  4. Cover with aluminum foil and chill overnight.
  5. Heat oven to 325 F.
  6. Remove foil and bake 50-60 minutes.
  7. Let cool 10-15 minutes.

  • 3 cloves garlic, chopped
  • 1/4 cup tahini
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 3 tablespoons olive oil

For serving:

  • 1 Persian cucumber, small diced
  • 1 small tomato, diced
  • 2 tablespoons roasted pine nuts (or 2 tablespoons pomegranate seeds)
  • parsley, chopped
  • lemon wedges
  • toasted flatbread or tortilla chips
  1. To make lamb: Remove lamb from bone, dice meat into small cubes and transfer to medium bowl.
  2. Add cumin powder and salt. Toss to coat. Marinate while preparing hummus.
  3. To make hummus: Drain chickpeas, reserving 1 tablespoon liquid. Rinse chickpeas under running water then drain.
  4. In bowl of food processor, pulse chickpeas, chickpea liquid and garlic until chickpeas and garlic are chopped.
  5. Add tahini, lemon juice, salt, cumin, paprika and olive oil. Mix until smooth paste forms. Taste and adjust by adding more salt, lemon juice or olive oil, as desired.
  6. Transfer hummus to large platter and spread it out.
  7. In large skillet, heat extra-virgin olive oil over high heat until hot. Add lamb and cook 30 seconds without moving.
  8. Turn lamb over and cook 30-60 seconds, repeating until all sides are browned. Remove from pan and let rest 5 minutes.
  9. To serve, place cucumbers and tomatoes in well of hummus then top with lamb, pine nuts and parsley.
  10. Top with squeeze of lemon juice and serve with flatbread or tortilla chips.

Pecan-Crusted Pork Tenderloin

  • 1 pork tenderloin (about 1 1/2 pounds)
  • salt, to taste
  • pepper, to taste
  • 1/2 cup brown sugar, divided
  • 2 tablespoons soy sauce, divided
  • 2 teaspoons minced garlic
  • 1/2 cup pecan pieces
  • 1/4 cup pineapple juice
  • 2 tablespoons Dijon mustard
  1. Preheat oven to 400 F and lightly grease large baking dish. Season pork tenderloin with salt and pepper, to taste; set aside.
  2. In small bowl, stir 1/4 cup brown sugar, 1 tablespoon soy sauce and minced garlic. Spread mixture over pork.
  3. Press pecan pieces into brown sugar mixture on pork. Bake, uncovered, 20 minutes.
  4. In medium saucepan over medium-high heat, combine remaining brown sugar, remaining soy sauce, pineapple juice and Dijon mustard. Bring mixture to boil; reduce to simmer 3-5 minutes then remove from heat.
  5. Slice pork, spoon sauce over top and serve.

Mac and Cheese with Pecan Breadcrumbs

Total time: 50 minutes
Servings: 6

  • 8 ounces cavatappi pasta
  • 1 tablespoon butter
  • 1 block (8 ounces) cheddar cheese
  • 1/2 cup raw pecan pieces
  • 15 ounces part-skim ricotta cheese
  • 4 tablespoons sour cream
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 large egg, lightly beaten
  1. Preheat oven to 375 F.
  2. In salted boiling water, cook pasta according to package instructions. Drain, reserving 1/2 cup pasta cooking water. Return pasta to pot and stir in butter.
  3. Using box grater, shred cheddar cheese.
  4. Using food processor, process 1/4 cup shredded cheese with pecans to coarse breadcrumb consistency.
  5. Add remaining cheddar cheese, ricotta, sour cream, salt and pepper to warm pasta. Stir until thoroughly combined. Add egg; stir. Add reserved pasta water to loosen mixture; stir until smooth.
  6. Pour into buttered 9-inch square or round casserole dish and top evenly with pecan topping.
  7. Bake 30 minutes.

  • 1 box stovetop stuffing
  • 2 tablespoons butter

Gravy:

  • 2 cups beef broth
  • 2 teaspoons kosher salt

  5. After cooling, form stuffing into medium bites and place on sheet tray lined with parchment paper.
  6. Broil bites until golden brown and slightly crispy.
  7. To make gravy: In small pot, melt butter and whisk in flour. Cook flour 1 minute, whisking frequently.
  8. Whisk in beef broth, salt, pepper and Worcestershire sauce; bring to boil, whisking frequently. Remove from heat and stir in rosemary. If desired, continue gently simmering gravy to thicken.
  9. Arrange stuffing bites in serving dish and drizzle with gravy. Serve hot.

Pumpkin Spice Apple Cider

  • 1 Envy Apple, diced
  • 1 tablespoon butter
  • 1 teaspoon pumpkin spice
  • 2 ounces bourbon
  • 4 ounces pumpkin spice apple cider
  • demerara sugar
  • Envy Apple slices, for garnish
  • rosemary, for garnish
  • cinnamon stick, for garnish
  1. In pan over medium heat, saute diced apples in butter and pumpkin spice 5-10 minutes.
  2. In glass, combine bourbon and pumpkin spice apple cider; top with sauteed apples.
  3. Add demerara sugar then garnish with apple slices, rosemary and cinnamon stick.

Bell-Issimo Brie Melt

  • 1 round brie (6-8 ounces)
  • 2 Envy Apples
  • 1/4 cup walnuts
  • 1/4 cup dried cranberries
  • firm crackers
  1. Unwrap brie and place on microwave-safe dish. Cut off top of brie round and microwave 60 seconds until middle is soft.
  2. Slice apples into thick wedges.

  2. In pot over medium heat, melt butter. Add flour and cook 4 minutes, stirring occasionally. Reduce heat to low then slowly add milk gradually, ensuring it is incorporated before adding more. Turn heat to medium-high and cook until thickened, stirring continuously. Remove from heat and set aside.
  3. In bowl, add drained potatoes, sauce, bacon, cinnamon, nutmeg, ginger and cloves. Season with salt and pepper, to taste; mix well.
  4. In greased 8-by-11-inch baking dish, line potatoes on sides in desired pattern. Stuff extra bacon between potatoes from remains left in bowl. Pour extra sauce over potatoes.

  3. In small bowl, whisk brown sugar, chili powder, smoked paprika, salt and garlic powder.
  4. Sprinkle dry rub on lamb chops and press mixture into meat.
  5. In large skillet, heat thin layer olive oil over medium heat until drop of water sizzles in pan. Sear rib chops 2 minutes on each side, or until internal temperature reaches 140 F. Remove chops from pan and set aside.
  6. Add glaze to pan and cook 3-5 minutes, whisking constantly until reduced by half.
  7. Drizzle glaze over chops before serving.

Grape Dutch Baby

Prep time: 15 minutes
Cook time: 20 minutes
Servings: 4

  • 6          large eggs
  • 1 1/3    cups all-purpose flour
  • 1 1/3    cups low-fat milk
  • 1/2       teaspoon vanilla
  • 1/2       teaspoon salt
  • 5          tablespoons unsalted butter, divided
  • 2          cups red California grapes, halved
  • 2          tablespoons brown sugar
  • 1/8       teaspoon cinnamon (optional)
  • confectioners’ sugar
  1. Heat oven to 450 F. Put large (10-inch) cast-iron or ovenproof skillet in oven.
  2. With electric mixer on high speed, beat eggs until frothy then beat in flour, milk, vanilla and salt, and beat until smooth, about 1 minute (batter will be thin). Remove skillet from oven and add 2 tablespoons butter, swirling to cover pan. Pour in batter and return to oven. Bake until puffed and golden brown, 14-19 minutes.
  3. While pancake is baking, in another skillet over high heat, melt remaining butter and add grapes, brown sugar and cinnamon, if desired. Cook until grapes are heated through and sugar has melted. Spoon grapes over pancake, sprinkle with confectioners’ sugar and serve.

Pumpkin Bread with Chocolate Chips

Prep time: 10 minutes

Cook time: 45-50 minutes

Servings: 12

  •             Nonstick cooking spray
  • 1 1/2    cups all-purpose flour
  • 1/2       teaspoon salt
  • 1/2       teaspoon baking powder
  • 1/2       teaspoon baking soda
  • 2          teaspoons pumpkin pie spice
  • 1          cup canned pumpkin
  • 1/3       cup brown sugar
  • 1/3       cup granulated sugar
  • 1/2       cup vegetable oil
  • 3          eggs, at room temperature
  • 1/2       tablespoon vanilla extract
  • 1          cup semi-sweet chocolate chips
  • 1          cup mini semi-sweet chocolate chips
  1. Preheat oven to 350 F. Spray 8-by-4-inch loaf pan with nonstick cooking spray and line with parchment paper. Set aside.
  2. In large bowl, whisk flour, salt, baking powder, baking soda and pumpkin spice. Set aside.
  3. In medium bowl, combine canned pumpkin, brown sugar, granulated sugar, oil, eggs and vanilla extract. Stir together.
  4. Stir wet ingredients into dry ingredients; mix until combined.
  5. Fold in chocolate chips.
  6. Pour batter into loaf pan. Bake 45-50 minutes until toothpick inserted in center comes out clean.
  7. Cool at least 10 minutes in pan before removing to wire rack to finish cooling.

Arkansas Possum Pie

The star of your next spread can be hidden away in the refrigerator for a surprise delight for your guests. It’s topped with chocolate syrup and chopped pecans, and your loved ones just may vote it to be their favorite dish.

It’s an Arkansas Possum Pie, made with three delicious layers and crunchy toppings for a show-stopping dessert.

In a saucepan, melt butter. Add flour and stir to combine. Add crushed pecans and brown sugar. Stir to combine and form to the bottom of a pie pan. Bake for 15-20 minutes at 350 F.

In a separate bowl, add cream cheese and beat until smooth. Add powdered sugar and heavy cream. Stir to combine. Add to pie pan over cooled pecan crust. Refrigerate.

To make the pudding layer,  whisk egg yolks in a bowl then whisk in whole milk.

In a separate bowl, add sugar, cocoa powder, cornstarch, flour and salt. Whisk to combine.

In a saucepan over medium heat, add egg mixture followed by the dry mixture and stir. Add butter and vanilla extract, stirring until butter is melted.

Pour pudding mixture into a separate pie pan and cover with plastic wrap. Refrigerate for 30 minutes. Once cooled, add on top of the other layers and spread evenly.

Refrigerate pie overnight.

To make whipped topping, in a mixer, add heavy whipping cream, powdered sugar and vanilla extract. Beat to combine. Add whipped topping to the top of the chilled pie.

Drizzle with chocolate syrup and sprinkle with chopped pecans.

Whether it’s a holiday, birthday or reunion, this pie is a perfect conversation starter. It’s sweet, crunchy and filled with creamy, delightful layers of goodness.

Arkansas Possum Pie

Servings: 8

Crust:

  • 3/4       cup butter
  • 1 1/2    cups flour
  • 1/2       cup brown sugar
  • 1 1/2    cups pecans, crushed

Cream Cheese Layer:

  • 12        ounces cream cheese, softened
  • 1          cup powdered sugar
  • 4          tablespoons heavy cream

Pudding Layer:

  • 3          egg yolks
  • 2          cups whole milk
  • 1          cup sugar
  • 1/3       cup cocoa powder
  • 3          tablespoons cornstarch
  • 2          tablespoons flour
  • 1/4       teaspoon salt
  • 2          tablespoons butter
  • 1          teaspoon vanilla extract

Whipped Cream Topping:

  • 1          cup heavy whipping cream
  • 4          tablespoons powdered sugar
  • 1          teaspoon vanilla extract
  • chocolate syrup
  • 1/2       cup chopped pecans
  1. Heat oven to 350 F.
  2. To make crust: In saucepan, melt butter; add flour, brown sugar and crushed pecans. Stir until combined. Press into 9 1/2-inch deep pie plate.
  3. Bake 15-20 minutes until crust begins to brown. Cool completely.
  4. To make cream cheese layer: In medium bowl, mix cream cheese until creamy. Add powdered sugar and heavy cream; mix until smooth. Spread over cooled pecan crust. Refrigerate.
  5. To make pudding layer: In medium bowl, whisk egg yolks. Add milk; whisk until combined. Set aside.
  6. In separate medium bowl, whisk sugar, cocoa powder, cornstarch, flour and salt until combined.
  7. In saucepan over medium heat, add egg yolk mixture and flour mixture. Whisk constantly until pudding begins to thicken and bubble. Add butter and vanilla extract, stirring until butter is melted. Pour chocolate pudding in shallow bowl. Cover with plastic wrap touching pudding to keep it from forming skin. Refrigerate 30 minutes.
  8. Pour pudding over cream cheese layer. Cover pie with plastic wrap. Refrigerate overnight.
  9. To make whipped cream topping: In stand mixer bowl, add heavy cream, powdered sugar and vanilla extract. Whip until stiff peaks form. Spread whipped cream over pudding layer.
  10. Drizzle pie with chocolate syrup and sprinkle with chopped pecans.

Filling:

  • 4          green apples, peeled, cored and thinly sliced
  • 1          teaspoon cinnamon
  • 1/2       teaspoon nutmeg
  • 2          tablespoons plant-based butter
  • 1/3       cup white sugar
  • 3          tablespoons water
  • 1          teaspoon cornstarch

Oat Crumble Topping:

  • 1/2       cup flour
  • 1/2       cup rolled oats
  • 1/4       cup brown sugar
  • 1/2       teaspoon cinnamon
  • 1          tablespoon orange juice
  • 1          pinch salt
  • 2          tablespoons plant-based butter
  • 4          Toufayan Multi-Grain Pita Bread
  1. Preheat oven to 350 F.
  2. To make filling: In large saute pan over medium heat add apples, cinnamon, nutmeg, butter, white sugar, water and cornstarch. Cook apples down about 10 minutes until they begin to get gooey.
  3. To make oat crumble topping: In medium bowl, mix flour, oats, brown sugar, cinnamon, orange juice and salt. Cut in butter and mix until crumbs begin to form.
  4. Cut pitas in half and line baking sheet. Fill one pita half with apple filling and lay on its side, being careful to not let apples fall out. Top with oat crumble. Repeat with remaining pitas.
  5. Bake about 6 minutes. If desired, broil 1 minute for additional color.

Roasted Chickpea Cauliflower Sandwiches

Prep time: 10 minutes
Cook time: 45 minutes
Servings: 6

  • 1          can chickpeas, roasted
  • 1/4       teaspoon salt, plus additional, to taste, divided
  • 1/8       teaspoon black pepper, plus additional, to taste, divided
  • garlic salt, to taste
  • 1          head cauliflower, cut into florets
  • 1/4       cup plant-based yogurt or sour cream
  • 1/2       red pepper, diced
  • 1/3       cup shredded carrots
  • 1          cup corn kernels (optional)
  • 1/4       teaspoon dill
  • 1/2       teaspoon garlic powder
  • 1/4       teaspoon paprika
  • 3          Toufayan Bakeries Multi Grain Pitas, halved
  • parsley, for garnish
  1. Preheat oven to 425 F.
  2. Season chickpeas with salt, pepper and garlic salt, to taste. Roast chickpeas 40-45 minutes.
  3. In bowl, mix chopped cauliflower; yogurt or sour cream, diced pepper; shredded carrots; corn, if desired; 1/4 teaspoon salt; 1/8 teaspoon pepper; dill; garlic powder and paprika.
  4. Once chickpeas are roasted, add to bowl and mix well. Spoon mixture into six pitas and garnish with parsley.

Fresh Ginger Cookies

  3. In stand mixer, beat butter, 1 cup sugar and brown sugar until fluffy. Add egg and fresh ginger; beat until combined. Gradually add dry ingredients to mixer until combined.
  4. In small bowl, add remaining sugar. Using spoon, portion out dough, roll into balls then roll in sugar. Arrange balls on baking sheet at least 1 inch apart.
  5. Bake 14 minutes, or until edges are golden brown. Transfer cookies to cooling rack and cool completely.
