Delightful Dishes to Dazzle Holiday Guests

(Family Features) Entertaining guests during the holidays isn’t just about a main course that calls all to the table. What often makes a festive gathering more fruitful is a spread of delicious appetizers, delightful drinks and divine desserts that keep loved ones coming back to the kitchen for more.

For appetizing dishes from the first guest at the house to the last out the door, you can heighten the flavor and appearance of favorite recipes with one simple ingredient: apples. Ranging from tart to sugary sweet, finding the right balance for your palate is key. Scent can also influence taste, especially when you have a balanced sweetness with an uplifting, fresh aroma.

Turn to an option like Envy Apples this holiday season for satisfying texture and taste with a consistently balanced, refreshing sweetness coupled with a crisp, elegant crunch. They make for an easy snack when eaten fresh out of hand but are also perfect for holding over pre-dinner appetites in small plates like this Bell-Issimo Brie Melt or Apple Stuffing Bites with Rosemary Gravy.

The versatile flavor of apples isn’t just limited to foods, however. For the adults in the room, Pumpkin Spice Apple Cider with a splash of bourbon is a seasonally appropriate way to quench thirst and break the ice. Simply omit the bourbon for a kid-friendly version so the whole party can savor a sip.

Easy to spot with their crimson red skin over a golden background that practically glows, Envy Apples offer an easy, eye-catching way to try new tastes and celebrate joyful occasions together. The bright white flesh is naturally slow to brown when sliced for a fresher flavor in sweet treats like Apple Oat Crumble and Citrus Caramel Topping for a tasty way to elevate your holiday get-togethers.

Savor the Season with Delicious, Decorative Cheese Boards

5 tips to create holiday meal centerpieces

(Family Features) A cheese board, plate or course can be a delightful way to savor the season with family and friends, bringing together a medley of tastes and textures.

This year, try serving up a board with real, quality cheeses that also set a celebratory tone with these tips from the experts at Real California Milk, representing California's dairy farm families.

Mix it up. When selecting cheeses, create a range of flavors and textures from soft to hard and mild to sharp, and even pungent varieties. Consider these examples:

  • A bloomy rind cheese such as Brie, Camembert or Formagella
  • A soft or washed-rind cheese like Teleme or Crescenza
  • A semi-firm cheese such as Gouda, St. George or toma
  • A very hard cheese such as dry jack, aged Gouda or aged white cheddar
  • A highly flavorful or pungent cheese such as blue or flavored jack

Add contrast. Flavorful breads thinly sliced or broken into smaller pieces can enhance contrast in both flavor and texture. For a simple solution, try serving breadsticks as part of this California Continental Cheese Board alongside Brie, toma and pepper jack cheeses.

Be patient (but not too patient). Aged cheeses should be allowed time to come to room temperature. Larger pieces typically take 1-2 hours for the full flavor to develop. However, fresh cheeses should be treated like milk, so don’t allow them to sit out for more than a short time.

Use simple additions. Enhance your cheese plates with olives, nuts or fruit to add flavor and texture. For example, pears go well with blue cheese, Gouda and toma; olives accompany white cheddar and pepper jack; walnuts fit with Gouda and dry jack; and dried cranberries pair nicely with cheddar, blue cheese and mushroom jack in this Red, White and Blue Cheese Board.

Consider portions. Estimate 1-1 1/2 ounces of each cheese per person. If you plan to serve three or more cheeses, consider decreasing the amount to 1 ounce (or less) of each cheese per person.

Duck Bacon and Brie Cheese Stuffed French Toast

Recipe courtesy of Chef Ben Vaughn on behalf of Maple Leaf Farms
Prep time: 10 minutes
Cook time: 20 minutes
Servings: 4

  • Butter, for coating pan
  • 4          large eggs
  • dash of salt
  • 2          tablespoons sugar
  • 1/2       cup milk
  • 1⁄2       teaspoon vanilla extract
  • 1          ounce bourbon
  • 8          slices day-old sourdough bread
  • 8          ounces Brie cheese
  • 12        slices Maple Leaf Farms Duck Bacon, cooked crispy
  • 8          tablespoons melted butter, for topping
  • maple syrup, for topping
  • powdered sugar, for topping
  1. Heat oven to 375° F. Butter baking sheet well.
  2. In small bowl, beat eggs with salt, sugar, milk, vanilla and bourbon. Pour into flat-bottomed dish.
  3. Submerge all bread slices in dish to soak up some of egg mixture. Work in batches, if necessary. Turn with spatula and soak other side. Do not soak too long or bread will be too saturated and difficult to handle. Gently transfer four soaked bread slices to prepared baking sheet.
  4. Place 2 ounces cheese on each slice. Add three slices crispy bacon on top of each cheese portion.
  5. Top with another soaked bread slice. Press filled bread together firmly.
  6. Place baking sheet in oven; bake 15-20 minutes, turning after 8-10 minutes to brown both sides.
  7. Serve immediately with melted butter, maple syrup and powdered sugar.
