Roasted Vegetable Lasagna

  • 2          eggplants (about 3 pounds), quartered lengthwise
  • 6          medium zucchini (about 3 pounds)
  • canola oil cooking spray
  • 1          pound whole-wheat lasagna noodles
  • 15        ounces low-fat ricotta or low-fat cottage cheese
  • 2          eggs
  • 1/2       cup grated Parmesan cheese
  • 1/2       teaspoon ground nutmeg
  • 1/2       teaspoon garlic powder
  • 3          cups low-fat mozzarella cheese
  • 4          cups low-sodium tomato sauce, divided
  1. Heat oven to 450° F. Grease 13-by-9-by-2-inch baking pan; set aside.
  2. Slice eggplant and zucchini in 1/2-inch slices. Layer on two baking sheets and coat both sides of vegetables with cooking spray. Roast 20 minutes. Toss vegetables and continue roasting until well browned and soft, about 20 minutes more. Transfer vegetables to large bowl.
  3. Reduce oven temperature to 375° F.
  4. Cook lasagna noodles according to package directions. Separate noodles and let cool slightly.
  5. In medium bowl, mix together cheese, eggs, Parmesan, nutmeg and garlic powder.
  6. To assemble: Spread thin layer of sauce over bottom of prepared pan. Cover with layer of pasta (noodle strips slightly overlapping). Spread with one-third of ricotta mixture.
  7. Sprinkle 1/4 of the mozzarella over ricotta. Spoon 1/3 of roasted vegetables on top. Top with 1/2 cup tomato sauce and continue assembly as directed until there are four layers of pasta and three layers of filling. Spread remaining sauce on top and sprinkle with remaining mozzarella.
  8. Cover pan with aluminum foil and bake 30 minutes. Uncover and continue baking until golden and bubbly, about 15 minutes more. Let stand 15 minutes before serving.

Dressing:

  • 1/4       cup canned, unsweetened coconut milk
  • 1/4       cup creamy peanut butter
  • 1          tablespoon rice wine vinegar
  • 1          tablespoon soy sauce
  • 2          teaspoons red curry paste
  • 1/8       teaspoon ground cayenne pepper
  • 1-2       tablespoons hot water

Salad:

  • 1          cup Uncle Ben’s Flavor Infusions Roasted Chicken
  • 1 1/2    cups shredded rotisserie chicken
  • 1          cup shredded carrots
  • 1          cup sliced pea pods
  • 1          cup sliced red pepper
  • 1          avocado, pitted and sliced
  • 4-6       red radishes, thinly sliced
  • 2          tablespoons chopped peanuts
  • 2          tablespoons chopped green onions
  1. To make dressing: In small glass bowl, stir together coconut milk, peanut butter, rice wine vinegar, soy sauce, red curry paste, cayenne pepper and hot water; set aside.
  2. Cook rice according to package instructions. Makes about 3 1/2 cups.
  3. In center of individual plates, place about 1 cup rice. Arrange chicken, carrots, pea pods, red pepper, avocado, radishes, peanuts and green onions around rice then drizzle with dressing.

Catfish Quesadilla with Cilantro-Lime Sour Cream

  • 4          U.S. Farm-Raised Catfish Fillets, grilled or baked
  • 2 1/2    tablespoons olive oil, divided
  • salt, to taste
  • freshly ground pepper, to taste
  • smoked paprika or chili powder
  • 1          small red bell pepper, diced
  • 1/2       red onion, diced
  • 3/4       cup whole corn kernels
  • 1          teaspoon red pepper flakes
  • 1          teaspoon ground cumin
  • 1/2       cup fresh cilantro leaves, chopped
  • 4          flour or wheat tortillas (10 inches each)
  • 1          can (16 ounces) refried black beans
  • 2          cups grated pepper jack cheese

Cilantro-Lime Sour Cream:

  • 1/2       cup sour cream
  • 1/4       cup fresh cilantro leaves, chopped
  • 1/2       lime, juiced
  • lime zest
  • salt, to taste
  1. Lightly brush fish with 1 tablespoon olive oil. Season with salt, pepper and smoked paprika or chili powder. Prepare fish on grill or bake until done. Place in refrigerator to cool. When cool, cut into bite-size pieces.
  2. In large skillet, heat 1 tablespoon oil over medium-high heat. Saute red pepper and onion until soft, about 5 minutes. Add corn, red pepper flakes, cumin and salt and pepper, to taste. Toss to incorporate and saute 3 minutes. Transfer to bowl and add cilantro.
  3. Heat pan large enough to hold flat tortilla to medium heat. Lightly brush pan with remaining olive oil.
  4. Spread tortilla on work surface. On half of each tortilla, spread refried beans and vegetables; top with fish.
  5. Place in heated pan and sprinkle 1/2 cup cheese on other half of tortilla. Heat until cheese is melted and tortilla is lightly crispy. Fold cheese side over vegetable side and remove to plate.
  6. Using serrated knife, cut each tortilla into four pieces. Serve with Cilantro-Lime Sour Cream.
  7. To make Cilantro-Lime Sour Cream: In small bowl, mix all ingredients until combined.

Bring the Family Together with a One-Pot Fiesta

Tex-Mex Macaroni Casserole

Ingredients
Makes 8 (1-cup) servings

  • 1          pound lean ground beef
  • 1          medium onion, chopped
  • 1          package McCormick Organics Taco Seasoning Mix
  • 2          cups water
  • 2          cups fresh chopped tomatoes
  • 1          cup frozen whole kernel corn
  • 2          cups uncooked whole grain elbow macaroni
  • 1          cup shredded Cheddar cheese

Directions

  1. Brown beef and onion in large skillet on medium-high heat. Drain fat.
  2. Stir in seasoning mix, water, chopped tomatoes and corn. Bring to boil. Add pasta. Reduce heat to low; cover and simmer 12 minutes, stirring occasionally.
  3. Sprinkle with cheese, cover. Let stand 5 minutes or until cheese is melted.

  • 2 cans (15 ounces each) READ Southwestern Bean Salad
  • 1 pre-baked pizza crust (10-12-inch diameter)
  • 4 slices bacon, cooked crisp and crumbled (about 1/4 cup crumbled)
  • 1/2-3/4 cup thin bell pepper strips (1/4-inch thick), any color or combination
  • 3/4 cup shredded Mexican cheese blend
  • 1/4 cup chopped fresh cilantro
  • chopped avocado (optional)
  • sour cream (optional)
  1. Drain bean salads. Place half of beans in bowl of food processor; process until pureed but chunky.
  2. Spread puree evenly over pizza crust. Spoon remaining drained beans over puree. Sprinkle with bacon, bell pepper and cheese.
  3. Bake as directed on pizza crust package until heated through and cheese is melted, about 10-12 minutes.
  4. Sprinkle with chopped cilantro. Serve with avocado and sour cream, if desired.

Beef, Beet and Horseradish Wraps

Prep time: 30 minutes
Servings: 4

  • 1 jar (16 ounces) Aunt Nellie's Sliced Pickled Beets
  • 1/2 cup shredded carrots
  • 1 tablespoon prepared horseradish
  • 1/2 cup spreadable cheese (such as goat cheese or herb soft cheese)
  • 2 large soft flour tortillas (about 10-12-inch diameter)
  • 10 green onions (green parts only)
  • 10 thin slices deli roast beef
  1. Drain beets; chop. Discard beet liquid. In medium bowl, combine beets, carrots and horseradish.
  2. Spread 1/4 cup cheese evenly over each tortilla, leaving 1-inch border. Arrange five green onions (do not chop) on each; press lightly into cheese. Place five slices roast beef on each tortilla to cover green onions then sprinkle beet mixture evenly over beef.
  3. Roll up tortillas in parallel direction of green onions. Wrap each roll tightly in plastic wrap. Refrigerate up to 4 hours.
  4. To serve, remove plastic wrap; cut each tortilla into two pieces.

Substitution: If horseradish is too pungent, omit or replace with diced jarred roasted red peppers or Dijon mustard.

Seared Halibut with Lemon Butter Sauce

Serves: 4

Lemon Butter Sauce

  • 1/2       cup white wine
  • 1/4       cup fresh lemon juice
  • 8          tablespoons whipping cream
  • 3/4       teaspoon fresh garlic, chopped
  • turmeric, to taste
  • salt, to taste
  • white pepper, to taste
  • 8          tablespoons unsalted butter, diced

Halibut

  • 4          teaspoons olive oil
  • 4          halibut filets (6-8 ounces each)
  • salt
  • pepper
  • lemon zest
  • herbs

Vegetables

  • 2          tablespoons olive oil
  • 2          small zucchini, cut into 1/4-inch strips
  • 2          small yellow squash, cut into 1/4-inch strips
  • 2          small red peppers, washed, seeded and sliced into strips

Potatoes

  • 2          cups Idahoan Signature Russets Mashed Potatoes (from 16.23-ounce package)
  1. For lemon butter sauce, add white wine, lemon juice, cream, garlic, turmeric, salt and pepper to saute pan. Heat on high heat and reduce to half its original volume.
  2. While lemon sauce is reducing, prepare fish and vegetables.
  3. Once reduced, remove from heat and swirl in diced butter.
  4. For halibut, heat non-stick skillet on medium-high heat with olive oil. Season halibut with salt and pepper. Sear until deep golden brown, approximately 5 minutes each side. Remove from heat and cover with foil.
  5. For vegetables, add olive oil to skillet over medium-high heat. Saute zucchini, squash and pepper until crisp-tender, about 2-3 minutes. Keep warm.
  6. For potatoes, prepare mashed potatoes following package instructions.
  7. To serve, plate mashed potatoes, vegetables and halibut. Drizzle halibut with lemon butter sauce and garnish with lemon zest and fresh herbs.

Note: Haddock or striped bass can be substituted for halibut.

Hoisin Roasted Pork with Steamed Greens

Serves: 4

  • 2          tablespoons hoisin sauce
  • 2          tablespoons honey
  • 1          tablespoon soy sauce
  • 1          pork tenderloin filet (16 ounces)
  • 8          ounces fresh sugar snap peas
  • 8          ounces green beans
  • 2          cups Idahoan Signature Russets Mashed Potatoes (from 16.23-ounce package)
  1. Heat oven to 350° F.
  2. In bowl, combine hoisin, honey and soy. In non-metallic bowl, pour marinade over pork and set aside for 15 minutes.
  3. Heat medium nonstick frying pan over medium heat. Add marinated pork and cook each side 1-2 minutes.
  4. Transfer pork to baking tray and cook 15 minutes, or until cooked to desired doneness.
  5. Steam fresh sugar snap peas and green beans together. Set aside.
  6. Prepare mashed potatoes following package instructions.
  7. To serve, plate mashed potatoes, sliced pork and steamed vegetables. Spoon pan juices over pork and enjoy.

Roasted Chicken Provencal

Serves: 4

  • 8          chicken thighs (bone-in, skin-on)
  • 1/2       teaspoon salt
  • 1/4       teaspoon ground black pepper
  • 1          tablespoon olive oil
  • 1/2       cup dry white wine
  • 1/4       cup chicken broth
  • 2          thyme sprigs
  • 2          garlic cloves, crushed
  • 2          cups Idahoan Signature Russets Mashed Potatoes (from 16.23-ounce package)
  • 1          cup sliced cremini mushrooms
  • 1/2       cup cherry tomatoes, halved
  • 1/4       cup pitted black olives, halved
  • sauteed green beans
  1. Sprinkle chicken thighs with salt and pepper. In 12-inch skillet over medium-high heat, brown chicken thighs on both sides in hot oil. Add white wine, chicken broth, thyme sprigs and garlic.
  2. Over high heat, heat mixture to boiling. Cover and simmer 25 minutes, stirring occasionally.
  3. Meanwhile, prepare mashed potatoes according to package directions.
  4. In skillet, add mushrooms, cherry tomatoes and olives; cover and simmer 5 minutes longer until chicken is tender.
  5. Serve chicken thighs with mashed potatoes and sauteed green beans.

Fresh, Family-Friendly Flavors

Asparagus Crust White Chicken Pizza

Asparagus Crust:

  • 2          cups cut-up fresh or frozen Michigan asparagus, blanched
  • 1          egg
  • 2/3       cup grated Parmesan cheese
  • 2/3       cup shredded mozzarella cheese
  • 1          tablespoon lemon pepper seasoning


White Sauce:

  • 2          tablespoons butter
  • 1/4       cup chopped leeks
  • 1          clove garlic, minced
  • 1          tablespoon flour
  • 3/4       cup milk
  • 1/4       cup grated Parmesan cheese
  • 1          cup cubed rotisserie chicken
  • 1          cup shredded mozzarella cheese
  • 1/2       cup frozen green peas, thawed
  • 1/2       cup cut-up fresh or frozen Michigan asparagus, blanched and seasoned with avocado oil and lemon pepper seasoning
  • 1/4       cup chopped prosciutto
  • fresh chives, for garnish
  • fresh basil, for garnish
  1. Heat oven to 375° F.
  2. To make Asparagus Crust: In food processor, puree blanched asparagus until smooth. In large bowl, mix asparagus puree, egg, Parmesan, mozzarella and lemon pepper seasoning until thoroughly combined.
  3. Press asparagus mixture into circular shape on parchment paper-lined pizza stone or baking sheet. Place layer of paper towel over crust and gently press down to remove excess moisture. Repeat until paper towel is no longer absorbing moisture. Discard wet paper towels.
  4. Bake 12-13 minutes.
  5. To make White Sauce: In saucepan over medium heat, cook butter, leeks and garlic 3-4 minutes. Slowly whisk in flour and cook 1-2 minutes. Slowly add in milk, continue whisking and cook until thickened. Add Parmesan then remove from heat and set aside.
  6. Pour white sauce over partially baked asparagus crust and top with chicken and mozzarella. Add peas, asparagus and prosciutto. Bake 5-8 minutes, or until cheese is thoroughly melted. Garnish with fresh chives or basil.

Cheeseburger Mac

  • 1          tablespoon olive oil
  • 1          pound lean ground turkey
  • 1          small onion, finely chopped
  • 1          cup mini sweet peppers, chopped
  • 1 1/2    teaspoons paprika
  • 1          teaspoon sugar
  • 1/2       teaspoon salt
  • 1/2       teaspoon chili powder
  • 1 1/2    cups water
  • 1          cup milk
  • 3          tablespoons tomato paste
  • 1 1/2    cups whole-grain dry macaroni
  • 1          cup shredded low-fat cheddar cheese
  1. In large skillet over medium high heat, heat oil. Add turkey, onion and peppers. Cook 7-10 minutes, or until turkey is cooked through.
  2. In small bowl, mix paprika, sugar, salt and chili powder. Add to turkey and stir. Add water, milk, tomato paste and pasta. Mix well. Bring to boil, reduce heat and simmer 10 minutes, or until pasta is cooked and liquid is absorbed. Remove from heat and top with cheese.

  • 1/2       cup red seedless grapes
  • 1          whole-wheat sandwich round
  • 2          slices low-sodium deli-sliced turkey
  • 1          slice Swiss cheese
  • 1/2       slice low-fat cheddar cheese

  1. Add grapes to bottom of large section of bento box to create space background. Place bottom of sandwich round on top, add turkey and sandwich round top.
  2. Lay Swiss cheese on cutting board. Using small bowl or other round object, cut into circle. Place on top of sandwich to create moon.
  3. Lay cheddar cheese on cutting board. Using small star cookie cutter, cut out stars. Add to space around moon.
  4. Pair with clementine “crescent moons,” pepper “planet rings” and freeze-dried fruit.

Easy One-Dish Chicken and Veggie Bake

  • 1          pound chicken breast, cut in fourths
  • 12        small red potatoes, quartered
  • 12        ounces green beans
  • 1          tablespoon olive oil
  • 3          cloves garlic, minced
  • 1          tablespoon herbs de Provence
  • 1/4       teaspoon salt
  • 1/8       teaspoon pepper
  1. Heat oven to 350 F.
  2. Place chicken, potatoes and green beans in rows in 13-by-9-inch baking dish with chicken in middle. Drizzle with olive oil and season with garlic, herbs de Provence, salt and pepper.
  3. Bake 50 minutes, or until chicken reaches internal temperature of 165 F and potatoes are tender.

Sweet Potato and Black Bean Quesadilla

Cook time: 10 minutes

  • 1          large sweet potato
  • 1          can low-sodium black beans, drained and rinsed
  • 1/4       cup chopped cilantro
  • 1          tablespoon low-sodium taco seasoning
  • 8          whole-wheat tortillas
  • 1          cup low-fat shredded Monterey Jack cheese
  1. Use fork to prick sweet potato. Microwave 5 minutes on high. Let cool slightly.
  2. Cut potato in half lengthwise and scoop flesh into large bowl. Mash until smooth.
  3. Combine beans, cilantro and seasoning with sweet potato; mix well.
  4. Heat skillet over medium heat. Spread sweet potato mixture evenly on one side of tortilla, sprinkle with cheese and place second tortilla on top. Cook 3-4 minutes, or until cheese is melted. Flip and cook 2-3 minutes more.
  5. Repeat with remaining tortillas and mixture. Cut each into quarters.

Panzanella Salad

Serves: 8-10

  • 1          whole wheat baguette, cut into 1-inch cubes
  • 4          tablespoons extra-virgin olive oil, divided
  • 2          cloves garlic, minced
  • 1          tablespoon Dijon mustard
  • 3          tablespoons red wine vinegar
  • salt, to taste
  • pepper, to taste
  • 1          cup grape tomatoes, halved
  • 1          hothouse cucumber, diced
  • 3          assorted bell peppers, diced
  • 1/2       red onion, diced
  • 10        sprigs basil leaves, julienned
  1. Heat oven to 350° F.
  2. On baking sheet, spread bread in single layer and drizzle with 1 tablespoon olive oil. Bake 20 minutes, or until golden brown. Remove and set aside.
  3. In bowl, whisk together garlic, mustard, vinegar, salt and pepper with remaining olive oil to make vinaigrette. 
  4. In large bowl, toss ingredients together, making sure to coat all ingredients with vinaigrette. Serve immediately.

Garlic Roasted Asparagus with Tomatoes and Balsamic

  • 2          pounds asparagus, ends trimmed
  • 1          pint cherry tomatoes 
  • 4          garlic cloves, minced
  • salt, to taste
  • black pepper, to taste
  • reduced balsamic vinegar
  1. Heat oven to 375° F. 
  2. On baking sheet, toss together all ingredients, except balsamic vinegar. Roast 15 minutes, or until asparagus is tender. Transfer asparagus and tomatoes to platter. Drizzle with reduced balsamic vinegar to taste and serve.

Tip: Add some leftover fresh basil to the top of your lasagna for a pretty and flavorful garnish that complements your sides.

Baked Eggs in Avocado with Bacon

Prep time: 30 minutes
Servings: 2

  •             Nonstick cooking spray
  • 1          avocado, halved and pitted
  • 2          eggs
  • kosher salt, to taste
  • freshly cracked pepper, to taste
  • 2          slices Pure Farmland All-Natural Uncured Bacon, cooked, crumbled
  • 2          tablespoons grated Parmesan cheese
  • 1          tablespoon chopped chives
  • smoked paprika, for garnish
  • hot sauce, for garnish (optional)
  1. Heat oven to 425° F. Spray baking sheet or glass baking pan with nonstick cooking spray.
  2. Scoop additional 1-2 tablespoons out of avocado halves to create wells for eggs.
  3. Place avocados flesh-side up on prepared baking sheet or glass pan. Gently crack one egg in each avocado well, keeping yolks intact. Bake 15-18 minutes, or until eggs reach desired temperature.
  4. Add salt and pepper, to taste. Top with crumbled bacon, Parmesan cheese and chopped chives. Garnish with paprika and hot sauce, if desired.

Bacon and Spaghetti Squash Fritter with Roasted Red Pepper Sauce

Prep time: 45 minutes
Servings: 4

Bacon-Spaghetti Squash Fritter:

  • 4          cups cooked spaghetti squash
  • 6          slices Pure Farmland All-Natural Uncured Bacon, cooked, chopped, fat reserved
  • 4          green onions, white parts only, sliced thin
  • 2          eggs, lightly beaten
  • 1/2       cup Parmesan cheese, grated
  • 1/3       cup all-purpose flour

Romesco Sauce:

  • 2          roasted red peppers, fresh or jarred
  • 4          plum tomatoes, roasted, skins removed
  • 3/4       cup almonds, toasted
  • 4          cloves garlic, roasted
  • 2          tablespoons sherry vinegar
  • 2          teaspoons smoked paprika
  • 1/2       teaspoon cayenne pepper
  • 1/2       cup olive oil
  • salt, to taste
  • pepper, to taste
  1. To make Bacon–Spaghetti Squash Fritter: Place spaghetti squash in large bowl. Add bacon, green onions, eggs and cheese. Stir to combine. Add flour and mix until combined. Form into patties.
  2. Heat large saute pan over medium-high heat. Add 2 tablespoons reserved bacon fat. Add fritters in batches and cook until well browned on both sides, approximately 2-3 minutes per side.
  3. To make Romesco Sauce: In food processor, pulse roasted red peppers, plum tomatoes, almonds, garlic, sherry vinegar, smoked paprika and cayenne pepper to combine. Slowly add in olive oil and season with salt and pepper, to taste.
  4. Pour Romesco Sauce over Bacon-Spaghetti Squash Fritter before serving.
