Cranberry Orange Pork Loin

 Nearly everyone knows main dishes are my jam, so we are going to wrap this one up with something tried and true for the fall season. These Cranberry Orange Pork Loins are sweet, savory and tender, making them great for any fall festivity or holiday function.

 The best part is my husband loves pork, and they are super simple for me to make with just a few ingredients. The slow cooker is a great tool to use in the chilly weather. and will make your home smell so delicious. Trust me, you will notice the moment you walk in the door!

 I love the hint of orange citrus in the air and the festive flavor from the cranberries. Honestly, just look at it! It’s a fall classic in my household and I hope it will be in yours, too!

 

Cranberry Orange Pork Loin

  • 1 tablespoon oil
  • 1 pork loin (4 pounds), tied at 1-inch intervals
  • 14 ounces cranberry sauce
  • 1 cup dried cranberries
  • 3/4 cup orange juice
  • 1/8 teaspoon cinnamon
  • 3 strips orange zest
  • salt, to taste
  • pepper, to taste
  1. In skillet over medium heat, heat oil.
  2. Sear pork loin on all sides.
  3. In slow cooker, stir cranberry sauce, dried cranberries, orange juice, cinnamon and orange zest until combined. Set pork loin in middle of sauce mixture and drizzle sauce over meat.
  4. Cover and cook on low 4 hours, or until meat reaches 140-145 F.
  5. Transfer pork to cutting board. Remove twine.
  6. Strain cranberries from slow cooker; set aside. Pour strained liquid into skillet. Add salt and pepper, to taste. Simmer 7-8 minutes.
  7. Spoon cranberries and sauce over pork loin.

 My mouth is watering just thinking about these recipes. I am going to have to throw this one into my plans for this week! This cold front in Kansas City is giving me all the fall season feels.
