  • 1 can (20 ounces) apple pie filling
  • 1 box yellow cake mix
  • 1/2 cup chopped pecans (optional)
  • 1 1/2 butter sticks, melted
  • vanilla ice cream or whipped cream topping (optional)
  1. Heat oven to 375 F.
  2. In baking dish, spread apple pie filling across bottom. Mix cake mix with pecans, if desired, then evenly cover apple pie filling.
  3. Cover cake mix with melted butter. Do not mix. If butter pools in one spot, pick dish up and move from side to side until covered evenly.
  4. Bake 30 minutes until crust is brown.
  5. Serve with vanilla ice cream or whipped cream topping, if desired.

Apple and Berry Cream Cheese Tarts

  • 1 cup diced raspberries
  • 4 tablespoons sugar, divided
  • 1 cup halved blueberries
  • 1 package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 12 frozen mini tart shells, approximately 2 inches in diameter
  • 3 Envy Apples, cut into 12 large slices (around cores)
  1. In bowl, stir raspberries and 2 tablespoons sugar. In separate bowl, stir blueberries and remaining sugar. Let sit 30-60 minutes.
  2. Beat together cream cheese, powdered sugar, vanilla and milk. Spoon into piping bag and cut off small part of tip.
  3. Bake tart shells according to package directions. Once baked and cooled, fill halfway with cream cheese mixture.
  4. Using small star cookie cutter, cut shapes from apple slices.
  5. Top half of each tart with spoonful of raspberries and other half with blueberries. Top each with apple star and repeat with remaining ingredients.

Greek-Style Flank Steak with Tangy Yogurt Sauce

Cook time: 25 minutes
Servings: 4

Marinade:

  • 1/4 cup lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons fresh oregano, rinsed, dried and chopped
  • 1 tablespoon garlic, minced (2-3 cloves)
  • 1 beef flank steak (12 ounces)

Yogurt Sauce:

  • 1 cup cucumber, peeled, seeded and chopped
  • 1 cup nonfat plain yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh dill, rinsed, dried and chopped
  • 1 tablespoon garlic, minced (2-3 cloves)
  • 1/2 teaspoon salt
  1. To make marinade: In large bowl, combine lemon juice, olive oil, oregano and garlic.
  2. Lay steak in flat container with sides and pour marinade over steak. Marinate at least 20 minutes, or up to 24 hours, turning several times.
  3. To make yogurt sauce: Combine cucumber, yogurt, lemon juice, dill, garlic and salt. Set yogurt sauce aside at least 15 minutes to blend flavors. Sauce can be prepared up to 1 hour in advance and refrigerated.
  4. Preheat broiler to high with rack 3 inches from heat source.
  5. Broil steak about 10 minutes on each side to minimum internal temperature of 145 F. Let cool 5 minutes before carving.
  6. Slice thinly across grain into 12 slices.
  7. Serve three slices with 1/2 cup yogurt sauce.

Tip: Serve in sandwich with pita bread, lettuce and tomato.

Teriyaki-Glazed Salmon with Stir-Fried Vegetables

Servings: 4

Salmon:

  • 2 tablespoons light teriyaki sauce
  • 1/4 cup mirin or sweet rice wine
  • 2 tablespoons rice vinegar
  • 2 tablespoons scallions, rinsed and minced
  • 1 1/2 tablespoons ginger, minced
  • 12 ounces salmon fillets, cut into four portions (3 ounces each)

Vegetables:

  • 1 bag (12 ounces) frozen vegetables stir-fry
  • 1/2 tablespoon peanut oil or vegetable oil
  • 1/2 tablespoon garlic, minced (about 1 clove)
  • 1 tablespoon ginger, minced
  • 1 tablespoon scallions, rinsed and minced
  • 1 tablespoon light soy sauce
  1. Preheat oven to 350 F.
  2. To prepare salmon: Mix teriyaki sauce, mirin, rice vinegar, scallions and ginger well. Pour over salmon and marinate 10-15 minutes.
  3. Remove salmon from marinade.
  4. Place salmon on baking sheet. Bake 10-15 minutes, or until fish flakes easily with fork in thickest part and reaches minimum internal temperature of 145 F.
  5. To prepare vegetables: Thaw frozen vegetables in microwave or place bag in bowl of hot water about 10 minutes. In large wok or saute pan, heat oil. Add garlic, ginger and scallions; cook gently, but do not brown, 30-60 seconds.
  6. Add vegetables and continue stir-frying 2-3 minutes, or until heated through. Add soy sauce.
  7. Serve one piece of salmon with 1 cup vegetables.

Baked Pork Chops with Apple Cranberry Sauce

Prep time: 10 minutes
Cook time: 30 minutes
Servings: 4

Pork Chops:

  • 4 boneless pork chops (about 3 ounces each)
  • 1/4 teaspoon ground black pepper
  • 1 medium orange, rinsed and zested
  • 1/2 tablespoon olive oil

Sauce:

  • 1/4 cup low-sodium chicken broth
  • 1 medium apple, peeled and grated (about 1 cup)
  • 1/2 cinnamon stick
  • 1 bay leaf
  • 1/2 cup dried cranberries
  • 1/2 cup 100% orange juice
  1. Preheat oven to 350 F.
  2. To prepare pork chops: Season pork chops with pepper and orange zest.
  3. In large saute pan, heat olive oil over medium heat. Add pork chops and cook until browned on one side, about 2 minutes. Turn and brown 2 minutes. Remove pork chops from pan, place on nonstick baking sheet and bake 10 minutes to minimum internal temperature of 160 F.
  4. To make sauce: Add chicken broth to saute pan and stir to loosen brown bits from pork chops. Set aside.
  5. In small saucepan over medium heat, cook grated apples, cinnamon stick and bay leaf until apples begin to soften.
  6. Add cranberries, orange juice and reserved broth. Bring to boil then lower heat to gentle simmer. Simmer 10 minutes, or until cranberries are plump and apples are tender. Remove cinnamon stick.
  7. Peel orange and cut into eight sections.
  8. Serve one pork chop with 1/4 cup sauce and two orange segments.

Spooky Popcorn Spider Web

Yield: 1 spider web

  • 1/4 cup butter
  • 8 cups mini marshmallows, divided
  • 1 tablespoon vanilla extract
  • 9 cups popped popcorn, divided
  • 1 cup semisweet chocolate chips, divided
  • black string licorice
  • candy eyes
  1. Line round pizza pan with parchment paper; set aside. In large saucepan over low heat, melt butter; stir in 5 cups marshmallows, stirring constantly, 3-4 minutes, or until completely melted. Stir in vanilla. Remove from heat. Stir in 8 cups popcorn until coated. Spread onto prepared pizza pan in irregular round shape, about 1-inch thick, to resemble spider web. Refrigerate about 15 minutes, or until firm.
  2. In microwave, melt remaining marshmallows about 20 seconds, or until melted. Using spatula, string strands of melted marshmallow over popcorn spider web to create cobweb effect.
  3. In heatproof bowl set over saucepan of hot (not boiling) water, melt 3/4 cup chocolate chips; cool slightly. In large bowl of remaining popcorn, pour chocolate over popcorn, folding gently to coat. Spread mixture on waxed paper-lined baking sheet, separating into eight small clusters. Affix two candy eyes to each popcorn cluster. Refrigerate 10-15 minutes, or until set.
  4. Melt remaining chocolate chips. Cut licorice into 1-inch lengths. Using small spoon, dab circles of chocolate onto spider web. Affix chocolate-coated popcorn onto chocolate circles. Affix licorice lengths to chocolate popcorn clusters to resemble spider legs.
  5. Refrigerate 15 minutes, or until set. To serve, cut into smaller pieces.

Witchy Popcorn Balls

Yield: 8 popcorn balls

  • 16 chocolate wafer cookies
  • nonstick cooking spray
  • 3 quarts popped popcorn
  • 4 tablespoons (1/2 stick) butter or margarine
  • 3 cups miniature marshmallows
  • 3 tablespoons (1/2 of 3-ounce box) lime gelatin dessert mix
  • green food color (optional)
  • 3/4 cup chocolate chips
  • licorice strings
  • 8 chocolate ice cream cones
  • orange sugar sprinkles, placed in small dish
  • jelly beans
  • candy corns
  1. Spread sheet of waxed or parchment paper over work surface and place wafer cookies on it.
  2. Spray large mixing bowl with nonstick cooking spray and place popcorn inside.
  3. In medium saucepan over low heat, melt butter. Stir in marshmallows and gelatin powder until marshmallows are melted and mixture is smooth. Adjust color with 1-2 drops food color, if desired. Pour mixture over popcorn and mix until coated.
  4. Spray hands with nonstick cooking spray and press firmly to form into eight balls. Place balls on eight wafer cookies. Press candy decorations into popcorn balls to form "eyes," "nose" and "mouth."
  5. In small, microwave-safe bowl, heat chocolate chips, covered, 10 seconds. Stir to aid melting. Repeat as needed until chocolate is melted and smooth.
  6. Spoon about 1/2 teaspoon melted chocolate on top of each popcorn ball. Press licorice strings into chocolate to form "hair."
  7. Dip cone edges into melted chocolate then orange sugar sprinkles. Place on remaining wafer cookies to form "witches' hats." Place hats on popcorn balls. Allow chocolate to set about 45 minutes before serving.
  8. Serve or seal individually in plastic wrap.

Green Halloween Zombies

Yield: about 7 pieces

  • 2 1/2 quarts popped popcorn
  • 6 tablespoons butter or margarine
  • 3 cups mini marshmallows
  • 4 tablespoons lime gelatin powder
  • red gum balls
  • candy corn
  • flat green candy strips or fruit leather
  • green sugar sprinkles
  1. Place popcorn in large bowl; set aside.
  2. In medium saucepan over medium heat, melt butter. Stir marshmallows into butter until melted. Stir in gelatin powder until evenly colored.
  3. Pour melted mixture over popcorn and stir until evenly coated. With buttered hands, shape popcorn into seven ovals.
  4. Flatten one oval slightly and squeeze one end to form "skull" shape. Place on parchment-lined baking sheet. Repeat with remaining ovals.
  5. To decorate: Press two gumballs into each skull to form "eyes." Press candy corn into skull to form "teeth." Use scissors to trim candy strips and press into top for "hair." Sprinkle with sugar sprinkles.
  6. Allow "zombies" to set about 20 minutes before wrapping individually in plastic wrap or serve immediately.

Popcorn Caramel Apples

Yield: 4 apples

  • 1 quart freshly popped popcorn
  • 1 package (9 1/2 ounces, 35 total) caramels, unwrapped
  • 1/4 cup light cream or half-and-half
  • 4 lollipop sticks or wooden candy apple sticks
  • 4 apples
  • 1/2 cup chocolate chips
  • sugar sprinkles
  • decorative ribbon (optional)
  1. Place popcorn in large bowl; set aside. Place sheet of waxed paper on work surface.
  2. In small saucepan over medium-low heat, heat caramels and cream. Stir frequently until caramels are melted and cream is blended into caramels.
  3. Push one stick into apple center and dip into caramel. Spoon caramel over apple to coat. Repeat with remaining apples
  4. Place caramel-coated apple in bowl of popcorn and press popcorn onto caramel to cover. Place apple on waxed paper to set; repeat with remaining apples.
  5. In small, resealable plastic bag, microwave chocolate chips 10 seconds and press chips to aid melting. Repeat, heating at 10-second intervals, until chips are completely melted. Cut small corner off bag and squeeze chocolate onto each apple, allowing chocolate to drip down sides. Sprinkle with sugar sprinkles.
  6. Tie bow to each apple stick, if desired. To serve, cut apples into slices.

Apple Berry Salsa

Prep time: 15 minutes
Servings: 4-6

  • 2 Envy Apples, cored and chopped
  • 1 pound strawberries, hulled and chopped
  • 1 pint blueberries
  • 1/2 teaspoon kosher salt
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • tortilla chips, pita chips, apple chips or graham crackers, for serving
  1. In medium bowl, combine apples, strawberries, blueberries and salt.
  2. In small bowl, whisk honey and lime juice. Pour honey and lime juice over fruit mixture. Stir together to combine.
  3. Serve immediately with tortilla chips, pita chips, apple chips or graham crackers, or refrigerate until ready to serve.

Apple Blondie Cupcakes

Prep time: 15 minutes
Cook time: 20 minutes
Servings: 12

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup unsalted butter (1 stick), melted and cooled
  • 1 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg, at room temperature
  • 2 Envy Apples, peeled, cored and 1/4-inch diced
  1. Preheat oven to 350 F. Line 12-count muffin pan with cupcake liners and set aside.
  2. In medium bowl, whisk flour, baking powder, salt, cinnamon and nutmeg.
  3. In large bowl, whisk butter and brown sugar 2 minutes, or until well combined. Add vanilla and egg; whisk until incorporated.
  4. Add flour mixture to large bowl of wet ingredients. Stir until just combined; be careful to not overmix.
  5. Fold in diced apples.
  6. Spoon batter evenly into cupcake liners.
  7. Bake 18-22 minutes, or until toothpick inserted into center of cupcake comes out clean. Let cool and serve.

Apple, Peanut Butter and Honey Sandwiches

Prep time: 5 minutes
Servings: 2 (1 sandwich per serving)

  • 1 Envy Apple
  • 6 tablespoons peanut butter
  • 4 slices of bread
  • 2 tablespoons honey
  1. Core apple and thinly slice.
  2. Spread 3 tablespoons peanut butter on two slices of bread, reserving two slices of bread for sandwich tops.
  3. Layer apple slices on top of peanut butter.
  4. Drizzle 1 tablespoon honey over apple slices on each sandwich half.
  5. Top each sandwich half with reserved slice of bread.

Apple Cinnamon Waffles

Cook time: 5 minutes
Servings: 4

  • 1 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 2 tablespoons brown sugar
  • 2 eggs
  • 1 cup milk
  • 4 tablespoons unsalted butter (1/2 stick), melted
  • 1 Envy Apple, peeled and cored
  • nonstick cooking spray
  • 4 tablespoons unsalted butter (1/2 stick), at room temperature
  • maple syrup, to taste
  1. In large bowl, whisk flour, salt, cinnamon, baking powder and brown sugar.
  2. In smaller bowl, whisk eggs, milk and melted butter.
  3. Make well in dry ingredients then mix in wet ingredient mixture until just combined.
  4. Using cheese grater, grate apple. Fold grated apple into batter.
  5. Prepare waffle iron with nonstick cooking spray.
  6. Ladle 1/4 of batter mixture into waffle iron and cook according to manufacturer's instructions. Repeat with remaining batter.
  7. Top each waffle with 1 tablespoon room temperature butter and maple syrup, to taste.

Apple and Blood Orange Pinwheels

Prep time: 10 minutes
Servings: 4

  • 1          flour tortilla (10 inches)
  • 1/2       cup hazelnut spread
  • 1          Envy Apple, sliced thin
  • 2          blood oranges, peeled and sliced
  1. Using spatula or spoon, coat one side of tortilla with hazelnut spread.
  2. Evenly layer apple slices on hazelnut spread, applying light pressure with hands so they stick to tortilla
  3. Layer blood orange slices over apple slices.
  4. Roll up tortilla tightly.
  5. Cut tortilla into 5-8 slices, each approximately 1 1/2-2 inches.
  6. Secure pinwheels with toothpicks or arrange tightly on serving tray.

Overnight Apple Cinnamon French Toast Casserole

Servings: 12

  • Nonstick cooking spray
  • 1 package (20 ounces) French bread, cubed, divided
  • 1 can (20 ounces) apple pie filling
  • 9 eggs
  • 1 cup half-and-half
  • 2 teaspoons ground cinnamon
  • 1 cup powdered sugar, plus additional (optional)
  • 2 tablespoons milk, plus additional (optional)
  1. Spray 8-by-8-inch glass baking dish with nonstick cooking spray.
  2. In baking dish, add 10 ounces cubed French bread in bottom of dish. Pour apple filling over bread. Top with remaining cubed French bread. Set aside.
  3. In medium bowl, whisk eggs, half-and-half and cinnamon. Pour evenly over bread.
  4. Cover with aluminum foil and chill overnight.
  5. Heat oven to 325 F.
  6. Remove foil and bake 50-60 minutes.
  7. Let cool 10-15 minutes.
  8. In small bowl, whisk powdered sugar and milk. Add additional, if needed, until pourable glaze is reached. Drizzle over casserole before serving.

Spiced Grass-Fed Lamb Over Hummus

Lamb:

  • 4 Atkins Ranch grass-fed lamb loin chops
  • 1 teaspoon cumin powder
  • 1/4 teaspoon salt
  • 1 tablespoon extra-virgin olive oil

Hummus:

  • 1 can (15 ounces) chickpeas
  • 3 cloves garlic, chopped
  • 1/4 cup tahini
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 3 tablespoons olive oil

For serving:

  • 1 Persian cucumber, small diced
  • 1 small tomato, diced
  • 2 tablespoons roasted pine nuts (or 2 tablespoons pomegranate seeds)
  • parsley, chopped
  • lemon wedges
  • toasted flatbread or tortilla chips
  1. To make lamb: Remove lamb from bone, dice meat into small cubes and transfer to medium bowl.
  2. Add cumin powder and salt. Toss to coat. Marinate while preparing hummus.
  3. To make hummus: Drain chickpeas, reserving 1 tablespoon liquid. Rinse chickpeas under running water then drain.
  4. In bowl of food processor, pulse chickpeas, chickpea liquid and garlic until chickpeas and garlic are chopped.
  5. Add tahini, lemon juice, salt, cumin, paprika and olive oil. Mix until smooth paste forms. Taste and adjust by adding more salt, lemon juice or olive oil, as desired.
  6. Transfer hummus to large platter and spread it out.
  7. In large skillet, heat extra-virgin olive oil over high heat until hot. Add lamb and cook 30 seconds without moving.
  8. Turn lamb over and cook 30-60 seconds, repeating until all sides are browned. Remove from pan and let rest 5 minutes.
  9. To serve, place cucumbers and tomatoes in well of hummus then top with lamb, pine nuts and parsley.

  • 1 3/4 cups all-purpose flour, plus additional for coating pan, divided

  • 1 cup (2 sticks) butter, softened
  • 4 eggs

  • 1/2 sweet onion, diced
  • 1 jalapeno, diced
  • 1 Envy or Jazz apple, diced
  • 2 cups cooked shredded chicken
  • 8 flour tortillas
  • 6 ounces shredded Mexican blend cheese, divided
  • 1 can red enchilada sauce
  • cilantro (optional)
  1. Heat oven to 350 F.
  2. In skillet, cook onions until translucent. Add jalapeno and apple; saute 2-3 minutes.
  3. Add cooked chicken and mix well. Remove from heat.
  4. Lay out tortillas and sprinkle cheese on each. Add chicken mixture and roll. Place in baking dish and cover with enchilada sauce.
  5. Bake 20 minutes, or until heated throughout.

Greek Chicken Bowls

  • 1 cup cooked white or brown rice
  • 1 grilled chicken breast, sliced
  • 1 RealSweet onion, sliced
  • 1 cup cherry tomatoes
  • 1 cucumber, cut into quarters

  • 1 tablespoon feta cheese
  • 2 tablespoons tzatziki sauce
  1. Place cooked rice and chicken in bowls.

  • 1          box stovetop stuffing
  • 2          tablespoons butter
  • 2          cups diced Envy Apples

Gravy:

  • 3          tablespoons butter
  • 3          tablespoons flour
  • 2          cups beef broth
  • 2          teaspoons kosher salt
  • 20        turns fresh cracked pepper
  • 1          teaspoon Worcestershire sauce
  • 1          tablespoon finely chopped rosemary
  1. Preheat broiler.
  2. Cook stuffing according to package directions; set aside and allow to cool slightly.
  3. In large saute pan, melt butter saute apples and onion until tender. Set aside to cool slightly.
  4. Stir together stuffing and apple mixture. Spread stuffing on sheet tray and allow to cool in refrigerator.
  5. After cooling, form stuffing into medium bites and place on sheet tray lined with parchment paper.
  6. Broil bites 8-10 minutes until golden brown and slightly crispy.
  7. To make gravy: In small pot, melt butter and whisk in flour. Cook flour 1 minute, whisking frequently.
  8. Whisk in beef broth, salt, pepper and Worcestershire sauce; bring to boil, whisking frequently. Remove from heat and stir in rosemary. If desired, continue gently simmering gravy to thicken.
  9. Arrange stuffing bites in serving dish and drizzle with gravy. Serve hot.

  6. In small pot, whisk caramel, salt, orange zest and orange juice until warm.

  • rosemary, for garnish
  • cinnamon stick, for garnish
  1. In pan over medium heat, saute diced apples in butter and pumpkin spice 5-10 minutes.
  2. In glass, combine bourbon and pumpkin spice apple cider; top with sauteed apples.
  3. Add demerara sugar then garnish with apple slices, rosemary and cinnamon stick.

Bell-Issimo Brie Melt

  • 1 round brie (6-8 ounces)
  • 2 Envy Apples
  • 1/4 cup walnuts
  • 1/4 cup dried cranberries
  • firm crackers
  1. Unwrap brie and place on microwave-safe dish. Cut off top of brie round and microwave 60 seconds until middle is soft.
  2. Slice apples into thick wedges.
  3. Top brie with half the apples, crushed walnuts and dried cranberries.
  4. Serve with firm crackers and remaining apple wedges.
