Shepherd's Pie

Servings: 8-12

  • 1 pound ground beef
  • 6 medium potatoes, peeled
  • 2 teaspoons thyme, divided
  • salt, to taste
  • pepper, to taste
  • 1 tablespoon onion powder
  • 1 can (6 ounces) tomato paste
  • 1/2 cup beef broth
  • 1 tablespoon garlic powder
  • 1/4 cup heavy cream
  • 1 bag (12 ounces) frozen mixed veggies
  1. Heat oven to 350 F.
  2. In Dutch oven, brown ground beef and drain fat.
  3. Boil potatoes until fork tender and mash them. Add 1 teaspoon thyme, salt and pepper, to taste, and set aside.
  4. Place ground beef back in Dutch oven and mix in onion powder, tomato paste, beef broth, garlic powder, cream and remaining thyme. Season with salt and pepper, to taste. Mix in frozen veggies.
  5. Cover meat mixture with potatoes and bake 25-30 minutes.

Bacon Cheeseburger Casserole

Recipe adapted from “Julie’s Eats and Treats
Servings: 5

  • 1          pound lean ground turkey
  • 5          bacon strips, diced
  • 1/2       small onion, diced
  • 2          cloves garlic, minced
  • 3          tablespoons all-purpose flour
  • 1 1/2    cups milk
  • 1/2       tablespoon Worcestershire sauce
  • 1          dash hot sauce
  • 1 1/2    cups cheddar cheese, plus additional for topping (optional), divided
  • 1          bag (6-8 ounces) frozen mixed vegetables
  • 2          tablespoons sour cream
  • nonstick cooking spray
  • 1          bag (16 ounces) frozen tater tots
  • salt, to taste
  • pepper, to taste
  1. In large skillet over medium heat, brown ground turkey, bacon, onion and garlic until turkey is no longer pink. Sprinkle flour over turkey and stir well to combine. Stir in milk, Worcestershire sauce and hot sauce. Cook 2-3 minutes, or until thickened. Remove from heat and stir in cheddar cheese, frozen vegetables and sour cream.
  2. Spray slow cooker with nonstick spray. Place some tater tots in bottom of slow cooker. Pour meat gravy over tater tots. Arrange remaining tater tots on top.
  3. Cover and cook on low 3-3 1/2 hours. During last 10 minutes of cooking, sprinkle with extra cheddar cheese, if desired. Cover and finish cooking.

Sweet Chili Shrimp with Quinoa

  • 1 Minute Brown Rice & Quinoa Cup
  • 4 ounces (1/2 cup) cooked shrimp, peeled and deveined
  • 1/2 cup frozen Asian-style mixed vegetables, thawed
  • 2 tablespoons sweet chili sauce
  • 2 tablespoons thinly sliced green onions
  • 1 tablespoon chopped peanuts
  1. Heat rice and quinoa cup according to package directions. In small, microwave-safe bowl, combine shrimp and vegetables. Microwave on high 30 seconds.
  2. Stir in sweet chili sauce. Blend well.
  3. Serve shrimp mixture over rice topped with green onions and peanuts.

Whole Grain Sesame Chicken Stir-Fry

  4. Add chicken and vegetables; stir-fry 2 minutes, or until heated through. Fold in rice and quinoa, eggs and soy sauce.
