Summer Pizza Snack

Total time: 22 minutes
Servings: 12

  • 1 tube (8 ounces) crescent rolls
  • 1 tub (8 ounces) low-fat cream cheese
  • 1/4 cup light mayonnaise
  • 1/4 teaspoon garlic powder
  • 1 cup shredded part-skim mozzarella cheese
  • 3/4 cup sliced cherry tomatoes
  • 1/2 cup sliced black olives
  • 1/2 cup chopped broccoli florets
  • 1/2 cup chopped cucumber
  1. Heat oven to 375° F. In 9-by-13-inch baking pan, spread out crescent roll dough. Seal seams together to form one large rectangle across bottom of pan. Bake 10-12 minutes, or until lightly browned. Cool on rack.
  2. In small bowl, mix together cream cheese, mayonnaise and garlic powder. Spread evenly over entire cooled crust. Top with mozzarella, tomatoes, olives, broccoli and cucumber. Cut into 12 squares and serve.

Beef Burrito with Pepper Jack Cheese and Black Beans

Total time: 9 minutes
Servings: 6

  • 1/2 pound ground beef sirloin
  • 2 teaspoons minced garlic
  • 1 cup chunky salsa, divided
  • 2 cups cooked brown or white rice
  • 6 whole-wheat tortillas (9 inches each)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (11 ounces) corn kernels, drained
  • 2 cups shredded pepper jack cheese
  • sliced green onion, including green tops
  1. In medium, nonstick skillet, brown ground beef and garlic over medium heat (break beef mixture up into smaller chunks with spatula). Drain fat and stir in 1/2 cup salsa; set aside.
  2. Spread 1/3 cup rice on center of tortilla, leaving 1/2-inch border. Scatter about 2 tablespoons beans and 1 1/2 tablespoons corn over rice. Spread 1/3 cup beef mixture and 1/4 cup cheese over corn. Top with 2 teaspoons salsa and a few slices green onion. Fold in two opposite edges of tortilla 1 inch each and roll up. Place seam-side down on microwave-safe dish.
  3. Repeat with remaining tortillas. Place burritos in microwave oven and heat 1 minute, or until heated through. Serve with remaining salsa.

Peppermint and Chocolate Chex® Mix

Featuring melted white chocolate, crushed candy canes and a dark chocolate drizzle, it’s easy to add holiday cheer with this festive mix.

Prep Time: 10 Minutes
Start to Finish: 15 Minutes
Makes: 16 servings (1/2 cup each)

  • 3 cups Rice Chex® cereal
  • 3 cups Chocolate Chex® cereal
  • 1 bag (12 ounces) white vanilla baking chips (2 cups)
  • 1/2 cup coarsely crushed peppermint candy canes (16 miniature, unwrapped)
  • 1/4 cup dark chocolate chips
  1. Mix cereals in large microwavable bowl. Line cookie sheet with foil or waxed paper.
  2. In microwavable bowl, microwave white vanilla baking chips uncovered on High about 1 minute 30 seconds, stirring every 30 seconds, until chips can be stirred smooth. Stir in half the crushed peppermint candy.
  3. Pour over cereal; toss to evenly coat. Spread mixture in single layer on cookie sheet. Immediately sprinkle with remaining candy.
  4. Melt dark chocolate chips in microwave on High 50 to 60 seconds or until chips can be stirred smooth; drizzle over top. Let stand in refrigerator until set, about 5 minutes. Gently break into clusters. Store in airtight container.

Chex® Pumpkin Pie Crunch

This recipe is great served in your favorite colorful pie plate. Set the pie plate out on the table with the other dishes, and put a scooper out so guests can help themselves. For party favors, leave small bags next to the pie plate and ask guests to take a bag home for an extra treat later.

Start to Finish: 15 Minutes
Makes: 16 servings (1/2 cup each)

  • 1/4 cup brown sugar
  • 1 tablespoon pumpkin pie spice
  • 1/4 cup butter
  • 2 teaspoons vanilla
  • 2 cups Cinnamon Chex® cereal
  • 2 cups Wheat Chex® cereal
  • 2 cups Honey Nut Chex® cereal
  • 8 ounces pecans
  1. In small bowl, mix brown sugar and pumpkin pie spice; set aside. In small microwave-safe dish, microwave butter on High about 30 seconds or until melted. Stir in vanilla. In large microwavable bowl, mix all cereals and pecans. Pour butter mixture over cereal mixture, stirring until evenly distributed. Add sugar and spice mixture and stir until coated.
  2. Microwave uncovered on High 5 minutes or until mixture begins to brown, stirring every minute. Spread on wax paper or a cookie sheet to cool. Store in airtight container. Note: Make mix up to two weeks ahead and store in airtight container.

Berry Breakfast Parfaits

Serves 4

  • 2 cups (16 ounces) Daisy Brand Cottage Cheese
  • 2 cups mixed fresh berries such as sliced strawberries, blueberries, and raspberries
  • 1 cup granola
  • 4 tablespoons sliced or chopped almonds
  • 1 teaspoon vanilla*
  • 3/4 teaspoon Splenda®*
  1. Refrigerate fruit mixture 2 hours before assembling. In four serving dishes layer 1/4 cup of cottage cheese, 1/8 cup of granola, and 1/4 cup of mixed berries. Repeat layers in each glass. Top each parfait with 1 tablespoon of almonds.

*For a sweeter taste, try adding 1 teaspoon vanilla and 3/4 teaspoon of Splenda to fruit and stir.

Pita Pesto Pizza Snackers

Serves 2

  • 2 pieces pita bread
  • 2 tablespoons basil pesto
  • 1 cup (8 ounces) Daisy Brand Cottage Cheese
  • 1 1/2 teaspoons garlic bread seasoning (or garlic powder)
  • 2 tablespoons chopped Roma tomatoes
  • Chopped fresh basil, to taste
  • 2 teaspoons grated Parmesan cheese (optional)
  1. Toast pita bread until crispy and firm, about 1 minute in a toaster oven.
  2. Spread pesto on each pita bread, lightly covering entire surface.
  3. Combine cottage cheese with garlic bread seasoning and spread evenly over each pita.
  4. Top with chopped tomato and fresh basil.
  5. If desired, sprinkle each pita with Parmesan.
  6. Slice each pita into 4 wedges and serve immediately.

Apple-Cinnamon Pancake Stackers

Serves 2

  • 1 medium apple, Fuji or Gala, peeled, cored and cubed
  • 1 teaspoon ground cinnamon
  • 2 teaspoons Splenda® or other low calorie sweetener
  • 1 teaspoon vegetable oil
  • 2 teaspoons lite maple syrup
  • 1 cup (8 ounces) Daisy Brand Cottage Cheese
  • 6 3 1/2-inch whole wheat pancakes, frozen
  • 2 fresh mint sprigs
  1. Combine apple, cinnamon and sweetener. In small pan, heat oil and sauté apple mixture over medium heat 2 minutes. Add maple syrup and cook additional minute.
  2. Fold mixture into cottage cheese, being careful not to over mix.
  3. Heat pancakes per package instructions.
  4. To serve, place 1 hot pancake on plate and layer cottage cheese mixture between pancakes evenly, 3 pancakes per serving. Top with cottage cheese mixture, a drizzle of maple syrup and a fresh mint sprig.

Sweet Slice® Ham Sliders

Serves: 8
Cooking time: 10 minutes

  • 8 appetizer size rolls
  • 1/2 cup apple butter
  • 4 slices Sweet Slice Boneless Smoked Ham, sliced thick
  • 4 slices Whole Milk Low Moisture Mozzarella Cheese, sliced thick
  1. Slice rolls and spread with apple butter. Cut ham and cheese slices in half to fit on roll. Add one slice each of ham and cheese to roll. Arrange on dish and serve.

Frozen Grape and Banana Skewers with Chocolate Drizzle

Ingredients
  • 2 firm ripe bananas
  • 2 tablespoons orange juice
  • 1/2 cup red grapes (about 16)
  • 1/2 cup green grapes (about 16)
  • 8 10-inch wooden skewers
  • 1 1/2 ounces dark chocolate (60 to 70 percent cocoa solids), finely chopped
Preparation
  1. Line a baking sheet with wax paper. Cut the banana into 1/2-inch-thick rounds. Place in small bowl and toss gently with the orange juice.
  2. Skewer fruit, alternating two grapes for each piece of banana, and place fruit skewers onto lined tray.
  3. Place chocolate in small microwave safe bowl. Microwave for 1 minute, then stir well, and microwave another 10 seconds if necessary to melt chocolate.
  4. Using a spoon, drizzle melted chocolate onto fruit skewers.
  5. Place the tray in the freezer for at least 2 hours. Once frozen, skewers may be transferred to a sealable plastic bag where they will keep in the freezer for up to a week. Allow to soften at room temperature for 5 minutes before eating.
