Hopping Good Scones for Easter Morning

Let’s talk savvy scones for a minute. Easter is right around the corner. It’s early this year, so don’t blink or you might miss it.

It feels like all the holidays are right on top of each other. Didn’t we just give out Valentines and put away our St. Paddy’s green, and now it’s time to get ready to celebrate Easter and prepare for the bunny to bring us chocolate? Don’t worry if you feel unprepared and overwhelmed because with a little planning and an easy recipe, your Easter breakfast doesn’t have to be a rushed mess.

I have an easy recipe for Vanilla Scones. They can be made the morning of or night before. You can make them any flavor you wish because they’re made with coffee creamer, but I prefer this vanilla version. That’s right, good old coffee creamer will make these the tastiest scones you’ve ever had. They aren’t just tasty; they are quick and super easy, too. Now that’s really savvy on a busy holiday morning!

Vanilla Scones

  • Easter Blog Pic 22          cups self-rising flour
  • 3          tablespoons sugar
  • 5          tablespoons melted butter
  • 1          cup vanilla coffee creamer or creamer of choice

Glaze:

  • 3          tablespoons melted butter
  • 1          cup powdered sugar
  • 3          tablespoons creamer
  1. Preheat oven to 450 F.
  2. Mix flour, sugar, butter and creamer. Place in buttered scone pan or 9-inch round cake pan. If using cake pan, score dough into triangles.
  3. Bake 12-15 minutes until golden brown.
  4. To make glaze: Mix melted butter, powdered sugar and creamer then drizzle over warm scones.

Tip: If baking scones night before, make glaze in morning and heat scones in microwave then drizzle glaze on top. If making scones in morning, let scones cool while making glaze.
