Picnic Food Safety

  • Cool It: Store perishable foods in plenty of coolers with ice or frozen gel packs. Keep the food at 40°F. A full cooler stays colder longer than a partially filled one. Carry the cooler inside the air-conditioned car, and keep it in the shade when you reach your destination. Use separate coolers for drinks so the food container won't be opened and closed.
  • Two Hour Rule: Don't leave perishable food out for more than two hours. (Cold foods should not sit out for more than one hour.) Any leftovers that have been sitting out longer than that should be discarded.
  • Proper Prepping: Wash hands before preparing food, and make sure storage containers are clean. Cooked foods need to be properly cooled - spread the food out in as many pans as needed so that it is no more than two inches deep. This allows it to cool faster, reducing the chances of bacteria growing.

Cheddar, Bacon & Pear Sandwich

Makes 1 serving

  • 2 slices fully cooked bacon
  • 2 slices French bread
  • 1 teaspoon Grey Poupon Harvest Coarse Ground Mustard
  • 1 slice (1 ounce) sharp cheddar cheese
  • 1/4 of a medium pear, thinly sliced
  1. Heat bacon as directed on package.
  2. Spread bread slices with mustard. Top 1 of the bread slices with cheese, pears and bacon.
  3. Cover with remaining bread slice.

Grilled Herbed Chicken

Makes 6 servings

  • 2 tablespoons Grey Poupon Dijon Mustard
  • 2 tablespoons water
  • 1 envelope Good Seasons Italian Dressing Mix
  • 6 boneless skinless chicken breast halves (2 pounds)
  1. Heat grill to medium heat.
  2. Combine mustard, water and dressing mix in shallow dish. Add chicken; turn over to evenly coat both sides.
  3. Grill chicken 6 to 8 minutes on each side or until done (165°F).

Butter Bean Salad

Makes 8 servings

  • 1/4 cup Grey Poupon Hearty Spicy Brown Mustard
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 can (15 ounces) butter beans, drained
  • 1 red pepper, chopped
  • 1/2 cup chopped red onions
  • 1/3 cup chopped sun-dried tomatoes
  • 1 6-ounce package boiled ham, chopped
  • 2 tablespoons chopped cilantro
  1. Mix mustard, oil and lemon juice until well blended; set aside.
  2. Combine remaining ingredients in large bowl. Add mustard mixture; toss to coat. Cover.
  3. Refrigerate at least 1 hour before serving.

Spiced Lemonade

Makes 1 serving

Wash down your meal with a twist on the classic summertime libation, Spiced Lemonade. This surprisingly refreshing treat, bursting with fruit flavors, is made with lemonade, gin and Dijon mustard. Top with mint, the perfect finishing touch for a warm-weather cocktail.

  • 1 teaspoon Grey Poupon Dijon
  • 1/2 cup lemonade
  • 1/2 cup spiced gin
  • 1 slice each: lemon, lime and orange
  • 1 slice cucumber
  • 1 sprig fresh mint
  1. Mix mustard, lemonade and gin. Serve over ice cubes in tall glass.
  2. Add fruit and cucumber slices.
  3. Top with mint.

Apple Strudel Pancakes

Apple Strudel Mixture:

  • 1          cup water
  • 1/4       cup raisins
  • 1          tablespoon butter
  • 2          tablespoons brown sugar
  • 1/2       teaspoon ground cinnamon
  • 1/3       cup thoroughly chopped walnuts
  • 1          large apple, peeled, cored and chopped

Batter:

  • 1          cup buckwheat flour
  • 1          cup unbleached all-purpose flour
  • 2          tablespoons sugar
  • 1          teaspoon ground cinnamon
  • 1          teaspoon baking soda
  • 1/2       teaspoon salt
  • 2          eggs
  • 2          cups 1 percent buttermilk
  • 1/4       cup safflower oil
  • 1/2       teaspoon vanilla extract
  • nonstick cooking spray
  • maple syrup
  1. To make apple strudel mixture: Boil water; add raisins. Remove from heat and let steep until raisins are plump and reconstituted, about 10 minutes. Drain and set aside.
  2. In shallow pan over medium heat, add butter. Once butter melts and is bubbling, stir in brown sugar and cinnamon. Cook about 3 minutes until sugar starts to dissolve. Add walnuts, apples and raisins. Cook apples until just tender when pierced with fork, about 4 minutes. Set aside to cool completely.
  3. To make batter: In large bowl, mix flours, sugar, cinnamon, baking soda and salt. In separate bowl, beat eggs lightly and mix with buttermilk, oil and vanilla extract.
  4. Pour wet ingredients into dry, mixing as little as possible. Add apple strudel mixture and fold all ingredients together. Set aside.
  5. Heat nonstick pan or griddle over medium heat. Grease pan lightly with nonstick cooking spray. Once pan is hot, ladle about 1/4 cup batter per pancake taking care not to overcrowd pan. After 2-3 minutes, flip pancakes once.
  6. Serve pancakes warm with syrup.

  • 1          pound Bob Evans Farms Original Sausage Roll
  • 4          large eggs
  • 1/2       cup milk
  • 3          tablespoons butter, melted
  • 1          cup ham, cubed
  • 1          cup red pepper, diced
  • 1/2       teaspoon black pepper
  • 1          cup shredded cheddar cheese
  1. Heat oven to 350° F.
  2. Remove hash browns from refrigerator and let rest.
  3. In skillet, cook sausage according to package directions.
  4. Lightly grease two 12-cup muffin tins. In bowl, whisk eggs and milk. Add hash browns, butter, ham, red pepper, black pepper and cheese; mix.
  5. Fill muffin tins 2/3 full. Bake 27-30 minutes. Serve warm.

Watermelon Bloody Mary

Yield: 4 cocktails

  • 2          cups seedless watermelon, cubed
  • 1          medium jalapeno pepper, stem removed, chopped
  • 2          limes, juice only
  • 6          ounces low-sodium tomato juice
  • 1          teaspoon salt
  • 1/2       teaspoon black pepper
  • 1          teaspoon fish sauce
  • 1          teaspoon horseradish
  • hot sauce, to taste
  • 1/3       cup vodka
  • lime wedges
  • chili lime salt
  • ice
  • 4          bamboo skewers (6 inches long)
  • watermelon wedges (optional)
  • prosciutto (optional)
  • cucumber slices (optional)
  • jalapeno slices (optional)
  • green olives (optional)
  1. In blender, blend watermelon cubes and jalapeno pepper until completely smooth. Pour mixture through fine sieve set over pitcher.
  2. Add lime juice, salt, pepper, fish sauce, horseradish and hot sauce, to taste, to pitcher; stir to combine. Taste and adjust seasoning as needed. Add vodka and stir.
  3. Line rims of four glasses with lime juice from lime wedges; dip in chili lime salt poured on plate. Carefully put ice in each glass and divide Watermelon Bloody Mary mixture evenly.
  4. Add garnishes, as desired, by skewering watermelon wedges, prosciutto, cucumber, jalapeno and green olives. Place garnishes in glasses and serve.

  • oil

Cook time: 15 minutes

  • 2 French bread sandwich rolls, halved
  • 8 tablespoons refried black beans

  • Nonstick cooking spray
  • 3 large avocados
  • 6 eggs

  • 1/4 cup fresh cilantro
  1. Heat oven to 450 F. Spray baking sheet or glass baking pan with cooking spray. Cut avocados in half. Scoop out 1-2 tablespoons of avocado to create well for eggs. Place avocados flesh-side up on prepared baking sheet or glass pan.
  2. Gently crack one egg in each avocado well, making sure to keep yolk intact. Bake 10 minutes, or until eggs reach desired temperature. Remove.
  3. Top with bacon pieces, blue cheese and cilantro.

Farmer's Casserole

  • Nonstick cooking spray
  • 3 cups frozen shredded hash brown potatoes
  • 3/4 cup shredded Monterey Jack cheese
  • 1 cup diced cooked ham, cooked breakfast sausage or Canadian-style bacon
  • 2 green onions, sliced
  • 2 jalapenos, seeded and chopped
  • 4 eggs, beaten
  • 1 ½ cups milk
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  1. Coat a 2-quart square baking dish with nonstick cooking spray. Arrange hash browns evenly in the bottom of the dish. Sprinkle cheese, ham, and green onions over hash browns.
  2. In a bowl combine eggs, milk, salt, pepper and jalapenos. Pour egg mixture over hash brown mixture in dish.
  3. Bake, uncovered, in a 350° F oven for 50 to 55 minutes or until a knife inserted near the center comes out clean.
  4. Let stand 5 minutes before serving. Makes 6 servings.

Hawaiian Ham Skewers

Prep time: 15 minutes
Cook time: 15 minutes
Servings: 4-6

Hawaiian Glaze:

  • 1/2       cup ketchup
  • 1/2       cup pineapple juice
  • 2          tablespoons brown sugar
  • 1/4       cup reduced-sodium soy sauce or tamari
  • 2          garlic cloves, minced
  • 1          tablespoon ginger root, minced or grated

Ham Skewers:

  • 4-6       skewers
  • 1 1/2    pounds Smithfield Ham Steaks, cut into 1 1/2-2-inch squares
  • 1          large red onion, cut into eight wedges, root end intact
  • 2-3       sweet bell peppers, cut into 1 1/2-2-inch pieces
  • 1/2       fresh pineapple, cored and cut into 1/2-inch thick slices
  • 4          ounces fresh button or crimini mushrooms, halved (optional)
  • 1          green onion, thinly sliced, for garnish
  1. To prepare glaze: In small bowl, whisk ketchup, pineapple juice, brown sugar, soy sauce, garlic and ginger root until combined; reserve, refrigerated, for up to 3 days.
  2. Heat grill to medium-high. Skewer ham, onion, bell pepper, pineapple and mushrooms by alternating pieces and brush with about one-third of glaze.
  3. Grill 8-12 minutes, or until slightly charred and vegetables are cooked as desired, turning as needed. Glaze skewers about halfway through cooking and again before serving. Garnish with green onion.

Bacon S’mores

Prep time: 20 minutes
Cook time: 5 minutes
Servings: 8

  • 4          strips any variety Smithfield Bacon
  • 8          marshmallows
  • 2          chocolate bars (about 3 ounces), broken into eight pieces
  • 8          graham crackers, broken into squares
  1. Heat oven to 375° F.
  2. On lightly sprayed, foil-lined, rimmed baking pan, separate strips of bacon; lay flat in single layer and gently stretch each strip 1-2 inches. Bake 10-12 minutes, or until bacon begins to curl and edges just start to crisp, rotating pan halfway through cooking. Remove bacon from pans with spatula while warm, draining briefly on absorbent paper; reserve.
  3. Cut bacon slices in half crosswise and tightly wrap around marshmallows, securing with skewer or roasting stick. Roast marshmallows over open fire until toasty brown on edges, being careful not to burn or ignite marshmallows.
  4. Immediately sandwich roasted marshmallows between two graham crackers with piece of chocolate.

Spiced Honey and Black Pepper-Glazed Ham

Prep time: 10 minutes
Total time: 30 minutes
Servings: 12

  • 8-10     pounds cooked shank-end ham
  • water (optional)
  • 1          tablespoon Spice Islands Cracked Black Pepper
  • 1          tablespoon Spice Islands Ground Mustard
  • 1          tablespoon Spice Islands Garlic Powder
  • 1/2       cup honey
  • 1 1/2    teaspoons Spice Islands Ground Saigon Cinnamon
  • 1/2       teaspoon Spice Islands Ground Cloves
  1. Heat oven to 325° F.
  2. With sharp knife, score ham at 1-inch intervals; place in baking dish. If ham appears dry, moisten surface with water. In small bowl, combine black pepper, mustard and garlic powder. Rub pepper mixture over surface of ham. Roast according to package directions.
  3. Combine honey, cinnamon and cloves. Drizzle over ham during last 30 minutes of roasting. Remove ham from oven and let rest 20 minutes before slicing.

Spiced Maple Carrots

Prep time: 5 minutes
Total time: 15 minutes
Servings: 4

  • 1          pound (4 cups) baby carrots
  • 1/2       cup water
  • 1          teaspoon Spice Islands Ground Saigon Cinnamon
  • 3/4       teaspoon Spice Islands Ground Ginger
  • 2          tablespoons Maple Grove Farms 100% Pure Maple Syrup
  • 1          tablespoon butter
  • sea salt, to taste
  1. In large skillet, combine carrots, water, cinnamon and ginger. Mix well. Cover and cook on high 6 minutes until almost tender.
  2. Add maple syrup and butter. Mix well and continue to cook, uncovered, 2-3 minutes, until carrots are well-glazed. Season, to taste, with sea salt.

Anise, Pear and Almond Crostata

Prep time: 45 minutes
Total time: 2 hours, 30 minutes
Servings: 6

Crostata Crust:

  • 1 1/4    cups all-purpose flour
  • 1          stick butter, cut into 1/2-inch cubes and frozen
  • 1/2       teaspoon Spice Islands Fine Mediterranean Sea Salt
  • 1/4       cup ice water

Anise Almond Filling:

  • 1          cup blanched, slivered almonds
  • 3/4       teaspoon Spice Islands Anise Seeds
  • 1/3       cup sugar
  • 1          large egg
  • 1          teaspoon Spice Islands Vanilla Extract
  • 1/4       teaspoon Spice Islands Fine Mediterranean Sea Salt
  • 2          tablespoons butter, at room temperature
  • 3          Fiorelle or small pears, sliced into thin wedges
  • 2          tablespoons sugar, plus extra for sprinkling
  • 1          tablespoon lemon juice
  • 1          large egg, beaten
  • 2          tablespoons Polaner Apricot Preserves, heated
  • cream or ice cream (optional)
  1. To make crust: In food processor, combine flour, frozen butter and salt. Pulse until dough is size of large peas. Add 3 tablespoons ice water and pulse several times. Pinch dough to see if it is holding together; if not, add water a couple of teaspoons at a time, pulsing once or twice after each addition, until dough holds together. Form dough into disk, wrap in plastic wrap and chill 30 minutes.
  2. Heat oven to 400° F.
  3. To make filling: In food processor, blend almonds, anise seeds, sugar, egg, vanilla and salt until paste forms. Add room temperature butter and blend again. Set aside.
  4. Toss sliced pears with 2 tablespoons sugar and lemon juice. Set aside.
  5. On sheet of floured parchment paper, roll out dough into 13-inch circle; transfer on parchment to rimless cookie sheet.
  6. Spread almond paste onto circle, leaving 2-inch border. Scatter pears on top, covering almond paste. Fold dough up and over pears, overlapping dough as needed. Brush with egg wash and sprinkle crust generously with extra sugar.
  7. Bake until pears are tender, 40-45 minutes. If crust starts to get too brown, lightly cover with foil. Remove tart from oven and brush pears with heated apricot preserves. Serve with cream or ice cream, if desired.

Ham and Blueberry Toast

Servings: 4

  • 3/4       cup cream cheese
  • 1          cup blueberries, divided
  • 4          slices sourdough bread
  • 1          cup Smithfield Anytime Favorites Hickory Smoked 8-ounce Boneless Ham Steak, cooked and cut into cubes
  • 1/4       cup pistachios
  • 1/2       cup microgreens
  1. In food processor, blend cream cheese and 1/2 cup blueberries until smooth.
  2. Toast bread until brown. Spread with blueberry cream cheese mixture. Top with ham steak cubes, remaining blueberries, pistachios and microgreens.

Bacon, Peanut Butter and Banana Toast

Servings: 4

  • 4          slices whole-wheat toast
  • 3/4       cup peanut butter
  • 2          medium bananas
  • 1/3       cup shelled pistachios
  • 4          slices Smithfield Cherrywood Bacon, cooked and cut into pieces
  1. Toast bread until brown. Spread with peanut butter.
  2. Cut bananas into thin slices and place on top of peanut butter. Sprinkle with pistachios and bacon pieces.

Slow-Cooked Maple Ham

Cook time: 5 hours, 15 minutes
Servings: 10

  • 20        ounces Sweet Harvest Pineapple Chunks
  • 8          pounds Appleton Farms Smoked Ham Butt
  • 1          cup Specially Selected 100% Pure Maple Syrup
  • 1          cup Baker’s Corner Brown Sugar
  • 1/2       teaspoon Stonemill Cinnamon
  • 1          tablespoon Burman’s Dijon Mustard
  • 1          teaspoon Stonemill Ground Black Pepper
  1. Pour pineapple into large slow cooker. Place ham on top of pineapple, flat-side down.
  2. In small bowl, combine syrup, brown sugar, cinnamon, Dijon mustard and pepper. Pour over ham.
  3. Set slow cooker to low. Cook 4-5 hours.
  4. Remove ham; keep warm. Skim fat off top of remaining liquid in slow cooker.
  5. Pour liquid into small saucepan and bring to boil. Reduce heat to simmer; cook until reduced to desired consistency.
  6. Serve sauce on side or heat oven to broil and glaze ham. Broil 3-4 minutes for caramelized crust.

Holiday Ham Sliders

  • Carlini Canola Cooking Spray
  • 3          ounces Happy Farms Preferred Cranberry White Cheddar, shredded
  • 3          ounces Happy Farms Preferred Plain Havarti Cheese, shredded
  • 12        ounces L'oven Fresh Hawaiian Sweet Rolls
  • 2          tablespoons Burman's Spicy Mustard
  • 1/4       cup sliced red onion
  • 12        ounces Appleton Farms Spiral Sliced Half Ham
  • 1/4       cup sliced green apple
  • 4          tablespoons Countryside Creamery butter, melted
  • 1/2       teaspoon Stonemill Garlic Powder
  • 1/4       teaspoon ground Stonemill Sea Salt
  • 1/2       teaspoon Stonemill Parsley Flakes
  1. Heat oven to 350 F.
  2. Line 9-by-13-inch baking pan with aluminum foil and coat with cooking spray.
  3. In small bowl, combine cranberry white cheddar and havarti cheeses. Reserve.
  4. Remove entire package of rolls and, keeping rolls connected, slice in half horizontally.
  5. Place bottom half of rolls in baking pan. Spread with spicy mustard.
  6. Top with red onion, ham, apple, cheese mixture and bun tops.
  7. In small bowl, combine butter, garlic powder, salt and parsley flakes. Pour over sandwiches.
  8. Cover with foil and bake 15 minutes.
  9. Remove foil. Bake 10 minutes more.
  10. Remove from pan and separate sandwiches; serve immediately.
