- Nonstick cooking spray
- 3 cups halved cherry tomatoes
- 2 teaspoons olive oil
- 1 teaspoon minced garlic
- 1/2 teaspoon dried oregano or dried dill weed
- 1/4 teaspoon salt
- 1/2 teaspoon coarsely ground black pepper, divided
- 1 1/2 pounds salmon or halibut fillets, cut into four serving-size pieces
- 1 cup (4 ounces) crumbled feta cheese
- Preheat oven to 425 F. Line 18-by-13-by-1-inch baking pan with foil. Lightly spray foil with nonstick cooking spray. Set aside.
- In medium bowl, toss tomatoes, olive oil, garlic, oregano or dill weed, salt and 1/4 teaspoon pepper.
- Place fish pieces, skin side down, on one side of prepared pan. Sprinkle with remaining pepper. Lightly press feta cheese on top of fish. Pour tomato mixture on other side of prepared pan. Bake, uncovered, 12-15 minutes, or until fish flakes easily with fork.
- Place salmon on serving plates. Spoon tomato mixture over top.
15-Minute Weeknight Pasta

- 6 quarts water
- 16 ounces linguine or penne pasta
- 2 tablespoons unsalted butter
- 1/2 cup thinly sliced onion
- 1 cup thinly sliced carrots
- 1 cup thinly sliced sweet bell pepper
- 1/2 cup grape tomatoes, halved
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, peeled and minced
- 1 cup reserved pasta water
- 1 teaspoon finely grated lemon zest
- 1/2 cup smoked provolone cheese, shredded
- 1/4 cup chopped fresh parsley (optional)
- Parmesan cheese (optional)
- Bring water to rolling boil and prepare pasta according to package directions for al dente texture, reserving 1 cup pasta water.
- In large skillet over medium heat, melt butter. Stir in onions, carrots and sweet bell peppers. Saute vegetables about 5 minutes, or until they brighten in color and begin to soften. Add tomatoes, salt, pepper and garlic. Cook and stir 1 minute to allow tomatoes to release juices.
- Pour reserved pasta water into skillet, stirring well. Bring sauce to boil. Reduce heat to medium-low and simmer 3 minutes. Taste sauce and adjust seasonings, as desired.
- Transfer drained pasta to skillet along with lemon zest and smoked provolone cheese, tossing well to coat. Serve immediately with fresh parsley and Parmesan cheese, if desired.

Crown Raisin Challah
Yield: 3 loaves
Dough:
- 2 envelopes (1/4 ounce each) active dry yeast
- 1/2 cup sugar
- 1/4 cup honey
- 3 cups warm water
- 2 teaspoons cinnamon
- 1/3 cup olive oil
- 2 extra-large eggs, plus 3 egg yolks
- 2 tablespoons kosher salt
- 1 cup Sun-Maid raisins
- 3 cups bread flour
- 6 1/2 cups all-purpose flour
Egg Wash:
- 2 extra-large eggs
- 2 tablespoons sugar
- To make dough: In big bowl, mix yeast, sugar, honey and warm water. Let yeast bloom about 7 minutes.
- Add cinnamon, oil, eggs, egg yolks and salt. Mix well. Add raisins. Add flours and mix until sticky. Dough should be creamy yellow.
- Turn dough out onto floured surface and knead 12-15 minutes, or until smooth. Oil bowl, place dough back in bowl and cover tight with plastic wrap. Let rise in warm place about 1 1/2 hours, or until doubled.
- Punch dough down, cover and let rise another 45 minutes. Punch down again and cut into three equal pieces. Let rest about 10 minutes then roll each piece into snakes about 30 inches long; taper at one end. Starting with thick end, roll each snake into spiral shape like snail shell. Use a little water and stick tapered end onto body of spiral. Mold into place with hands.
- Oil loaves lightly, cover with plastic wrap and let rise until poofy, about 25 minutes.
- Preheat oven to 375 F.
- To make egg wash: In small bowl, whisk eggs and sugar. Gently brush loaves with egg wash, taking care not to deflate them.
- Bake 45 minutes, or until loaves are golden. Let cool completely.

- 1 tablespoon butter
- 1 1/2 pounds boneless, skinless chicken breasts, cut into strips

- In large nonstick skillet over medium-high heat, melt butter. Cook chicken, in batches if necessary, stirring occasionally, until chicken is thoroughly cooked. Remove chicken and set aside.
- In same skillet, add sauce and broccoli; stir. Bring to boil over medium-high heat. Reduce heat to low and simmer, covered, stirring occasionally, until broccoli is heated through, about 5 minutes. Stir in chicken and cook, stirring occasionally, until cooked through, about 2 minutes.
- In separate pan, cook fettuccine according to package instructions.
- Serve chicken, broccoli and sauce over hot fettuccine and sprinkle grated Parmesan cheese on top, if desired.

- 1 cup diced onion
- 3 cloves garlic, minced

- 2 tablespoons finely chopped fresh chives
- 2 tablespoons Dijon mustard
- 1 cup shredded sharp cheddar cheese

- 1/3 cup breadcrumbs
- 2 tablespoons butter, melted
- Preheat oven to 450 F. Prepare rice according to package directions.
- In large bowl, toss Brussels sprouts, ham, garlic, olive oil, 1/4 teaspoon salt and 1/4 teaspoon pepper. Place on parchment paper-lined baking tray and roast 12-15 minutes, or until caramelized. Decrease oven temperature to 425 F.

- 2 tablespoons olive oil
- 3 1/2 ounces hoisin sauce
- 2 tablespoons sesame oil
- 1 tablespoon garlic chili paste
- 2 tablespoons black and white sesame seeds
- 1 teaspoon harissa paste
Breadcrumbs:
- 1 tablespoon Violife Plant Butter
- 1/2 cup panko breadcrumbs
- 1 tablespoon fresh rosemary
- 1 teaspoon dried garlic
Pasta:
- 17 1/2 ounces mushrooms, roughly sliced
- 2 tablespoons olive oil
- 10 1/2 ounces fresh spinach
- 1 package Violife Just Like Cream Cheese Original
- 17 1/2 ounces whole-wheat spaghetti
- 1 teaspoon red pepper flakes
- 3 1/2 ounces Violife Just Like Parmesan Wedge, grated
- To make marinade: Whisk olive oil, hoisin sauce, sesame oil, garlic chili paste, sesame seeds and harissa paste. Set aside.
- To make breadcrumbs: In frying pan, heat plant butter. Add breadcrumbs, rosemary and garlic; saute 3-5 minutes until golden. Remove from heat and set aside.
- To make pasta: Saute mushrooms in olive oil 5-7 minutes until golden. Add spinach, 2-3 minutes, and pour over marinade. Add cream cheese and whisk until creamy.
- Boil pasta according to package instructions. Sieve and reserve 1/2 cup pasta water, adding to pasta sauce. Whisk constantly until combined.
- Using tongs, make small nests in pasta, place on plates and pour creamy mushroom sauce on top.
- Sprinkle with breadcrumbs, red pepper flakes and grated Parmesan.

Crust:
- 10 1/2 ounces vegan gingerbread biscuits
- 6 ounces plant-based butter

Cheesecake:
- 0.07 ounces agar-agar
- 3 1/2 ounces canned coconut milk

- Place in six individual greased tart tins and smooth over base with back of spoon. Refrigerate to set.
- To make cheesecake: In small pot over low heat, dissolve agar-agar in coconut milk, whisking constantly. Once boiling, remove from heat and set aside.
- In large bowl, mix cream cheese, maple syrup, lemon juice and vanilla essence; slowly pour over warm coconut milk, whisking until combined and creamy. Divide evenly among tart tins and refrigerate 4 hours.
- To make pomegranate syrup: In small bowl, combine 3 fluid ounces pomegranate juice with cornstarch. In small pot, boil remaining pomegranate juice 5 minutes. Pour in cornstarch and pomegranate mixture; whisk 5 minutes until syrup forms. Cool.
- When cheesecakes have set, remove from tins and serve on plates. Pour pomegranate syrup on top and garnish with pomegranate seeds.

Dough:
- 3 cups all-purpose flour, divided
- 1 pinch salt
- 1/4 teaspoon garlic powder
- 1/2 teaspoon olive oil
- 4 whole eggs
- 2 egg yolks
- water
Filling:
- 1/2 teaspoon olive oil
- 2 cups chopped spinach, fresh or frozen
- 1 pinch salt
- 1 pinch pepper
- 1 container (15 ounces) ricotta cheese
Toppings:
- 1 jar (24 ounces) RAGÙ Old World Style Traditional Sauce
- shredded mozzarella cheese
- 2 chopped basil leaves
- 2 chopped sprigs rosemary
- grated Parmesan cheese (optional)
- To make dough: Place 2 1/2 cups flour in bowl and make hole in center. Add salt, garlic powder, olive oil, eggs and egg yolks to hole. Slowly bring flour into middle and knead into ball. Cover with bowl and let rest 20 minutes.
- To make filling: In pan over medium heat, add olive oil; add spinach, salt and pepper then saute until spinach is wilted. Let cool then mix in ricotta cheese; set aside.
- Cut dough in half. Sprinkle remaining flour on large cutting board and roll dough to 1/8-inch thickness. Cut into rectangle then cut into 2-3-inch squares. Set scraps aside. Brush water on squares then spoon 1 teaspoon spinach-ricotta filling in center of every other square. Top with remaining squares. Use fork to crimp edges. Repeat with remaining dough. Form scraps into ball and repeat.
- Put ravioli in boiling water, 8-10 minutes; they will rise to top when done.
- In saucepan over medium heat, heat sauce until simmering.
- Place ravioli on plate and top with warm sauce, mozzarella cheese, basil and rosemary. Grate Parmesan cheese on top, if desired.

- Take bread removed from inside bread bowl and cut into dipping sized chunks.
- Remove bread from aluminum foil and place on platter. Scatter bread chunks around bread bowl to use for dunking in cheese sauce.

- Preheat oven to 375 F.
- In pot over medium heat, melt butter. Add flour and cook 4 minutes, stirring occasionally. Reduce heat to low then slowly add milk gradually, ensuring it is incorporated before adding more. Turn heat to medium-high and cook until thickened, stirring continuously. Remove from heat and set aside.
- In bowl, add drained potatoes, sauce, bacon, cinnamon, nutmeg, ginger and cloves. Season with salt and pepper, to taste; mix well.
- In greased 8-by-11-inch baking dish, line potatoes on sides in desired pattern. Stuff extra bacon between potatoes from remains left in bowl. Pour extra sauce over potatoes.
- Bake 60 minutes.

- In large skillet, heat thin layer olive oil over medium heat until drop of water sizzles in pan. Sear rib chops 2 minutes on each side, or until internal temperature reaches 140 F. Remove chops from pan and set aside.
- Add glaze to pan and cook 3-5 minutes, whisking constantly until reduced by half.
- Drizzle glaze over chops before serving.
