Creamy Truffle Caesar Pork Sandwiches

Prep time: 5 minutes 
Cook time: 15 minutes 
Servings: 4

  1. Preheat pan on stove over medium-high heat. Season pork chops with Italian seasoning.
  2. When pan is hot, add oil and pork chops. Cook pork chops, turning halfway through, until they reach minimum internal temperature of 145 F, 6-8 minutes per side (depending on thickness).
  3. Once pork chops are cooked through, remove from pan and let rest a few minutes.
  4. Peel and slice onion. After resting, slice pork into strips; set aside.
  5. In same pan, saute onion until translucent, about 5 minutes. Set aside.
  6. In large bowl, combine lettuce, dressing, croutons and cheese from salad kit.
  7. In separate pan, toast buns until golden brown; set aside.
  8. To build sandwiches, place sliced pork on bottom halves of toasted buns. Top with prepared salad mixture and sauteed onions. Finish with top halves of buns.

Chicken Caesar Tacos

Prep time: 10 minutes
Cook time: 20 minutes
Servings: 4

  1. In shallow bowl, beat eggs. In separate bowl, combine flour and half packet of taco seasoning.
  2. Place chicken in resealable bag and, using meat tenderizer, pound to 1/4-inch thickness.
  3. In medium saute pan, heat oil over medium heat.
  4. Season chicken breasts with remaining taco seasoning.
  5. Coat chicken in flour mixture, dip into beaten eggs then coat chicken in flour mixture again, pressing firmly to adhere.
  6. In pan with hot oil, cook battered chicken until golden brown, flipping halfway through, until chicken reaches minimum internal temperature of 165 F, 4-5 minutes per side (depending on thickness). Fry in batches to avoid overcrowding pan, if necessary.
  7. Once fully cooked, fold chicken over to create taco shell-shape. Place sheet pan on top to hold shape, 3-4 minutes.
  8. In large bowl, combine lettuce, dressing, croutons and cheese from salad kit.
  9. Once chicken taco shells set, carefully remove sheet pan. Fill each taco shell with prepared salad mixture.

  • 2          tablespoons melted butter
  • 8          oat-wheat bread slices
  • 1/2       cup cranberry sauce
  • 12        ounces Havarti cheese
  • 2          Envy apples
  1. Preheat oven to 450 F.
  2. Lightly butter one side of each bread slice and place on baking sheet butter side down. On side without butter, spread cranberry sauce on half of bread slices.
  3. Slice Havarti cheese about 1/4-inch thick and place over cranberry layer. Thinly slice apples and layer over cheese. Top with remaining bread slices with butter side up.
  4. Bake 5 minutes then carefully flip each sandwich. Bake 3-5 minutes until cheese is melty.

Thick Cut Bacon, Ham and Pimento Cheese Breakfast Sandwiches

  • 1 package Farmer John Premium Thick Cut Bacon
  • 1 tablespoon canola oil
  • 1 package Farmer John Classic Hickory Smoked Ham Steak, diced into 1/2-inch pieces
  • 2 scallions, thinly sliced
  • 10 eggs, lightly whipped
  • 1 teaspoon salt
  • 1/2cup pimento cheese, at room temperature
  • 1-2 vine-ripened tomatoes (6 slices)
  • 6 brioche rolls, lightly buttered and toasted on insides
  1. In pan, fry bacon until crispy; slice each piece in half and set aside.
  2. In large nonstick frying pan over high heat, add canola oil. Add ham and fry until browned.
  3. Lower flame to medium and add scallions. Saute about 30 seconds.
  4. Add eggs and salt to pan; scramble eggs with ham.
  5. Turn off heat and lightly fold in pimento cheese.
  6. Place one tomato slice on bottom of interiors of each roll.
  7. Place three pieces bacon on each tomato.
  8. Evenly divide and spoon scrambled eggs on bacon; close roll tops.

Asian Cajun Po' Boys

Sisig Sauce:

  • 1/3 cup fresh lime juice
  • 1/4 cup soy sauce
  • 3 tablespoons hoisin sauce
  • 1 tablespoons ginger, finely grated

Po' Boy:

  • 28 ounces Farmer John Hot Louisiana Smoked Sausage
  • 3 tablespoons cooking oil
  • 1 tablespoon garlic, minced
  • 1/2 small yellow onion, minced
  • sisig sauce
  • 8 French rolls, lightly toasted on insides
  • 4-5 vine-ripened tomatoes (16 slices)
  • 1/2 cup mayo
  • 8 eggs, cooked sunny side up
  • 2 scallions, thinly sliced
  • 1 jalapeno, thinly sliced
  1. To make sisig sauce: Stir lime juice, soy sauce, hoisin sauce and ginger; set aside.
  2. Using knife, score sausages by making diagonal slices to surface. Repeat on other side to make "X" shape.
  3. In large frying pan over high heat, add oil. Add sausages and fry until browned and crispy.
  4. Lower heat to medium; add garlic and onions. Cook 3-4 minutes until vegetables are lightly caramelized.
  5. Add sisig sauce and simmer 1 minute. Turn off heat.
  6. Layer two tomato slices on interior of each roll. Place sausages in each roll. Evenly divide and spoon sauce on each link.
  7. Drizzle mayo over each po' boy.
  8. Place one sunny side up egg on each po' boy and garnish with scallion and jalapeno.

Muffuletta Caesar Sandwich

Servings: 8

  • 1          jar (16 ounces) mild or hot giardiniera, drained, liquid reserved
  • 1          jar (12 ounces) roasted red peppers, drained and chopped
  • 1          can (6 ounces) chopped green olives, drained and diced
  • 1/2       cup celery, diced
  • 1/4       cup minced fresh parsley
  • 1          round loaf Italian bread (2 pounds)
  • 8          ounces sliced provolone cheese
  • 8          ounces sliced Genoa salami
  • 8          ounces sliced mozzarella cheese
  • 3          packages (9.4 ounces each) Fresh Express Caesar Chopped Salad Kits
  • 8          ounces sliced mortadella
  1. In bowl, combine giardiniera, red peppers, olives, celery, parsley and 2 tablespoons reserved giardiniera liquid; mix well.
  2. Cut bread in half horizontally; tear out some bread, leaving about 1/2-inch to create bowl. Fill bottom bread bowl with olive salad. Layer with provolone cheese, salami and mozzarella cheese.
  3. Place greens from one salad kit into bowl; toss with salad dressing. Add toppings; toss to combine. Place in top bread bowl; layer with mortadella.
  4. Carefully flip top half of bread over and place on top of fillings in bottom half. Wrap tightly with plastic wrap; press down to compress. Let sit 15 minutes to blend flavors.
  5. Cut sandwich into eight wedges.
  6. Make remaining two salad kits to serve as side dish.

Calamari Caesar Salad

Prep time: 5 minutes

  • 1          package (10 ounces) breaded calamari

  • 8          Campari tomatoes, sliced
  • 4          lemon wedges
  1. Bake calamari according to package directions.
  2. In large bowl, toss greens from salad kit with salad dressing. Add toppings; toss to combine.

Vegan Pulled Chipotle Chik'n Sliders

  • 3 chipotle peppers in adobo sauce
  • 1/4 cup ketchup
  • 1/4 cup maple syrup
  • 1 cup veggie broth
  • 1 teaspoon allspice
  • 1 tablespoon brown sugar
  • 1 tablespoon olive oil
  • 1 small red onion, diced
  • 1 pinch kosher salt
  • 1pinch pepper
  • 3 cloves garlic, minced 
  • 1/2 lemon, juice only 
  • 1 package (8 ounces) Sweet Earth Chipotle Chik'n
  • 12 vegan brioche slider bun

Vegan Spicy Mayo:

  • 1/2 cup vegan mayo
  • 2 tablespoons vegan sour cream
  • 2 chipotle peppers in adobo sauce
  • 2 tablespoons cilantro, finely minced
  • 2 teaspoons fajita seasoning 
  • 1 lime, juice only

Optional toppings:

  • 1 jar pickle chips
  • 1/2 cup purple shredded cabbage
  • 1/2 cup jalapeno peppers
  • 1/2 cup shredded carrots
  • 1/2 cup diced tomatoes
  1. In blender, puree peppers with ketchup, maple syrup, broth, allspice and brown sugar. Set aside.
  2. In pan over medium heat, add oil. Once oil begins to shimmer, add onion and season with salt and pepper. Cook, stirring occasionally.
  3. Once onions become translucent, around 5 minutes, add garlic. After 1 minute, add pepper puree blend to pan along with lemon juice and stir to combine.
  4. Once mixed, fold in chipotle plant-based "chicken" and cook 3-4 minutes until heated through.
  5. To make vegan spicy mayo: In bowl, mix mayo, sour cream, peppers, cilantro, fajita seasoning and lime juice.
  6. Spread vegan spicy mayo on buns and add plant-based "chicken" mixture. Top with pickle chips, cabbage, jalapenos, carrots and tomatoes, as desired.

Jerk Chik'n Fajitas with Black Rice

Prep time: 20 minutes
Cook time: 10 minutes
Servings: 2-3

Marinade:

  • 1 tablespoon brown sugar
  • 2 teaspoons lime juice
  • 1/4 cup soy sauce
  • 1 tablespoon avocado oil or olive oil
  • 1 Scotch bonnet pepper
  • 2 tablespoons Jamaican jerk seasoning
  • 1 teaspoon minced garlic
  • salt, to taste
  • pepper, to taste

Fajita Fixings:

  • 1 package (8 ounces) Sweet Earth Mindful Chik'n Strips
  • 1/2 teaspoon avocado oil
  • 1/2 white onion, chopped
  • 1 small green pepper, chopped
  • 1/2 yellow pepper, chopped
  • flour tortillas, warmed
  • black rice, cooked

Mango Salsa:

  • 1 chopped mango
  • 3 teaspoons lime juice
  • 2 teaspoons chopped cilantro
  • 1/4 cup red onion, chopped
  • 1 small red bell pepper, chopped
  1. To make marinade: In blender, blend brown sugar, lime juice, soy sauce, oil, bonnet pepper, Jamaican jerk seasoning, garlic and salt and pepper, to taste, until smooth.
  2. To make fajitas: Marinate plant-based "chicken" in jerk sauce for 1 hour.
  3. In grill pan on stove over medium heat, heat oil. Cook plant-based "chicken" until heated through. In separate pan, add splash of oil and cook white onion, bell pepper and yellow pepper.
    Add plant-based "chicken" to veggies and cook 1-2 minutes.
  4. To make mango salsa: In bowl, mix mango, lime juice, cilantro, red onion and red bell pepper.
  5. Add jerk plant-based "chicken" and mango salsa to tortillas. Serve with black rice.

Dressing:

  • 1 tablespoon minced shallots
  • 2 tablespoons olive oil
  • 2 tablespoons fresh orange juice
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon salt, plus additional, to taste, divided
  • 1/4 teaspoon Dijon mustard
  • pepper, to taste
  • 1 pound cooked Maine Lobster meat, cut into 1-inch pieces
  • 1 head butter lettuce, torn
  • 1 ripe avocado, peeled and diced
  • 3 radishes, thinly sliced
  • kosher salt
  • freshly ground black pepper
  1. To make dressing: In medium bowl, whisk shallots, olive oil, orange juice, lime juice, basil, parsley, salt and Dijon mustard. Season with additional salt and pepper, to taste.
  2. Add lobster to bowl; toss to coat. Chill at least 1 hour, or up to one day.
  3. To serve: Arrange lettuce on serving plate and place lobster on top. Sprinkle with avocado, radishes, kosher salt and ground black pepper.

Traditional Lobster Rolls

  • 1 pound cooked Maine lobster meat
  • mayonnaise, to taste, for binding
  • freshly ground black pepper, to taste
  • salt, to taste
  • fresh lemon juice, to taste
  • 4 buttered, toasted rolls or preferred bread
  • sliced chives, for garnish
  1. In bowl, combine lobster meat; mayonnaise, to taste; pepper, to taste; salt, to taste; and lemon juice, to taste.
  2. Place 3-4 ounces lobster salad on each roll.
  3. Garnish with chives and serve.

Apple Berry Salsa

Prep time: 15 minutes

  • 2 Envy Apples, cored and chopped
  • 1 pound strawberries, hulled and chopped
  • 1 pint blueberries
  • 1/2 teaspoon kosher salt
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • tortilla chips, pita chips, apple chips or graham crackers, for serving
  1. In medium bowl, combine apples, strawberries, blueberries and salt.
  2. In small bowl, whisk honey and lime juice. Pour honey and lime juice over fruit mixture. Stir together to combine.
  3. Serve immediately with tortilla chips, pita chips, apple chips or graham crackers, or refrigerate until ready to serve.

Apple Blondie Cupcakes

Prep time: 15 minutes
Cook time: 20 minutes
Servings: 12

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup unsalted butter (1 stick), melted and cooled
  • 1 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg, at room temperature
  • 2 Envy Apples, peeled, cored and 1/4-inch diced
  1. Preheat oven to 350 F. Line 12-count muffin pan with cupcake liners and set aside.
  2. In medium bowl, whisk flour, baking powder, salt, cinnamon and nutmeg.
  3. In large bowl, whisk butter and brown sugar 2 minutes, or until well combined. Add vanilla and egg; whisk until incorporated.
  4. Add flour mixture to large bowl of wet ingredients. Stir until just combined; be careful to not overmix.
  5. Fold in diced apples.

Apple, Peanut Butter and Honey Sandwiches

  • 6 tablespoons peanut butter
  • 4 slices of bread
  • 2 tablespoons honey
  1. Core apple and thinly slice.
  2. Spread 3 tablespoons peanut butter on two slices of bread, reserving two slices of bread for sandwich tops.
  3. Layer apple slices on top of peanut butter.
  4. Drizzle 1 tablespoon honey over apple slices on each sandwich half.
  5. Top each sandwich half with reserved slice of bread.

Apple Cinnamon Waffles

  • 1 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 2 tablespoons brown sugar
  • 2 eggs
  • 1 cup milk
  • 4 tablespoons unsalted butter (1/2 stick), melted
  • 1 Envy Apple, peeled and cored
  • nonstick cooking spray
  • 4 tablespoons unsalted butter (1/2 stick), at room temperature
  • maple syrup, to taste
  1. In large bowl, whisk flour, salt, cinnamon, baking powder and brown sugar.
  2. In smaller bowl, whisk eggs, milk and melted butter.
  3. Make well in dry ingredients then mix in wet ingredient mixture until just combined.
  4. Using cheese grater, grate apple. Fold grated apple into batter.
  5. Prepare waffle iron with nonstick cooking spray.
  6. Ladle 1/4 of batter mixture into waffle iron and cook according to manufacturer's instructions. Repeat with remaining batter.
  7. Top each waffle with 1 tablespoon room temperature butter and maple syrup, to taste.

Picnic-wiches with Greek Artichoke Beet Salad

Servings: 6

  • 1 jar (16 ounces) Aunt Nellie's Sliced Pickled Beets
  • 1 jar (about 6 ounces) marinated artichoke hearts
  • 1/2 cup pitted kalamata or ripe olives, sliced
  • 3 tablespoons sliced green onions
  • freshly ground black pepper, to taste (optional)
  • 6 romaine lettuce leaves
  • 1 pound thinly sliced deli turkey
  • 6 ciabatta or sandwich rolls, sliced horizontally
  • 1/3 cup crumbled feta cheese
  • 1/4 cup pine nuts, toasted
  1. Drain beets and artichoke hearts, reserving 1/4 cup liquid from each. Coarsely chop beets and artichoke hearts. In medium bowl, combine beets, artichokes, olives and green onions; set aside.
  2. In small bowl, whisk reserved beet and artichoke liquids. Pour over beet mixture; toss gently to coat. Season with black pepper, to taste, if desired.
  3. Layer lettuce and turkey on bottom halves of rolls. Top with relish, as desired; feta cheese; and pine nuts. Top with remaining halves of rolls. Wrap tightly; chill up to 4 hours. Serve with remaining relish.

Bean, Tortellini and Pesto Salad

Servings: 6

  • 2 cans (15 ounces each) READ 3 or 4 Bean Salad
  • 1/4 cup prepared basil pesto
  • 1/2 teaspoon salt (optional)
  • 1 package (9 ounces) refrigerated tortellini
  • grape tomatoes (optional)
  • halved cherry tomatoes (optional)
  • chopped bell pepper (optional)
  • thinly sliced green onions (optional)
  1. Drain bean salad, reserving 1/2 cup liquid. In bowl, combine reserved liquid, pesto and salt, if desired; set aside.
  2. Cook tortellini according to package directions; drain, rinse in cold water and drain again. Add pesto dressing; toss to coat. Add grape tomatoes, cherry tomatoes, bell pepper and green onion, as desired. Toss with bean salad.
  3. Serve at room temperature or chilled.

St. Patrick’s Day Sandwiches

Yield: 8 sandwiches

  • 8          ounces plain cream cheese spread, softened
  • 1          cup finely shredded mozzarella cheese
  • salt
  • 4          English muffins
  • 24        slices cucumber
  • 8          thin slices green pepper
  • fresh cilantro leaves
  • lemon juice
  • lemon slices, for garnish (optional)
  1. In bowl, mix cream cheese spread, mozzarella cheese and salt well.
  2. Split English muffins in half. Cut each muffin half into shamrock shape.
  3. Spread cheese mixture over each muffin half.
  4. Place three cucumbers on each “shamrock,” one on each “leaf.” Use green pepper slice as stem. Place cilantro leaf on top of each sandwich.
  5. Sprinkle sandwiches with lemon juice and add lemon slices, for garnish, if desired.

Building a Balanced Diet with a Better Sandwich

(Family Features) Fad diets come and go, and as many Americans find, so do the pounds they lose. Most experts agree that eliminating, or drastically reducing, any of the major foods groups from your diet can be detrimental to your health and prevent you from achieving long-term healthy eating goals.

Each of the food groups plays a distinct role in fueling your body and providing it with the vitamins and nutrients it needs. Attempt a well-rounded approach to eating, such as one that includes more nutritious choices for popular dishes like sandwiches. In general, pay attention to the variety, amount and nutrition of the foods you consume.

Consider these ideas for creating a balanced diet and a nutritious sandwich to help ensure you get enough of each food group:

Start from the Outside
There are two groups of grains: whole grains and refined grains. Whole grains contain the entire grain kernel, while refined grains have been milled for a finer texture and are required to be enriched per government mandate to help the population make up for nutrient shortfalls. Grains should account for about one quarter of each meal, but at least half of them should be whole grains - a fact that may surprise some people.

"Many health professionals mistakenly encourage consumers to skip the bread when trying to improve diets," said Yanni Papanikolaou from Nutrition Strategies Inc., who completed a study to assess the energy and nutrients contributed from sandwiches in diets of children and adolescents. "Americans need to think twice before cutting bread from their diets. In fact, bread packs more of a nutrient punch than a caloric one."

The ingredients inside a sandwich, not the bread itself, are the most significant drivers of calories, fat and sodium, according to Papanikolaou's research. A separate study published in the journal "Nutrients" shows grain foods contribute less than 15 percent of all calories in the total diet, while delivering greater than 20 percent of three shortfall nutrients - dietary fiber, folate and iron - and greater than 10 percent of calcium, magnesium and vitamin A.

Consumers can significantly and positively impact their caloric, fat and sodium intake by making more deliberate decisions about sandwich ingredients, including choosing either whole-grain or enriched-grain bread.

Rethink the Ingredients
Making more nutritious choices with sandwiches and positively impacting your consumption of calories, fat and sodium is oftentimes a matter of changing the way you stack ingredients between the bread. Consider this sample sandwich: two slices of whole-grain or enriched bread, 2-3 slices of lunchmeat, two slices of cheese, a few spinach or lettuce leaves and a slice of tomato.

Contrary to popular belief, research shows that sandwich eaters who choose either whole- or enriched-grain bread can consume less calories, fat and sodium compared to the typical sandwich consumed in the American diet. This demonstrates the need to focus on the ingredients between the bread for a better (more healthful) sandwich.

  • 4 slices tomato

  1. Spread mayonnaise and horseradish evenly over two bread slices.
  2. Layer tomato, roast beef and arugula on top of mayonnaise and horseradish. Top with remaining bread slices.

Ultra-Thin Pastrami Sandwich Lunchbox
