  • 1          stick butter, melted
  • 1/4       cup brown sugar

Whipped Cream:

  • 1          cup heavy cream
  • 3          tablespoons sugar
  • 1          teaspoon vanilla

Cheesecake:

  • 8          ounces cream cheese, softened
  • 1          teaspoon vanilla
  • 1/2       cup powdered sugar
  1. To make crust: Mix crushed vanilla wafers, melted butter and sugar; press into pie pan or individual pudding cups.
  2. To make whipped cream: In large bowl, using electric mixer, mix heavy cream, sugar and vanilla until thickened into whipped cream.
  3. To make cheesecake: Add softened cream cheese, vanilla and powdered sugar to whipped cream bowl. Using electric mixer, mix until smooth. Pour over vanilla wafer crust and chill 3 hours.

  • 1 pound ground beef
  • 1 can (15 ounces) black beans
  • 1 can (15 ounces) corn
  • 2 cans (14 ounces each) diced tomatoes with chilies
  • 1/2 cup half-and-half or milk
  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 2 tablespoons mesquite seasoning
  • 1 tablespoon black pepper
  • salt, to taste
  • 1 lime, juice only
  • 1 cup chopped cilantro
  • romaine lettuce
  • 2-3 cups shredded cheese
  • 1 tub (16 ounces) sour cream
  • crushed tortilla chips
  1. In pan over medium heat, brown beef until cooked through; drain. Add black beans and corn. Stir in tomatoes with juices and half-and-half. Add onion powder, garlic powder, mesquite seasoning and pepper. Season with salt, to taste. Bring to simmer.
  2. Add lime juice; stir. Sprinkle with cilantro.
  3. Wash and chop lettuce. Place cheese and sour cream in bowls for toppings.
  4. On plates, top crushed tortilla chips with meat sauce, lettuce, cheese and sour cream, as desired.

  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons C&H Light Brown Sugar
  • 1 pinch salt

Bars:

  • 1 small fresh dragon fruit, peeled and cubed small
  • 1/4 cup C&H Granulated Sugar
  • 12 ounces cream cheese, at room temperature
  • 1 1/2 cups C&H Powdered Sugar
  • 2 teaspoons pure vanilla extract
  • 1 cup plain Greek yogurt, full fat, at room temperature
  • 1/2 cup heavy whipping cream, cold
  1. To make crust: Line 8-by-8-inch baking pan with parchment paper. Leave 2-inch overhang of paper on both sides. In medium bowl, mix graham cracker crumbs, butter, brown sugar and salt until well combined. Pour mixture into prepared pan and press into even layer. Place in freezer.
  2. To make bars: In small saucepan over medium heat, cook dragon fruit and granulated sugar until sugar is completely dissolved, dragon fruit is soft and mixture reduces in size, 10-12 minutes, stirring occasionally. Remove from heat and cool completely.
  3. In large bowl, beat cream cheese until soft. Add powdered sugar and mix until fluffy. Scrape sides of bowl. Add vanilla and yogurt. Beat until combined.
  4. In separate bowl, beat heavy whipping cream until stiff peaks form. Fold cream into cream cheese mixture. Pour half of mixture into prepared crust. Add 5 tablespoons dragon fruit mixture to remaining cream cheese batter. Mix until well combined. Pour over plain cream cheese mixture. Place in refrigerator to set at least 6 hours, or overnight.
  5. Cut into 16 bars.

  • 1 pound chicken tenders
  • 1/2 cup sweet chili sauce, divided
  • 1/4 cup sriracha hot sauce, divided
  • 2 tablespoons sesame oil

  • 2 medium russet or Yukon gold Wisconsin potatoes or 6 red Wisconsin potatoes
  • 2 medium zucchini
  • 1/2 smoked sausage rope
  • 4 skewers (12 inches each)

  1. Preheat grill to medium heat. Cut potatoes in half. Cut zucchini and sausage same width as potatoes. Skewer potatoes, zucchini and sausage. Repeat for each skewer.

Brown Sugar Meringues

Prep time: 20 minutes
Cook time: 1 hour, plus 1 hour rest time
Yield: 3 dozen meringues

  1. Preheat oven to 225 F. Line three baking sheets with parchment paper. Set aside.
  2. Pour 1 inch of water into medium saucepan and heat it until simmering. In heat-proof bowl, mix egg whites, brown sugar, granulated sugar and salt. Put bowl on top of saucepan and warm mixture until it reaches 125 F. Stir continuously and make sure mixture does not touch water.

  4. Sprinkle turbinado sugar on top of meringues, if desired. Bake 1 hour. Turn off oven and allow meringues to rest inside oven 1 hour. Remove from oven and enjoy.

  • 2 pounds ground chicken
  • 2 tablespoons sesame oil
  • 3/4 cup diced shiitake mushrooms
  • 1 small onion, diced
  • 2 garlic cloves, grated
  • 1 1/2 tablespoons fresh grated ginger
  • 1/2 cup hoisin sauce
  • 1/2 cup water chestnuts, diced
  • 3 green onions (both white and green parts), chopped
  • 2 garlic cloves, grated
  • 1/4 cup cilantro, chopped, for garnish
  • 1/4 cup crushed peanuts, for garnish
  • iceberg or butter lettuce, for wraps

Peanut Sauce:

  • 3 tablespoons creamy peanut butter
  • 2 teaspoons brown sugar
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chili garlic sauce
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon soy sauce
  1. In pan, saute ground chicken in sesame oil until cooked through. Drain if mixture is watery.
  2. Add shiitake mushrooms and onion; saute until mushrooms have softened and appear caramel colored.
  3. Add garlic, ginger, hoisin, water chestnuts and green onions. Let chicken mixture simmer on low.
  4. To make peanut sauce: In saucepan over medium-low heat, mix peanut butter, brown sugar, lime juice, chili garlic sauce, ginger and soy sauce until smooth, warm and thinned slightly.
  5. Fold into chicken mixture. Stir until combined and simmer on low until peanut sauce is evenly distributed.
  6. Garnish with fresh cilantro and crushed peanuts. Serve in lettuce wraps.

Broccoli and Edamame Salad with Peanut Dressing

Dressing:

  • 1/2 fresh lime, juice only
  • 1/4 cup toasted sesame seed oil
  • 3 tablespoons honey
  • 2 tablespoons tahini
  • 3 tablespoons creamy peanut butter
  • 1 teaspoon chili oil
  • 1 garlic clove, grated
  • 1 teaspoon fresh ginger, grated
  • kosher salt, to taste
  • 1 tablespoon hot water, plus additional for thinner consistency (optional)

Salad:

  • 2 cups broccoli slaw
  • 1 cup shelled edamame, cooked
  • 1 1/2 cups chopped raw broccoli
  • 1/2 cup English cucumber, quartered and chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup salted peanuts, roughly chopped
  • toasted sesame seeds, for garnish (optional)
  1. To make dressing: In bowl, whisk lime juice, toasted sesame seed oil, honey, tahini, peanut butter, chili oil, garlic, ginger and salt, to taste. Add hot water, adding additional, if necessary, until dressing reaches desired consistency. Set aside.
  2. To make salad: In large bowl, combine broccoli slaw, edamame, broccoli, cucumber, mint, cilantro and peanuts. Toss with dressing to combine and garnish with toasted sesame seeds, if desired.

Peanut Butter Cottage Cheese Cheesecake

Servings: 8 (1 slice each)

Crust:

  • 2 cups pretzels
  • 1 1/2 cups vanilla-flavored wafer-style cookies
  • 1/2 cup peanuts
  • 12 tablespoons unsalted butter
  • nonstick cooking spray

Filling:

  • 1/2 cup cottage cheese
  • 1 cup heavy whipping cream
  • 3 tablespoons sugar
  • 3 tablespoons creamy peanut butter
  • 1/2 cup roughly chopped dark chocolate
  • 1/2 cup roughly chopped peanuts
  • 1 pinch sea salt
  1. To make crust: In food processor, pulse pretzels, wafer-style cookies and peanuts until chopped but not powdery.
  2. In skillet, melt butter. Add pretzel mixture until combined with butter.
  3. Spray pie pan with nonstick cooking spray and spread mixture on bottom of pan and slightly up sides; press down until even.
  4. To make filling: In bowl using hand mixer, whip cottage cheese until lumps are smoother, 3-4 minutes.
  5. In separate bowl, use hand mixer to whip heavy cream and sugar until stiff peaks form.
  6. Add cottage cheese and peanut butter to heavy cream mixture; whip until combined, about 1 minute.
  7. Top pie with chopped chocolate and peanuts and freeze 2 hours. Remove from freezer 15 minutes before ready to serve.
  8. Before serving, sprinkle with sea salt.

Peanut Butter Jelly Ice Cream

Servings: 12

  • 1 cup whole milk

  • 1 large egg, lightly beaten

  2. Cook and stir over low heat until mixture thickens and coats back of spoon. Remove from heat; whisk in peanut butter. Quickly transfer to bowl; place in ice water and stir 2 minutes. Stir in cream and vanilla. Press wax paper onto surface of custard. Refrigerate several hours or overnight.
  3. Fill cylinder of ice cream freezer 2/3 full; freeze according to manufacturer's directions.
  4. When ice cream is frozen, spoon into freezer container, layering with jelly; freeze 2-4 hours before serving.

  • 1 large sweet potato
  • 1 bag (10 ounces) dark chocolate chips, plus additional for topping (optional)
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon fine sea salt
  • 1/4 cup coconut sugar
  • 1 Premier Protein Chocolate Protein Shake

"Caramel" Sauce:

  • 3 tablespoons coconut oil (measured when solid)
  • 3 tablespoons real maple syrup
  • 1 1/2 tablespoons almond butter
  • 1/8 teaspoon fine sea salt
  • 1/4 teaspoon pure vanilla extract
  1. Wash and scrub sweet potato. Pierce with fork several times. Place on microwave-safe plate and microwave 5 minutes; flip and microwave 5 minutes. Allow to cool.
  2. In microwave-safe bowl, microwave chocolate chips in 20-second increments, stirring between each increment until smooth and melted. Set aside.
  3. Remove sweet potato skin and thoroughly mash. Pack into 3/4 cup measuring cup. Place in large blender.
  4. Add melted chocolate to blender along with vanilla, sea salt, coconut sugar and chocolate protein shake.
  5. Place lid on blender and blend on high at least 1 minute, or until ingredients are smooth and incorporated.
  6. Transfer to ice cream maker and prepare according to manufacturer's directions then transfer to airtight container and freeze 2-3 hours.
  7. To make "caramel" sauce: In microwave-safe bowl, microwave coconut oil and syrup 30 seconds. Stir and microwave 30 seconds, or until melted and smooth. Stir in almond butter and whisk until smooth. Add sea salt and vanilla extract; whisk to combine.
  8. Set "caramel" sauce aside at room temperature about 30 minutes. Top ice cream with sauce and additional chocolate chips, if desired.

Apple Ricotta Crepes

Crepes:

  • 1 cup flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1cup whole milk
  • 2 eggs
  • 1 teaspoon vanilla
  • butter, for cooking

Apple Topping:

  • butter
  • 2 tablespoons brown sugar
  • Envy Apples, sliced or cubed
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • salt, to taste
  • maple syrup

Ricotta Filling:

  • 1 cup ricotta cheese
  • 1 lemon, zest and juice only
  • 2-3 tablespoons sugar, or to taste
  1. To make crepes: In bowl, combine flour, sugar and salt. Add milk, eggs and vanilla then, using whisk, combine thoroughly. Mixture should be silky smooth. Refrigerate.
  2. To make apple topping: In pan over medium heat, heat butter and brown sugar until bubbly and golden.
  3. Add apples, cinnamon, nutmeg and salt, to taste; cook over medium-low heat until apples are soft. Turn off heat and finish with maple syrup.
  4. To make ricotta filling: Combine ricotta, lemon zest, lemon juice and sugar, mix well and set aside.
  5. In nonstick pan over medium-low heat, melt small amount of butter.
  6. Add one ladle crepe batter, cook until bubbles form, flip and cook until golden. Repeat with remaining batter. Stack crepes to keep warm and soft.
  7. Spread ricotta mixture thinly onto crepes and fold into quarters. Top with apple mixture and serve.

Apple, Tomato and Goat Cheese Frittata

  • 6 eggs
  • 1 teaspoon hot pepper sauce
  • 2 teaspoons kosher salt
  • 20 turns fresh cracked pepper
  • 1/4 cup whole milk
  • 1 Envy Apple, small diced
  • 1/2 cup sundried tomatoes, chopped
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons thinly sliced chives
  1. Preheat oven to 350 F.
  2. In large mixing bowl, whisk eggs, hot pepper sauce, salt, pepper and milk until well combined.
  3. Stir in apples, tomatoes, goat cheese and chives until well combined.
  4. Using 1/3 measuring cup, spoon frittata mixture into oven-safe large skillet or 9-by-9-inch pan.
  5. Bake 25-30 minutes, or until eggs are set.
  6. Let cool slightly then serve.

  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon sea salt
  • maple syrup, for serving

Topping:

  • 2 tablespoons unsalted butter or coconut oil, melted
  • 2 tablespoons brown sugar
  • 1/2 cup chopped pecans
  • 1 cup frozen strawberries
  • 1 cup frozen blueberries
  • confectioners' sugar, for dusting
  1. Grease 9-by-13-inch baking dish. Place bread cubes in baking dish. In large bowl, whisk eggs, milk, brown sugar, vanilla, cinnamon, nutmeg and salt. Pour mixture evenly over bread cubes.
  2. If making casserole ahead, cover baking dish and refrigerate overnight. If baking immediately, let stand 30 minutes at room temperature to allow bread to soak up egg mixture.
  3. Preheat oven to 350 F.
  4. To make topping: Drizzle casserole with melted butter and sprinkle with brown sugar and pecans. Top with strawberries and blueberries.
  5. Cover and bake 35 minutes then uncover and bake 10-20 minutes, or until topping is browned and egg mixture has mostly set.
  6. Remove from oven, cover loosely with foil and let stand 10 minutes. Dust with confectioners' sugar. Serve with maple syrup.

  2. In medium bowl, whisk eggs and egg whites. Stir in cheese until combined. Heat large skillet over low heat, add egg mixture and scramble 3 minutes, or until cooked through.
  3. Spread sour cream over tortilla. Spread salsa over sour cream. Spoon 1/4 bean mixture over salsa. Spoon 1/4 scrambled eggs over bean mixture. Top with diced tomatoes and avocado. Drizzle with hot sauce, if desired. Roll-up burrito. Repeat three times with remaining ingredients and serve.

Double Chocolate Chip Mini Muffins

Muffin Batter:

  • 2          cups all-purpose flour
  • 1/2       cup unsweetened cocoa powder
  • 1          teaspoon baking soda
  • 1/2       teaspoon salt
  • 1          package (10 ounces) mini semi-sweet chocolate chips
  • 2          large eggs
  • 1/2       cup C&H Light Brown Sugar, packed
  • 1/2       cup C&H Granulated Sugar
  • 3/4       cup sour cream
  • 1/2       cup vegetable oil
  • 1/2       cup whole milk
  • 1/2       teaspoon instant espresso (optional)
  • 2          teaspoons vanilla extract
  • 2          tablespoons flaked sea salt (optional)
  1. Preheat oven to 350 F. Line mini muffin pan with mini cupcake liners.
  2. In large mixing bowl, use whisk to combine flour, cocoa powder, baking soda and salt. Add chocolate chips and stir to ensure chocolate chips are coated in flour mixture.
  3. In separate large mixing bowl, use wire whisk to whisk eggs and sugars until ingredients are combined and sugars are dissolved. Add sour cream, oil and milk. Whisk again to combine. If using espresso powder, add to vanilla then add to wet ingredients. Whisk vanilla espresso mixture into other liquid ingredients.
  4. Pour liquid ingredients on top of dry ingredients. Using rubber spatula, mix until just combined, being careful to not overmix. Batter should be thick and shiny.
  5. Using tablespoon or two spoons, spoon muffin batter into liners. Batter should be filled almost to top of each liner. Top each muffin with flaked sea salt before baking, if desired.
  6. Bake muffins on center rack 6 minutes. Rotate pan and bake 6 minutes, or until toothpick inserted in muffin comes out clean. Once muffins finish baking, place muffin pan on cooling rack to cool completely.

Tart Cherry Unity Pie

Prep time: 20 minutes
Cook time: 55 minutes
Servings: 8

Pie:

  • 1 pie crust (9 inches)
  • 2 cups canned tart cherry pie filling
  • 2 cups canned apple pie filling
  • 1 egg, beaten (for egg wash)

Streusel:

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 tablespoons granulated sugar
  • 1/3 cup pecans, roughly chopped
  • 1 pinch salt
  • 4 tablespoons butter, melted

Pumpkin Spice Whipped Cream:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon pumpkin spice
  1. Preheat oven to 400 F.
  2. Fit pie crust to 9-inch pie dish. Crimp edges and use fork to poke holes in bottom. Place pie crust in freezer to chill.
  3. In large bowl, combine tart cherry pie filling and apple pie filling. Set aside.
  4. To make streusel: In bowl, use fork to mix flour, brown sugar, granulated sugar, pecans and salt. Pour butter over dry ingredients and mix until ingredients come together in clumps.
  5. To assemble pie: Pour cherry-apple filling into prepared pie crust and sprinkle streusel on top. Brush beaten egg onto exposed pie crust edges.
  6. Bake 25 minutes. At 10-minute mark, cover pie dish with foil to prevent crust from over-browning. After 25 minutes, lower oven temperature to 375 F and bake 30 minutes.
  7. To make pumpkin spice whipped cream: In large bowl or bowl of stand mixer, add heavy cream, powdered sugar and pumpkin spice. Use hand mixer or beater attachment on stand mixer to beat on medium-high speed 3-5 minutes until stiff peaks form. Refrigerate whipped cream until ready to serve.
  8. Let pie cool 2-3 hours then dollop pumpkin spice whipped cream on top, slice and serve.
  9. Substitution: Storebought whipped cream topped with pumpkin spice can be used in place of homemade pumpkin spice whipped cream.

Classic Apple Lattice Tart

Servings: 8-10

  • 2-3 sheets puff pastry dough
  • 5 Envy Apples
  • 2 tablespoons sugar
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon cornstarch
  • 1 egg
  • 1 tablespoon milk
  • 1 tablespoon cinnamon sugar
  • ice cream, custard or cream, for serving (optional)
  1. Preheat oven to 365 F.
  2. Use two sheets semi-thawed pastry to line fluted tart pan approximately 10 inches, pressing and trimming neatly to fit; chill 15 minutes.
  3. Peel, core and thinly slice apples into large bowl; sprinkle with sugar, lemon zest and cornstarch then toss well to evenly coat.
  4. Arrange apple slices in pastry-lined tart pan, laying flat.
  5. Beat egg with milk. Brush egg wash around pastry rim.
  6. Cut 1/2-inch strips from remaining pastry sheet and make lattice pattern over apples, crimping edges once lattice is completed.
  7. Brush tart with egg wash and sprinkle with cinnamon sugar.
  8. Bake 35-40 minutes, or until pastry is golden. Allow to cool at least 15 minutes before slicing. Serve with ice cream, custard or cream, if desired.

Apple and Date Muffins

Servings: 12

  • 2 Envy Apples

  • 1 cup flour
  • 1 cup bran flakes
  • 3/4 cup brown sugar

  2. Peel and core apples and dice finely; toss with maple syrup.
  3. In large bowl, combine flour, bran flakes, brown sugar, dates, pumpkin pie spice and baking powder; mix well.
  4. In separate bowl, whisk melted butter, egg and milk.
  5. Add half maple-apple mixture to dry ingredients.
  6. Pour wet ingredients into dry and fold together until mixed. Spoon evenly into muffin tin cupcake papers. Add 1 teaspoon remaining maple-apple mixture to top of each muffin.
  7. Bake 20-25 minutes until muffin mix is set and apple topping is golden. Allow muffins to cool 5 minutes before removing from tin.
  8. Serve with butter or dust with powdered sugar, if desired.

Stilton Cheese Pizza

Yield: 1 pizza

  • 1 tablespoon pizza sauce
  • 1 tablespoon sweet chili sauce
  • 1 storebought pizza crust
  • 1/2 cup mozzarella cheese, divided
  • 1/3 cup stilton cheese, divided
  • 1 Envy Apple
  • 4 slices prosciutto
  • fresh arugula leaves, for garnish
  • fresh basil, for garnish
  • toasted walnuts (optional)
  1. Preheat oven to 450 F.
  2. Combine pizza sauce and sweet chili sauce. Spread sauce over pizza crust.
  3. Sprinkle with half of the mozzarella cheese and half of the stilton cheese.
  4. Cut apple in half then core and slice into thin wedges. Arrange apple over cheese then top with remaining cheese.
  5. Cook pizza 7-10 minutes until pale golden and starting to bubble. Add prosciutto and cook 2-3 minutes until golden and bubbling.
  6. Serve with fresh arugula and basil. Sprinkle with toasted walnuts, if desired.

Apple, Bacon and Brie Cheese Toasties

Servings: 2

  • 1 tablespoon butter
  • 4 slices sourdough bread
  • 1 teaspoon honey mustard, plus additional for serving (optional)
  • 4 slices cooked bacon
  • 1 Envy Apple, peeled, cored and thinly sliced
  • 1 3/4 ounces brie cheese, sliced
  • side salad, for serving (optional)
  1. Butter one side of each bread slice.
  2. Lay out two slices bread, buttered sides down. Top with honey mustard then layer with two bacon slices, apple slices and brie cheese slices. Top with remaining slices bread, buttered sides up, to create two sandwiches.
  3. Heat grill pan or frying pan and cook sandwiches until golden brown on each side and cheese is beginning to bubble.
  4. Cut sandwiches in half and serve with side salad or extra honey mustard, if desired.
