  1. On charcuterie board or platter, arrange prosciutto, apple slices, nuts, pomegranate seeds, fig jam and cheddar cheese slices. Serve with crackers.

Prosciutto Pizza

Yield: 8 slices

  • Olive oil
  • flour
  • 1 container (16 ounces) store-bought pizza dough
  • 1/4 cup tomato sauce
  • 4 ounces fresh mozzarella, cubed
  • 5 slices Prosciutto di Parma
  • 6 fresh basil leaves
  1. Remove dough from refrigerator and let sit at room temperature at least 30 minutes. Preheat oven to 500 F. Grease baking sheet with olive oil.
  2. Roll out pizza dough onto floured work surface to form oblong shape about 16 inches long and 12 inches wide. Remove to oiled baking sheet and stretch out edges to fill length of baking sheet.
  3. Bake 4 minutes. Remove from oven and evenly spread tomato sauce over surface, leaving 1/2 inch from edges bare. Dot with mozzarella. Bake until edges are golden and mozzarella is bubbling, about 12 minutes.
  4. Drape prosciutto over mozzarella. Garnish with fresh basil.

Sweet Potato Rounds

Yield: 16-20 rounds

  • 2 medium sweet potatoes
  • 2 teaspoons olive oil
  • salt, to taste
  • 2 tablespoons butter
  • 1 bunch fresh sage, stems removed
  • 4 ounces goat cheese
  • 8 slices Prosciutto di Parma, halved
  1. Preheat oven to 425 F. Line baking sheet with foil or parchment paper. Peel and slice sweet potatoes into 1/2-inch rounds. In medium bowl, toss sweet potatoes with oil and lightly season with salt, to taste. Arrange rounds in single layer on prepared pan; bake until sweet potatoes are lightly browned and tender, about 20 minutes, flipping halfway through.
  2. In small skillet over medium heat, bring butter to simmer. Add half the sage leaves. Cook until crispy, 2-3 minutes. Remove to paper towel and season lightly with salt, to taste. Repeat with remaining sage leaves. Reserve 2 teaspoons butter. In small food processor, combine goat cheese and reserved butter; whirl until smooth.
  3. To make rounds, remove goat cheese to plastic zip-top bag. Cut off one corner and pipe small dollops of cheese onto each round. Top with half slice prosciutto and one crispy sage leaf.

Crudites Platter

Platter:

  • 8 asparagus
  • water
  • 2 soft-boiled eggs
  • 5 baby carrots, halved lengthwise
  • 4 radishes with tops, halved lengthwise
  • 1 head little gem lettuce, quartered
  • 6-8 slices Prosciutto di Parma

Dip:

  • 2 teaspoons white miso
  • 1 tablespoon lemon juice
  • 1 teaspoon water
  • 1/2 cup full-fat Greek yogurt
  • 2 tablespoons chopped herbs (dill, tarragon or parsley)
  • 1/4 teaspoon salt
  • fresh black pepper, to taste
  1. To make platter: Trim asparagus. To blanch, bring pot of water to boil and place asparagus in pot 2-3 minutes. While asparagus is cooking, fill large bowl with ice water. After 3 minutes, plunge asparagus in ice bath and let cool.
  2. To soft-boil eggs, bring pot of water to boil. Gently place room temperature eggs in water and simmer 3-4 minutes. Remove eggs with slotted spoon and cool under running water.
  3. Serve asparagus and eggs alongside baby carrots, radishes and little gem lettuce. Drape prosciutto slices over some vegetables and between others.
  4. To make dip: In small bowl, whisk miso, lemon juice and water until smooth. Add yogurt, herbs and salt. Season generously with cracked pepper, to taste; mix and serve with platter.

Honey Mustard Crunch Salmon

  • 1          bag (1 pound, three 6-ounce portions) ASC-certified North Coast Seafoods Naked Norwegian Salmon
  • salt, to taste
  • pepper, to taste

Honey Mustard Glaze:

  • 1/3       cup honey
  • 1/4       cup whole-grain mustard
  • 2          tablespoons smooth Dijon mustard
  • 2          tablespoons mayonnaise
  • 2          teaspoons horseradish
  • 1          teaspoon smoked paprika

Crunch:

  • 3/4       cup panko breadcrumbs
  • 2          tablespoons dried parsley
  • 2          tablespoons olive oil
  1. Thaw salmon and pat dry. Arrange on oiled baking tray. Season with salt and pepper, to taste.
  2. To make glaze: In small bowl, combine honey, mustard, Dijon mustard, mayonnaise, horseradish and paprika; mix until well combined. Chill glaze until ready to use.
  3. To make crunch: In bowl, combine breadcrumbs, parsley and oil; mix well. Reserve.
  4. Preheat oven to 400 F.
  5. Top each salmon portion with 1 tablespoon glaze and spread evenly over fish. Press crunch evenly onto glaze.
  6. Bake 15-17 minutes until fish is cooked through.
  7. Serve with drizzle of remaining glaze.

  • 1          bunch cilantro
  • 3          Roma tomatoes
  • 2          jalapenos
  • 1/2       red onion
  • bell peppers (mix of green, red, orange and yellow, as desired)
  • tortilla chips, for serving

Dressing:

  • 1/3       cup olive oil
  • 1/3       cup red wine vinegar
  • 1          tablespoon honey
  • 1          tablespoon paprika
  • 1          lime, juice only
  • salt, to taste
  • pepper, to taste
  1. Drain and rinse corn and black beans; dry well.
  2. Finely chop and dice cilantro, tomatoes, jalapenos, onion and bell peppers.

Cook time: 12 minutes
Yield: 2 sandwiches

  • 4          slices (3 ounces each) sourdough bread
  • 2          tablespoons hot honey
  • 1          small wheel (8 ounces) brie, at room temperature, cut into thin strips
  • 8          ounces Aunt Nellie’s Diced Pickled Beets (1/2 jar or 2 individual diced pickled beet cups)
  • 2          tablespoons fresh basil, cut into thin strips
  • 2          tablespoons unsalted butter
  • 1/2       teaspoon garlic salt, or to taste
  1. Place two bread slices on cutting board. Drizzle with hot honey then add 4 ounces brie evenly across bread.
  2. Drain beets and pat dry. Add evenly on top of brie followed by basil and remaining brie.
  3. Spread 1 tablespoon butter on one side of remaining bread slices. Sprinkle with 1/4 teaspoon garlic salt. Place top piece of bread on each sandwich.
  4. Heat cast-iron or frying pan over medium-low heat then add sandwiches butter sides down. Butter top sides and add remaining garlic salt.
  5. Cook about 5 minutes on each side, or until bread is golden brown and cheese has melted, flipping halfway through.
  6. Once sandwiches have cooked on both sides, remove from heat and serve.

 

Bacon Wrapped Potato Stuffed Chicken

Cook time: 40 minutes
Yield: 8 servings

  • 2          pounds (approximately 4 large) boneless, skinless chicken breasts
  • 8          slices sharp cheddar cheese
  • 1          can READ German Potato Salad with sauce
  • 8-12     bacon slices
  • nonstick cooking spray
  • freshly ground pepper, to taste
  1. Preheat oven to 400 F.
  2. Using sharp knife, slice pocket or slit into each chicken breast and fold open.
  3. Place two slices sharp cheddar cheese in pockets then spoon 4 ounces potato salad onto cheese.
  4. Fold chicken over and close so cheese and potatoes are inside pockets.
  5. Take 2-3 bacon slices and completely wrap stuffed chicken breasts, tucking loose ends of bacon on undersides of chicken.
  6. Spray baking dish with nonstick cooking spray then place bacon wrapped chicken on tray. Season chicken with pepper, to taste.
  7. Bake approximately 40 minutes until internal temperature of chicken reaches 160 F.
  8. Turn oven to broil on high (500 F) and broil 2-3 minutes to crisp bacon until chicken reaches 165 F.
  9. Remove from the oven and rest 5 minutes then serve.

  • 1 cup pecan halves
  • 1 cup rice squares cereal (wheat or cinnamon)
  • 1/2 cup pretzels
  • 2 tablespoons unsalted butter
  • 1 tablespoon brown sugar
  • 1 1/2 tablespoons pure maple syrup
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup dried cranberries
  • 1/2 cup dark chocolate chips
  1. In large, microwave-safe bowl, add pecans, rice squares cereal and pretzels. In small, microwave-safe bowl, add butter, brown sugar, maple syrup, salt and nutmeg. Microwave butter mixture 1-2 minutes until melted then pour over dry mix. Toss well to combine.
  2. Microwave snack mix in 45-second intervals, about 4-5 intervals total, until mix is fragrant, golden and toasty.
  3. Cool mix completely then stir in cranberries and dark chocolate chips.

  • 2 cups rice squares cereal
  • 1 cup rolled oats
  • 1 cup unsweetened coconut
  • 1/3 cup honey
  • 1/4 cup coconut oil
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 2 cups chopped pecans
  • 1 cup oyster crackers
  1. Preheat oven to 350 F.
  2. In bowl, add rice squares cereal, oats and unsweetened coconut.
  3. In small saucepan over medium heat, add honey, coconut oil, cinnamon and salt. Stir until mixture starts to boil then pour over snack mix and stir until well combined.
  4. Transfer to baking sheet and bake 8-10 minutes.
  5. In saucepan over medium heat, add butter. Stir until butter browns then add chopped pecans and oyster crackers. Turn heat to low and stir while pecans roast.
  6. Remove snack mix from oven and add brown butter pecan and cracker mixture; stir to combine.

Vinegar Slaw:

  • 2/3 cup apple cider vinegar

  • 2/3 cup white sugar

Cilantro Lime Crema:

  • 1/2 cup sour cream
  • fresh cilantro leaves, chopped
  • 1/2 cup mayonnaise
  • 4 teaspoons fresh lime juice
  • 1 lime, zest only, minced
  • 1/2 teaspoon minced garlic
  • kosher salt, plus additional to taste, divided
  • freshly ground black pepper, to taste

Lobster Tacos:

  • Extra-virgin olive oil
  • 4 large (4-6 ounces each) Maine Lobster tails, defrosted
  • 4 tablespoons unsalted butter, melted
  • salt, to taste
  • pepper, to taste
  • 8 small flour tortillas
  • pico de gallo
  • 1 lime, cut into wedges for serving
  1. To make vinegar slaw: In small saucepan over medium heat, heat apple cider vinegar, celery seeds, sugar and water; stir until sugar dissolves. In large bowl, pour mixture over cabbage; cover and refrigerate.
  2. To make cilantro lime crema: In blender, blend sour cream, cilantro, mayonnaise, lime juice, lime zest and garlic. Season with salt and pepper, to taste; refrigerate.
  3. To make lobster tacos: Preheat grill to medium-high heat.
  4. Brush grill grates with oil to prevent sticking. Using kitchen shears, cut lobster shells in half lengthwise. Place skewer through meat to prevent curling during cooking.
  5. Brush lobster meat with melted butter and season with salt and pepper.
  6. Grill lobster tails meat side down 5 minutes then flip.
  7. Brush meat again with butter and cook 5 minutes, or until opaque throughout. Cook to 140 F internal temperature.
  8. Remove meat from shells and cut into bite-sized chunks or leave whole, if desired.
  9. Place tortillas on grill 30-60 seconds per side, or until warmed and slightly brown.
  10. Add drained slaw to tortillas. Top with lobster meat, pico de gallo and cilantro sauce. Serve with lime wedges.

Citrus Watermelonade

  • 1 cup hot water
  • 2 cups sugar
  • 6 cups watermelon, seeded, rind removed and cut into 1-inch pieces, divided
  • 2 cups Florida Orange Juice
  • 1 cup Florida Grapefruit Juice
  • 3/4 cup lemon juice
  • 3/4 cup lime juice
  • 2 cups Florida Oranges, cut into 1-inch pieces, peeled
  • 1/2 cup mint leaves
  • ice, for serving
  • Florida Orange Slices, for garnish (optional)
  • watermelon chunks, for garnish (optional)
  1. In small saucepan over low heat, combine hot water and sugar; heat until sugar is dissolved. Refrigerate until chilled.
  2. In blender, puree 4 cups watermelon until smooth.
  3. In large pitcher, stir watermelon juice, chilled sugar syrup, orange juice, grapefruit juice, lemon juice and lime juice until combined.
  4. Add remaining watermelon pieces, orange pieces and mint leaves; refrigerate 2-3 hours until well chilled.
  5. Serve over ice in glasses. Garnish with orange slices and watermelon chunks, if desired.

Orange Oatmeal

  • 1 cup Florida Orange Juice
  • 1 1/2 cups water
  • 1 cup quick-cooking steel-cut oats
  • 1 Florida Orange, peeled and diced
  • 1 tablespoon agave nectar or honey
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  1. In medium saucepan over high heat, bring orange juice and water to boil.
  2. Add oats to boiling liquids.
  3. Return to boil then reduce to medium heat and cook, uncovered, 5 minutes, stirring frequently.
  4. Mix in diced orange, agave nectar, cinnamon and salt. Remove pan from heat; let stand 1 minute before serving.

Jalapeno Sweetpotato Chowder

  • 2          large North Carolina sweetpotatoes, baked
  • 1          small onion, 1/4-inch diced
  • 2          tablespoons olive oil
  • 1          quart chicken or vegetable stock
  • 2          cups cooked chicken, cubed
  • 1 1/2    cups whole corn kernels
  • 2          teaspoons minced jalapenos
  • 1/2       cup heavy cream
  • 1          teaspoon salt
  • chopped scallions, for garnish

Source:

  1. Peel baked sweetpotatoes; discard skin and puree.
  2. In soup pot, saute onion in butter until softened. Add pureed sweetpotato and stock, as desired. Bring to boil, reducing liquid slightly.
  3. Add chicken, corn, jalapenos, heavy cream and salt. Simmer 10 minutes.
  4. To serve, ladle into bowls and garnish with chopped scallions.

Roasted Garlic Whipped Feta Crostini

  • 1          bulb garlic (about 12 cloves)
  • 4          tablespoons olive oil, plus additional for drizzling, divided
  • 1 1/2    teaspoons salt, divided
  • 1 1/2    teaspoons pepper divided
  • 32        baguette slices
  • 8          ounces feta cheese
  • 1/2       cup whole milk, plus additional, if necessary (optional)
  • 2          tablespoons lemon juice
  • 1/2       cup pomegranate seeds
  • 1/4       cup parsley, minced
  1. Preheat oven to 400 F. Slice garlic bulb in half, exposing garlic heads, and place in center of large piece of tinfoil. Drizzle each half with 2 tablespoons olive oil, 1/2 teaspoon salt and 1/2 teaspoon pepper. Wrap foil tightly around garlic and roast until caramelized, about 30 minutes.
  2. Place baguette slices on large baking sheet and drizzle with olive oil. Bake on second rack in oven until golden brown about 10 minutes; set aside.
  3. In high-speed food processor, pulse feta cheese, milk, lemon juice, remaining salt, remaining pepper and roasted garlic cloves until whipped and creamy, adding more milk as needed to reach desired consistency. Check for seasoning and adjust, to taste.
  4. To serve, spread each baguette slice with whipped feta and sprinkle with pomegranate seeds and minced parsley.
