  • 1 1/2 pounds Atkins Ranch grass-fed Ground Lamb
  • 1/4 teaspoon kosher salt
  • 4 brioche buns
  • 1 medium tomato, sliced into rounds

Spread:

  • 2/3 cup full-fat Greek yogurt
  • 1 clove garlic, grated
  • 1/3 cup mayonnaise
  • 1 tablespoon Dijon mustard

Salad:

  • 1 small English cucumber, thinly sliced
  • 2 green onions, thinly sliced into rounds
  • 2 tablespoons flat leaf parsley, chopped
  • 2 tablespoons fresh mint leaves, chopped
  • 1 tablespoon fresh dill, chopped
  • 1/4 cup micro greens
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 teaspoons olive oil
  1. To make burgers: Gently divide lamb into four equal parts and shape into rounds slightly larger than buns. Cover and refrigerate at least 1 hour.
  2. To make spread: In small bowl, mix yogurt, garlic, mayonnaise and mustard; refrigerate until ready to assemble burgers.
  3. To make salad: In medium bowl, mix cucumber, onions, parsley, mint leaves, dill, micro greens, lemon juice, lemon zest and olive oil; refrigerate until ready to assemble burgers.
  4. Preheat grill to medium-high heat, creating hot and cool zones. Salt patties then grill about 6 minutes on each side until internal temperature reaches 150 F. As patties near 150 F or start to brown, move to cool zone to regulate doneness. Transfer to plate and let rest about 5 minutes.
  5. To assemble burgers, add dollop of spread to bottom buns. Top each with one tomato slice, one lamb burger, salad and top bun.

Grass-Fed Lamb Meatball and Veggie Skewers with Herb Sauce

Prep time: 1 hour, 30 minutes
Cook time: 30 minutes
Yield: 6 skewers

Lamb Meatballs:

  • 6 wooden skewers

  • 1/2 cup yellow onion, finely minced

Veggies:

  • 1 medium red onion
  • 1 medium green bell pepper
  • 1 medium red bell pepper

Herb Sauce:

  • 1 cup flat leaf parsley leaves
  • 2 teaspoons fresh rosemary leaves, minced
  • 2 tablespoons capers
  • 1 lemon, juice only
  • 2 cloves garlic
  • 1/4 cup extra-virgin olive oil
  • Italian bread, grilled
  1. To make lamb meatballs: Soak wooden skewers in water 10 minutes. In large bowl, break apart ground lamb then add whisked eggs and breadcrumbs. In small saute pan, add olive oil and saute yellow onion and garlic with coriander seeds, red pepper flakes, salt and pepper, to taste, about 5 minutes until onion is translucent and spices are fragrant. Add to bowl with lamb. Mix until combined and form into roughly 1 1/2-ounce balls.
  2. To make veggies: Cut onion and bell peppers into 1-inch stacks.
  3. Add ground lamb meatballs to skewers, alternating with peppers and onions. Cover and refrigerate at least 1 hour.
  4. To make herb sauce: In immersion blender, blend parsley, rosemary, capers, lemon juice, garlic and olive oil until smooth. Refrigerate until ready to serve.
  5. Preheat grill to medium-high heat. Grill skewers about 3 minutes on each side, or until meatballs reach internal temperature of 150 F. Rest 5 minutes. Serve with dipping sauce and grilled Italian bread.

  4. Cover with aluminum foil and chill overnight.
  5. Heat oven to 325 F.
  6. Remove foil and bake 50-60 minutes.

For serving:

  • 1 Persian cucumber, small diced

  1. To make lamb: Remove lamb from bone, dice meat into small cubes and transfer to medium bowl.
  2. Add cumin powder and salt. Toss to coat. Marinate while preparing hummus.
  3. To make hummus: Drain chickpeas, reserving 1 tablespoon liquid. Rinse chickpeas under running water then drain.
  4. In bowl of food processor, pulse chickpeas, chickpea liquid and garlic until chickpeas and garlic are chopped.
  5. Add tahini, lemon juice, salt, cumin, paprika and olive oil. Mix until smooth paste forms. Taste and adjust by adding more salt, lemon juice or olive oil, as desired.
  6. Transfer hummus to large platter and spread it out.
  7. In large skillet, heat extra-virgin olive oil over high heat until hot. Add lamb and cook 30 seconds without moving.
  8. Turn lamb over and cook 30-60 seconds, repeating until all sides are browned. Remove from pan and let rest 5 minutes.

  • 1 Atkins Ranch bone-in leg of lamb (about 8 pounds)
  • 1/4 cup olive oil
  • 8 cloves garlic, finely minced
  • 2 tablespoons Dijon mustard
  • 2 tablespoons kosher salt
  • 1/4 cup white wine

Herb Crust:

  • 2 large egg whites
  • 2 tablespoons minced rosemary leaves
  • 2 tablespoons minced thyme leaves
  • 2 tablespoons ground peppercorns
  • 1 tablespoon kosher salt
  • fresh mint sauce, for serving
  1. About 2 hours before preparing, remove leg of lamb from fridge to ensure even cooking. Remove gland to prevent gaminess during cooking.
  2. Preheat oven to 325 F on convection setting. Score skin of both sides of leg of lamb.
  3. In bowl, whisk olive oil, garlic, Dijon mustard, salt and white wine. Brush onto both sides of lamb, pressing into scored crevices.

  6. To make herb curst: In bowl, whisk egg whites until evenly foamy with tiny bubbles. Brush onto both sides of lamb.
  7. In separate small bowl, mix rosemary, thyme, peppercorns and salt. Press herb crust mixture onto areas brushed with egg whites. Place back in pan and cook about 5-7 minutes until crust is formed and browned. Remove from oven and rest 30 minutes.
  8. Carve lamb, arrange on platter and serve with fresh mint sauce.

Cook time: 2 hours, 45 minutes
Servings: 8

Lamb:

  • 4 1/2-5 1/2       pounds Atkins Ranch grass-fed leg of lamb, at room temperature
  • 1 3/4    ounces butter, softened
  • 3          cloves garlic, crushed
  • 1          teaspoon roughly chopped thyme leaves
  • salt, to taste
  • ground black pepper, to taste
  • 1-2       handfuls thyme sprigs
  • 1          onion, sliced
  • 1/2       cup olive oil

Meat Sauce:

  • 1          cup beef stock
  • 3/4       cup creme fraiche or sour cream
  • lemon zest, finely grated
  • 1          tablespoon wine vinegar
  • 1          bay leaf
  • salt, to taste
  • sauteed mushrooms (optional)
  • sauteed green beans (optional)
  • steamed carrots and snap peas (optional)
  1. Heat oven to 320° F.
  2. To prepare lamb: Using sharp knife, make 4-5 shallow slits in lamb. In bowl, mix butter, garlic and chopped thyme. Coat butter mixture in slits and sprinkle lamb with salt and pepper, to taste.
  3. Place thyme sprigs and sliced onion in base of roasting tin and place lamb on top. Drizzle olive oil over lamb. Roast 2 hours, 45 minutes.
  4. To make meat sauce: Remove lamb from oven 30 minutes before end of cooking time. Place lamb on board then tip juices into saucepan. Place lamb back in roasting tin and return to oven.
  5. Skim fat off roasting juices. Add beef stock to remaining juices and bring to boil.
  6. Reduce heat and add creme fraiche or sour cream, lemon zest, vinegar and bay leaf. Simmer until sauce reduces some. Season with salt, to taste, to counteract acidity.
  7. Remove lamb from oven and rest covered loosely with foil and tea towel 10 minutes before carving.
  8. Strain sauce into bowl or gravy boat and serve hot with lamb and sauteed mushrooms, green beans or steamed carrots and snap peas, if desired.

Tips for Roasting Lamb

-A bone-in leg of lamb cooks faster than a boneless leg of lamb. Use a good meat thermometer to determine doneness:
Rare 135°F
Medium Rare 145°F
Medium160°F

-You can sear the lamb roast first in a hot 450°F oven for 15 minutes to seal in the juices and then reduce oven temp to 325°F and continue roasting for approximately 1 1/2 to 2 hours or until internal temperature reaches 5 to 10 degrees less than your desired temperature.

-Remove roast from oven and let rest for 20 minutes before serving. This allows the meat's juices to settle and make carving easier. (As the meat rests, the internal temperature will rise 5 to 10 degrees.)

-Carve the roast against the grain so the meat will be tender. A naturally tender cut like leg should be sliced about one half inch thick.

Choosing the Right Wine

-COMPLEMENT. Similarly flavored foods and wines complement each other.
Example: Citrus-based sauce and a lemony, lightly oaked Chardonnay (such as Kendall-Jackson Avant Chardonnay or Chablis from the Burgundy region of France).

Roasted Leg of American Lamb

Serves 8
Serve with Kendall-Jackson Vintner's Reserve Merlot.

  • 1 boneless leg of lamb, approximately 6 pounds

For the marinade:

  • 4 garlic cloves, smashed
  • 2 lemons, zested
  • 1/2 tablespoon fresh thyme, chopped
  • 1 tablespoon freshly ground black pepper
  • 2 tablespoons dried oregano
  • 1 tablespoon fresh rosemary, chopped
  • 1 bunch parsley, chopped
  • 1 cup olive oil
  • 1/4 cup kosher salt
  1. In small bowl, combine all ingredients. Rub mixture on leg of lamb. Cover with plastic wrap and marinate overnight.
  2. Bring lamb to room temperature and sprinkle with salt. Preheat the oven to 375°F. Roast for 1 hour and 15 minutes or until a thermometer inserted into center of leg reads 125°F to 130°F. Cover loosely with aluminum foil and allow to rest for 20 minutes.

American Lamb Sandwich with Tzatziki Sauce

  • Leftover roasted leg of lamb

For tzatziki sauce:

  • 1/2 English cucumber, peeled, cut in half and seeded
  • 1 tablespoon fresh dill
  • 2 tablespoons fresh mint
  • 8 ounces Greek yogurt
  • 3 garlic cloves, minced
  • 1/2 lemon, juiced
  • Kosher salt
  • Freshly ground black pepper
  1. Grate cucumber with a box grater. Place grated cucumber in a strainer, sprinkle with salt and allow to drain for 20 minutes.
  2. In a bowl, add dill, mint, yogurt, garlic and lemon juice. Squeeze as much liquid from cucumber as possible and add cucumber to the yogurt. Mix well and refrigerate for at least 30 minutes. Season to taste with salt and pepper.
  3. To serve: Fill warm flatbread or pita with sliced leftover leg of lamb, thinly sliced tomatoes and cucumbers and chilled tzatziki sauce.

Fresh Mint and Garlic Marinated Grilled American Lamb Loin Chops
with Roasted Fingerling Potatoes and Green Beans

Serves 4
Serve with Kendall-Jackson Vintner's Reserve Syrah.

  • 4 cloves garlic, minced
  • 1 shallot, minced
  • 1/2 bunch parsley leaves, chopped
  • 1/2 bunch mint leaves, chopped
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 8 lamb loin chops
  1. In bowl, add garlic, shallot, herbs, olive oil, vinegar, salt and pepper. Whisk to combine.
  2. Place lamb chops into a bowl and add 3/4 cup of marinade (reserve remaining marinade for sauce). Mix to coat thoroughly. Cover and refrigerate for at least 1 hour.
  3. Preheat grill to medium-high heat. Grill lamb to desired temperature (medium-rare is recommended). Remove from heat and allow the lamb chops to rest for 5 minutes. Drizzle chops with the reserved mint and garlic sauce. Serve with roasted potatoes and green beans.

For potatoes:

  • 1/4 cup olive oil, divided
  • 1 1/2 pounds fingerling potatoes, cut in half lengthwise
  • 4 garlic cloves, crushed
  • 1 teaspoon fresh thyme, chopped
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  1. Place a sheet pan in the oven and preheat to 425°F.
  2. In a bowl, combine 1/8 cup of olive oil and remaining ingredients. Toss to coat potatoes.
  3. Pour 1/8 cup olive oil onto hot sheet pan and allow to heat for 1 minute. Place potatoes onto hot sheet pan and roast for 20 minutes or until golden brown. Serve immediately.

For green beans:

  • Kosher salt
  • 1/2 pound green beans, stems removed
  • 1 tablespoon butter
  • Freshly ground black pepper
  1. In large pot, add 1 tablespoon salt and 2 quarts water; bring to a boil. Add green beans and cook until tender, approximately 4 minutes.
  2. Remove beans from water, place into bowl with butter and toss to coat. Salt and pepper to taste. Serve immediately.

Sicilian Lamb Meatballs with Whipped Feta-Olive Oil Sauce

Prep time: 15 minutes
Cook time: 15 minutes
Servings: 4

Sicilian Lamb Meatballs:

  • 1          pound ground lamb
  • 1          tablespoon Carapelli Unfiltered Extra Virgin Olive Oil
  • 1/3       cup panko breadcrumbs
  • 3          tablespoons pine nuts
  • 2          tablespoons golden raisins
  • 1          large egg, lightly beaten
  • 3/4       teaspoon kosher salt
  • 1/2       teaspoon ground black pepper

Feta-Olive Oil Sauce:

  • 1/2       pound feta cheese, crumbled
  • 2          tablespoons Carapelli Unfiltered Extra Virgin Olive Oil
  • 2          tablespoons plain Greek yogurt
  1. To make Lamb Meatballs: Heat oven to 375° F. Line large rimmed baking sheet with parchment paper.
  2. In large bowl, mix lamb, olive oil, panko bread crumbs, pine nuts, raisins, egg, salt and pepper. Use hands to mix all ingredients together.
  3. Roll mixture into approximately 36 meatballs about 1 inch in diameter and place on baking sheet.
  4. Bake 15 minutes until sizzling and golden brown.
  5. To make Feta-Olive Oil Spread: In food processor, blend feta cheese, olive oil and yogurt 30-45 seconds until creamy.
  6. Serve Lamb Meatballs with Feta-Olive Oil Sauce for dipping or scooping.

Marinated Roasted Portobello Mushrooms with Olive Oil Agrodolce

Prep time: 10 minutes
Cook time: 30 minutes
Servings: 4

Roasted Mushrooms:

  • 2          pounds Portobello mushrooms
  • 1/2       cup Carapelli Organic Extra Virgin Olive Oil
  • 2          teaspoons fresh sage, minced
  • 2          teaspoons fresh rosemary, minced
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Agrodolce:

  • 1/2       cup red wine vinegar
  • 2          tablespoons honey
  • Carapelli Organic Extra Virgin Olive Oil
  1. To make Roasted Mushrooms: Clean and destem mushrooms, cutting large mushroom caps in half.
  2. In large bowl, toss mushrooms with olive oil, fresh sage and fresh rosemary. Let mushrooms marinate 1 hour, tossing occasionally to absorb oil.
  3. Heat oven to 400° F. Line two large baking sheets with parchment paper.
  4. Spread marinated mushrooms on baking sheets, making sure mushrooms are in single layer and not crowded. Sprinkle lightly with salt and pepper.
  5. Roast 30 minutes until mushrooms are crisped and golden brown at edges.
  6. To make Agrodulce: In small saucepan over medium-low heat, bring vinegar and honey to simmer, stirring occasionally until honey dissolves.
  7. Continue simmering 15-20 minutes until vinegar is reduced by half and is thick and syrupy.
  8. To serve, place roasted mushrooms on platter and drizzle generously with Agrodolce and olive oil. Serve with choice of side.

Rustic Tuscan Potato Leek Soup with Olive Oil Pesto

Prep time: 15 minutes
Cook time: 50 minutes
Servings: 6

Potato Leek Soup:

  • 3          medium-large leeks
  • 2          tablespoons Carapelli Unfiltered Extra Virgin Olive Oil
  • 1          large garlic clove, coarsely chopped
  • 1/2       teaspoon kosher salt, plus additional, to taste (optional)
  • 2          pounds Yukon gold potatoes, peeled and diced into 2-inch cubes
  • 6          cups chicken or vegetable broth

Pesto:

  • 1          packed cup fresh basil
  • 1          packed cup flat-leaf parsley
  • 1          medium-large garlic clove, roughly chopped
  • 3          tablespoons pine nuts or 1/4 cup walnuts
  • 1/2       teaspoon kosher salt
  • 1/4       cup Carapelli Unfiltered Extra Virgin Olive Oil
  1. To make Potato Leek Soup: Trim bulb ends and tough, dark green stems off leeks. Slice tender white and light green stems in half lengthwise then soak in cold water 10-15 minutes to remove dirt. Drain leeks, rinse well and slice into thick half-moons.
  2. In large Dutch oven or stockpot over medium-low heat, heat olive oil. Add leeks, garlic and salt. Cook, stirring occasionally, until leeks are soft, about 10 minutes.
  3. Add potatoes and broth. Cover and increase heat to medium. Bring soup to simmer then uncover and continue cooking 30 minutes.
  4. Using immersion blender, puree soup until smooth, or carefully ladle into standing blender to puree in batches. Taste and add more salt, if desired.
  5. To make Pesto: In food processor, pulse basil, parsley, garlic, pine nuts, salt and olive oil to make chunky herb sauce.
  6. To serve, ladle soup into bowls and spoon Pesto on top of each serving.

Easy Spring Lamb, Sides and Treats

Bunny Butt Cupcakes

Prep time: 45 minutes
Cook time: 20 minutes
Servings: 24

  • 1          2-layer size white cake mix
  • 1          tablespoon, plus 2 teaspoons, McCormick Pure Lemon Extract, divided
  • 1          tablespoon McCormick Pure Vanilla Extract
  • 3/4       cup white chocolate chips
  • 2          sticks butter, softened
  • 16        ounces confectioners’ sugar
  • 2          tablespoons milk
  • 10        drops McCormick Green Food Color
  • 1-2       drops McCormick Red Food Color
  • 12        large marshmallows, halved crosswise
  • 3          tablespoons white nonpareil sprinkles
  1. Prepare cake mix as directed on package, adding 1 tablespoon lemon extract and vanilla. Spoon 3 tablespoons batter into 24 paper-lined muffin cups. Bake as directed on package for cupcakes. Cool cupcakes on wire rack.
  2. To make bunny feet: In medium, microwave-safe bowl, microwave white chocolate chips on high 30 seconds. Stir until completely melted and smooth. Spoon into pastry bag or re-sealable plastic bag. Snip small corner from bag. Pipe 24 pairs of bunny feet onto parchment or wax paper-lined cookie sheet. Use toothpick to smooth out bumps or rough edges, and gently tap cookie sheet on counter to help settle. Allow to harden 2 minutes in freezer or 15 minutes in refrigerator.
  3. To make frosting: In large bowl, beat butter and remaining lemon extract until light and fluffy. Gradually add confectioners’ sugar, beating well after each addition and scraping sides and bottom of bowl frequently. Add milk; beat until light and fluffy. Remove half the frosting and place in medium bowl. Add green food color; mix until evenly blended. Spoon into pastry bag fitted with grass decorating tip. Set aside. Remove half the remaining frosting into small bowl. Add red food color; mix until light pink. Spoon into another pastry bag.
  4. Using pink frosting, pipe three toes and padding on each bunny foot. Once frosting has set (about 1 hour) gently press down on pink frosting to create smoother look.
  5. To assemble cupcakes: Pipe green frosting onto each cupcake in series of short motions to create individual grass spots. Cover top of each cupcake completely.
  6. To make bunny butts: Place cut sides of marshmallow halves onto each frosted cupcake, leaving room for bunny feet. Shape remaining white frosting into dime-sized balls then roll with white sprinkles to cover. Pipe small drop of remaining pink or white frosting onto top of each marshmallow. Press bunny tail on top.
  7. Place both bunny feet against base of marshmallow with toes facing down.

Lemon Dill Slow Cooker Carrots

Prep time: 10 minutes
Cook time: 3-4 hours
Servings: 6

  • Nonstick cooking spray
  • 2          pounds carrots, peeled and cut into 1/2-1-inch chunks
  • 2          tablespoons water
  • 1/2       teaspoon salt
  • 2          tablespoons olive oil
  • 2          teaspoons McCormick Dill Weed
  • 2          teaspoons McCormick Pure Lemon Extract
  • 2          teaspoons Dijon mustard
  • teaspoon white wine vinegar
  1. Spray inside of 4-quart slow cooker with nonstick cooking spray. Add carrots, water and salt; toss to coat. Cover.
  2. Cook on high 3-4 hours, or until tender.
  3. In small bowl, mix olive oil, dill weed, lemon extract, Dijon mustard and vinegar. Stir into cooked carrots in slow cooker before serving.

Rack of Lamb with Quinoa-Hazelnut Crust and Mint Pesto

Prep time: 20 minutes
Cook time: 40 minutes
Servings: 6

  • 2          tablespoons red quinoa
  • 2          tablespoons white quinoa
  • 1/2       cup water
  • 1/4       cup, plus 1 tablespoon, finely chopped toasted hazelnuts, divided
  • 2          racks of lamb, about 1 pound each
  • 3          tablespoons olive oil, divided
  • 1 1/8    teaspoons McCormick Gourmet Sicilian Sea Salt, divided
  • 1/4       teaspoon McCormick Gourmet Organic Black Pepper
  • 2          teaspoons lemon juice
  • 2          tablespoons McCormick Gourmet Organic Mint
  • 1/8       teaspoon McCormick Gourmet Organic Garlic Powder
  • cup plain Greek yogurt
  1. Rinse quinoa; drain well. In small saucepan over medium-high heat, bring quinoa and water to boil. Reduce heat to low; cover and simmer 13 minutes, or until liquid is absorbed, stirring occasionally. Spread cooked quinoa on baking sheet to cool. Stir in 1/4 cup hazelnuts. Set aside.
  2. Heat oven to 450° F. Brush racks of lamb lightly with 1 teaspoon oil. Sprinkle with 1 teaspoon sea salt and pepper. Coat lamb with quinoa mixture, pressing firmly to adhere. Place lamb on roasting rack in foil-lined, shallow roasting pan. Drizzle with 2 teaspoons oil.
  3. Roast 20-25 minutes, or until desired doneness.
  4. To make Mint Pesto: In small bowl, mix remaining oil, remaining hazelnuts, lemon juice, mint, garlic powder and remaining sea salt until well blended. Stir 1 teaspoon pesto into yogurt.
  5. To serve: Carve lamb into chops. Drizzle with remaining pesto. Serve with yogurt sauce.

Electric Pressure Cooker Lamb

Prep time: 10 minutes
Cook time: 48 minutes
Servings: 12

  • 1          tablespoon McCormick Garlic Powder
  • 1          tablespoon McCormick crushed Rosemary Leaves
  • 2          teaspoons McCormick Sea Salt
  • 1          teaspoon McCormick Thyme Leaves
  • 1/2       teaspoon ground McCormick Black Pepper
  • 2          tablespoons vegetable oil
  • 1          semi-boneless leg of lamb (about 4 pounds)
  • 1          cup Kitchen Basics Original Chicken Stock
  • 1/2       cup dry white wine
  • 2          medium carrots, peeled and cut into 2-inch chunks
  • 1          medium yellow onion, cut into wedges
  • 1/4       cup water
  • tablespoons cornstarch
  1. In small bowl, mix garlic powder, rosemary, sea salt, thyme and black pepper. Set aside.
  2. In electric pressure cooker, heat oil on saute setting until simmering. Sprinkle half the seasoning mixture evenly over lamb. Place lamb in pressure cooker. Cook 8-10 minutes, or until browned on all sides, turning occasionally. Add stock, wine and remaining seasoning mixture to pressure cooker. Arrange carrots and onion around lamb. Close lid.
  3. Cook 25 minutes on high pressure. Once complete, allow pressure to release naturally with vent closed 15 minutes. Vent to release remaining pressure; remove lid. Remove lamb and vegetables from pressure cooker; set aside and keep warm.
  4. Set pressure cooker to saute. Cook, uncovered, until liquid is reduced by about half, about 5-10 minutes. In small bowl, mix water and cornstarch. Stir into pressure cooker with wire whisk. Cook, stirring occasionally, 1-2 minutes, or until thickened. Serve lamb and vegetables with gravy.

Slow Cooker Lamb Shank Stew

Serves: 4

  • 1          yellow onion, diced
  • 2          celery stalks, diced
  • 2          carrots, peeled and diced
  • 3          garlic cloves, crushed
  • 2          cups chicken stock
  • 1          cup peeled, seeded and chopped tomatoes
  • 2          tablespoons tomato paste
  • 1          teaspoon chopped fresh thyme
  • 1          bay leaf
  • 4          lamb shanks, external fat trimmed
  • salt, to taste
  • freshly ground pepper, to taste
  • 2          tablespoons olive oil
  • lemon juice
  1. In slow cooker, combine onion, celery, carrots, garlic, chicken stock, tomatoes, tomato paste, thyme and bay leaf; stir.
  2. Season lamb shanks with salt and pepper. In large saute pan over medium-high heat, warm olive oil until nearly smoking. Add shanks and brown on all sides, about 5 minutes. Transfer to slow cooker and cook on high 6 hours.
  3. Transfer lamb shanks to large serving dish. Remove bay leaf from cooking liquid. Using blender or stick blender, add generous squeeze of lemon juice to cooking liquid and puree until smooth. Pour some sauce over shanks. Serve with cauliflower puree and glass of Sequoia Grove Cabernet Sauvignon.
