Chipotle Veggie Chili

Chipotle Veggie Chili

Fall and winter are the only seasons I’ll eat soups, stews and chili. It might sound crazy but in my opinion, there is nothing appetizing about indulging in a warm bowl of soup when it’s 100 degrees outside. That said, I always try to squeeze in as many new fall recipes during the cooler seasons as I can!

Today it’s snowing in Kansas City, which calls for some soul-warming grub for dinner. Cold weather with the combo of #MeatlessMonday means I’m making Chipotle Veggie Chili. This recipe is not only delicious but easy to make and I bet most of the ingredients can be found in your pantry right now.

When making desserts in my household I have to be strategic. By ‘strategic’ I mean that I have to make something my husband likes too. That way, I am not left to indulge in the entire dessert myself. Because I know I will eat the entire thing! Dessert might just be another one of my love languages.

Walnut Apple Pear Crisp

Walnut Apple Pear Crisp

Oh, boy! I have a treat for you guys today.

I know I normally handle more savory recipes, but I have to tell you, this one is killer for fall and winter seasons. It’s a true classic in my book.

It’s a warm Walnut Apple Pear Crisp covered with melting ice cream. It has the perfect crunch from the walnuts and the softness from the baked pear and apple combo. Paired with a creamy, cold scoop of vanilla ice cream.

Yes, my mouth is watering just thinking about it!

Cherry Stuffed Tomatoes

My husband and I try to eat meatless at least two nights a week. Well, let me rephrase this ... I try to make my husband eat meatless at least two nights a week. I could easily be a vegetarian but my carnivorous husband isn’t all aboard that train yet, so we compromise. Consequently, I love to take meatless dishes to any get-together we are attending. For me, it’s a win-win. I bring a meatless option for myself and those who also enjoy meatless dishes while introducing the room to meatless recipes and how amazingly delicious they can be. Ricotta Puff Pastries with Strawberry Compote Hi, foodie friends! Melissa here and I’m super excited to share this sweet and delicious recipe with you. It’s one of my favorites. Fruit lovers of all ages can’t resist this one! The tart strawberries, the heavy cream, the light and fluffy puff pastries ... yum! Check out the kitchen hack in the video below! Here's a hint: you use a straw!

Isn’t that a cool hack? Just poke a straw through the center of a strawberry and BAM, no more stem! I thought that was the coolest thing ever!
