Apple Berry Salsa

Prep time: 15 minutes
Servings: 4-6

  • 2 Envy Apples, cored and chopped
  • 1 pound strawberries, hulled and chopped
  • 1 pint blueberries
  • 1/2 teaspoon kosher salt
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • tortilla chips, pita chips, apple chips or graham crackers, for serving
  1. In medium bowl, combine apples, strawberries, blueberries and salt.
  2. In small bowl, whisk honey and lime juice. Pour honey and lime juice over fruit mixture. Stir together to combine.
  3. Serve immediately with tortilla chips, pita chips, apple chips or graham crackers, or refrigerate until ready to serve.

Apple Blondie Cupcakes

Prep time: 15 minutes
Cook time: 20 minutes
Servings: 12

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup unsalted butter (1 stick), melted and cooled
  • 1 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg, at room temperature
  • 2 Envy Apples, peeled, cored and 1/4-inch diced
  1. Preheat oven to 350 F. Line 12-count muffin pan with cupcake liners and set aside.
  2. In medium bowl, whisk flour, baking powder, salt, cinnamon and nutmeg.
  3. In large bowl, whisk butter and brown sugar 2 minutes, or until well combined. Add vanilla and egg; whisk until incorporated.
  4. Add flour mixture to large bowl of wet ingredients. Stir until just combined; be careful to not overmix.
  5. Fold in diced apples.
  6. Spoon batter evenly into cupcake liners.
  7. Bake 18-22 minutes, or until toothpick inserted into center of cupcake comes out clean. Let cool and serve.

Apple, Peanut Butter and Honey Sandwiches

Prep time: 5 minutes
Servings: 2 (1 sandwich per serving)

  • 1 Envy Apple
  • 6 tablespoons peanut butter
  • 4 slices of bread
  • 2 tablespoons honey
  1. Core apple and thinly slice.
  2. Spread 3 tablespoons peanut butter on two slices of bread, reserving two slices of bread for sandwich tops.
  3. Layer apple slices on top of peanut butter.
  4. Drizzle 1 tablespoon honey over apple slices on each sandwich half.
  5. Top each sandwich half with reserved slice of bread.

  • 1 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 2 tablespoons brown sugar
  • 2 eggs
  • 1 cup milk
  • 4 tablespoons unsalted butter (1/2 stick), melted
  • 1 Envy Apple, peeled and cored
  • nonstick cooking spray
  • 4 tablespoons unsalted butter (1/2 stick), at room temperature
  • maple syrup, to taste
  1. In large bowl, whisk flour, salt, cinnamon, baking powder and brown sugar.
  2. In smaller bowl, whisk eggs, milk and melted butter.
  3. Make well in dry ingredients then mix in wet ingredient mixture until just combined.
  4. Using cheese grater, grate apple. Fold grated apple into batter.
  5. Prepare waffle iron with nonstick cooking spray.
  6. Ladle 1/4 of batter mixture into waffle iron and cook according to manufacturer's instructions. Repeat with remaining batter.
  7. Top each waffle with 1 tablespoon room temperature butter and maple syrup, to taste.

Sloppy Joe Mini Tacos

Yield: 12-15 tacos

  • 1          container (16 ounces) Fresh Cravings Restaurant Style Salsa (mild or medium)
  • 3          tablespoons ketchup
  • 2          tablespoons yellow, brown or Dijon mustard
  • 2          teaspoons Worcestershire sauce
  • 2          heaping tablespoons light brown sugar
  • 2          tablespoons vegetable oil
  • 8          ounces ground turkey or pork chorizo
  • 8          ounces 90% lean ground chuck or turkey
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1/4       cup water
  • 15        tortillas
  • 1/4       cup finely chopped fresh cilantro leaves
  • 1          cup crumbled cotija cheese
  • 1          cup shredded Mexican blend cheese (optional)
  • 1/2       red onion, thinly sliced, soaked in ice water 30 minutes and drained

Avocado Mash:

  • 1          ripe Haas avocado, halved, pitted and removed from skin
  • 2          tablespoons finely diced red onion
  • 1/2       lime, juice only
  • salt, to taste
  • pepper, to taste
  1. Preheat oven to 300 F.
  2. In blender or food processor, process salsa until smooth. Remove 1/2 cup processed salsa and set aside for garnish.
  3. In medium bowl, mix remaining salsa, ketchup, mustard, Worcestershire sauce and brown sugar until combined.
  4. In large saute pan over high heat, heat oil until it begins to shimmer. Add chorizo and ground meat; season with salt and pepper, to taste. Cook, breaking up meat with wooden spoon, until golden brown and just cooked through, about 8 minutes.
  5. Add salsa mixture and water; bring to boil, reduce heat to medium and cook, stirring occasionally, until mixture thickens, about 10 minutes. Taste for seasoning.
  6. Wrap tortillas tightly in foil and heat in oven 10 minutes. Remove and keep wrapped tightly until ready to serve.
  7. To make avocado mash: In medium bowl, coarsely smash avocado halves with fork. Add onion and lime juice then season with salt and pepper, to taste, and gently mix to combine.
  8. Place tortillas on flat surface, top each with meat mixture and garnish as desired with reserved salsa, avocado mash, cotija, Mexican cheese and sliced red onion.

  • 1/4 cup finely diced seeded English cucumbers
  • 1/4 cup finely diced seeded Roma tomato
  • 2 tablespoons finely diced red onion
  • 2 tablespoons finely chopped fresh cilantro leaves
  • 1 lime, juice only, divided
  • salt, to taste
  • pepper, to taste
  • 2 cups canned low-sodium vegetable stock, divided
  • 1/2 cup Fresh Cravings Restaurant Style Salsa (mild or medium)
  • 1 container (10 ounces) Fresh Cravings Roasted Red Pepper Hummus
  • tri-color fried tortilla strips
  1. In small bowl, combine cucumber, tomato, onion and cilantro. Add half the lime juice and season with salt and pepper, to taste. Let sit at room temperature.
  2. In blender or food processor, process 1 cup stock and salsa until smooth.
  3. Pour mixture into medium saucepan. Add remaining stock and hummus, season with salt and pepper, to taste, and bring to boil over high heat. Reduce heat to medium-low and simmer until slightly thickened, about 15 minutes. Remove from heat and stir in remaining lime juice.
  4. Divide soup between two bowls and top with relish and tortilla strips.

Spicy Shrimp Remoulade in Lettuce Leaves

Shrimp:

  • 1/2 cup Fresh Cravings Chunky Salsa (mild or medium)
  • 9 cups water, divided
  • ice water
  • 1 lime, sliced
  • 12 sprigs cilantro
  • 1 teaspoon kosher salt
  • 1 pound fresh shrimp (31-35), peeled and deveined

Remoulade Sauce:

  • 3/4 cup mayonnaise
  • 1 tablespoon whole-grain mustard
  • 2 teaspoons fresh lime juice
  • 1/2 teaspoon chile powder or smoked paprika
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Fresh Cravings Chunky Salsa (mild or medium), drained well
  • 1/4 cup chopped fresh cilantro leaves
  • 1/4 cup green onion, thinly sliced, plus additional for garnish
  • 8 butter or Boston lettuce leaves
  • cilantro leaves, for garnish
  • lime wedges, for garnish
  • chopped black olives, for garnish (optional)
  • chopped hard-cooked eggs, for garnish (optional)
  1. To make shrimp: In food processor or blender, blend salsa with 1 cup water until smooth.
  2. Fill large bowl with ice water; set aside. Transfer salsa mixture to large saucepan and add remaining water, lime slices, cilantro sprigs and salt. Bring to boil over high heat; stir in shrimp, cover, turn off heat and let shrimp poach off heat in liquid 10 minutes.
  3. Drain in colander. Transfer shrimp to ice bath and let sit 5 minutes. Drain again.
  4. To make remoulade sauce: In large bowl, whisk mayonnaise, mustard, lime juice, chile powder, sugar, salt and pepper until combined; fold in salsa.
  5. Put half of remoulade sauce in large bowl. Fold in shrimp and cilantro, adding remoulade as needed to make mixture creamier; taste for seasoning. Cover and refrigerate at least 30 minutes, or up to 6 hours.
  6. Arrange lettuce cups on platter. Spoon equal portions shrimp mixture into lettuce cups. Garnish with cilantro leaves; lime wedges; black olives, if desired; and eggs, if desired.

Mexican Style Paella with Chicken and Sausage

  • 1 container (16 ounces) Fresh Cravings Chunky Salsa (mild or medium)
  • 12 ounces chicken tenders, patted dry
  • 1 teaspoon kosher salt, plus additional, to taste, divided
  • freshly ground black pepper, to taste
  • 3 tablespoons vegetable oil, divided
  • 12 ounces fully cooked chicken sausage or pork sausage links
  • 3 cups low-sodium canned chicken stock, water or combination
  • 2 cups long-grain rice
  • 1 cup frozen peas
  • 1/4 cup chopped fresh cilantro or parsley
  • lime wedges
  1. Remove 1/2 cup salsa and set aside. In blender or food processor, process remaining salsa until smooth.
  2. Put chicken in bowl, add 1/2 cup pureed salsa and toss to coat. Cover and marinate at least 30 minutes, or up to 2 hours in refrigerator.
  3. In large, high-sided saute pan over high heat, heat 2 tablespoons oil until it begins to shimmer. Season chicken with salt and pepper, to taste, and cook until both sides are golden brown and just cooked through, about 3 minutes per side. Remove to plate, loosely tent with foil and let rest 10 minutes then slice into 2-inch pieces.
  4. Add remaining oil to pan and heat until shimmering; cook sausage until golden brown on both sides, about 3 minutes per side. Remove to plate, loosely tent with foil and let rest 10 minutes. Slice on bias into 2-inch pieces.
  5. Wipe out pan with paper towels. Add remaining pureed salsa and stock; bring to boil. Add rice and 1 teaspoon salt. Bring mixture to boil, cover and reduce heat to medium-low; cook until liquid is absorbed and rice is tender, about 18 minutes.
  6. Remove from heat and sprinkle peas on top. Let sit, covered with lid, 5 minutes. Fluff with fork then stir in chicken, sausage, peas and cilantro. Spoon remaining salsa on top.

Stuffed Peppers

  • 6          bell peppers, halved lengthwise and deseeded
  • 1          tablespoon avocado oil
  • 1          teaspoon sea salt
  • 16        ounces Fresh Cravings Chunky Style Salsa
  • 2          cups riced cauliflower (fresh or frozen)
  • 2          cups shredded cheddar cheese, divided
  • 2          pounds 80% lean ground beef, cooked, lightly seasoned and drained
  • 1          bunch cilantro, chopped
  1. Heat grill to medium-high heat.
  2. Brush both sides of bell peppers with avocado oil and season with salt. Grill peppers on each side 2-3 minutes, or until grill marks appear. Remove from heat and allow to cool slightly.
  3. Add salsa, riced cauliflower and 1 cup cheddar cheese to cooked ground beef. Stir and return to heat until cheese begins to melt.
  4. Place bell peppers on sheet pan or casserole dish. Use large spoon to fill peppers with ground beef mixture. Top stuffed peppers with remaining cheese.
  5. Return to grill and grill approximately 15-20 minutes, or until cheese begins to caramelize.
  6. Remove from heat and let cool slightly. Garnish with cilantro.

  • 1/2       red onion, chopped
  • 3/4       cup grapefruit juice
  • 4          tablespoons olive oil
  • 1/2       cup fresh cilantro, chopped
  • 1          jalapeno pepper, chopped
  1. Heat oven to 400 F.
  2. In large bowl, mix grapefruit juice, oil, garlic powder, cumin, paprika and red pepper until combined. Add chicken to bowl and turn to coat. Refrigerate 30 minutes or longer.
  3. To make salsa fresca: In medium bowl, mix grapefruit segments, jicama, red onion, grapefruit juice, olive oil, cilantro and jalapeno pepper until combined. Refrigerate until ready to serve.
  4. Remove chicken from marinade. Place chicken in baking dish. Bake 25-30 minutes until chicken is cooked through.
  5. Serve chicken with salsa fresca.

  • 4          sweet potatoes, peeled and cut into long wedges
  • 4          whole large carrots, chopped
  • 2          red bell peppers, cored and cut into 1-inch pieces
  • 2          packages (6 ounces each) Fresh Express 5-Lettuce Mix
  • 1          can (15 1/2 ounces) chickpeas, rinsed and drained
  • 1/3       cup dried apricots, sliced
  • 1/3       cup slivered almonds, toasted
  • 2          tablespoons Italian parsley, chopped
  1. To make lemon tahini dressing: In small bowl, whisk tahini, olive oil, lemon juice, maple syrup, Dijon mustard and salt. Add cold water; mix well. If dressing thickens, mix in more cold water.
  2. Heat oven to 400 F. Spray two baking sheets with nonstick cooking spray.
  3. In large bowl, mix olive oil, ras el hanout, salt and pepper. Add sweet potatoes; toss to coat. Transfer to first prepared baking sheet. Add carrots and peppers to leftover oil; toss to coat. Transfer to second prepared baking sheet. Bake 15-20 minutes, or until vegetables are tender. Let cool.
  4. Arrange lettuce mix on four plates. Top each with sweet potatoes, carrots, red pepper, chickpeas, apricots and almonds. Drizzle with dressing and sprinkle with parsley.

Turkey-Potato Wrap

  • 3/4       pound Wisconsin russet potatoes, cut into 1/2-inch pieces
  • 1          tablespoon water
  • 1          tablespoon canola oil
  • 3/4       pound ground lean turkey
  • 1          large carrot, shredded
  • 1/3       cup sliced green onions with tops
  • 1          can (8 ounces) tomato sauce
  • 2/3       cup shredded cheddar cheese
  • 1          teaspoon dried Italian seasoning or basil
  • salt, to taste
  • pepper, to taste
  • 4          large whole-wheat or high-fiber tortillas
  • light sour cream (optional)
  1. Place potatoes in microwave-safe bowl; sprinkle with water. Cover, venting one corner. Microwave on high 5-8 minutes until potatoes are tender.
  2. In large nonstick skillet over medium-high heat, heat oil. Add and break up turkey; cook 5 minutes, tossing occasionally. Mix in carrot; cook 2 minutes. Add potatoes and onions; toss and cook 2 minutes. Reduce heat to medium; mix in tomato sauce, cheese and Italian seasoning.
  3. Cook, stirring occasionally, 4-5 minutes until mixture is hot and most sauce is absorbed. Season with salt and pepper, to taste. On work surface, lay out tortillas. Place 3/4 cup hot turkey mixture on each; fold and roll for burritos.
  4. Cut in halves. Serve each with sour cream, if desired.

Pulled Beef:

  • 2 pieces (about 3 pounds each) beef chuck roast
  • 2 tablespoons taco seasoning or barbecue rub
  • 1 cup beef bone broth
  • 16 ounces Fresh Cravings Chunky Mild Salsa

Salsa and Queso Slaw:

  • 16 ounces Fresh Cravings Chunky Mild Salsa
  • 16 ounces broccoli slaw blend
  • 1/4 cup green onions, sliced
  • 1 teaspoon salt
  • 1 cup crumbled queso fresco
  • 1 tablespoon Dijon mustard
  • 1/2 cup mayo
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons cilantro (optional)
  • slider buns
  • Fresh Cravings Salsa
  • barbecue sauce
  • pickles
  • jalapenos
  • sliced cheese
  • roasted peppers
  • onions
  1. To make pulled beef: Season both sides of beef with taco seasoning. Wrap with plastic wrap and place in fridge 2-12 hours before cooking.
  2. Place meat, beef bone broth and salsa in pressure cooker; seal according to pressure cooker directions. Cook on high 60 minutes. Once pressure cooker is safe to open according to instructions, open and let meat rest in liquid 15 minutes.
  3. Remove meat from liquid and place in large bowl. Carefully shred meat. Pour liquid, up to half, over meat while shredding to keep it juicy.
  4. To make salsa and queso slaw: In large bowl, mix salsa, slaw blend, green onions, salt, queso fresco, Dijon mustard, mayo, apple cider vinegar and cilantro, if desired. Cover with plastic wrap and refrigerate until needed.
  5. To assemble sliders, place pulled beef and salsa and queso slaw on buns. Top with salsa, barbecue sauce, pickles, jalapenos, sliced cheese, roasted peppers and onions.

Cast-Iron Smoked Queso Dip

  • 2 cups cheddar cheese
  • 1 cup Monterey Jack cheese
  • 1 teaspoon almond flour
  • 1 cup heavy cream
  • 1 cup Fresh Cravings Restaurant Style Salsa
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 1/4 cup cooked chorizo
  • 1 teaspoon liquid smoke
  • cilantro, for garnish
  • diced bell pepper, for garnish
  1. In cast-iron pan, mix cheddar cheese, Monterey Jack cheese and almond flour. Pour in heavy cream and salsa; bring to gentle simmer. Whisk while simmering 5-7 minutes, or until queso dip begins to thicken. Add paprika, salt, chorizo and liquid smoke; adjust seasoning as necessary.
  2. Garnish with cilantro and bell pepper.

Hummus Deviled Eggs

  • 6 hard-boiled eggs, peeled
  • 1/4 cup Fresh Cravings Classic Hummus
  • 1/4 cup smoked cheddar cheese
  • 2 tablespoons bacon, cooked and crumbled
  • 1 teaspoon yellow mustard
  • 1 teaspoon salt
  • smoked Spanish paprika, for garnish
  • parsley, for garnish
  1. Cut hard-boiled eggs in half lengthwise. Remove yolks and place in bowl. Using fork, mash yolks into fine crumble.
  2. Add hummus, cheese, bacon, mustard and salt; mix well.
  3. Evenly disperse teaspoons of yolk mixture into egg whites. Sprinkle with any remaining bacon, paprika and parsley.

Sausage and Egg Breakfast Tacos

Prep time: 20 minutes

Chimichurri:

  • 1 bunch scallions, thinly sliced
  • 2 jalapenos, diced small
  • 1 bunch cilantro, roughly chopped
  • 2 lemons, juice only
  • 1/2 cup seasoned vinegar
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 teaspoon crushed red pepper flakes
  • 2 packs Farmer John Classic Pork Sausage, browned
  • 1 dozen eggs
  • 1 tablespoon salt
  • 1 cup half-and-half
  • olive oil
  • 12 yellow corn tortillas
  • 16 ounces salsa roja (optional)
  1. To make chimichurri: In mixing bowl, combine scallions, jalapenos and cilantro with lemon juice, vinegar, sugar, salt and red pepper flakes. Set aside until ready to use.
  2. In hot skillet, fry sausage until cooked through and golden brown.
  3. Scramble eggs; add salt and half-and-half.
  4. In hot pan over medium heat, drizzle olive oil. Add enough eggs to cover pan. Let eggs cook, using spatula to move them around until cooked thoroughly and scrambled. Set aside and repeat with remaining eggs.
  5. On hot griddle or pan, heat corn tortillas until warm.
  6. On separate plates, place two tortillas and divide eggs to fill 12 tacos. Add sausage, chimichurri and salsa, if desired.

Bacon Tater Tot Cast-Iron Casserole

Prep time: 5 minutes
Cook time: 40 minutes
Servings: 6

  • 16 ounces Farmer John Classic Bacon, diced
  • 6 eggs
  • 1 cup whole milk or half-and-half
  • 1 teaspoon salt
  • 1 bag (32 ounces) frozen tater tots
  • 3 cups cheddar jack cheese, shredded
  • 1 jar (12 ounces) hot or regular tomato salsa
  • 1 bunch scallions, thinly sliced
  1. Preheat oven to 425 F.
  2. In cast-iron pan over medium heat, cook bacon 5-8 minutes. Place on plate lined with paper towels. Reserve grease.
  3. Scramble eggs with milk, salt and reserved bacon drippings until thoroughly mixed.
  4. Layer 1/3 of tater tots on bottom of cast-iron pan; add 1/3 of cooked bacon, 1 cup cheese and 4 ounces salsa; repeat twice to use remaining bacon, cheese and salsa. Pour scrambled eggs on top.
  5. Bake 25-30 minutes. Halfway through cooking, add scallions and rotate pan.
  6. Let cool 5 minutes.

Cheesy Chorizo Nachos

  • 1 package Cacique Pork Chorizo
  • 1 package Cacique Queso Blanco Queso Dip
  • 1 can (15 ounces) refried beans
  • 2 tablespoons water, plus additional, if necessary
  • 1 bag (12 ounces) tortilla chips
  • 1 package Cacique Ranchero Queso Fresco
  • 1/2 cup Cacique Crema Mexicana
  • 1 large jalapeno, sliced thin
  • 2 radishes, sliced thin
  • fresh cilantro leaves, for garnish
  • guacamole, for serving
  • Cacique Mild Homestyle Salsa, for serving
  1. In large nonstick skillet or well-seasoned cast-iron pan over medium-low heat, cook pork chorizo, using spoon to break it up. Stir regularly until completely warmed through and deep brown, scraping crispy bits from bottom of pan.
  2. Microwave queso dip 2-3 minutes until heated through.
  3. In medium bowl, thin refried beans with water. Beans should be thick but nearly pourable; add additional water 1 tablespoon at a time, if necessary.
  4. Heat oven to 350 F.
  5. To assemble nachos, add half the tortilla chips to 13-by-9-inch rectangular baking dish. Use spoon to drizzle half the queso dip and half the refried beans evenly over chips, distributing as evenly as possible. Sprinkle with half the crumbled queso fresco. Repeat with remaining chips, queso dip, beans and crumbled queso fresco. Bake 5-8 minutes until crumbled queso fresco softens and queso dip is creamy.
  6. Remove from oven then drizzle with crema Mexicana and scatter pork chorizo over top. Garnish with sliced jalapenos, radishes and fresh cilantro. Serve with guacamole and salsa.

Veal Tex Mex Stuffed Shells

Prep time:  20 minutes
Cook time: 15 minutes
Servings: 6

  • 1          pound ground veal
  • 1/2       cup diced onion
  • 1/2       cup diced poblano pepper
  • 1          package (1 1/4 ounces) taco seasoning
  • 1/2       cup water
  • 4          ounces cream cheese
  • 2          cups shredded colby jack cheese, divided
  • 20        jumbo pasta shells
  • 1 1/2    cups salsa
  • 1          cup taco sauce
  1. Preheat oven to 350 F.
  2. In large skillet over medium-high heat, cook ground veal, diced onion and diced pepper until meat is no longer pink, 5-7 minutes. 
  3. Stir in taco seasoning and water.
  4. Break cream cheese into chunks and add to skillet; simmer 3-4 minutes, or until cream cheese melts into veal mixture. 
  5. Remove from heat and add 1/2 cup colby jack cheese; stir to combine.
  6. Bring large pot of salted water to boil and add pasta shells. Cook according to package directions and drain.
  7. Immediately separate shells on plate to avoid sticking together. 
  8. Pour salsa into 13-by-9-inch baking dish and spread to cover bottom. 
  9. Fill each pasta shell with 1-2 tablespoons veal mixture and place in baking dish.
  10. Top stuffed shells with taco sauce and sprinkle remaining colby jack cheese on top.
  11. Bake 15 minutes, or until cheese is melted and shells are heated through.

  • 2          cans (5 ounces each) Chicken of the Sea Solid White Albacore Tuna in Water, drained and flaked
  • 2          cups cooked quinoa 
  • 1/2       cup chopped purple cabbage
  • 1/3       cup diced cucumber
  • 1/3       cup shredded carrot
  • 1/3       cup diced red pepper
  • 1/3       cup diced mango
  • 1/3       cup chopped green onions
  • 4          tablespoons apple cider vinegar
  • 2          tablespoons olive oil
  • 2          tablespoons honey
  • 1          tablespoon sesame oil
  • 1/2       teaspoon salt
  • 1/2       teaspoon freshly ground pepper
  • 1          teaspoon sesame seeds or black sesame seeds
  1. Divide cooked quinoa between four bowls. Top each with evenly divided tuna, cabbage, cucumber, carrots, red peppers, mango and green onions.
  2. In small bowl, whisk apple cider vinegar, olive oil, honey, sesame oil, salt and pepper. Drizzle over each bowl. Garnish with sesame seeds.

Salmon Rollups

Total time: 15 minutes
Servings: 4

  • 1          can (5 ounce) Chicken of the Sea Pink Salmon
  • 1          package (8 ounces) cream cheese, softened
  • 1/2       cup thick and chunky salsa, plus additional for dipping (optional)
  • 1          cup shredded cheddar cheese
  • 1          cup corn chips, crushed
  • 4          flour tortillas (8 inches)
  • 4          large leafy green lettuce leaves, washed and patted dry
  1. In bowl, combine cream cheese and 1/2 cup salsa until light and fluffy. Stir in salmon, cheese and corn chips.
  2. Spread 1/4 filling to within 1/2 inch of each tortilla edge. Arrange one lettuce leaf over filling. Roll up tortillas and wrap in plastic wrap. Refrigerate 1-3 hours.
  3. To serve, remove plastic wrap, trim ends from rolls and cut each into 3-4 slices. Serve with additional salsa, if desired.
