Smoky Chipotle Pecan Burrito Bowls

Pecan “Meat:”

  • 2 1⁄2     cups water
  • 1          cup pecans
  • 1⁄2         cup portobello mushrooms
  • 2          tablespoons taco seasoning
  • 2          tablespoons tamari sauce or soy sauce
  • 2          cloves garlic, minced
  • 1          tablespoon liquid smoke
  • 1          tablespoon vegan Worcestershire sauce
  • 1          tablespoon chipotle in adobo sauce

Pineapple Salsa:

  • 1          pineapple, diced
  • 2          Roma tomatoes, diced
  • 1-2       jalapenos, diced
  • 1          cup cilantro, finely chopped
  • 1          red onion, diced
  • 1⁄4        cup lime juice
  •            salt, to taste

Chipotle Crema:

  • 2          chipotle peppers in adobo sauce
  • 1          cup vegan mayo
  • 3          cloves garlic, minced
  • 2          teaspoons vinegar
  • 2          tablespoons plant-based milk
  • 1          teaspoon agave
  • 1⁄2         teaspoon salt
  1. To make pecan “meat:” In bowl of boiling water, soak pecans, covered, at least 30 minutes, or overnight in room temperature water for softer texture.
  2. Drain pecans and place in food processor with mushrooms. Pulse mixture to texture resembling meat crumbles. Avoid over-pulsing.
  3. In pan over medium heat, add pecan mixture, taco seasoning, tamari sauce, minced garlic, liquid smoke and vegan Worcestershire sauce. Cook 7-10 minutes then add chipotle in adobo. Cook 3 minutes.
  4. To make pineapple salsa: Combine pineapple, tomatoes, jalapenos, cilantro, red onion, lime juice and salt, to taste.
  5. To make chipotle crema: Combine chipotle peppers, vegan mayo, garlic, vinegar, milk, agave and salt.
  6. To assemble bowls, place pecan mixture in bowl followed by pineapple salsa and chipotle crema.

Vegan Pecan Al Pastor Tacos

Prep time: 35 minutes
Cook time: 10 minutes
Servings: 4-6

  •             Water
  • 2          pounds chopped pecans
  • 1          cup onion
  • 8          cloves garlic, minced
  • 8          dried guajillo peppers
  • 2          tablespoons oil
  •             salt, to taste
  •             pepper, to taste
  • 7          ounces (1 can) chipotle peppers in adobo

Toppings and Garnishes:

  • flour or corn tortillas (6 inches each)
  • cilantro
  • diced onion
  • lime
  • pineapple
  1. In bowl of boiling water, soak pecans, covered, at least 30 minutes, or overnight in room temperature water for softer texture.
  2. Drain pecans. In food processor, pulse pecans to meat-like crumbles. Do not overprocess to pecan butter.
  3. Finely chop onions, garlic and guajillo peppers.
  4. In skillet over medium-high heat, heat oil and saute onions until transparent, 2-3 minutes. Add garlic and cook 1 minute. Sprinkle with salt and pepper, to taste, and stir to combine.
  5. Add chipotle peppers in adobo and cook 1 minute. Add crumbled pecans and stir well to combine.
  6. Remove from heat and serve on tortillas.
  7. Serve with cilantro, onion, lime and pineapple.

Tomato Bruschetta Topping:

  • 1/4 pound fresh plum tomatoes, cored and diced
  • 2 tablespoons red onion, peeled and minced
  • 2 tablespoons fresh basil leaves, thinly sliced
  • 1 teaspoon olive oil
  • 1/4 teaspoon kosher salt
  • 1 pinch ground black pepper
  • 1 pinch fresh garlic, peeled and finely minced

Sandwiches:

  • 1 pound fresh portobello mushrooms, cleaned, stems removed, sliced thin
  • 3 tablespoons olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/4 cup mayonnaise
  • 2 1/2 tablespoons prepared basil pesto
  • 4 ciabatta rolls (4-by-4 inches), split in half
  • 4 ounces fresh mozzarella cheese, sliced small
  • 4 ounces tomato bruschetta topping
  • 2 ounces fresh baby arugula
  • 1/4 cup balsamic glaze
  1. To make tomato bruschetta topping: In bowl, combine tomatoes, onion, basil, olive oil, salt, pepper and garlic. Set aside.
  2. To make sandwiches: Preheat grill pan or grill to medium heat.
  3. Toss sliced mushrooms with olive oil, garlic powder, salt and pepper.
  4. Grill mushrooms until fork-tender, 3-4 minutes on each side. Let cool.
  5. Mix mayonnaise with pesto until combined. Spread 2 tablespoons pesto mayonnaise on cut sides of each roll.
  6. For each sandwich, layer 1/4 of grilled mushrooms, mozzarella slices, tomato bruschetta topping, arugula and balsamic glaze.
  7. Top with other roll halves. Cut diagonally in half to serve.

Apricot Brussels Sprouts Coleslaw

  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

  • 1 cup dried apricot, diced
  • 1 cup red onion, trimmed and diced
  1. Combine mustard, honey, sugar, salt and pepper. Mix well.
  2. Add Brussels sprouts, apricot and onion; toss to coat.

  • 2          packages (8 ounces each) button mushrooms
  • 1/4       teaspoon salt
  • 1/2       pound ground beef
  • 1/3       cup blue cheese
  • 1/4       cup whole-wheat breadcrumbs

  • 1/2       teaspoon steak seasoning blend
  • chives (optional)
  1. Preheat oven to 375 F. Remove stems from mushrooms; reserve. Season mushroom caps with salt; set aside. Mince stems to yield 1/2 cup; discard remaining stems.
  2. Combine ground beef, minced stems, blue cheese, breadcrumbs, green onions and steak seasoning. Spoon beef mixture evenly into mushrooms.
  3. Place stuffed mushrooms on rack in broiler pan. Bake 15-20 minutes. Sprinkle with chives, if desired.

  • 16 ounces cremini mushrooms, stems removed and gills scooped out

  • 6 large flour tortillas
  • 16 ounces pepper jack cheese, grated
  • 1 can (4 ounces) green chiles, drained

  1. Preheat oven to 350 F. Prepare sheet pan with nonstick cooking spray.

Polenta Rounds with Pico de Gallo Salsa and Crab

  • 1 tube (16 ounces) prepared polenta

  • salt, to taste
  • 8 ounces jumbo lump crabmeat

  1. Heat oven to 400 F.

Classic Beef Wellington

  • 1 teaspoon olive oil, divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper, divided
  • 1 chateaubriand tenderloin roast
  • 8 ounces mushrooms
  • 1 large shallot
  • 2 tablespoons dry red wine
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon dried thyme leaves
  • flour
  • 1 sheet puff pastry
  1. In large nonstick skillet over medium-high heat, heat 1/2 teaspoon oil until hot. Combine salt and 1/4 teaspoon pepper. Press evenly onto all surfaces of roast. Place roast in skillet; brown evenly. Remove roast from skillet.
  2. Heat oven to 425 F.
  3. In food processor, pulse mushrooms and shallot about 10 times until finely chopped. Do not overprocess.
  4. Place same skillet used for roast over medium-high heat and heat remaining oil until hot. Add mushrooms and shallot; cook 4-6 minutes until tender and all liquid is evaporated, stirring often. Add wine; cook 2-3 minutes until all liquid is evaporated. Stir in mustard, thyme and remaining pepper. Cook 2-3 minutes. Remove from skillet to medium bowl; cool.
  5. Line rimmed baking sheet with aluminum foil and place in oven. On lightly floured cutting board, unfold pastry dough. Roll pastry out to 12-by-9-inch rectangle; lay dough with shortest edge toward you. Spread mushroom mixture onto pastry dough, leaving 1/2-inch border around edges. Place roast in center of mushrooms. Fold pastry dough neatly around roast, stretching dough if necessary. Cut off excess pastry dough; press to seal overlapping edges.
  6. Remove baking sheet from oven and dust lightly with flour. Place pastry-wrapped roast, seam-side down, on baking sheet. Cut four (2-inch) vents in top of pastry.
  7. Bake 35-50 minutes, or until golden brown and instant-read thermometer inserted into center of roast registers 135 F for medium-rare or 150 F for medium. Transfer roast to carving board. Let stand 10 minutes. Temperature will rise about 10 F to reach 145 F for medium-rare or 160F for medium.
  8. Carve into slices and serve.

Top Sirloin Roast with Herb Garlic Peppercorn Crust

  • 1 center-cut sirloin beef roast (about 3 pounds)
  • 1 tablespoon olive oil

Seasoning:

  • 2 teaspoons kosher salt
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh thyme, chopped
  • 5 cloves garlic, minced
  • 2 teaspoons coarsely ground mixed peppercorns (black, white, green and pink)
  1. Preheat oven to 350 F.
  2. Rub roast with olive oil.
  3. To make seasoning: In small bowl, combine salt, parsley, thyme, garlic and mixed peppercorns; press evenly into beef roast.
  4. Place roast in roasting pan or baking dish with wire rack in bottom. Bake 40-60 minutes. Remove roast when meat thermometer registers 135 F for medium-rare or 150 F for medium.
  5. Transfer roast to carving board; tent loosely with aluminum foil. Let stand 10-15 minutes. Temperature will rise about 10 F to reach 145 F for medium-rare or 160 F for medium.
  6. Carve roast into slices by cutting against grain.

Holiday Mini Beef Meatball Skewers with Cranberry Barbecue Sauce

  • 1 pound ground beef
  • 1 cup fresh zucchini, grated
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 small yellow onion, diced 1/2 inch
  • 2 red bell peppers, diced 1/2 inch
  • 2 green bell peppers, diced 1/2 inch
  • 12 skewers (6 inches)

Cranberry Barbecue Sauce:

  • 1 can (16 ounces) whole berry cranberry sauce
  • 3 tablespoons barbecue sauce
  1. Preheat oven to 400 F.
  2. In medium bowl, lightly mix ground beef, zucchini, egg, salt and pepper until thoroughly combined. Shape into 24 1-inch meatballs. Alternately thread meatballs, onions, red peppers and green peppers onto skewers. Place skewers on shallow-rimmed baking sheet.
  3. Bake 22-25 minutes, or until instant-read thermometer inserted into center of meatball registers 160 F.
  4. To make cranberry barbecue sauce: In medium saucepan, combine cranberry sauce and barbecue sauce; simmer 5 minutes, or until flavors blend.
  5. Drizzle sauce over skewers or serve as dipping sauce.

  • 3 1/2    ounces hoisin sauce
  • 2          tablespoons sesame oil
  • 1          tablespoon garlic chili paste
  • 2          tablespoons black and white sesame seeds

Breadcrumbs:

  • 1          tablespoon Violife Plant Butter
  • 1/2       cup panko breadcrumbs
  • 1          tablespoon fresh rosemary
  • 1          teaspoon dried garlic

Pasta:

  • 17 1/2 ounces mushrooms, roughly sliced
  • 2          tablespoons olive oil
  • 10 1/2 ounces fresh spinach
  • 1          package Violife Just Like Cream Cheese Original
  • 17 1/2 ounces whole-wheat spaghetti
  • 1          teaspoon red pepper flakes
  • 3 1/2    ounces Violife Just Like Parmesan Wedge, grated
  1. To make marinade: Whisk olive oil, hoisin sauce, sesame oil, garlic chili paste, sesame seeds and harissa paste. Set aside.
  2. To make breadcrumbs: In frying pan, heat plant butter. Add breadcrumbs, rosemary and garlic; saute 3-5 minutes until golden. Remove from heat and set aside.
  3. To make pasta: Saute mushrooms in olive oil 5-7 minutes until golden. Add spinach, 2-3 minutes, and pour over marinade. Add cream cheese and whisk until creamy.
  4. Boil pasta according to package instructions. Sieve and reserve 1/2 cup pasta water, adding to pasta sauce. Whisk constantly until combined.
  5. Using tongs, make small nests in pasta, place on plates and pour creamy mushroom sauce on top.
  6. Sprinkle with breadcrumbs, red pepper flakes and grated Parmesan.

Pomegranate Cheesecake

Prep time: 5 hours, 30 minutes
Servings: 6 individual cheesecakes

Crust:

  • 10 1/2 ounces vegan gingerbread biscuits
  • 6          ounces plant-based butter
  • 1/4       teaspoon salt

Cheesecake:

  • 0.07     ounces agar-agar
  • 3 1/2    ounces canned coconut milk
  • 2          packages Violife Just Like Cream Cheese Original
  • 2          tablespoons maple syrup
  • 1          tablespoon lemon juice
  • 1          teaspoon vanilla essence

Pomegranate Syrup:

  • 10        fluid ounces pomegranate juice, divided
  • 3          tablespoons cornstarch
  • pomegranate seeds, for garnish
  1. To make crust: In blender, blitz gingerbread biscuits until they form powder. Add butter and salt; blitz again until combined.
  2. Place in six individual greased tart tins and smooth over base with back of spoon. Refrigerate to set.
  3. To make cheesecake: In small pot over low heat, dissolve agar-agar in coconut milk, whisking constantly. Once boiling, remove from heat and set aside.
  4. In large bowl, mix cream cheese, maple syrup, lemon juice and vanilla essence; slowly pour over warm coconut milk, whisking until combined and creamy. Divide evenly among tart tins and refrigerate 4 hours.
  5. To make pomegranate syrup: In small bowl, combine 3 fluid ounces pomegranate juice with cornstarch. In small pot, boil remaining pomegranate juice 5 minutes. Pour in cornstarch and pomegranate mixture; whisk 5 minutes until syrup forms. Cool.
  6. When cheesecakes have set, remove from tins and serve on plates. Pour pomegranate syrup on top and garnish with pomegranate seeds.

Blended Crunchy Mushroom Wraps

  • 2          tablespoons olive oil
  • 1/2       cup finely chopped yellow onion
  • 8          ounces mushrooms, such as white button, crimini or portabella, finely chopped
  • 1/2       pound lean ground beef
  • 1          tablespoon taco seasoning
  • 6          burrito-size flour tortillas (about 10 inches each)
  • 1/3       cup nacho cheese sauce
  • 6          tostada shells
  • sour cream
  • 6          mini soft taco-size flour tortillas (about 4 1/2 inches each)
  • shredded lettuce
  • diced tomatoes
  • shredded Mexican cheese blend
  • nonstick cooking spray
  1. In large skillet over medium-high heat, heat olive oil. Cook onions 1-2 minutes until translucent. Add mushrooms and ground beef. Cook about 5 minutes, or until beef is no longer pink. Stir in taco seasoning. Cook 2-3 minutes. Set aside.
  2. Lay one large flour tortilla on flat surface. Spread 2 tablespoons mushroom-meat mixture on center of tortilla.
  3. Drizzle dollop of nacho cheese over mushroom-meat mixture. Top meat with one tostada shell then spread thin layer of sour cream over tostada shell.
  4. Top with shredded lettuce, diced tomatoes and shredded Mexican cheese then one small tortilla. Make sure not to overstuff so wrap doesn’t break apart while cooking.
  5. Fold edges of large tortilla toward center until completely covered.
  6. In hot skillet, generously spray with nonstick cooking spray. Carefully place wrap seam side down on skillet. Cook 2-3 minutes until golden brown.
  7. Flip and cook other side until golden brown. Repeat with remaining mushroom-meat mixture, tortillas and toppings.
  8. Cut wraps half and serve.

Italian Sausage Spinach and Tomato Rigatoni

Prep time: 10 minutes
Cook time: 20 minutes

  • Water
  • 1/2 box rigatoni pasta
  • 1 tablespoon olive oil
  • 1/2 cup onions, chopped
  • 4 cloves garlic, minced
  • 1/2 cup mushrooms, sliced
  • 16 ounces sweet Italian sausage
  • 1 jar Bertolli d'Italia Marinara Sauce
  • 2 cups fresh baby spinach
  • salt, to taste
  • pepper, to taste
  • Parmesan cheese, for garnish
  1. Bring large stockpot of water to boil. Boil rigatoni pasta until al dente. Drain and set aside.
  2. In saute pan over medium heat, add olive oil. Add onions, garlic and mushrooms. Saute until vegetables start to brown. Add Italian sausage and cook until done, breaking into small pieces. Add sauce and bring to low boil.
  3. Add baby spinach. Cook until spinach is mostly wilted. Season with salt and pepper, to taste.
  4. Add drained pasta to pan with sausage and sauce. Toss and divide between plates. Garnish with Parmesan cheese.

Red Wine Braised Beef Short Rib Ragu

Prep time: 25 minutes
Cook time: 3 hours

  • 2 tablespoons olive oil
  • 4 pounds bone-in beef short ribs
  • salt, to taste
  • ground black pepper, to taste
  • 1 stalk celery, chopped
  • 1 large carrot, peeled and finely diced
  • 1 small onion, chopped
  • 8 cloves garlic, finely chopped
  • 4 tablespoons tomato paste
  • 1 cup red wine
  • 4 sprigs fresh rosemary
  • 2 sprigs fresh sage leaves, chopped
  • 8 sprigs fresh thyme
  • 2 bay leaves
  • 1 jar Bertolli d'Italia Marinara Sauce
  • 2 cups beef bone broth
  • water
  • 24 ounces pappardelle pasta or preferred pasta
  • freshly grated Parmesan cheese, for garnish
  1. Heat oven to 350 F.
  2. In 5-quart Dutch oven, heat olive oil over medium heat. Season short ribs with salt and ground black pepper, to taste. Place one layer of short ribs in pot. Set remaining ribs aside.
  3. Cook ribs 3-4 minutes per side until browned. Transfer to plate and set aside. Repeat with remaining short ribs.
  4. Add celery, carrots and onion to pot used to brown ribs. Stir and cook until vegetables are browned, about 15 minutes.
  5. Add garlic and stir 1-2 minutes. Add tomato paste. Cook 2-3 minutes.
  6. Carefully pour red wine into pot.
  7. Stir and scrape any browned bits from bottom of pot. Cook 3-4 minutes until wine is almost completely absorbed into vegetables.
  8. Add rosemary, sage, thyme and bay leaves to pot. Add sauce, bone broth and browned ribs. Cover pot and place in oven 2 1/2-3 hours, or until ribs are fall-apart tender.
  9. Remove pot from oven. Transfer ribs to plate or cutting board. Remove and discard herb stems and bay leaves. Remove bones from ribs then shred meat into bite-sized pieces using two forks or tongs. Return shredded ribs to pot with ragu. Stir to combine. Set aside.
  10. Bring large stockpot of water to boil. Boil pappardelle pasta until al dente. Add drained pasta to pot with beef ragu and toss until combined.
  11. Garnish with freshly grated Parmesan cheese.

Creamy Italian Garlic Chicken Pasta

Prep time: 10 minutes
Cook time: 20 minutes

  • 2 tablespoons olive oil
  • 2 large chicken breasts
  • 1 teaspoon Italian seasoning
  • salt, to taste
  • pepper, to taste
  • 4 cloves garlic, minced
  • 1/4 cup onions, chopped
  • 1/4 cup sun-dried tomatoes, cut into strips
  • 2 tablespoons capers, drained
  • 6 fresh basil leaves, sliced
  • 1 jar Bertolli d'Italia Creamy Rosa Sauce
  • 1/2 cup heavy cream
  • water
  • 1/2 box Casarecce or preferred pasta
  • parsley, for garnish
  • Parmesan cheese, for garnish
  1. In saute pan over medium heat, add olive oil. Season chicken with Italian seasoning and salt and pepper to taste. Sear chicken breasts on both sides until browned. Remove from pan and set aside.
  2. Add garlic and onions to hot pan. Cook until starting to brown. Add sun-dried tomatoes, capers and basil; stir. Add sauce and heavy cream; cook until mixture starts boiling.
  3. Bring large stockpot of water to boil. Boil Casarecce pasta until al dente. Divide pasta between two plates. Place one chicken breast over pasta on each plate and top with additional sauce, parsley and Parmesan cheese.

Rum and Cola Holiday Ham

Ham:

  • 1 Omaha Steaks Spiral-Sliced Ham (8 pounds)

Glaze:

  • 1 cup cherry fruit spread
  • 3/4 cup dark spiced rum
  • 3/4 cup cola
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon kosher salt
  1. To make ham: Thaw frozen ham in refrigerator 24-48 hours.
  2. Remove from refrigerator and let ham come to room temperature, about 30-45 minutes.
  3. Preheat oven to 325 F. Remove ham from foil and film. Return ham to foil wrapping and place in oven-safe roasting pan. Roll foil down leaving 2 inches of foil around bottom of ham.
  4. Place roasting pan with ham in oven on lower rack and heat uncovered 60-75 minutes, until ham starts to brown. While ham cooks, make glaze.
  5. To make glaze: In medium saucepot, whisk fruit spread, rum, cola, Worcestershire sauce, Dijon mustard and salt until well incorporated. Bring to boil then reduce heat to medium. Simmer over medium heat 10 minutes then remove from heat. Cool to room temperature.
  6. During last 15 minutes of cooking, glaze ham every 5 minutes.

Dijon-Herb Prime Rib Roast with Garlic Butter Mushrooms

Dijon-Herb Rub:

  • 1/4 cup minced fresh Italian parsley
  • 1/4 cup minced fresh oregano
  • 1/4 cup minced fresh thyme leaves
  • 1/4 cup minced fresh rosemary leaves
  • 3 fresh garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1/2 cup canola oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon smoked paprika

Prime Rib Roast:

  • 1 Omaha Steaks Boneless Heart of Prime Rib Roast (4 pounds), thawed
  • kosher salt, to taste
  • ground black pepper, to taste
  • 1/4 cup canola oil

Garlic Butter Mushrooms:

  • 6 tablespoons olive oil
  • 1/2 cup small diced yellow onion
  • 4 fresh garlic cloves, minced
  • 1 pound button mushrooms, cleaned and quartered
  • 1 pinch kosher salt, plus additional, to taste, divided
  • 1 pinch ground black pepper, plus additional, to taste, divided
  • 1/2 cup chicken stock
  • 2 tablespoons unsalted butter
  • 1/4 cup finely chopped Italian parsley
  1. To make rub: In medium bowl, whisk parsley, oregano, thyme, rosemary, garlic, Dijon mustard, oil, salt, black pepper and paprika until well incorporated.
  2. To make prime rib roast: Pat prime rib roast dry on all sides with paper towels. Season generously with salt and pepper, to taste. Allow roast to come to room temperature about 30 minutes.
  3. Rub Dijon herb rub all over prime rib roast and allow to stand 10 minutes.
  4. Preheat oven to 250 F.
  5. In large cast-iron pan, warm oil over medium-high heat.
  6. Sear roast on all sides until golden brown, 2-3 minutes per side.
  7. Place seared prime rib on wire rack-lined sheet pan and place in oven.
  8. Cook until internal temperature is 10 F below desired cooking doneness.
  9. Rest 15-20 minutes before slicing.
  10. To make mushrooms: In large pan, warm olive oil over medium-high heat. Add diced onions and saute about 1 minute.
  11. Add minced garlic and lightly saute until fragrant, about 20 seconds.
  12. Add mushrooms and pinch of salt and ground pepper to pan. Saute 3-4 minutes, or until mushrooms are tender.
  13. Add chicken stock and reduce to one-third in volume, 3-4 minutes.
  14. Add butter and parsley to pan and saute until butter is melted and incorporated. Immediately remove from heat and season, to taste, with salt and pepper.
  15. Serve mushrooms with prime rib roast.

Suya-Dusted Filet Mignon with "Red Rice" Risotto

Suya Dust:

  • 2 cups roasted cashews
  • 1 tablespoon chicken bouillon
  • 1 tablespoon, plus 1 teaspoon, smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon ground black pepper
  • 2 teaspoons. ground ginger
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder

"Red Rice" Risotto:

  • 3 tablespoons canola oil
  • 1/2 cup diced yellow onion
  • 3 fresh garlic cloves, smashed
  • 1/2 cup diced red bell pepper
  • 1 tablespoon tomato paste
  • 1 large beefsteak tomato (about 1/2 pound), chopped
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon smoked paprika
  • 1 teaspoon kosher salt, plus additional, to taste, divided (optional)
  • 1/2 teaspoon ground black pepper, plus additional, to taste, divided (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 1/2 cups Arborio rice
  • 4 cups warmed chicken stock, divided
  • 1/2 cup finely chopped Italian parsley
  • 1 cup freshly shredded Parmesan cheese

Filet Mignon:

  • 4 Omaha Steaks Butcher's Cut Filet Mignons (6 ounces each)
  • kosher salt
  • ground black pepper
  • 4 tablespoons canola oil
  • 2 tablespoons unsalted butter
  • 1 clove garlic
  • 1 thyme sprig
  1. To make suya dust: In food processor, blend cashews, chicken bouillon, paprika, cayenne pepper, bell pepper, black pepper, ginger, garlic powder and onion powder into fine powder.
  2. To make "red rice" risotto: In medium saucepan, warm canola oil over medium-high heat. Add onions, garlic and red bell pepper, sauteing until lightly caramelized, about 1 minute.
  3. Add tomato paste to pan and saute until fragrant, about 1 minute. Add chopped tomato, Worcestershire sauce, paprika, 1 teaspoon kosher salt and 1/2 teaspoon ground black pepper; continue sauteing until tomato starts to break down and soften, 3-4 minutes. Reduce heat to simmer and cook 3-4 minutes.
  4. Remove from heat and finely blend in food processor. Set aside.
  5. In separate medium saucepan, warm olive oil and butter over medium-high heat.
  6. Add Arborio rice and stir until slightly nutty and translucent, about 1 minute.
  7. Add pureed tomato-pepper mixture and 1 cup chicken stock; bring to boil then reduce heat to medium.
  8. Add 1 cup stock each time Arborio rice absorbs almost all broth. Continuously stir risotto each time stock is added to rice. Keep adding stock until risotto is al dente and still viscous then stir in parsley and Parmesan cheese. Season, to taste, with salt and pepper, if desired.
  9. To make filet mignon: Pat steaks dry with paper towels and liberally season with salt and ground black pepper on both sides.
  10. In large cast-iron skillet, warm canola oil over medium-high heat.
  11. Place filets in skillet and sear 3 minutes.
  12. Flip steaks and add butter, garlic clove and thyme. Baste steaks with butter and allow filets to finish cooking, 3-4 minutes for medium-rare doneness.
  13. Rest filets 7-8 minutes. Serve over "red rice" risotto and sprinkle suya dust over filets.

  • 2 1/2    cups brown mushrooms, sliced
  • 5          garlic cloves, smashed
  • 1          tablespoon parsley
  • 1          teaspoon Italian seasoning
  • 1/2       cup chicken broth
  • 1 1/2    cups heavy cream
  • fresh parsley, for garnish
  1. In small bowl, whisk chili powder, garlic powder, salt and pepper until combined.
  2. Pat pork chops dry. Season generously with spice mix. Set aside.
  3. In skillet, add olive oil and butter. Add pork chops; sear 3-5 minutes per side. Transfer to plate.
  4. To make mushroom sauce: In same skillet, add mushrooms. Stir fry until golden brown. Add garlic, parsley and Italian seasoning. Stir fry 2 minutes. Add broth and heavy cream. Stir to combine. Simmer 5 minutes until slightly thickened.
  5. Return pork chops to sauce. Simmer 2-3 minutes until pork chops are cooked through. Garnish with fresh parsley and serve.
