Servings: 4
- 1 teaspoon olive oil, divided
- 1/2 teaspoon salt
- 1/2 teaspoon pepper, divided
- 1 chateaubriand tenderloin roast
- 8 ounces mushrooms
- 1 large shallot
- 2 tablespoons dry red wine
- 2 tablespoons Dijon mustard
- 1/2 teaspoon dried thyme leaves
- flour
- 1 sheet puff pastry
- In large nonstick skillet over medium-high heat, heat 1/2 teaspoon oil until hot. Combine salt and 1/4 teaspoon pepper. Press evenly onto all surfaces of roast. Place roast in skillet; brown evenly. Remove roast from skillet.
- Heat oven to 425 F.
- In food processor, pulse mushrooms and shallot about 10 times until finely chopped. Do not overprocess.
- Place same skillet used for roast over medium-high heat and heat remaining oil until hot. Add mushrooms and shallot; cook 4-6 minutes until tender and all liquid is evaporated, stirring often. Add wine; cook 2-3 minutes until all liquid is evaporated. Stir in mustard, thyme and remaining pepper. Cook 2-3 minutes. Remove from skillet to medium bowl; cool.
- Line rimmed baking sheet with aluminum foil and place in oven. On lightly floured cutting board, unfold pastry dough. Roll pastry out to 12-by-9-inch rectangle; lay dough with shortest edge toward you. Spread mushroom mixture onto pastry dough, leaving 1/2-inch border around edges. Place roast in center of mushrooms. Fold pastry dough neatly around roast, stretching dough if necessary. Cut off excess pastry dough; press to seal overlapping edges.
- Remove baking sheet from oven and dust lightly with flour. Place pastry-wrapped roast, seam-side down, on baking sheet. Cut four (2-inch) vents in top of pastry.
- Bake 35-50 minutes, or until golden brown and instant-read thermometer inserted into center of roast registers 135 F for medium-rare or 150 F for medium. Transfer roast to carving board. Let stand 10 minutes. Temperature will rise about 10 F to reach 145 F for medium-rare or 160F for medium.
- Carve into slices and serve.

- 1 center-cut sirloin beef roast (about 3 pounds)
- 1 tablespoon olive oil
Seasoning:
- 2 teaspoons kosher salt
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh thyme, chopped
- 5 cloves garlic, minced
- 2 teaspoons coarsely ground mixed peppercorns (black, white, green and pink)
- Preheat oven to 350 F.
- Rub roast with olive oil.
- To make seasoning: In small bowl, combine salt, parsley, thyme, garlic and mixed peppercorns; press evenly into beef roast.
- Place roast in roasting pan or baking dish with wire rack in bottom. Bake 40-60 minutes. Remove roast when meat thermometer registers 135 F for medium-rare or 150 F for medium.
- Transfer roast to carving board; tent loosely with aluminum foil. Let stand 10-15 minutes. Temperature will rise about 10 F to reach 145 F for medium-rare or 160 F for medium.
- Carve roast into slices by cutting against grain.

- 1 pound ground beef
- 1 cup fresh zucchini, grated
- 1 egg
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 small yellow onion, diced 1/2 inch
- 2 red bell peppers, diced 1/2 inch
- 2 green bell peppers, diced 1/2 inch
- 12 skewers (6 inches)
Cranberry Barbecue Sauce:
- 1 can (16 ounces) whole berry cranberry sauce
- 3 tablespoons barbecue sauce
- Preheat oven to 400 F.
- In medium bowl, lightly mix ground beef, zucchini, egg, salt and pepper until thoroughly combined. Shape into 24 1-inch meatballs. Alternately thread meatballs, onions, red peppers and green peppers onto skewers. Place skewers on shallow-rimmed baking sheet.
- Bake 22-25 minutes, or until instant-read thermometer inserted into center of meatball registers 160 F.

Roasted Chateaubriand with Red Wine Gravy and Lemon-Garlic Asparagus

Chateaubriand:
- 1 Omaha Steaks Chateaubriand (2-4 pounds)
- kosher salt
- ground black pepper
- 1/4 cup grapeseed oil
Red Wine Gravy:
- Reserved chateaubriand juices
- 1 medium shallot, small diced
- 2 garlic cloves, minced
- 1 1/2 cups red wine
- 4 tablespoons unsalted butter, divided
- 2 tablespoons all-purpose flour
- 2 1/2 cups water
- 2 beef bouillon cubes
- 1 tablespoon stone ground mustard
- kosher salt, to taste
- ground black pepper, to tastePreheat smoker or pellet grill to 275 F.
Lemon-Garlic Asparagus:
- 1/4 cup olive oil
- 1 pound jumbo asparagus, stems trimmed and spears blanched in salted water
- 1 pinch kosher salt, plus additional, to taste, divided
- 1 pinch ground black pepper, plus additional, to taste, divided
- 1/4 teaspoon crushed red pepper flakes
- 2 garlic cloves, minced
- 1/2 lemon, juice only
- 2 tablespoons unsalted butter
- To make chateaubriand: Pat chateaubriand dry with paper towels. Season on all sides with salt and pepper; bring to room temperature, about 30 minutes.
- Preheat oven to 250 F.
- In large cast-iron pan, bring grapeseed oil to high heat.
- Sear chateaubriand on all sides until golden brown, 2-3 minutes per side.
- Remove chateaubriand from pan, reserving pan drippings; place chateaubriand on wire rack-lined baking sheet. Bake according to cooking chart for cook time and desired doneness. Use meat thermometer to ensure doneness.
- Rest chateaubriand 15-20 minutes. Slice to desired thickness.
- To make red wine gravy: Bring cast-iron pan with reserved chateaubriand drippings to high heat then add shallots and minced garlic. Brown 30 seconds.
- Add red wine and deglaze pan, cooking until reduced by half, about 3 minutes.
- Reduce heat to medium and whisk in 2 tablespoons butter and flour until all clumps have disappeared and mixture is well-incorporated, 3-4 minutes.
- Add water and bouillon cubes; bring to boil then whisk in stone ground mustard.
- Reduce to low heat and simmer until achieving sauce-like consistency, 7-8 minutes.
- Season with salt and pepper, to taste. Turn off heat and whisk in remaining butter until fully melted and emulsified into sauce.
- To make lemon-garlic asparagus: In large saucepan, bring olive oil to medium-high heat.
- Add asparagus and season with salt, ground black pepper and crushed red pepper flakes. Sear undisturbed about 1 minute.
- Turn asparagus and add minced garlic, sauteing about 10 seconds. Add lemon juice and continue sauteing until reduced by two-thirds, about 1 minute.
- Turn off heat and add butter, stirring until emulsified into pan sauce. Season with salt and ground black pepper, to taste.
- Serve chateaubriand with lemon-garlic asparagus and red wine gravy.
Crab Stuffed Lobster Tails with Dirty Rice

Dirty Rice:
- 2 cups jasmine rice
- water
- 1/2 cup vegetable oil
- 1 pound Omaha Steaks Ultra-Premium Ground Beef
- 1 tablespoon kosher salt, plus additional, to taste, divided
- 1 teaspoon black pepper, plus additional, to taste, divided
- 1 teaspoon garlic powder
- 2 teaspoons smoked paprika
- 2 tablespoons unsalted butter
- 1 medium red bell pepper, small diced
- 2 green onions, minced
- 1 cup small diced yellow onion
- 1/2 cup tomato-based sofrito
- 3 1/2 cups chicken broth
Crab Stuffing:
- 3/4 cup mayonnaise
- 2 teaspoons seafood seasoning
- 2 teaspoons Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/2 lemon, juice only
- 20 butter crackers, finely crushed
- 1 pound jumbo lump crab meat
Crab Stuffed Lobster:
- 2 tablespoons unsalted butter, melted
- 1 teaspoon kosher salt
- 1 teaspoon fresh lemon juice
- 4 Omaha Steaks Cold Water Lobster Tails (5 ounces each), halved lengthwise
- To make dirty rice: Rinse jasmine rice with water until water is clear. Drain.
- In large saucepot, bring vegetable oil to medium-high heat.
- Add ground beef, 1 tablespoon salt, 1 teaspoon black pepper, garlic powder and smoked paprika; saute 5 minutes until browned.
- Using slotted spoon, remove browned beef and set aside.
- Add butter to pot then add red bell pepper, green onions and yellow onions. Saute 2 minutes until lightly caramelized.
- Add sofrito and jasmine rice to pot; saute 1 minute. Add cooked ground beef and chicken stock; bring to boil. Once mixture boils, reduce heat to simmer 10 minutes. Turn off heat and leave lid on pot 5 minutes. Fluff rice with fork and season with salt and pepper, to taste.
- To make crab stuffing: In medium bowl, whisk mayonnaise, seafood seasoning, Dijon mustard, Worcestershire sauce and lemon juice.
- Gently fold in crushed butter crackers and crab meat. Set aside.
- To make crab stuffed lobster: Preheat oven to 425 F.
- Stir melted butter, salt and lemon juice. Brush lobster tails with butter mixture.
- Divide crab stuffing into eight portions. Stuff each lobster tail half with crab stuffing, pressing stuffing into lobster. Place stuffed lobster tails on aluminum foil-lined sheet pan and bake 10-12 minutes, or until golden brown. Serve with dirty rice.
Pepper-Crusted Prime Rib with Creamy Horseradish Sauce and Crushed Potatoes

Creamy Horseradish Sauce:
- 15 ounces crema or sour cream
- 1/3 cup mayonnaise
- 2 tablespoons horseradish
- 2 tablespoons apple cider vinegar
- 2 tablespoons minced fresh chives
- 2 teaspoons Worcestershire sauce
- 1 tablespoon fresh lemon juice
- 1 teaspoon hot sauce
- 1/2 teaspoon kosher salt, plus additional, to taste, divided
- 1/2 teaspoon white pepper, plus additional, to taste, divided
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
Pepper Rub:
- 3 tablespoons kosher salt
- 1 tablespoon ground peppercorn medley
- 2 teaspoons ground guajillo chili
- 1 teaspoon dried thyme leaves
Prime Rib:
- 1 Omaha Steaks Boneless Heart of Prime Rib Roast (4 pounds)
- pepper rub
- 1/4 cup grapeseed oil
Crushed Potatoes:
- 1 pound baby red skin potatoes
- cold water
- 1 pinch kosher salt, plus additional, to taste, divided
- 1/4 cup olive oil
- 2 garlic cloves, minced
- 2 tablespoons finely minced Italian parsley
- ground black pepper
- To make creamy horseradish sauce: In medium bowl, whisk crema, mayonnaise, horseradish, vinegar, chives, Worcestershire sauce, lemon juice, hot sauce, 1/2 teaspoon salt, 1/2 teaspoon pepper, onion powder, garlic powder and paprika until well-incorporated. Season with additional salt and white pepper, to taste.
- To make pepper rub: In small bowl, stir salt, peppercorns, chili and thyme.
- To make prime rib: Pat prime rib dry with paper towels. Season on all sides with pepper rub and bring to room temperature, about 30 minutes.
- Preheat oven to 250 F.
- In large cast-iron pan, bring grapeseed oil to medium-high heat.
- Sear prime rib on all sides until golden brown, 2-3 minutes per side.
- Place seared prime rib on wire rack-lined baking sheet. Bake according to cooking chart for cook time and desired doneness. Use meat thermometer to ensure doneness. Cook until internal temperature is 10 F below desired doneness.
- Rest prime rib 15-20 minutes. Slice to desired thickness.
- To make crushed potatoes: Preheat oven to 425 F.
- Add potatoes to stockpot. Cover with cold water by about 1 inch and add 1 pinch salt. Over high heat, boil 8-10 minutes, or until fork tender. Drain and completely cool with running cold water.
- Once cool, carefully crush potatoes with palms until skin breaks and potatoes are slightly crushed.
- In medium bowl, whisk olive oil, garlic and parsley.
- Place crushed potatoes on aluminum foil-lined baking sheet and toss lightly with olive oil mixture. Season potatoes on both sides with kosher salt and ground black pepper, to taste. Roast potatoes until crisped and golden brown, 15-17 minutes.
- Serve prime rib with crushed potatoes and creamy horseradish sauce.

- 2 Omaha Steaks Butcher’s Cut Filet Mignons (5-6 ounces each), thawed
- 2 teaspoons kosher salt
- 2 tablespoons coarsely ground black pepper
- 1 tablespoon vegetable oil
- 2 tablespoons butter, divided
- 1/3 cup brandy or cognac
- 1 cup cream
- 1 tablespoon Dijon mustard
- Season steak with salt and pepper. Press seasoning into meat to create even coating.
- In large skillet over medium-high heat, heat vegetable oil and 1 tablespoon butter until just smoking. Add steak and sear 4 minutes on each side for medium-rare. Once cooked to desired doneness, transfer steak to cutting board and tent with foil to rest.
- Reduce heat to medium and add brandy to skillet. Allow to cook down about 1 minute while stirring to scrape off any browned bits from bottom of pan. Once brandy reduces by half, add cream, Dijon mustard and remaining butter; continue cooking until mixture begins to reduce and thicken, 5-7 minutes.
- Slice steaks against grain and top with sauce.
Fred Simon’s Rib Roast Dubarry
Prep time: 5 minutes, plus 5-12 hours marinating time
Cook time: 2 hours, 15 minutes-2 hours, 45 minutes, plus 15 minutes for sauce
Servings: 4-6
- 3 cups red wine, divided
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tablespoons coarse ground mustard
- 1 bay leaf
- 1 Omaha Steaks Bone-In Frenched Prime Rib Roast (4 pounds), thawed
- 1 tablespoon kosher salt, plus additional, to taste, divided
- 1 tablespoon coarse ground pepper, plus additional, to taste, divided
- 2 tablespoons canola oil
- 1 onion, quartered
- 4 carrots, quartered
- 4 celery stalks, quartered
- 1 head garlic, halved horizontally
- 4 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 cups beef stock, divided
- 3 tablespoons unsalted butter
- In 2-gallon resealable bag, mix 2 cups wine, olive oil, garlic, mustard and bay leaf. Add roast, seal and place in refrigerator to marinate at least 5 hours or overnight, turning occasionally.
- Remove roast from marinade and pat dry. Season generously with salt and pepper.
- Preheat oven to 250 F.
- Preheat large skillet over high heat. Add canola oil. Place roast in skillet and sear until well browned on all sides. Set skillet aside, leaving juices and browned bits for making sauce.
- In roasting pan lined with foil, add onion, carrots, celery, garlic, thyme and rosemary. Place roast on top of aromatics bone-side down. Add 1 cup beef stock.
- Place in oven on center baking rack. Roast 2 hours, 15 minutes-2 hours, 30 minutes for rare or 2 hours, 30 minutes-2 hours, 45 minutes for medium-rare. Remove from oven. Place roast on cutting board. Tent with foil.
- Place any accumulated juices from roast in measuring cup. Add remaining beef stock to make 1 cup total. Pour into skillet over medium-high heat. Add remaining wine and bring to boil, stirring occasionally, until reduced by half. Remove from heat and whisk in butter. Season with salt and pepper, to taste.
- Carve roast and serve with sauce.
Simon Family Brisket
Prep time: 10 minutes
Cook time: 4 hours, plus 20 minutes resting time
Servings: 4
- 1 Omaha Steaks Beef Brisket Flat (2 pounds), thawed
- 1 package (1.1 ounces) dry onion soup mix
- 1 can (14 ounces) whole cranberries
- 1 cup chili sauce
- 1 cup ginger ale
- Preheat oven to 250 F. Place brisket in large ovenproof baking dish.
- In bowl, mix onion soup mix, cranberries and chili sauce. Spoon over top of brisket. Pour ginger ale around edges of brisket.
- Cover with foil and bake 4 hours.
- Remove from oven and let rest 20 minutes. Remove brisket from baking dish and place on cutting board. Slice brisket against grain and place in serving dish. Top with sauce and serve.

Pickled Red Onions:
- 1 medium red onion
- 2/3 cup red wine vinegar
- 1 1/2 tablespoons sugar
- 1/2 tablespoon salt
- 1/4 cup red wine
- 2 cloves
Beef Bao Buns:
- 1 pound boneless beef ribs
- 1 tablespoon five-spice powder
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic, chopped
- 1 1/2 cups beef stock
- 1 cup hoisin sauce
- 1 tablespoon ginger, grated
- 12 bao buns (available in most Asian markets in freezer section)
- 3 green onions, cut on bias
- To make pickled red onions: Slice onion in half then slice 1/4 inch. In saucepot, combine vinegar, sugar, salt, wine and cloves. Place onions in liquid. Simmer 3-4 minutes, swirling pan to ensure onions are exposed to hot mixture. Remove from heat and steep 15 minutes. Place in clean container in refrigerator at least 2 hours. Onions should be submerged in liquid.
- To make beef bao buns: Heat oven to 350 F.
- Rub beef with five-spice powder, salt and pepper. Heat saute pan and sear beef on all sides. Remove and place in baking dish. Add garlic to pan and saute briefly. Deglaze pan with beef stock and bring to simmer, scraping up caramelized bits stuck to bottom of pan. Add hoisin sauce and ginger to simmering stock. Pour stock over beef.
- Cover baking dish with parchment and aluminum foil and bake 2 hours, or until beef can be pulled apart with fork.
- Remove beef from stock and allow to cool slightly before shredding with fork.
- Place remaining stock in saucepan over medium heat. Reduce by half, or until thickened so it can coat back of spoon.
- Toss shredded beef with sauce.
- Place beef between bao buns and garnish with pickled red onions and green onions. Serve while warm.

Red Pepper Cranberry Sauce:
- 1 tablespoon olive oil
- 2 medium red bell peppers, finely diced
- 1 cup red wine
- 1/4 cup red wine vinegar
- 1/3 cup white sugar
- 2 teaspoons yellow mustard seeds
- 6 tablespoons dried cranberries
- 6 tablespoons dried currants
- 1/4 teaspoon salt
- To make roast: Heat oven to 250° F.
- Using butcher’s twine, tie roast to maintain shape. Coat all sides with 2 tablespoons canola oil and season with rub.
- In medium skillet, heat remaining oil. Sear all sides of roast 2 minutes each.
- Place roast in roasting pan and bake 1 hour, 30 minutes.
- To make Red Pepper Cranberry Sauce: Heat medium skillet on medium-high heat.

- 1 tablespoon olive oil
- 2 medium red bell peppers, finely diced
- 1 cup red wine
- 1/4 cup red wine vinegar
- 1/3 cup white sugar
- 2 teaspoons yellow mustard seeds
- 6 tablespoons dried cranberries
- 6 tablespoons dried currants
- 1/4 teaspoon salt
- Heat medium skillet on medium-high heat.

Whiskey Marinated Holiday Roast
Prep time: 45 minutes-1 hour, plus 48-72 hours thawing time
Cook time: 2-3 1/2 hours

Marinade:
- 4 ounces water
- 2 ounces whiskey
- 1/4 teaspoon baking soda
Roast:
- 2 pound chateaubriand or 4 pound bone-in frenched prime rib roast, thawed completely (allow 48-72 hours)
- 1 package Omaha Steaks Private Reserve Rub
- To make marinade: In large, re-sealable bag, mix water, whiskey and baking soda.
- To make chateaubriand: Place roast in bag and marinate in refrigerator 30 minutes.
- Remove roast from marinade. Discard marinade.
- Season roast with rub 12-18 hours before cooking and leave uncovered in refrigerator overnight. When ready to cook, heat oven to 225° F. Place roast on elevated rack in roasting pan.
- Roast 2 hours, or until roast reaches internal temperature between 120-125° F.
- Let roast rest 30-45 minutes.
- Broil on high 2 inches from broiler, 4 minutes on one side then flip and broil 2 minutes on other side, or until brown crust uniformly covers roast.
- To make bone-in frenched prime rib roast: Place roast in bag and marinate in refrigerator 45 minutes.
- Remove roast from marinade. Discard marinade.
- Season roast with rub 12-18 hours before cooking and leave uncovered in refrigerator overnight. When ready to cook, heat oven to 225° F. Place roast on elevated rack in roasting pan.
- Roast 3 hours and 15 minutes, or until roast reaches internal temperature between 120-125° F.
- Let roast rest 30-45 minutes.
- Broil on high 2 inches from broiler, 4 minutes on one side then flip and broil 2 minutes on other side, or until brown crust uniformly covers roast.
Apricot and White Wine Glaze
Prep time: 5 minutes
Cook time: 25 minutes
Total time: 30 minutes
Yield: 1 1/2 cups
- 1 1/2 cups white wine
- 2/3 cup white wine vinegar
- 3/4 cup apricot jam
- 2 tablespoons yellow mustard seeds
- 2 tablespoons brown mustard seeds
- 1 teaspoon salt
- 1/2 teaspoon granulated garlic
- 3/4-1 teaspoon chili flakes
- In medium saucepan over medium heat, combine white wine, white wine vinegar, apricot jam, mustard seeds, salt and garlic.
- Bring to boil then turn to low and simmer 25 minutes, or until reduced by one-third.
- Remove from heat and stir in chili flakes.
- Reheat or bring to room temperature to use as glaze or serve as sauce for holiday ham.
Note: Apricot and White Wine Glaze may be prepared up to 3 days in advance.

- 6-8 strips bacon
- 1 loaf country bread
- 1 cup arugula leaves
- 1 cup cherry tomatoes, halved
- 1 tablespoon extra-virgin olive oil, plus additional to drizzle
- 1 tablespoon balsamic vinegar
- kosher salt
- ground pepper
- capers
- Heat oven to 375° F.
- Place bacon on baking sheet and bake 15-20 minutes depending on thickness of bacon. Remove bacon from oven and transfer to paper towels to drain.
- Using bread knife, slice bread 1/3-inch thick into single-serving slices; toast lightly.
- Add arugula leaves and cherry tomatoes to medium bowl. In separate bowl, whisk olive oil and balsamic vinegar; add to tomatoes and arugula, and gently toss to coat.
- To assemble, drizzle olive oil on one side of toasted bread. Arrange arugula, bacon and tomato mixture on top. Finish each sandwich with sprinkle of salt, ground pepper and a few capers.

Spiral Ham with Red Wine and Citrus Glaze

Cook time: 10-12 minutes per pound of ham
Ham:
- 1 Appleton Farms Spiral Cut Double Glazed Brown Sugar Ham (about 4 pounds), reserving liquid
Glaze:
- 1/2 cup Intermingle Red Blend wine
- 1/4 cup Nature’s Nectar orange juice
- 1/4 cup Specially Selected 100% Pure Maple Syrup
- 1/2 cup Simply Nature Organic Light Brown Sugar
- 1 tablespoon chopped fresh rosemary
- 1 dash salt
- 2 tablespoons Burman’s Dijon Mustard
- To make ham: Heat oven to 325° F. Place ham in roasting pan on rack. Pour reserved liquid over ham and cover tightly with foil. Bake 10-12 minutes per pound.
- To make glaze: In small pan, combine wine, orange juice, syrup, brown sugar, rosemary and salt. Heat to boil then lower to rapid simmer until mixture begins to thicken and reduce, about 10 minutes, stirring frequently. Remove from heat and whisk in mustard.
- When ham is 10 minutes from being done, remove from oven and increase temperature to 400° F. Remove foil and brush ham thoroughly with glaze.
- Place ham back in oven, uncovered, about 10 minutes, or until ham reaches internal temperature of 140° F.
- Remove ham from oven and let sit 10 minutes. Slice and serve.
Mini Blueberry Chocolate Tart

- 1 Bake House Creations Pie Crust
- 1 1/2 tablespoons Sweet Additions Stevia No Calorie Sweetener
- 1 cup fresh blueberries
- 1 Choceur Dark Chocolate Bar (2.64 ounces), chopped
- Heat oven to 400° F. Cut 1-2 sheets of parchment paper into 5-by-5-inch squares. Line each cup of 12-cup muffin pan with one square of parchment paper.
- Roll out pie crust and cut 12 circles, 2 inches each, with cookie cutter. Press each circle into lined muffin cup.
- In medium bowl, combine sweetener, blueberries and chocolate. Divide mixture among pie crusts.
- Bake 17 minutes until chocolate melts. Allow to cool and serve.

Mocha-Rubbed Duck Breast with Cherry and Red Wine Pan Sauce
Prep time: 2 hours, 10 minutes
Cook time: 35 minutes

Mocha Rub:
- 2 tablespoons brown sugar
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon ground coffee
- 2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon cocoa powder
- 4 Maple Leaf Farms Duck Breasts, thawed
Cherry and Red Wine Pan Sauce:
- 2 tablespoons reserved duck fat
- 1/2 cup minced shallots
- 3/4 cup dry red wine
- 1 1/2 teaspoons balsamic vinegar
- 1 1/2 teaspoons granulated sugar
- 5 ounces frozen dark sweet cherries, thawed and halved
- 5 sprigs fresh thyme
- salt, to taste
- ground black pepper, to taste
- toasted sliced almonds, for garnish
- To make Mocha Rub: In small bowl, mix brown sugar, paprika, coffee, salt, pepper and cocoa powder. Set aside.
- Pat duck breasts dry and score according to package directions. Use half of rub on meat side of breasts. Cover breasts and refrigerate at least 2 hours or overnight.
- In cold saute pan, place duck breasts skin-side down. Place pan over low-medium heat 8-12 minutes, or until fat is rendered and skin is crisp and brown.
- Turn breasts over and sprinkle remaining rub on skin side. Cook breasts 1-2 minutes skin-side up. Turn breasts back to skin-side down 1-2 minutes to caramelize rub. Reserve approximately 2 tablespoons duck fat for sauce.
- Heat oven to 350° F.
- Place duck breasts skin-side up on rimmed baking sheet; bake 5-6 minutes, or until internal temperature reaches 155° F. Let breasts rest 4-5 minutes before slicing. Temperature will rise during resting period to reach 165° F.
- To make Cherry and Red Wine Pan Sauce: Place saute pan with reserved duck fat over medium heat. Add shallots and cook until softened. Add wine to pan to deglaze. Stir in balsamic vinegar, sugar, cherries and thyme sprigs; simmer until reduced. Remove thyme sprigs. Add salt and pepper, to taste.
- Serve sauce over cooked duck breasts. Garnish with toasted almond slices.

Monitor periodically and keep testing until you get the desired vinegar smell, strain and refrigerate. Use as desired on salads and in homemade sauces and marinades.
Create Wine Ice Cubes
If you can't use your leftover white wine right away, pour the remaining liquid into ice trays and freeze. Next time you’re enjoying a glass, add some of the cubes to your wine to keep it cold. This trick can also work with a rosé or sparkling wine like Josh Cellars California Rosé or Enza Prosecco. Using the frozen wine cubes instead of ice can prevent what you pour from becoming too watered down.
Wine-Based Recipes
Both red and white wines can be used in a variety of different dishes from appetizers to desserts. White Wine Glazed Carrots

- 6 medium carrots, halved lengthwise and cut into 2-inch pieces
- 1 tablespoon extra-virgin olive oil
- 1 1/2 cups water
- 1 tablespoon honey
- 2 tablespoons Barone Fini Pinot Grigio
- salt, to taste
- pepper, to taste
- In large skillet, combine carrots and olive oil; add water. Cook over medium-high heat until carrots are tender. Add honey and white wine; cook and stir 2 minutes until carrots are glazed.
- Add salt and pepper, to taste.
Red Wine Tomato Sauce

- 1 teaspoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can whole, peeled tomatoes
- 1/8 cup Villa Pozzi Nero D’Avola
- 1/4 cup balsamic vinegar
- 1/4 teaspoon crushed red pepper
- 1/2 teaspoon dried sea salt
- 1/2 teaspoon oregano
- 1/2 teaspoon thyme
- 1/2 teaspoon basil
- In medium-size pot, heat olive oil. Add onion and saute 4 minutes then add minced garlic and saute 1 minute.
- Add tomatoes, wine, vinegar, red pepper, sea salt, oregano, thyme and basil; reduce heat and simmer about 40 minutes.
