  • 1 pound ground beef
  • 1 package (1 ounce) taco seasoning
  • 1/4 cup water
  • 2 tablespoons minced cilantro
  • 1 can (16 ounces) refried beans, zesty salsa flavor
  • 1 jar (16 ounces) thick and chunky salsa, medium or hot
  • 2 cups guacamole
  • 1/2 cup sour cream
  • 3 packages (5 ounces each) Fresh Express Butter Supreme
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 cup tomatoes, chopped
  • 1 can (2 1/4 ounces) sliced black olives, drained
  • 1 package (14 ounces) tortilla chips
  1. In skillet over medium-high heat, cook beef 5 minutes, or until no longer pink. Sprinkle with taco seasoning; mix well. Add water; cook 2 minutes, or until water is absorbed. Transfer to bowl; cool to room temperature. Add cilantro; mix well.
  2. In 9-inch pie plate, evenly spread refried beans; top with seasoned ground beef and salsa. Add spoonfuls of guacamole across top of salsa then carefully spread to smooth.
  3. Place sour cream in small resealable bag; cut off corner. Pipe sour cream to create football shape on guacamole.
  4. Put pie plate in center of 15-by-18-inch tray. Arrange salad blend around pie plate. Top with cheddar cheese, tomatoes and olives. Serve with tortilla chips.

  4. Coat both sides of wings in flour mixture then evenly space among butter cubes on baking sheet.
  5. Bake wings 30 minutes.
  6. Turn wings over and bake 15 minutes, or until crispy and fully cooked.
  7. Serve with dipping sauces and sprinkle with fresh parsley, if desired.

Grilled Sweetpotato and Blueberry Salad

Lemon Honey Vinaigrette:

  • 6          tablespoons olive oil
  • 1/4       cup lemon juice
  • 2          tablespoons Dijon mustard
  • 2 1/2    tablespoons honey
  • salt, to taste
  • pepper, to taste
  • 3          medium sweetpotatoes, peeled and sliced
  • 2          tablespoons olive oil
  • salt, to taste
  • pepper, to taste
  • 4          cups spring salad mix
  • 1          cup fresh blueberries
  • 1/3       cup chopped walnuts
  • 1/4       cup blue cheese crumbles
  • lemon wedges, for garnish (optional)
  1. To make lemon honey vinaigrette: In bowl, mix olive oil, lemon juice, Dijon mustard and honey. Season with salt and pepper, to taste. Refrigerate until ready to serve.
  2. Preheat grill to medium heat. Drizzle sweetpotatoes with olive oil and season with salt and pepper, to taste. Grill sliced sweetpotatoes on each side about 5 minutes, or until sweetpotatoes are tender and slightly charred. Remove from grill and let cool.
  3. To arrange salad, spread spring salad mix onto large platter and top with grilled sweetpotatoes, blueberries, walnuts and blue cheese crumbles.
  4. Top with lemon honey vinaigrette and garnish with lemon wedges, if desired.

  • 2          packages (8 ounces each) button mushrooms
  • 1/4       teaspoon salt
  • 1/2       pound ground beef
  • 1/3       cup blue cheese
  • 1/4       cup whole-wheat breadcrumbs
  • 3          tablespoons green onions
  • 1/2       teaspoon steak seasoning blend
  • chives (optional)
  1. Preheat oven to 375 F. Remove stems from mushrooms; reserve. Season mushroom caps with salt; set aside. Mince stems to yield 1/2 cup; discard remaining stems.
  2. Combine ground beef, minced stems, blue cheese, breadcrumbs, green onions and steak seasoning. Spoon beef mixture evenly into mushrooms.
  3. Place stuffed mushrooms on rack in broiler pan. Bake 15-20 minutes. Sprinkle with chives, if desired.

Filet Mignon with Blue Cheese Chive Butter

Blue Cheese Chive Butter:

  • 4          ounces unsalted butter, cubed
  • 4          ounces blue cheese
  • 1          tablespoon fresh chives, minced
  • 1/4       teaspoon kosher salt
  • 1/4       teaspoon black pepper

Filet Mignon:

  • 2          Omaha Steaks Private Reserve Filet Mignons
  • Omaha Steaks Private Reserve Rub
  1. To make blue cheese chive butter: In medium bowl, use rubber spatula to fold and incorporate butter, blue cheese, chives, salt and pepper. 
  2. Section 18 inches of plastic wrap and place blue cheese chive butter about 6 inches above bottom. Take bottom portion of plastic wrap and place over blue cheese chive butter then shape butter into 1 1/2-inch cylinder.
  3. Continue to roll butter in plastic; pinch ends of plastic wrap while rolling to tighten cylinder.
  4. Once size and tightness are achieved, tie off loose ends of plastic wrap and chill in refrigerator 1-2 hours, until blue cheese chive butter is chilled and firm. 
  5. To make filet mignon: Bring filet mignons to room temperature, about 20 minutes; pat dry and season on both sides with rub, to taste.
  6. Prepare grill for 500 F direct heat.
  7. For medium-rare, place steaks on grill 3-4 minutes. Flip and cook 2-3 minutes, or until 130-140 F internal temperature is reached.
  8. Rest 7-8 minutes before serving.
  9. Slice chilled blue cheese chive butter into 1/2-inch pieces and place on top of filets.

  • 1          cup fresh cilantro
  • 2/3       cup fresh parsley
  • 2          tablespoons dried oregano
  • 2          garlic cloves, minced
  • 1/4       cup red wine vinegar
  • 2/3       cup olive oil
  • 1/2       teaspoon salt
  • 1/2       teaspoon pepper
  • 1          can (14 1/2 ounces) chickpeas, drained
  • 1/4       teaspoon crushed red pepper flakes
  • 1          bag Fresh Express Baby Kale Mix

  • 3-4       eggs    
  • 1/4       pound bacon

  1. Bring pot of water to boil. Use slotted spoon to place eggs in water. Boil 10 minutes then transfer to ice bath to stop cooking process. Peel eggs and slice.
  2. Heat skillet over medium heat. Dice bacon and add to pan. Saute until bacon is crispy and fat is rendered, about 7 minutes. Remove from pan with slotted spoon.
  3. To assemble salad, start with bed of lettuce. Top with hard-boiled eggs, grilled chicken, tomatoes, avocado, bacon and blue cheese; toss in ranch dressing.

Cook time: 20 minutes

  • 1          package broccoli slaw
  • 1/2       cup blue cheese dressing
  • 1          teaspoon salt
  • 1          teaspoon black pepper
  • 1          cup flour
  • 4-6       tablespoons butter, melted
  • 1/3       cup Buffalo-style hot sauce, plus additional for serving, divided
  • 1          cup panko breadcrumbs
  • 3/4       cup blue cheese crumbles
  • 8          veal cutlets, pounded about 1/8-inch thick
  • 4          sub rolls
  1. Preheat oven to 400 F.  Line rimmed baking sheet with parchment paper; set aside.
  2. In medium bowl, using tongs, lightly toss broccoli slaw and blue cheese dressing.
  3. In shallow bowl, stir together salt, pepper and flour.
  4. In separate shallow bowl, whisk melted butter and hot sauce until combined.
  5. In bowl of food processor, pulse panko and blue cheese crumbles until combined. Transfer mixture to plate.
  6. Pat veal cutlets dry with paper towels. Dredge one veal cutlet in seasoned flour then coat with hot sauce and butter mixture. Place cutlet on top of panko blue cheese crumbs and gently press down to coat one side. Turn cutlet over and press down again gently to coat, including edges. Place on prepared baking sheet. Repeat with remaining cutlets
  7. Bake 10-15 minutes, or until internal temperature reaches 160 F.
  8. Cut rolls in half, add two cutlets per roll, top each with broccoli slaw mixture and drizzle lightly with Buffalo-style hot sauce.

Substitution: Ranch may be used for blue cheese.

Steak and Blue Cheese Flatbread

Yield: 1 flatbread

  • 1          flatbread, any variety
  • 3          tablespoons Sabra Classic Hummus
  • 1/2       cup fresh arugula, rinsed and dried
  • 4          ounces thinly sliced, cooked flank steak
  • 1/4       cup crumbled blue cheese
  • thinly sliced red onion (optional)
  • salt, to taste
  • pepper, to taste
  1. Heat grill (or oven) to 450° F; bake flatbread 3-5 minutes until it begins to crisp.
  2. Spread hummus onto flatbread. Layer arugula (reserving 3-4 leaves to garnish), steak and crumbled blue cheese. Top with onion, if desired.
  3. Place on grill, close lid and cook 3-5 minutes (if using oven, broil approximately 2 minutes).
  4. Add salt and pepper, to taste, before serving.

Vegan Garden Flatbread

Yield: 1 flatbread

  • 1          flatbread, any variety
  • 2          tablespoons basil pesto (prepared or homemade)
  • 2          tablespoons Sabra Classic Hummus
  • 3-4       white button mushrooms
  • 2          tablespoons corn (fresh or frozen)
  • 3          spears asparagus, cooked until just tender
  • 1/4       cup vegan mozzarella cheese, shredded
  • olive oil
  • red pepper flakes (optional)
  • salt, to taste
  • pepper, to taste
  1. Heat grill (or oven) to 450° F; bake flatbread 3-5 minutes until it begins to crisp.
  2. Spread pesto, followed by hummus, over flatbread then layer mushrooms, corn and asparagus. Top with shredded mozzarella cheese.
  3. Place on grill, close lid and cook 3-5 minutes (if using oven, broil approximately 3 minutes).
  4. Drizzle with olive oil; sprinkle with red pepper flakes, if desired. Add salt and pepper, to taste, before serving.

Blue Cheese and Walnut Mousse

Cook time: 15 minutes
Yield: 10 servings

  • 2          tablespoons Simply Nature 100% Pure Avocado Oil
  • 3          large yellow onions, sliced
  • 5          ounces Happy Farms Preferred Blue Cheese Crumbles
  • 8          ounces Happy Farms Cream Cheese
  • Stonemill Ground Black Pepper, to taste
  • 1          cup Friendly Farms Heavy Whipping Cream
  • 8          ounces Southern Grove Chopped Walnuts, divided
  • 5          cucumbers, thinly sliced
  1. In large pan, heat oil and saute onions until brown and caramelized.
  2. In food processor, combine blue cheese crumbles and cream cheese. Process until smooth. Season with pepper, to taste.
  3. In medium bowl, using hand mixer, whisk cream until soft peaks form. Fold in cheese mixture and 4 ounces chopped walnuts.
  4. Top cucumber slices with mousse, caramelized onions and remaining chopped walnuts. Finish by grinding black pepper over top for garnish.
  5. Pair each serving with glass of La Rue Cotes de Provence Rosé.

Tip: Mousse can also be served as a dip with baguette slices.

Gingerbread Trifle

Prep time: 20 minutes
Yield: 12 servings

  • 1          package (3.4 ounces) Baker’s Corner Vanilla Pudding
  • 1 3/4    cups Specially Selected Premium Eggnog
  • 1/2       teaspoon Stonemill Pumpkin Pie Spice
  • 7          ounces Café Bistro Soft Gingerbread, crumbled, divided
  • 1 1/4    cups Friendly Farms Whipped Topping, divided
  • 1          cup Berryhill Apple Butter, divided
  • 2          teaspoons Stonemill Ground Cinnamon
  1. Whisk vanilla pudding mix and eggnog. Add pumpkin pie spice and beat 2 min­utes. Chill in refrigerator 10 minutes.
  2. In large glass bowl, layer one-third of gingerbread cookies, one-third of pudding, one-third of whipped topping and 1/2 cup apple butter; repeat two more times.
  3. The third layer will end with whipped topping. Garnish with cinnamon.
  4. Chill in refrigerator 2 hours.
  5. Pair each serving with glass of Landshut Riesling.

Party Poppers

Prep time: 25 minutes
Cook time: 15 minutes
Yield: 36 poppers

  • 8          ounces Southern Grove Pitted Dates
  • 4          ounces Specially Selected Brie Cheese Round
  • 6          ounces Southern Grove Slivered Almonds
  • 1 1/2    pounds Specially Selected Thick Sliced Hickory Bacon
  • 2          teaspoons Stonemill Ground Black Pepper
  1. Heat oven to 375° F.
  2. Cut dates in half, lengthwise.
  3. Cut brie into bite-size pieces, about the size of peanuts.
  4. Place one piece of Brie and four almond pieces on each open date half. Place other half on top.
  5. Quarter bacon slices, wrap tightly around stuffed dates and secure with toothpicks. Sprinkle with pepper.
  6. Line baking sheet with foil and place wrapped dates on top. Bake 15 minutes, or until bacon is crispy. Serve warm.
  7. Pair each serving with glass of Peaks & Tides Cabernet Sauvignon.

 

Cranberry Shrimp Ceviche Cups

Prep time: 20 minutes, plus 1 hour chill time
Cook time: 3 minutes
Yield: 16 ceviche cups

  • 1 1/2    teaspoons Stonemill Iodized Salt, divided
  • 16        ounces Specially Selected Black Tiger Shrimp, thawed
  • 1          cup Southern Grove Dried Cranberries
  • 1/2       red onion, roughly chopped
  • 1/2       cup fresh parsley
  • 1/2       jalapeno, roughly chopped
  • 1/4       cup fresh lemon juice
  • 1/4       cup fresh lime juice
  • 1/4       teaspoon Stonemill Crushed Red Pepper or Ground Black Pepper
  • 1          teaspoon Stonemill Oregano
  • 13        ounces Simply Nature Organic Tortilla Chips, for garnish
  • 2          limes, cut into wedges, for garnish
  • fresh cranberries, for garnish (optional)
  1. Bring medium pot of water to boil. Season with 1 teaspoon salt. Add shrimp and cook 3 minutes. Immediately plunge cooked shrimp into ice water bath. Peel shrimp and place in flat dish.
  2. In food processor, combine dried cranberries, red onion, parsley and jalapeno. Pulse until finely chopped. Add cranberry mixture to shrimp.
  3. Add lemon juice, lime juice, remaining salt, pepper and oregano. Stir to combine thoroughly. Refrigerate 1 hour.
  4. To assemble: Spoon ceviche (about 4-5 shrimp each) into small clear cups or glasses. Garnish with tortilla chips, lime wedges and fresh cranberries, if desired.
  5. Pair each serving with glass of William Wright Chardonnay.
