As a single, working parent, it is so important to create easy dinners for my family throughout the week. This dish is one that has been in our family for years, and it never gets old.
This is the one dish my children never tire of and ask for on a regular basis. You can create this dish with any type of chicken your heart desires! On busy weekdays, I will typically prepare this casserole with a rotisserie chicken, however, it is amazing with chicken right off the grill.
It can easily be prepped and placed in the refrigerator for those crazy nights where you just need to throw something in the oven or the slow cooker. Your entire family will love this dish, and I guarantee they will be asking for seconds. Hope you all enjoy as much as we do!
Cheesy Chicken and Rice Casserole
- 1 rotisserie chicken or grilled chicken
- 1 can (10 1/2 ounces) cream of celery soup
- 1 cup mayonnaise
- 1 package (8 ounces) shredded cheddar cheese
- 3 cups cooked white rice
- 2-3 garlic cloves, crushed
- salt, to taste
- pepper, to taste
- garlic bread
- Heat oven to 350 F.
- Shred chicken. In 9-by-13-inch pan, mix chicken, cream of celery, mayonnaise, cheese, cooked rice and garlic. Season with salt and pepper, to taste.
- Bake 30-35 minutes then serve with garlic bread.
