Taco-Stuffed Spaghetti Squash

Prep time: 30 minutes
Cook time: 50 minutes
Servings: 4

  • 2          spaghetti squash (2 pounds each)
  • 6          tablespoons extra-virgin olive oil, divided
  • 1          teaspoon salt, plus additional to taste, divided
  • pepper, to taste
  • 1          pound ground chicken
  • 1          cup diced red onion, divided
  • 3          cloves garlic, minced
  • 1          can (14 ounces) diced tomatoes
  • 1          teaspoon cumin
  • 2          teaspoons chili powder
  • 1          can (2 1/4 ounces) Lindsay Black Ripe Sliced Olives
  • 1          lime, juice only
  • 1          cup Monterey Jack cheese
  • 1          avocado, diced
  • 1          large tomato, diced
  • 1          jalapeno, minced
  • 1/2       cup Lindsay Black Ripe Medium Olives
  • 1          lime, wedged
  1. Heat oven to 400° F.
  2. In microwave, cook one whole squash 3 minutes. Repeat with second squash. Cut each in half and scrape out seeds. Drizzle 1 teaspoon oil over each half and rub around until insides are coated. Sprinkle each with salt and pepper, to taste; place on parchment-lined baking sheet center down to lay flat. Bake 50 minutes.
  3. Heat large saute pan over medium-high heat. Put 2 teaspoons oil in pan then chicken, 3/4 cup onion and garlic. Cook until chicken is cooked through.
  4. Add tomatoes, cumin, chili powder and remaining salt; stir to combine. Bring mixture to boil and cook, uncovered, 15 minutes to reduce liquid, stirring occasionally.
  5. Remove from heat. Stir in sliced olives and lime juice.
  6. When squash is cooked, scrape insides with fork to release from edge then create nest. Put 1/4 of chicken mixture and 1/4 cup cheese in each squash half.
  7. Bake 5 minutes, or until cheese is melted. Top with avocado, diced tomatoes, remaining onions, jalapeno, whole olives and lime wedges.

Baked Eggs Puttanesca

Prep time: 15 minutes
Cook time: 45 minutes
Servings: 4-6

  • 3          tablespoons olive oil
  • 1/2       yellow onion, chopped
  • 2          cloves garlic, chopped
  • 3          anchovy filets, chopped
  • 1/4       teaspoon crushed red pepper flakes
  • 2          tablespoons tomato paste
  • 1          can (35 ounces) chopped tomatoes
  • 2          tablespoons Lindsay Capers, drained
  • 1/3       cup Lindsay Pitted Kalamata Olives, drained and halved
  • salt, to taste
  • pepper, to taste
  • 1 1/2    cups chopped kale
  • 6          eggs
  1. Heat oven to 400° F.
  2. In non-reactive saucepan over medium-high heat, warm olive oil. Add onion and saute, stirring occasionally, until soft, about 6 minutes.
  3. Add garlic, anchovies and red pepper flakes; cook 1 minute. Stir in tomato paste then add chopped tomatoes with juices, capers and olives.
  4. Bring to boil then reduce heat to low. Simmer, stirring occasionally, 15 minutes. Season with salt and pepper, to taste.
  5. Transfer puttanesca sauce to 9-by-13-by-2-inch baking dish and spread to cover bottom. Stir in kale then, using wooden spoon, make six wells. Crack one egg into each well and season yolks with salt and pepper, to taste.
  6. Transfer to oven and cook until white is set and yellow is cooked to preference, 12-16 minutes. Spoon into bowls and serve.

  • 2          tablespoons olive oil
  • 1          tablespoon ginger, freshly grated
  • 3          cloves garlic, minced
  • 1          large yellow onion, chopped
  • 1          tablespoon turmeric
  • 2          teaspoons kosher salt
  • 1/2       teaspoon crushed red pepper, plus additional, to taste
  • 1          can (29 ounces) chickpeas, drained and rinsed
  • 1          jar (24 ounces) FarmToFork Caramelized Onion & Roasted Garlic Sauce
  • 1          can (15 ounces) light coconut milk
  • 4          cups baby spinach
  • 1/2       cup non-fat plain Greek yogurt, stirred
  • 1/2       cup cilantro, coarsely chopped
  • 2          naan flatbreads, toasted and sliced
  1. In large skillet over medium heat, heat olive oil, ginger, garlic, onions, turmeric, salt and 1/2 teaspoon crushed red pepper. Cook 6-8 minutes, or until onions begin to brown, stirring frequently. Add chickpeas, sauce and coconut milk; cook 3-4 minutes, or until heated through. Add spinach; cover with lid. Simmer 3-4 minutes, or until spinach is wilted. Mix well.
  2. Spoon mixture into six serving bowls and top each with spoonful of yogurt, pinch of cilantro and additional crushed red pepper, to taste. Serve with flatbread slices.

  • 1          small head cauliflower, cut into small florets

  • 3/4       teaspoon ground black pepper, divided
  • 6          bone-in, skin-on chicken thighs (about 2 pounds)
  • 1          pound rainbow carrots, trimmed and peeled
  • 1          lemon, juice only, divided
  • 1/4       cup finely chopped fresh herbs such as dill, mint or cilantro, divided
  • 1 1/2    cups plain Greek yogurt
  1. Heat oven to 425° F. In large bowl, whisk 2 tablespoons harissa and 2 tablespoons oil. Add onions and cauliflower; toss to combine. Spread vegetable mixture in single layer on 17-by-12-inch foil-lined rimmed baking sheet.
  2. In same bowl, whisk remaining harissa, 2 tablespoons oil, 1 cup marinara sauce, cumin, 1/2 teaspoon salt and 1/2 teaspoon pepper. Add chicken; toss with tongs until well coated. Arrange chicken atop vegetables on baking sheet. Bake 50-55 minutes, or until chicken is deep golden brown and internal temperature reaches 165° F.
  3. Use vegetable peeler to create long ribbons of carrots. In bowl, toss carrots with 1 tablespoon lemon juice, 2 tablespoons chopped herbs and remaining oil, salt and pepper. In separate bowl, mix yogurt, remaining lemon juice and remaining herbs.
  4. Serve each chicken thigh with roasted vegetables, dollop of herbed yogurt, carrot mixture and 1/4 cup warmed marinara sauce.

  1. In food processor, pulse onions, carrots, celery and garlic until finely chopped. In large pot over medium-high heat, heat olive oil. Add chopped vegetables, salt and pepper. Cook 10 minutes, or until softened, stirring occasionally.
  2. In food processor, pulse mushrooms until coarsely chopped. Add to large pot with vegetables. Cook 10-12 minutes, or until most liquid is evaporated, stirring occasionally. Stir in marinara sauce and butter.
  3. Cook gnocchi according to package directions; drain. Add to sauce mixture; mix gently. Sprinkle with cheese and parsley.

Spinach Feta and Artichoke Dip

  •             Nonstick cooking spray
  • 3          cloves garlic, minced
  • 1          package (12 ounces) frozen spinach, thawed and excess liquid drained
  • 2          cans (14 ounces each) whole artichokes, drained and chopped
  • 1          can (8 ounces) sliced water chestnuts, drained and chopped
  • 1 1/4    cups low-fat mozzarella cheese
  • 3/4       cup feta cheese, crumbled, plus additional for garnish
  • 1 1/4    cups low-fat Greek yogurt
  • 1/4       teaspoon red pepper flakes (optional)
  • 1/2       cup Holland House White Cooking Wine
  • 1          package (8 ounces) reduced-fat cream cheese
  • Salt and pepper, to taste
  • Garnishes (optional): feta cheese, roasted red peppers
  1. Grease 6-8-quart slow cooker with nonstick cooking spray.
  2. In slow cooker, mix garlic, spinach, artichokes, water chestnuts, mozzarella, feta, yogurt and red pepper flakes.
  3. In a small saucepan over medium heat, simmer cooking wine 3 minutes. Stir in cream cheese and turn off heat.
  4. Transfer cream cheese and wine mixture to slow cooker; add salt and pepper, to taste, and stir to combine ingredients.
  5. Cook on low for two hours.
  6. Transfer to a serving bowl and garnish with feta and roasted red peppers, if desired.

 

White Hominy Chicken Chili

Servings: 8

  • 2          tablespoons olive or avocado oil
  • 2          medium yellow onions, diced
  • 1 1/4    pounds boneless, skinless chicken breast
  • 1          packet of white chili seasoning
  • 1          cup Holland House White Cooking Wine
  • 1          jar (16 ounces) chunky salsa verde
  • 4          cups unsalted vegetable stock
  • 1          can (16 ounces) cannellini beans, drained and rinsed
  • 1          large poblano or green pepper, diced
  • 1          bag (10 ounces) frozen fire-roasted corn
  • 1          can (29 ounces) white hominy, drained and rinsed
  • 3          tablespoons cornmeal (optional)

Toppings recommendations: Lime wedges, avocado, cilantro, sour cream, cheese, tortilla chips, jalapenos

  1. Turn slow cooker on low; add oil, onions and chicken. Distribute chili seasoning evenly over chicken and onions.
  2. Add cooking wine, salsa verde and chicken stock.
  3. Cover and cook 3 hours.
  4. Remove chicken and allow to rest, covered, for 15 minutes before shredding.
  5. Add beans, peppers, corn and hominy to slow cooker. For thicker consistency, add cornmeal, if desired. Cook on high 1 hour, stirring occasionally.
  6. Add shredded chicken back to slow cooker and serve with lime wedges, avocado, cilantro, sour cream, cheese, tortilla chips and jalapenos, if desired.

Cheesy Baked Mushroom Chicken

  • Nonstick cooking spray
  • 4          boneless, skinless chicken breasts
  • 1/2       cup flour
  • 4          tablespoons butter      
  • 8          ounces mushrooms, sliced
  • 1/2       cup chicken broth
  • 1/4       teaspoon salt
  • 1/4       teaspoon pepper
  • 2          cups shredded mozzarella cheese
  • 1/2       cup Parmesan cheese, grated
  • 1/4       cup green onions, sliced
  1. Heat oven to 375° F. Prepare baking dish with nonstick cooking spray.
  2. Cut each chicken breast in half. Place flour in resealable bag. Place chicken in resealable bag with flour; toss to coat.
  3. In large skillet, melt butter. Add chicken to skillet; brown all sides. Transfer chicken from skillet to 11-by-7-inch baking dish.
  4. In skillet, saute sliced mushrooms in remaining butter until softened. Add chicken broth, salt and pepper. Bring to boil then cook 5 minutes. Spoon over chicken.
  5. Bake 15 minutes. Sprinkle with cheeses and green onions. Bake 5 minutes, or until cheese is melted.

Peanut Dressing:

  • 1          cup creamy peanut butter
  • 3/4       cup full-fat coconut milk, plus additional, if desired
  • lime juice

Bowl:

  • 1          cup cooked farro or quinoa
  • 1/2       cup chopped cabbage
  • 1          cup shredded carrots
  • 1          avocado, sliced
  • 1          cup spiralized zucchini or butternut squash
  • 1/2       cup pomegranate arils
  • 1          cup mandarin pieces
  • 1/2       cup roasted peanuts
  • chopped cilantro, for garnish
  • green onions, for garnish
  1. To make Peanut Dressing: In bowl, whisk peanut butter, coconut milk and lime juice until smooth. Add coconut milk, if necessary, to achieve desired consistency.
  2. To make bowl: Layer farro or quinoa then top with cabbage, carrots, avocado, zucchini or squash, pomegranate arils, mandarin pieces, peanuts and Peanut Dressing. Garnish with cilantro and green onions.

Thai Chicken Lettuce Wraps with Peanut Sauce

Peanut Sauce:

  • 1/2       cup creamy peanut butter
  • 2          tablespoons low-sodium soy sauce
  • 1          tablespoon rice vinegar
  • 2          tablespoons brown sugar
  • 3          teaspoons chili garlic sauce
  • 1/2       lime, juice only
  • 2-3       garlic cloves, pressed or grated
  • 2          tablespoons fresh ginger
  • 1          teaspoon fish sauce
  • 1/2       cup full-fat coconut milk
  • 4          tablespoons warm water, plus additional, if necessary

Lettuce Wraps:

  • 2          heads Boston or butter lettuce
  • 1          pound cooked chicken
  • 1          red bell pepper, thinly sliced
  • 4          green onion, sliced
  • 3          carrots, shredded and grated
  • 1/2       cucumber, sliced into matchsticks
  • 1          bunch fresh basil
  • 1          bunch fresh mint
  • 1/4       cup crushed peanuts
  • sliced limes, for garnish
  1. To make Peanut Sauce: In small saucepan over low heat, combine peanut butter, soy sauce, rice vinegar, brown sugar, garlic sauce, lime juice, garlic, ginger, fish sauce, milk and water. Add more water for thinner sauce, if desired.
  2. To make Lettuce Wraps: Fill lettuce leaves with chicken and Peanut Sauce; top with bell pepper, onion, carrots, cucumber, basil and mint. Sprinkle crushed peanuts on top and garnish with lime slices.

Peanut Butter Breakfast Bread Pudding with Maple Peanut Sauce

Cook time: 35-40 minutes
Servings: 4

  • Butter
  • 2/3       cup creamy peanut butter, divided
  • 2          eggs
  • 1/2       cup granulated sugar
  • 2/3       cup milk
  • 1 1/2    teaspoons pure vanilla extract
  • 1/2       teaspoon salt
  • 4          cups cubed brioche or challah bread, cut into 3/4-inch cubes
  • 2/3       cup pure maple syrup
  • 1/3       cup crushed peanuts
  • powdered sugar, for garnish
  1. Heat oven to 350° F. Butter four 4-ounce ramekins.
  2. In bowl, mix 1/3 cup peanut butter, eggs, sugar, milk, vanilla and salt. Toss bread cubes in mixture until thoroughly coated. Divide evenly among prepared dishes. Bake until custard is set in middle and tops are golden, about 35-40 minutes. If tops of bread brown too quickly, cover ramekins loosely with aluminum foil.
  3. In small saucepan over low heat, combine remaining peanut butter and maple syrup until thoroughly warmed.
  4. To serve, drizzle ramekins with maple-peanut sauce and garnish with chopped peanuts and powdered sugar.
  5. Substitution: Whole wheat rolls may be used in place of brioche or challah bread.

Peanut Butter Squares

Cook time: 20 minutes
Yield: 24 squares

  • Nonstick cooking spray
  • 1          package (17 1/2 ounces) peanut butter cookie mix
  • 3          tablespoons vegetable oil
  • 1          tablespoon water
  • 1          egg
  • 3          cups miniature marshmallows
  • 2/3       cup light corn syrup
  • 2          tablespoons butter
  • 2          teaspoons vanilla
  • 1          bag (10 ounces) peanut butter chips
  • 2          cups crispy rice cereal
  • 2          cups salted roasted peanuts
  1. Heat oven to 350° F. Spray 13-by-9-inch pan with nonstick cooking spray.
  2. In large bowl, stir cookie mix, oil, water and egg until soft dough forms. Press dough into prepared pan.
  3. Bake 15-20 minutes, or until set.
  4. Sprinkle marshmallows over crust. Bake 1-2 minutes until marshmallows begin to puff. Remove from oven.
  5. In 4-quart saucepan over low heat, heat corn syrup, butter, vanilla and peanut butter chips, stirring constantly until chips are melted and smooth. Remove from heat.
  6. Stir in cereal and peanuts; spoon mixture evenly over marshmallow layer.
  7. Refrigerate 30 minutes, or until firm. Cut into bars and serve.

  • 2          tablespoons mayonnaise

  1. Bake chicken tenders according to package instructions.
  2. Spread mayonnaise evenly on insides of pita bread pocket.
  3. Layer lettuce then tomatoes and place chicken tenders evenly across pita bread pocket. Season with salt and pepper, to taste.

Servings: 4

  • 1          pound ground beef
  • 1/4       cup finely chopped celery
  • 1/4       cup finely chopped onion
  • 1/4       cup finely chopped carrot
  • 1          clove minced garlic
  • 1/2       teaspoon salt
  • 1/8       teaspoon pepper
  • 1/4       cup tomato paste
  • 2          tablespoons brown sugar
  • 2          teaspoons apple cider vinegar
  • 1/2       teaspoon yellow mustard
  • 1          cup water
  • 4          Toufayan Smart Pockets, any variety
  1. In large skillet over medium heat, brown ground beef, celery, onion, carrot, garlic, salt and pepper, breaking up beef until browned and no longer pink, approximately 6-8 minutes.
  2. Add tomato paste, brown sugar, vinegar, mustard and water; mix well.
  3. Bring to boil, reduce to simmer and cook 15-20 minutes until sauce thickens and flavors meld.
  4. Remove from heat; taste and adjust seasonings, if necessary.
  5. Divide evenly among pita bread pockets and serve.

  • 1          can (14 1/2 ounces) diced tomatoes, undrained
  • 1          package (6 ounces) Stove Top Stuffing Mix for Chicken
  • 1/2       cup water
  • 2          cloves garlic, minced
  • 1 1/2    pounds boneless skinless chicken breasts, cut into bite-size pieces
  • 1          teaspoon dried basil leaves
  • 1          cup shredded low-moisture part-skim mozzarella cheese
  1. Heat oven to 400° F. Place tomatoes in medium bowl. Add stuffing mix, water and garlic; stir just until stuffing mix is moistened. Set aside.
  2. Place chicken in 13-by-9-inch baking dish; sprinkle with the basil and cheese. Top with stuffing mixture.
  3. Bake 30 minutes, or until chicken is cooked through.

Substitute: Prepare as directed, omitting the garlic and using Stove Top Stuffing Mix Italian Style with Roasted Garlic.

  • 1 jar (16 ounces) Aunt Nellie's Baby Whole Pickled Beets
  • 2 large boneless, skinless chicken breast halves (about 1 pound)
  • 1/2 teaspoon salt, plus additional, to taste, divided
  • 1/2 teaspoon pepper, plus additional, to taste, divided
  • 4 1/2 tablespoons stone ground mustard, divided
  • 1 1/2 tablespoons, plus 1/3 cup, orange marmalade, divided
  • 2 tablespoons minced fresh chives
  • 1 large lemon, zest and juice (1/3 cup juice)
  • 1/4 cup olive oil
  • 1 bag (9 ounces) leafy romaine lettuce pieces
  • 1/3 cup chopped almonds, toasted
  • 1/3 cup crumbled blue, feta or goat cheese
  1. Heat oven to 375 F. Drain beets; set aside.
  2. Season both sides of chicken with salt and pepper, to taste. In small bowl, combine 1 1/2 tablespoons mustard and 1 1/2 tablespoons marmalade. Brush mixture over chicken until completely coated. Bake chicken on rimmed baking sheet lined with aluminum foil about 20-25 minutes, or until juices run clear; set aside.
  3. To make vinaigrette: In medium bowl, combine remaining mustard, remaining marmalade, chives, lemon zest and juice, 1/2 teaspoon salt and 1/2 teaspoon pepper. Slowly pour in oil while whisking vigorously until completely combined.
  4. Slice cooled chicken into 1-inch pieces. Onto each skewer, thread one beet, one piece of chicken and 4-5 pieces of lettuce; repeat two times for each skewer, adding one beet at ends. Repeat to make eight skewers. Place skewers on large serving platter.
  5. Stir vinaigrette; drizzle lightly over skewers. Sprinkle with almonds and cheese. Serve with remaining vinaigrette.

Middle Eastern-Inspired Bean Salad

Prep time: 20 minutes
Servings: 6

  • 1 can (15 ounces) READ 3 or 4 Bean Salad
  • 1/2 cup cherry or grape tomatoes, halved
  • 1 small cucumber (4-5 inches long) cut in half lengthwise then thinly sliced crosswise
  • 2 green onions, thinly sliced
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 1 small clove garlic, minced
  • 1/4 teaspoon crushed red pepper flakes

Dressing:

  • 2 tablespoons prepared hummus
  • 1 tablespoon fresh lemon juice
  • 1/4-1/2 teaspoon za'atar seasoning blend
  1. Drain bean salad. Discard liquid. Place bean salad in large bowl.
  2. Add tomatoes, cucumber, onions, parsley, mint, garlic and red pepper flakes to bean salad. Toss to combine.
  3. To make dressing: In bowl, combine hummus, lemon juice and za'atar seasoning.
  4. Add dressing to salad just before serving; toss to combine well. Serve immediately or chilled.

Trout with Grape and Lentil Salad

Servings: 4

  • 3/4       cup green lentils, uncooked
  • 2 1/2    cups water
  • 2          tablespoons minced shallot
  • 1 1/2    cups halved red California grapes
  • 1/4       cup fresh chopped dill
  • 1/4       cup chopped walnuts
  • 2          tablespoons lemon juice
  • 1          teaspoon lemon zest
  • 1          tablespoon white balsamic vinegar
  • 1          tablespoon, plus 2 teaspoons, olive oil, divided
  • 1          cup arugula
  • 1/2       teaspoon sea salt, divided
  • 1/4       teaspoon pepper, plus additional, to taste, divided
  • 4          trout fillets (4-6 ounces each), skin on
  • 1/2       teaspoon lemon zest
  1. In medium saucepan, combine lentils with water. Bring to boil then reduce heat to simmer; cover and cook 15 minutes. Turn off heat and allow lentils to steam 5 minutes; drain and let cool.
  2. In medium bowl, combine lentils, shallot, grapes, dill, walnuts, lemon juice, lemon zest, vinegar, 1 tablespoon olive oil, arugula, 1/4 teaspoon salt, and pepper, to taste; set aside.
  3. Heat oven to broil. Move rack to highest position.
  4. Sprinkle trout fillets with lemon zest, remaining salt and 1/4 teaspoon pepper; brush with remaining olive oil. Broil trout 4-5 minutes. Serve with lentil salad.

  • 1          pound ground chicken

  • 1-2       Thai chilies, thinly sliced
  • 2          teaspoons fish sauce
  • 3          tablespoons lime juice
  • 1/4       cup coarsely chopped cilantro
  • 3          tablespoons coarsely chopped mint leaves
  • 4          cups steamed jasmine rice
  • 2          cups shredded green cabbage
  • 2          tablespoons chopped roasted and salted peanuts
  1. In medium bowl, combine onion, grapes and rice vinegar; set aside.
  2. In large skillet, heat oil over medium-high heat. Add chicken and cook, stirring frequently until just cooked through, about 6-7 minutes. Season chicken with salt and pepper. Stir in chilies, fish sauce, lime juice, cilantro and mint.
  3. Divide rice between four serving dishes and top with chicken, cabbage, marinated onions and grapes; sprinkle with peanuts.

  • 1 1/4    pounds English or Persian cucumbers, ends trimmed
  • 1          teaspoon kosher salt
  • 2          tablespoons rice vinegar
  • 1          tablespoon reduced-sodium soy sauce
  • 2          teaspoons granulated sugar
  • 1-2       teaspoons chili oil
  • 1          teaspoon toasted sesame oil
  • 1          cup halved California grapes
  • 2          scallions, thinly sliced
  • 2          teaspoons toasted sesame seeds
  1. Using rolling pin, smash whole cucumbers lightly, just enough to break open. Tear or cut into 1 1/2-inch pieces and season with salt. Transfer to sieve and let drain 10 minutes.
  2. In large bowl, whisk vinegar, soy sauce, sugar, chili oil and sesame oil; stir in grapes and scallions. When cucumbers finish draining, add to bowl with grape mixture and stir to combine.
  3. Sprinkle with sesame seeds and serve.

  • 1 1/2    cups buttermilk
  • 1          tablespoon mustard powder
  • 1          tablespoon Sriracha
  • 2          teaspoons minced garlic
  • 2          teaspoons paprika
  • 4          chicken drumsticks, bone in, skin on
  • 4          chicken thighs, bone in, skin on
  • vegetable oil, for grill
  • 1/4       cup chopped fresh parsley
  • 1         lemon, cut into wedges (optional)
  1. In medium bowl, whisk buttermilk, mustard powder, Sriracha, garlic and paprika.
  2. Place chicken in large zip-top bag; pour buttermilk mixture over chicken. Seal bag and refrigerate 2 hours or overnight.
  3. Heat outdoor grill for direct grilling over medium heat. Remove chicken from marinade, shaking off excess; discard marinade. Lightly oil grill grates. Transfer chicken to grill and cook, turning occasionally, 16-18 minutes, or until internal temperature reaches 165° F.
  4. Transfer chicken to serving platter. Sprinkle with parsley and serve with lemon wedges, if desired.

Dressing:

  • 1          cup plain yogurt
  • 3          tablespoons freshly squeezed lime juice (3 small limes)
  • 2          tablespoons milk
  • 2          tablespoons chopped fresh chives
  • 1          clove garlic, peeled and minced
  • 1/4       teaspoon kosher salt
  • 1/8       teaspoon black pepper

Steak:

  • 1          teaspoon kosher salt
  • 1/4       teaspoon black pepper
  • 1/4       teaspoon granulated garlic
  • 20        ounces boneless petite sirloin steak

Salad:

  • 3          cups baby spinach
  • 3          cups chopped romaine lettuce hearts
  • 1/2       cup sweet red pepper rings
  • 1/2       cup sweet yellow pepper rings
  • 1          cup avocado chunks
  • 1/4       cup thinly shaved red onion
  1. To make dressing: In blender, combine yogurt, lime juice, milk, chives, garlic, salt and pepper. Blend on low until smooth consistency forms and chives are completely incorporated. Transfer dressing to jar with tight-fitting lid and refrigerate until serving.
  2. Heat grill to medium.
  3. To prepare steak: Combine kosher salt, black pepper and granulated garlic to create rub. Sprinkle half of seasoning mix over one side of steak, pressing it into meat. Repeat with remaining seasoning on opposite side of steak.
  4. Grill steak over direct medium heat to desired level of doneness, approximately 4-5 minutes per side for medium pink center. Remove steak from grill and let rest 7-10 minutes on cutting board.
  5. To make salad: Toss spinach and romaine on large platter. Scatter red and yellow peppers, avocado and onion over greens. Slice grilled sirloin thinly against grain. Arrange meat slices along center of salad.
  6. Drizzle dressing over salad just prior to serving.

Arugula Pesto:

  • 2          cups fresh arugula, tightly packed
  • 1          clove garlic
  • 1          tablespoon lemon juice
  • pinch red pepper flakes, (optional)
  • 1/3       cup shredded Parmesan cheese
  • 1/2       cup extra-virgin olive oil
  • salt, to taste
  • pepper, to taste

Grilled Pizza:

  • 2          tablespoons flour, divided
  • 1          pound pizza crust dough (at room temperature if using refrigerated dough)
  • vegetable oil, for grill
  • 1/2       cup Arugula Pesto
  • 1/2       cup part-skim ricotta cheese
  • 1/2     cup diced deli ham
  • 1/2-3/4             cup fresh corn kernels (about 1 cob)
  • 1/4     cup thinly sliced red onion
  • 1/4     cup shredded Parmesan cheese
  1. Heat grill to medium heat (350-400° F).
  2. To make Arugula Pesto: In food processor, combine arugula, garlic, lemon juice, red pepper flakes and Parmesan. Pulse until combined then, with food processor on, drizzle in olive oil until pesto forms, scraping down sides as needed. Taste and season with salt and pepper, to taste.
  3. To make Grilled Pizza: Flour pizza dough lightly and stretch or roll to about 1/2-inch thickness (14-16-inch diameter).
  4. Sprinkle remaining flour on large rimless baking sheet, pizza peel or pizza stone. Transfer dough to baking surface.
  5. Clean grill grate and grease with oil-soaked paper towel and tongs. Slide dough off baking surface onto grill. Cover and cook until dough is bubbling on top and golden brown on bottom, 2-3 minutes.
  6. Carefully flip dough over using peel or tongs. Remove crust from grill to add toppings. Spread Arugula Pesto over dough. Top with ricotta, ham, corn kernels, onion and Parmesan. Return pizza to grill, cover and cook until toppings are heated through and bottom of crust is crispy, 5-7 minutes.
  7. Remove from grill, slice and serve.
