresh rosemary leaves, minced
  • 1 tablespoon fresh Italian parsley, minced

New York Strip Steaks:

  • 2 Omaha Steaks Butcher's Cut New York Strips
  • Southwest steak rub
  • 1/4 cup grapeseed oil
  • 2 ounces unsalted butter, cold

Peppercorn Cream Sauce:

  • 1/2 cup brandy
  • 3/4 cup beef stock
  • 1/2 cup heavy cream
  • 2 teaspoons peppercorn medley, coarsely cracked
  • salt, to taste
  • pepper, to taste
  1. To make Southwest steak rub: In small bowl, whisk salt, pepper, thyme, paprika, chili powder, chipotle pepper, garlic powder and cumin until fully incorporated.
  2. To make Parmesan-herb fries: Preheat oven to 425 F. Place fries on baking rack on top of sheet pan; bake 25 minutes, or until golden-brown and crispy.
  3. In medium bowl, mix Parmesan cheese, thyme, rosemary and parsley until fully incorporated.
  4. Remove fries from oven and toss with Parmesan herbs.
  5. To make New York strip steaks: Season steaks generously with Southwest steak rub on both sides.
  6. In cast-iron pan, add grapeseed oil and bring to high heat. Place steaks in pan and sear 3-4 minutes on both sides for medium-rare doneness.
  7. Remove steaks from pan and rest 8 minutes; reserve oil in cast-iron pan.
  8. To make peppercorn cream sauce: Add brandy to reserved oil in cast-iron pan and reduce to 1/3 volume, about 1 minute.
  9. Add beef stock and reduce by 1/3 volume, about 2-3 minutes.
  10. Add heavy cream and cracked peppercorn medley to pan, bring to boil and reduce to simmer until thickened. Season with salt and pepper, to taste.

Cheeseburger Turnovers

  • 1          pound ground beef
  • 1/2       cup onion, chopped
  • 2          tablespoons ketchup
  • 1          tablespoon mustard
  • 1          can flaky biscuits
  • 1          cup shredded cheese
  • dill pickle slices, halved
  • 1          egg, beaten
  1. Heat oven to 375° F.
  2. In large skillet, cook ground beef and onion until beef is thoroughly cooked and onions are tender. Drain. Stir in ketchup and mustard.
  3. Separate biscuit dough. On ungreased baking sheet, flatten biscuit dough to form 6-inch rounds. Spoon beef mixture onto one side of flattened dough. Sprinkle with cheese. Top with dill pickle half. Fold dough over filling. With fork tines, press dough edges to seal. Cut two slits in top of dough to release steam.
  4. Brush each turnover with egg wash.
  5. Bake 18-22 minutes, or until deep golden brown.

  • 1 tablespoon Carlini Vegetable Oil
  • 10 Baby Bella mushrooms, sliced
  • 8 pieces Specially Selected Center Cut Bacon
  • 8 Season's Choice Whole Onion Rings
  • 4 All Natural 80 percent Lean Ground Beef Patties
  • 8 slices Happy Farms Pepper Jack Cheese
  • 1 cup Burman's Mayonnaise
  • 1/4 cup Burman's Hot Sauce
  • 1/2 cup Burman's Mustard
  • 1/4 teaspoon Stonemill Iodized Salt
  • 1/4 teaspoon Stonemill Ground Black Pepper
  • 4 L'oven Fresh Hamburger Buns
  • 1 tomato, sliced
  • 2 romaine lettuce leaves, cut in half width-wise
  1. Heat grill to medium-high.
  2. In saute pan, heat vegetable oil and saute mushrooms 2-3 minutes. Set aside. Fry bacon to desired doneness, about 5 minutes on each side. Set aside. Bake onion rings according to packaging instructions. Set aside.
  3. Grill burgers 5-7 minutes on each side until they reach desired doneness. Place two slices cheese on each burger and continue to grill until melted. Remove from heat.
  4. Mix together mayonnaise, hot sauce, mustard, salt and pepper, and spread on both sides of buns, to taste.
  5. To assemble burger: layer bottom bun with patty with cheese, tomato, lettuce, mushrooms, two onion rings, two pieces of bacon and top half of bun.

Bold Honey Barbecue Burger

  • 1 pound ground beef
  • 1/2 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 3-4 tablespoons steak seasoning
  • 4 hamburger buns
  • 1/2 stick melted butter
  • 3/4 cup barbecue sauce
  • 1 tablespoon honey
  • 4 slices Borden Cheese American Singles
  • 8 slices thick bacon, cooked until crispy
  • 8 frozen onion rings
  • 4 slices tomato
  • fresh lettuce
  1. Combine ground beef, green onions, garlic powder and cayenne pepper; form into four patties. Sprinkle both sides of each patty with steak seasoning. Cover and chill. (Patties can be made several hours in advance.)
  2. Brush buns with melted butter; set aside. In small bowl, mix barbecue sauce with honey; set aside.
  3. Heat grill to medium-high heat.
  4. Grill burgers to internal temperature of 160° F, about 4-6 minutes per side. Two minutes before burgers are finished, grill buns, butter-side down, until golden brown. Place cheese slices on burgers to melt.
  5. Serve each burger on buttered bun topped with two slices bacon, two onion rings, honey barbecue sauce, lettuce and tomato.

Grilled Hawaiian Chicken and Tropical Coleslaw

Total time: 1 hour, 25 minutes
Serves: 6

  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup pineapple juice
  • 4 tablespoons olive oil, divided, plus additional for brushing grill
  • 1 1/2 tablespoons rice vinegar
  • 4 teaspoons Litehouse Instantly Fresh Garlic
  • 1 tablespoon Litehouse Instantly Fresh Ginger
  • 1/2 teaspoon sesame oil
  • 3/4 teaspoon freshly ground black pepper, plus additional, to taste
  • salt, to taste
  • 1 3/4 pounds boneless, skinless chicken breast, chopped into 1 1/4-inch cubes
  • 1 large red onion, diced into 1 1/4-inch pieces
  • 1 1/2 large green peppers, diced into 1 1/4-inch pieces
  • 3 cups fresh cubed pineapple

Coleslaw:

  • 1 package (14 ounces) coleslaw mix
  • 1 cup diced red pepper
  • 1 cup diced pineapple
  • 1/2 cup slivered almonds
  • 1/2 cup Litehouse Coleslaw dressing
  1. In mixing bowl, whisk together ketchup, brown sugar, soy sauce, pineapple juice, 2 tablespoons olive oil, rice vinegar, garlic, ginger and sesame oil. Stir in pepper and season with salt, if desired.
  2. Place chicken in gallon-sized re-sealable bag. Reserve 1/2 cup marinade in refrigerator then pour remaining marinade over chicken. Seal bag and refrigerate 1-2 hours. Soak 10 wooden skewer sticks in water 1 hour.
  3. While chicken marinates, prepare coleslaw. In medium bowl, toss together coleslaw mix, red pepper, pineapple, almonds and coleslaw dressing. Refrigerate until ready to serve.
  4. Heat grill to 400° F.
  5. Drizzle remaining olive oil over red onion, bell pepper and pineapple; toss. Season red onion and bell pepper with salt and pepper then thread red onion, bell pepper, pineapple and chicken onto skewers until all chicken is used.
  6. Brush grill grates with olive oil then place skewers on grill. Grill 5 minutes then brush along tops with 1/4 cup marinade. Rotate to opposite side and brush remaining marinade on opposite side; grill about 4 minutes, or until chicken registers 165° F in center on instant read thermometer.
    Serve skewers warm with coleslaw.

Honey Baked Beans

Servings: 4-6

  • 4 slices bacon, diced
  • 1/2 cup chopped onion
  • 4 1/2 cups cooked navy beans (or 3 cans, 15 ounces each)
  • 1/2 cup honey
  • 1/2 cup ketchup
  • 1 tablespoon prepared mustard
  • 1 tablespoon Worcestershire sauce
  1. Heat oven to 350° F.
  2. Saute bacon and onion until onion is tender; combine with remaining ingredients in shallow 2-quart, oven-safe baking dish. Cover with lid or aluminum foil and bake 30 minutes. Uncover and bake 45 minutes longer.
