Apple Ricotta Crepes

Crepes:

  • 1 cup flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1cup whole milk
  • 2 eggs
  • 1 teaspoon vanilla
  • butter, for cooking

Apple Topping:

  • butter
  • 2 tablespoons brown sugar
  • Envy Apples, sliced or cubed
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • salt, to taste
  • maple syrup

Ricotta Filling:

  • 1 cup ricotta cheese
  • 1 lemon, zest and juice only
  • 2-3 tablespoons sugar, or to taste
  1. To make crepes: In bowl, combine flour, sugar and salt. Add milk, eggs and vanilla then, using whisk, combine thoroughly. Mixture should be silky smooth. Refrigerate.
  2. To make apple topping: In pan over medium heat, heat butter and brown sugar until bubbly and golden.
  3. Add apples, cinnamon, nutmeg and salt, to taste; cook over medium-low heat until apples are soft. Turn off heat and finish with maple syrup.
  4. To make ricotta filling: Combine ricotta, lemon zest, lemon juice and sugar, mix well and set aside.
  5. In nonstick pan over medium-low heat, melt small amount of butter.
  6. Add one ladle crepe batter, cook until bubbles form, flip and cook until golden. Repeat with remaining batter. Stack crepes to keep warm and soft.
  7. Spread ricotta mixture thinly onto crepes and fold into quarters. Top with apple mixture and serve.

Apple, Tomato and Goat Cheese Frittata

  • 6 eggs
  • 1 teaspoon hot pepper sauce
  • 2 teaspoons kosher salt
  • 20 turns fresh cracked pepper
  • 1/4 cup whole milk
  • 1 Envy Apple, small diced
  • 1/2 cup sundried tomatoes, chopped
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons thinly sliced chives
  1. Preheat oven to 350 F.
  2. In large mixing bowl, whisk eggs, hot pepper sauce, salt, pepper and milk until well combined.
  3. Stir in apples, tomatoes, goat cheese and chives until well combined.
  4. Using 1/3 measuring cup, spoon frittata mixture into oven-safe large skillet or 9-by-9-inch pan.
  5. Bake 25-30 minutes, or until eggs are set.
  6. Let cool slightly then serve.

Tuna Aioli Dip with Balsamic Drizzle

Prep time: 15-20 minutes
Cook time: 10-15 minutes
Servings: 4

  • 6          ounces Genova Albacore Tuna in Olive Oil
  • 1/4       cup balsamic vinegar
  • 1          dried bay leaf
  • 1          sprig fresh rosemary
  • 1⁄3       cup mayonnaise
  • 2          tablespoons capers, drained
  • 2          anchovies
  • 1/2       lemon, juice only (about 1 1/2 tablespoons)
  • raw vegetables, such as carrots, celery, cucumber spears, endive leaves, sliced fennel and bell pepper strips, for dipping
  1. Drain tuna, reserving 2 tablespoons oil.
  2. In small saucepan, combine balsamic vinegar, bay leaf and rosemary sprig. Bring to boil and reduce until syrupy, about 1 tablespoon. Let cool slightly; discard bay leaf and rosemary sprig.
  3. In blender or food processor, process tuna and reserved oil, mayonnaise, capers, anchovies and lemon juice to make smooth dip. Transfer to flat serving bowl. Drizzle with balsamic syrup. Serve with raw vegetables.

 

Yellowfin Tuna Pasta Salad with Arugula Pesto and Dates 

Prep time: 20-30 minutes
Cook time: 20-25 minutes
Servings: 4

  • 2          cans (5 ounces each) Genova Yellowfin Tuna in Olive Oil, drained
  • 1/2       cup pine nuts
  • 4          cups arugula
  • 1          garlic clove 
  • 2          tablespoons butter (optional)
  • 1          cup grated Parmigiano-Reggiano, plus additional for garnish (optional)
  • 2          lemons, zest only (optional)
  • 1/2       teaspoon kosher salt 
  • 1/2       teaspoon freshly ground black pepper
  • 3/4       cup extra-virgin olive oil 
  • 8          ounces whole-wheat orecchiette 
  • 1/2       cup jarred sun-dried tomatoes in oil, chopped
  • 1/2       cup dates, pitted and quartered 
  • 1/4       cup kalamata olives, pitted and chopped 
  • 1/4       cup dill, chopped (optional)
  • 1/4       cup parsley, chopped (optional)
  1. Preheat oven to 325 F.
  2. On a sheet tray, toast pine nuts 8-12 minutes, or until golden. Set aside to cool.
  3. Bring large pot of salted water to boil. Prepare ice water bath by filling large bowl with cold water and ice. Stir arugula into boiling water and cook until bright green and tender, about 30 seconds. Drain arugula, immediately shock in ice water and set aside to fully drain; cover with towel. 
  4. In blender or food processor, add arugula; garlic; pine nuts; butter, if desired; Parmigiano-Reggiano; lemon zest, if desired; salt; and pepper. Puree on high, incorporating olive oil to desired thickness. 
  5. Place pesto in bowl and cover tightly to avoid discoloring.
  6. Bring large pot of salted water to boil.
  7. Add pasta and return to boil, stirring occasionally. Taste pasta for doneness 2 minutes earlier than package instructions. Once cooked, drain and transfer to large bowl. Do not rinse. 
  8. Add pesto gently until evenly distributed. Fold in tuna, sun-dried tomatoes, dates and olives.
  9. Divide between shallow bowls and finish with additional Parmigiano-Reggiano, dill and parsley, if desired.

Roasted Mushroom and Wheat Berry Salad

Servings: 4

  • 8          ounces white button mushrooms, halved
  • 1          tablespoon extra-virgin olive oil
  • 1/2       teaspoon kosher salt
  • 1/4       teaspoon ground black pepper
  • 2          cups cooked wheat berries, warm
  • 2          green onions, sliced
  • 2          tablespoons dried cranberries, chopped

Dressing:

  • 2          tablespoons extra-virgin olive oil
  • 2          tablespoons fresh orange juice
  • 1          teaspoon curry powder
  • 1/4       teaspoon kosher salt
  1. Heat oven to 400° F.
  2. Place mushrooms on baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat. Bake 10 minutes.
  3. Carefully stir mushrooms and bake 5 minutes until tender. Transfer mushrooms to medium bowl. Add wheat berries, green onions and cranberries.
  4. To make dressing: In small bowl, whisk olive oil, orange juice, curry powder and salt; pour over salad. Toss to mix. Serve warm.

Sauteed Mushroom and Sun-Dried Tomato Avocado Toast

Servings: 4

  • 1          tablespoon extra-virgin olive oil, plus additional, for drizzling
  • 1/4       cup chopped sun-dried tomatoes
  • 8          ounces sliced button mushrooms
  • 1/4       cup water
  • 1/2       teaspoon fresh thyme leaves kosher salt, to taste
  • 2          ripe avocados, pitted, peeled and sliced
  • 4          slices toasted bread
  • shaved Parmesan cheese
  1. In skillet, heat 1 tablespoon oil over medium heat. Add tomatoes and cook 1 minute. Add mushrooms and gently incorporate with tomatoes. Add water and stir well until water evaporates and mushrooms darken and become tender, about 4 minutes. Add thyme and salt, to taste. Set aside to cool.
  2. To assemble, gently smash half of each avocado over one slice of toast. Top each slice of toast with mushroom mixture. Top each with Parmesan cheese and drizzle with olive oil before serving.

Three Mushroom and Garlic Grilled Pizza

Sauce:

  • 1          tablespoon unsalted butter
  • 4          garlic cloves, minced
  • 5          basil leaves, minced
  • 2          tablespoons all-purpose flour
  • 3/4       cup half-and-half
  • 2          tablespoons grated Parmesan cheese
  • 1/2       teaspoon fine sea salt
  • 1/4       teaspoon ground black pepper
  • 2          tablespoons extra-virgin olive oil
  • 3          ounces crimini mushrooms, sliced
  • 3          ounces shiitake mushrooms, stemmed and sliced
  • 3          ounces white button mushrooms, sliced
  • 1          ounce dry white wine or chicken stock
  • 1/4       teaspoon fine sea salt
  • pizza dough (14 inches)
  • olive oil
  • nonstick cooking spray
  • 4          ounces whole milk mozzarella cheese, chopped
  • shaved Parmesan, for garnish
  • basil leaves, for garnish
  1. Heat grill to medium-high heat, about 425° F.
  2. To make sauce: In medium skillet over medium-high heat, melt butter. Whisk in garlic and basil; cook 1 minute. Sprinkle in flour while quickly whisking to form paste.
  3. Reduce heat to medium. Slowly pour in half-and-half while continuing to whisk until there are no clumps. Increase heat slightly to bring to simmer. Stir as mixture thickens into sauce, about 1 minute. Remove from heat. Stir in Parmesan cheese, salt and pepper; set aside.
  4. In large skillet over medium-high heat, heat olive oil. Add mushrooms and cook until they begin to turn tender, about 2 minutes. Carefully pour in wine or stock and continue cooking until liquid evaporates, about 1 minute. Sprinkle with salt.
  5. Stretch dough to make 14-inch pizza. Brush grill grates generously with olive oil. Place dough on grill and let cook about 3 minutes, until underside is browned and dough removes easily from grill. While removing dough from grill, flip it onto baking sheet sprayed with nonstick cooking spray so cooked side is up.
  6. Spread sauce over pizza and evenly cover in mushrooms. Add mozzarella cheese.
  7. Return pizza to grill, topping-side up. Close lid and let cook 3-5 minutes. Once top crust browns and cheese melts and bubbles, remove from grill. Let rest 2-3 minutes.
  8. Garnish with Parmesan and basil leaves; slice to serve.

Perk Up Your Picnic

Picnic Food Safety

  • Cool It: Store perishable foods in plenty of coolers with ice or frozen gel packs. Keep the food at 40°F. A full cooler stays colder longer than a partially filled one. Carry the cooler inside the air-conditioned car, and keep it in the shade when you reach your destination. Use separate coolers for drinks so the food container won't be opened and closed.
  • Two Hour Rule: Don't leave perishable food out for more than two hours. (Cold foods should not sit out for more than one hour.) Any leftovers that have been sitting out longer than that should be discarded.
  • Proper Prepping: Wash hands before preparing food, and make sure storage containers are clean. Cooked foods need to be properly cooled - spread the food out in as many pans as needed so that it is no more than two inches deep. This allows it to cool faster, reducing the chances of bacteria growing.

Cheddar, Bacon & Pear Sandwich

Makes 1 serving

  • 2 slices fully cooked bacon
  • 2 slices French bread
  • 1 teaspoon Grey Poupon Harvest Coarse Ground Mustard
  • 1 slice (1 ounce) sharp cheddar cheese
  • 1/4 of a medium pear, thinly sliced
  1. Heat bacon as directed on package.
  2. Spread bread slices with mustard. Top 1 of the bread slices with cheese, pears and bacon.
  3. Cover with remaining bread slice.

Grilled Herbed Chicken

Makes 6 servings

  • 2 tablespoons Grey Poupon Dijon Mustard
  • 2 tablespoons water
  • 1 envelope Good Seasons Italian Dressing Mix
  • 6 boneless skinless chicken breast halves (2 pounds)
  1. Heat grill to medium heat.
  2. Combine mustard, water and dressing mix in shallow dish. Add chicken; turn over to evenly coat both sides.
  3. Grill chicken 6 to 8 minutes on each side or until done (165°F).

Butter Bean Salad

Makes 8 servings

  • 1/4 cup Grey Poupon Hearty Spicy Brown Mustard
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 can (15 ounces) butter beans, drained
  • 1 red pepper, chopped
  • 1/2 cup chopped red onions
  • 1/3 cup chopped sun-dried tomatoes
  • 1 6-ounce package boiled ham, chopped
  • 2 tablespoons chopped cilantro
  1. Mix mustard, oil and lemon juice until well blended; set aside.
  2. Combine remaining ingredients in large bowl. Add mustard mixture; toss to coat. Cover.
  3. Refrigerate at least 1 hour before serving.

Spiced Lemonade

Makes 1 serving

Wash down your meal with a twist on the classic summertime libation, Spiced Lemonade. This surprisingly refreshing treat, bursting with fruit flavors, is made with lemonade, gin and Dijon mustard. Top with mint, the perfect finishing touch for a warm-weather cocktail.

  • 1 teaspoon Grey Poupon Dijon
  • 1/2 cup lemonade
  • 1/2 cup spiced gin
  • 1 slice each: lemon, lime and orange
  • 1 slice cucumber
  • 1 sprig fresh mint
  1. Mix mustard, lemonade and gin. Serve over ice cubes in tall glass.
  2. Add fruit and cucumber slices.
  3. Top with mint.

Fresh Pork with Sweet Balsamic-Red Wine Reduction

Prep time: 5 minutes
Cook time: 25 minutes
Servings: 4

  • 1          Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet
  • 1          tablespoon olive oil, divided
  • 1/3       cup dry red wine
  • 3          tablespoons balsamic vinegar
  • 2          tablespoons sugar
  • 1          teaspoon chopped fresh rosemary
  1. Cut pork loin filet into 3/4-to-1-inch thick chops.
  2. In large, nonstick skillet over medium heat, heat 1/2 tablespoon olive oil.
  3. Cook half the pork chops 4-5 minutes on each side until internal temperature reaches 150° F. Remove pork chops from skillet and place on rimmed serving platter; cover to keep warm. Repeat with remaining olive oil and pork chops.
  4. In same skillet, combine wine, vinegar and sugar. Bring to boil over medium-high heat; cook 3-5 minutes until slightly thickened, or until liquid is reduced to 1/4 cup.
  5. Serve pork chops drizzled with wine reduction and sprinkled with rosemary.

Fresh Pork and Kalamata Flatbreads

Prep time: 5 minutes
Cook time: 35 minutes
Servings: 6

  • 1          Smithfield Roasted Garlic & Cracked Black Pepper Marinated Fresh Pork Tenderloin
  • 1          tablespoon extra-virgin olive oil
  • 1          can (13.8 ounces) refrigerated pizza crust dough
  • 3/4       cup sliced sun-dried tomatoes in olive oil
  • 1/2       cup sliced Kalamata olives, drained
  • 1          teaspoon crushed dried rosemary
  1. Cut pork tenderloin into 3/4-inch cubes.
  2. Heat oven to 400° F. In large skillet over medium-high heat, heat olive oil. Stir-fry pork 8-10 minutes, or until well browned.
  3. Unroll pizza dough and press onto greased sheet pan, about 18-by-13 inches; cut into six rectangles.
  4. Drain tomatoes, reserving oil. Brush tops of flatbreads with sun-dried tomato oil, reserving about 1 tablespoon. Top with pork, drained tomatoes, olives and rosemary, pressing into dough lightly with fingertips.
  5. Bake 18-21 minutes until edges are golden brown.
  6. Remove from oven. Drizzle remaining sun-dried tomato olive oil evenly over flatbreads; let stand on baking sheet 2 minutes before serving.
