  • 32        ounces SimplyNature Vegetable Broth
  • 3/4       teaspoon Stonemill Essentials Iodized Salt
  • 1/4       teaspoon Stonemill Essentials Ground Black Pepper
  • 1          tablespoon Stonemill Essentials Paprika
  • 1          teaspoon Stonemill Essentials Ground Cumin
  • 1          teaspoon Stonemill Essentials Garlic Powder

  • 1          cup SimplyNature Organic Tri-Color Quinoa, rinsed
  • 1          cup dry lentils, rinsed

  2. Remove lid and add corn starch. Stir 5-8 minutes until lentils are cooked through.
  3. Heat medium pan over high heat. Heat tortillas 1 minute on each side.
  4. Divide lentil mixture evenly among tortillas. Top with red onion, avocado and fresco cheese. Serve each with lime wedge.

Fact: Canned foods provide important nutrients that deliver on the USDA’s Dietary Guidelines, as all forms of fruits, vegetables, beans, meats and seafood – whether fresh, frozen, canned or dried – are recommended to help ensure a proper balance of nutrients. In fact, according to a survey conducted by the Canned Food Alliance, 95 percent of health professionals surveyed agree that all forms of food, including canned, can help consumers meet the USDA’s MyPlate fruit and vegetable recommendations.

Myth: Canned foods aren’t as nutritious as fresh or frozen foods.
Fact: Research published in the “Journal of the Science of Food and Agriculture” shows canned foods can be as nutritious, and in some cases more nutritious, than fresh and frozen counterparts.

Myth: Canned foods are filled with preservatives.
Fact: Because canned foods have already been cooked, preservatives aren’t necessary to prevent spoilage. The canning process itself preserves the food.

Myth: Canned foods are highly processed.
Fact: Once canned fruits and vegetables are picked and packed near peak ripeness, they’re cooked quickly at high temperatures to lock in nutrients, similar to the home-canning process.

Myth: Canned foods are high in sodium.
Fact: Salt and sodium aren’t required for preservation of canned foods, and low- and no-sodium canned food options are available. Additionally, draining and rinsing canned foods can further reduce sodium by up to 41 percent.

Chipotle Pumpkin Black Bean Chili

Cook time: 60-70 minutes
Servings: 4-6

  • 2          tablespoons vegetable oil
  • 1          onion, chopped
  • 1          rib celery, chopped
  • 2          jalapenos, seeded and chopped
  • 3          cloves garlic, minced
  • 1          teaspoon ground cumin
  • 1          teaspoon dried oregano
  • 1/4       teaspoon ground pepper
  • 2          tablespoons tomato paste
  • 1          can (28 ounces) no-salt added canned diced tomatoes
  • 1          cup canned pureed pumpkin
  • 1          cup no-salt-added canned chicken broth
  • 1          can no-salt-added canned black beans, drained and rinsed
  • 1          can (12 1/2 ounces) no-salt-added chicken, drained
  • 1          chipotle in adobo sauce, finely chopped
  • 1          teaspoon brown sugar
  • salt, to taste
  • 2          green onions, finely chopped
  • lime wedges, for serving
  1. In Dutch oven or large saucepan over medium heat, heat oil. Add onions, celery, jalapenos, garlic, cumin, oregano and pepper. Cook, stirring, 5-8 minutes, or until vegetables soften. Add tomato paste and cook 2 minutes.
  2. Add tomatoes, pumpkin puree, chicken broth, black beans, chicken, chipotles and brown sugar. Bring to boil. Reduce heat to low. Simmer, stirring occasionally, 1 hour, or until chili thickens. Add salt, to taste.
  3. Garnish with green onions and serve with lime wedges.

Tip: Add preferred canned beans, such as white kidney beans, pinto or Romano beans, in place of or in addition to black beans.

  1. Remove from oven and sear roast in a broiler, grill or hot pan to create the crust.

Horseradish Cream

Active time: 30 minutes

  • 1/2       cup mayonnaise
  • 3          tablespoons prepared horseradish
  • 1          tablespoon white vinegar, plus 1 teaspoon
  • 1          teaspoon kosher salt   
  • 1/8       teaspoon cayenne pepper
  • 1/8       teaspoon black pepper
  • 1/2       cup heavy whipping cream
  1. In medium mixing bowl, whisk together mayonnaise, horseradish, vinegar, salt, cayenne and black pepper. Whip cream to soft peaks using stand mixer. Gently fold into mayonnaise mixture. Chill until ready to serve.

Reverse-Seared Prime Rib Roast

Active time: 30 minutes
Total time: 4 days

  • 4          pound Omaha Steaks Bone-In Frenched Prime Rib Roast
  • any variety Omaha Steaks Rub
  1. Thaw roast completely in refrigerator before cooking; allow 48-72 hours. Season roast with rub 12-18 hours before cooking and leave uncovered in refrigerator overnight.
  2. When ready to cook, heat oven to 225° F. Place roast on elevated rack in roasting pan. Roast 3 hours and 15 minutes, or to internal temperature of 120-125° F. Let roast rest 30-45 minutes.
  3. Broil on high 2 inches from broiler, 4 minutes on one side, 2 minutes on other side, or until brown crust uniformly covers roast.

Tip: For easier carving, trim roast from bones prior to cooking. Stand rib roast on end so ribs are pointed up. Using sharp knife, cut along bone, being careful not to cut into roast. Tie roast up with butcher’s twine to hold it together while cooking.

Figgie Onion Jam

Active time: 30 minutes
Total time: 1 hour

  • 2          tablespoons unsalted butter
  • 1          medium red onion, peeled and diced into 1/4-inch pieces
  • 1          cup dried black Mission figs, stems removed
  • 1          cup water, divided
  • 1/2       cup balsamic vinegar, divided
  • 1/2       cup sugar
  • 3/4       teaspoon salt
  • 1/4       teaspoon black pepper
  • 1/4       teaspoon vanilla extract
  1. In 4-cup sauce pot, melt butter over low heat. Add onions. Cover and cook on low 15 minutes until onions have softened. Add figs, 1/4 cup water, 1/4 cup vinegar, sugar and salt. Cover and cook on low another 15 minutes until figs have softened.
  2. Remove pot from heat and add black pepper and vanilla extract. Pour into blender or use immersion blender to process until smooth. Add remaining water and vinegar to blender for smoother jam or leave as-is for a more chunky texture.

Slow Cooker Lamb Shank Stew

Serves: 4

  • 1          yellow onion, diced
  • 2          celery stalks, diced
  • 2          carrots, peeled and diced
  • 3          garlic cloves, crushed
  • 2          cups chicken stock
  • 1          cup peeled, seeded and chopped tomatoes
  • 2          tablespoons tomato paste
  • 1          teaspoon chopped fresh thyme
  • 1          bay leaf
  • 4          lamb shanks, external fat trimmed
  • salt, to taste
  • freshly ground pepper, to taste
  • 2          tablespoons olive oil
  • lemon juice
  1. In slow cooker, combine onion, celery, carrots, garlic, chicken stock, tomatoes, tomato paste, thyme and bay leaf; stir.
  2. Season lamb shanks with salt and pepper. In large saute pan over medium-high heat, warm olive oil until nearly smoking. Add shanks and brown on all sides, about 5 minutes. Transfer to slow cooker and cook on high 6 hours.
  3. Transfer lamb shanks to large serving dish. Remove bay leaf from cooking liquid. Using blender or stick blender, add generous squeeze of lemon juice to cooking liquid and puree until smooth. Pour some sauce over shanks. Serve with cauliflower puree and glass of Sequoia Grove Cabernet Sauvignon.

Slow Cooked "Pulled" Chicken Tacos

Prep time: 5 minutes
Cook time: 2 hours
Servings: 5

  • 1 1/2 pounds boneless, skinless chicken thighs
  • 1 bottle (8 ounces) Ortega Chipotle Taco Sauce
  • 1/2 cup chicken stock
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 package (10 shells) Ortega Good Grains White Corn with Chia Taco Shells, warmed
    taco toppings
  1. In medium pan, combine chicken, taco sauce, chicken stock, salt and pepper, and cook on low, covered, approximately 2 hours, or until internal temperature of chicken reaches 165° F. Remove chicken from pan and shred using two forks.
  2. Turn heat to medium-high and reduce cooking liquid into thick sauce, cooking 3-5 minutes and stirring occasionally.
  3. Remove from heat and combine sauce with shredded chicken.
  4. Serve in taco shells with desired taco toppings.

Baja Chicken Pizza

Prep time: 15 minutes
Cook time: 15 minutes
Servings: 5

  • 4 boneless, skinless chicken breasts, about 1 pound
  • 1 bottle (8 ounces) Ortega Green Taco Sauce
  • 1 can Ortega Vegetarian Refried Beans
  • 3/4 cup Ortega Homestyle Salsa (any variety)
  • 1 Mama Mary's prepared pizza crust
  • 1 red bell pepper, diced
  • 1 can (4 ounces) Ortega Diced Green Chiles
  • 1 bag (8 ounces) Mexican-style shredded cheese
  • 1 bottle (8 ounces) Ortega Original Taco Sauce (any variety)
  • 1 bag Ortega Crispy Onion Taco Toppers
  1. In large bowl or re-sealable plastic bag, combine chicken breasts with green taco sauce. Stir or shake to coat. Marinate at least 30 minutes or up to 2 hours.
  2. Heat oven to 350° F.
  3. Bake chicken 15-20 minutes, or until internal temperature reaches 165° F.
  4. Let chicken cool 10 minutes then cut into small cubes.
  5. In medium bowl, combine refried beans and salsa.
  6. Transfer prepared pizza crust to baking sheet.
  7. Spread bean mixture over dough, leaving 1/4 inch at edges for crust.
  8. Top with peppers, green chiles, chicken and cheese. Bake 10-15 minutes, or until crust is golden brown and cheese is melted.
  9. Top with taco sauce and crispy onion toppers then serve.

Mexican Style "Totchos"

Prep time: 15 minutes
Cook time: 25 minutes
Servings: 5

  • 1 package (32 ounces) tater tots
  • 1 1/2 pounds ground beef
  • 1 packet Ortega Taco Seasoning
  • 1cup water
  • 16 ounces shredded cheddar cheese
  • 2 medium tomatoes, diced
  • 1 container (16 ounces) sour cream
  • 1 bag Ortega Crispy Jalapeno
  • Taco Toppers
  1. Prepare tater tots according to package directions.
  2. Heat medium skillet over medium heat. Cook ground beef 4-5 minutes until browned, using wooden spoon to break into small pieces. Add taco seasoning and water. Cook until water evaporates and sauce is thickened.
  3. Top hot tater tots with cooked ground beef and cheese, and broil in oven 5 minutes.
  4. Top with tomatoes, sour cream and crispy jalapeno toppers, and serve immediately.

Smoked Sausage Links with Bacon and Onion Marmalade

Prep time: 10 minutes
Total time: 1 hour, 10 minutes
Servings: 6

  • 2-3 strips bacon
  • 1 tablespoon mustard seeds
  • 1/2 cup apple cider vinegar
  • 1 1/2 pounds (about 6 onions) Vidalia onions, diced
  • 1/2 cup light brown sugar
  • 1/4 cup cane syrup
  • 1 package Eckrich Smoked Sausage Links (bun-length)
  • 6 hot dog buns
  1. Heat oven to 350° F.
  2. Line baking sheet with parchment paper and lay strips of bacon flat. Cook until crispy, about 20-25 minutes. Chop bacon into small pieces and set aside.
  3. In dry pot over medium heat, toast mustard seeds until slightly browned.
  4. Add bacon, vinegar, onions, brown sugar and cane syrup to pot. Cover, stirring occasionally to prevent burning. Cook about 20 minutes at medium-high heat. Remove pot cover and reduce to medium heat. Cook until liquid is reduced and onions are dark in color, about 50 minutes.
  5. Oil grill and bring to medium heat. Grill sausage 12 minutes, or until heated through.
  6. Place smoked sausage in hot dog bun and cover evenly with marmalade.

Note: Marmalade can be made in advance for easier dinner preparation and can be kept up to 2 weeks in a refrigerator or 3 months in a freezer.

Grilled Kabobs with Smoked Sausage and Veggies

Prep time: 15 minutes
Total time: 25 minutes
Servings: 6

  • 6 wooden skewers
  • nonstick cooking spray
  • 1 package Eckrich Original Smoked Sausage (rope)
  • 1 medium zucchini
  • 2 large red bell peppers
  • 2 large yellow bell peppers
  • 1 large red onion
  1. Soak skewers in water 1 hour. Spray grill and heat to medium.
  2. Cut smoked sausage diagonally into 1-inch pieces. Slice zucchini, bell peppers and onion into 1/2-inch pieces.
  3. Thread smoked sausage, peppers, zucchini and onion onto skewers.
  4. Grill kabobs until smoked sausage is hot and vegetables are tender, about 5 minutes per side. Remove from grill and serve immediately.

Make-Ahead Freezable Breakfast Burritos

  • 2 teaspoons olive oil, divided
  • 16 ounces lean turkey breakfast sausage
  • 1 medium red bell pepper, finely chopped
  • 1 small Vidalia onion, finely chopped
  • 1 large tomato, finely chopped
  • 12 large eggs
  • 1/2 teaspoon pepper
  • 1 cup low-fat shredded cheddar cheese
  • 14 whole-wheat tortillas (8 inches each)
  1. In nonstick skillet over medium heat, heat 1 teaspoon oil. Add sausage and cook 5-8 minutes, or until cooked through. Transfer to plate and set aside.
  2. In same skillet, add remaining oil, bell peppers, onions and tomatoes, and cook 3-5 minutes, or until softened. Add tomatoes and cook 2 minutes.
  3. In large bowl, scramble eggs and pepper. Add to pan and cook, stirring regularly, 3-4 minutes, or until eggs are set. Remove from heat and mix in sausage and cheese. Let cool.
  4. Fill tortillas with 1/2 cup egg mixture, roll into burrito and lay seam-side down on parchment-lined baking sheet. Freeze 1 hour. Transfer to freezer-safe re-sealable bag and return to freezer.
  5. To reheat burritos, remove from freezer, wrap in paper towel and microwave on high 1-2 minutes.

One-Pot Healthy Turkey Skillet

  • 1 tablespoon extra-virgin olive oil
  • 1 pound ground turkey
  • 1 medium green bell pepper
  • 1 medium sweet onion
  • 3 Roma tomatoes
  • 8 ounces whole-wheat elbow macaroni, cooked according to package directions
  • 1 can (15 1/2 ounces) kidney beans, rinsed and drained
  • 2 teaspoons cumin
  • 2 tablespoons chili powder
  • 1/4 teaspoon salt
  1. In nonstick skillet over medium-high heat, heat oil. Add turkey and cook 10 minutes, or until no longer pink.
  2. In food processor, pulse bell pepper, onion and tomatoes until chunky.
  3. Add vegetable mixture, noodles, beans, cumin, chili powder and salt to skillet and let simmer 15 minutes.

Summer Pizza Snack

Servings: 12

  • 1 tube (8 ounces) crescent rolls
  • 1 tub (8 ounces) low-fat cream cheese
  • 1/4 cup light mayonnaise
  • 1/4 teaspoon garlic powder
  • 1 cup shredded part-skim mozzarella cheese
  • 3/4 cup sliced cherry tomatoes
  • 1/2 cup sliced black olives
  • 1/2 cup chopped broccoli florets
  • 1/2 cup chopped cucumber
  1. Heat oven to 375° F. In 9-by-13-inch baking pan, spread out crescent roll dough. Seal seams together to form one large rectangle across bottom of pan. Bake 10-12 minutes, or until lightly browned. Cool on rack.
  2. In small bowl, mix together cream cheese, mayonnaise and garlic powder. Spread evenly over entire cooled crust. Top with mozzarella, tomatoes, olives, broccoli and cucumber. Cut into 12 squares and serve.

Beef Burrito with Pepper Jack Cheese and Black Beans

Total time: 9 minutes
Servings: 6

  • 1/2 pound ground beef sirloin
  • 2 teaspoons minced garlic
  • 1 cup chunky salsa, divided
  • 2 cups cooked brown or white rice
  • 6 whole-wheat tortillas (9 inches each)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (11 ounces) corn kernels, drained
  • 2 cups shredded pepper jack cheese
  • sliced green onion, including green tops
  1. In medium, nonstick skillet, brown ground beef and garlic over medium heat (break beef mixture up into smaller chunks with spatula). Drain fat and stir in 1/2 cup salsa; set aside.
  2. Spread 1/3 cup rice on center of tortilla, leaving 1/2-inch border. Scatter about 2 tablespoons beans and 1 1/2 tablespoons corn over rice. Spread 1/3 cup beef mixture and 1/4 cup cheese over corn. Top with 2 teaspoons salsa and a few slices green onion. Fold in two opposite edges of tortilla 1 inch each and roll up. Place seam-side down on microwave-safe dish.
  3. Repeat with remaining tortillas. Place burritos in microwave oven and heat 1 minute, or until heated through. Serve with remaining salsa.

  • 2 cups cubed cooked chicken OR cooked turkey
  • 1 can (about 15 ounces) cream-style whole kernel corn
  • 3/4 cup Pace Picante sauce
  • 1/2 cup sliced pitted ripe olives
  • 1/2 cup shredded cheddar cheese
  • Chopped green pepper OR red pepper
  • Tortilla chips
  1. Layer crumbled chips, chicken, corn and picante sauce in 1-quart casserole. Top with olives and cheese.
  2. Bake at 350°F for 40 minutes or until hot. Top with peppers. Serve with chips.

Chipotle Chili

Prep: 15 minutes
Cook: 8 hours
Makes: 8

  • 1 jar (16 ounces) Pace Chunky salsa
  • 1 cup water
  • 2 tablespoons chili powder
  • 1 teaspoon ground chipotle chile pepper
  • 1 large onion, chopped (about 1 cup)
  • 2 pounds beef for stew, cut into 1/2-inch pieces
  • 1 can (about 19 ounces) red kidney beans, rinsed and drained
  • Shredded cheddar cheese (optional)
  • Sour cream (optional)
  1. Stir salsa, water, chili powder, chipotle pepper, onion, beef and beans in a 3 1/2-quart slow cooker.
  2. Cover and cook on LOW for 8 to 9 hours* or until the beef is fork-tender. Serve with cheese and sour cream, if desired.
    *Or on HIGH for 4 to 5 hours.

2-Step Beefy Taco Joes

  • 1 pound ground beef
  • 1 can (10 3/4 ounces) Campbell’s Condensed

Mexican Four Cheese Potatoes au Gratin

  • 1 jar (16 ounces) Pace Mexican Four Cheese salsa con Queso
  • 3/4 cup Swanson Chicken broth (Regular, Natural Goodness™ OR Certified Organic)
  • 1/4 cup heavy cream OR half-and-half
  • 3 medium potatoes, peeled and thinly sliced (about 3 cups)
  1. Stir queso, broth and cream together in medium bowl.
  2. Put HALF of potatoes in a 2-quart shallow baking dish. Pour HALF of queso mixture over potatoes. Repeat with remaining potatoes and queso mixture.
  3. Bake at 350°F for 50 minutes or until potatoes are tender. Let stand for 10 minutes.

Mexi-Mac

Prep: 5 minutes
Cook: 20 minutes
Makes: 4

  • 1 pound ground beef
  • 1 cup Pace Picante sauce
  • 1 tablespoon chili powder
  • 1 can (14 1/2 ounces) whole peeled tomatoes, cut up
  • 1 cup frozen whole kernel corn
  • 3 cups cooked elbow pasta
  • 1/2 cup shredded cheddar cheese
  • Sliced avocado
  • Sour cream
  1. Cook beef in skillet until browned. Pour off fat.
  2. Add picante sauce, chili powder, tomatoes and corn. Heat to a boil. Cook over low heat 10 minutes. Add pasta. Sprinkle with cheese. Cover and heat until cheese melts. Garnish with avocado and sour cream.

Country Stew

Pair with Renwood Zinfandel, California
Yield: 6 servings

  • 5 pounds bone-in short ribs, trimmed and cut into 2-inch pieces
  • 3/4 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 2 cups water
  • 1 1/3 cups Renwood Zinfandel
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 beef bouillon cubes
  • 6 large Wisconsin potatoes, washed, peeled and quartered
  • 1/2 pound small fresh mushrooms, cleaned and trimmed
  • 1 package (10 ounces) frozen whole green beans
  • 1 can (16 ounces) peeled whole tomatoes, undrained
  1. Dredge ribs in flour to coat; reserve leftover flour.
  2. Heat oil in 8-quart Dutch oven on moderate heat.
  3. Add half of ribs and brown on all sides. Once browned, remove ribs. Repeat instructions for remaining ribs.
  4. Stir in the reserved flour. While stirring, add 1 cup water and wine and stir until thickened.
  5. Return ribs to the pan.
  6. Add onion, garlic, salt, pepper and bouillon and bring to a boil.
  7. Cover and lower heat to simmer for about 1 hour, or until ribs are tender.
  8. Remove ribs with slotted spoon and cover with foil to keep warm.
  9. Add potatoes, mushrooms and beans. Simmer 20 to 30 minutes, or until vegetables are tender.
  10. Add ribs and tomatoes with liquid, and heat through.
  11. Use slotted spoon to remove meat and vegetables to large serving platter.
  12. Remove gravy to serving container and serve with ribs.

Healthy Potato Lasagna

Pair with Renwood Premier Old Vine Zinfandel, Amador County
Yield: 4 servings

  • 2 links Italian turkey sausage (3 1/2 ounces each)
  • 1 1/2 cups chopped onion
  • 1 cup fat-free ricotta cheese
  • 1 teaspoon dried basil or Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 egg white
  • 2 cups marinara sauce, divided
  • 1 1/4 pounds Wisconsin Yukon gold potatoes, peeled and thinly sliced, divided
  • 1 cup part-skim shredded mozzarella cheese, divided
  1. Remove sausage from casing and crumble into medium skillet with onion.
  2. Cook for 10 minutes or until both are browned, breaking up sausage with back of spoon.
  3. Stir together ricotta, basil, garlic powder and egg white in small bowl.
  4. Spread 1/2 cup marinara sauce in bottom of 9-inch square baking dish.
  5. Place 1/3 of the potatoes in the bottom of the dish, forming solid layer with no gaps.
  6. Drop 1/2 ricotta mixture in spoonfuls over top and spread out just a little.
  7. Sprinkle with 1/3 of mozzarella and 1/2 sausage mixture.
  8. Add 1/2 cup more sauce then repeat potato, cheese and meat layers.
  9. Top with last layer of potatoes, remaining sauce and mozzarella.
  10. Cover with plastic wrap and make small slit to vent.
  11. Microwave on high for 30 minutes or until potatoes are tender.

Quick & Healthy Slow Cooker Chicken & Potatoes

Pair with Renwood Zinfandel, Fiddletown

  • 2 teaspoons Herbs de Provence (or combination of dried thyme, fennel, basil and savory)
  • 1 teaspoon garlic salt
  • Freshly ground pepper to taste
  • 1/2 cup flour
  • 1 tablespoon canola oil
  • 4 small (2 pounds) bone-in-chicken breasts, skin removed
  • 1 1/4 pounds small Wisconsin red potatoes
  • 3/4 cup frozen, thawed pearl onions
  • 1 cup small baby carrots
  • 3/4 cup reduced-sodium chicken broth
  • 8 ounces small baby bella or white mushrooms
  • Chopped fresh thyme (optional)
  1. Combine Herbs de Provence, garlic salt, and pepper on a dinner plate.
  2. Spoon flour onto a second dinner plate.
  3. Coat each chicken breast with herb mixture; then dredge in flour.
  4. Heat oil in a large skillet.
  5. Add chicken and cook over medium-high heat until chicken is golden brown on both sides (approximately 3 to 4 minutes per side). If necessary, cook chicken in two batches so as not to crowd the pan.
  6. Once browned, place chicken in large slow cooker and add all remaining ingredients, except fresh thyme.
  7. Cover slow cooker and cook on high for 4 hours or on low for 8 hours.
  8. Sprinkle with fresh thyme before serving, if desired.
