Ham Spinach Fiesta Crêpes
Makes: 8 servings (2 crêpes each)
Prep: 10 minutes
Chill: 30 minutes
Cook: 25 minutes
- 1 1/2 cups nonfat milk
- 1 1/3 cups all-purpose flour
- 3 eggs
- 1 package (15 ounces) frozen chopped spinach, thawed and well drained
- 1 jar (16 ounces) Pace salsa con queso
- 8 slices (1 ounce each) smoked fully-cooked ham
- 1 cup Pace Picante sauce
- 4 ounces shredded Cheddar cheese (about 1 cup)
- Place milk, flour and eggs into a blender. Cover and blend until mixture is smooth. Refrigerate for 30 minutes.
- Stir spinach and salsa con queso in a medium bowl.
- Pour about 3 tablespoons of batter into a hot, greased nonstick skillet or crêpe pan, swirling skillet to spread batter over bottom of skillet. Cook for 1 minute or until crêpe is golden on both sides. Remove crêpe from skillet. Repeat, making 16 crêpes in all and stacking cooked crêpes.
- Place 1/2 slice ham onto each crêpe. Top each with 3 tablespoons of spinach mixture. Roll up crêpes around filling. Place filled crêpes seam-side down into 2 (2-quart) shallow microwave-safe baking dishes. Top with picante sauce and cheese.
- Microwave, one dish at a time, on high for 2 minutes or until cheese is melted.
Tip: Chill time is important for this recipe, because it allows bubbles in batter to subside, which makes crêpes less likely to tear during cooking.
Tomato-Feta Frittata
Makes: 6 servings (1 wedge each)
Prep: 20 minutes
Bake: 40 minutes
- 7 eggs
- 1/2 cup water
- 1 cup cooked regular long-grain white rice
- 3 ounces crumbled feta cheese (about 3/4 cup)
- 2 ounces shredded Cheddar cheese (about 1/2 cup)
- 1/2 cup Pace Picante sauce
- 2 tablespoons chopped fresh cilantro leaves
- 1/2 teaspoon dried oregano leaves, crushed
- 3 Italian plum tomatoes, sliced
- Heat oven to 400°F. Heat greased, oven-safe 10-inch skillet in oven for 5 minutes.
- Beat eggs and water in large bowl with a fork or whisk. Stir in rice, feta cheese, Cheddar cheese, picante sauce, cilantro and oregano. Pour egg mixture into skillet. Arrange tomato slices on egg mixture.
- Bake for 40 minutes or until eggs are set. Cut frittata into 6 wedges.
Tip: You can use any type of cooked rice for this recipe. It's a great way to use up leftover rice from your take-out Chinese dinner.
Breakfast Pizza
Makes: 6 servings (1 slice each)
Prep: 20 minutes
Cook: 10 minutes
Bake: 5 minutes
- 1 tablespoon butter
- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- 1/4 cup chopped Canadian bacon
- 1 (12-inch) prepared pizza crust
- 8 eggs, beaten
- 1/4 teaspoon ground black pepper
- 3/4 cup Pace Picante sauce
- 2 ounces shredded Cheddar cheese (about 1/2 cup)
- 2 tablespoons chopped fresh cilantro leaves
- Heat oven to 400°F.
- Heat butter in a 10-inch skillet over medium heat. Add onion, pepper and bacon, and cook until vegetables are tender.
- Place pizza crust onto a pizza pan or baking sheet. Place in oven to warm.
- Stir eggs and black pepper into skillet. Cook and stir until eggs are set. Spoon egg mixture onto pizza crust. Top with picante sauce. Sprinkle with cheese.
- Bake for 5 minutes or until cheese is melted. Sprinkle with cilantro. Cut pizza into 6 slices.
Fiesta Breakfast Casserole
Makes: 6 servings (about 1 1/2 cups each)
Prep: 15 minutes
Chill: 2 hours
Bake: 45 minutes
- 1/2 pound bulk pork sausage
- 12 slices Pepperidge Farm White Sandwich Bread, cut into cubes
- 1 1/2 cups shredded Cheddar cheese
- 1 cup Pace Picante sauce
- 4 eggs
- 3/4 cup milk
- Cook sausage in 10-inch skillet over medium-high heat until well browned, stirring often to separate meat. Pour off fat.
- Spoon sausage into 2-quart shallow baking dish. Top with bread cubes and cheese. Beat picante sauce, eggs and milk in medium bowl with fork or whisk. Pour picante sauce mixture over bread mixture. Stir and press bread mixture into picante sauce mixture to coat. Cover and refrigerate 2 hours or overnight.
- Heat oven to 350°F. Uncover baking dish.
- Bake 45 minutes, or until knife inserted in center comes out clean.
Tip: Prepare dish the night before and pop into oven in the morning. It's great when you have overnight guests. Add a simple side of sliced melon and breakfast is ready!

- 4 slices Farmland Hickory Smoked Thick Cut Bacon
- 1 teaspoon olive oil
- 4 cups baby spinach (optional)
- 1 tablespoon butter
- 4 eggs
- 4 glazed doughnuts
- 4 slices real cheddar cheese
- Fry bacon for 10 minutes, until outside is crispy and brown.
- In large, deep skillet over medium-high heat, heat olive oil and saute spinach until wilted. Set aside.
- In another large skillet, melt butter over medium-high heat until melted. Carefully crack eggs into skillet and fry until yolk is done.
- Assemble sandwiches as follows: doughnut bottom, spinach, egg, slice of cheese, bacon, doughnut top.
Bacon and Egg Breakfast Pizza
Makes 1 pizza
- 1 package (16 ounces) Farmland Hickory Smoked Bacon
- 1 can (10 ounces) refrigerated pizza crust dough
- 2 cups frozen hash brown potatoes with onions and peppers, partially thawed
- 1/4 cup chopped green bell pepper
- 4 eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup (4 ounces) shredded cheddar cheese
- Heat oven to 425° F.
- Cook bacon according to package directions; drain.
- Press crust into lightly greased 14-inch pizza pan, forming 1/2-inch rim. Bake 5 minutes.
- Arrange potatoes, bacon and green pepper over crust. Whisk together eggs, milk, salt and pepper; pour over pizza.
- Sprinkle with cheese. Bake for 11-13 minutes or until golden brown and eggs are set.

- 3 tablespoons butter

- 2/3 cup Hungry Jack Instant Mashed Potato Flakes
- 1 teaspoon ground cinnamon
- 1/8 teaspoon cayenne pepper (optional)
- 1 1/2 cups sugar
- 1 teaspoon vanilla extract
- 4 large eggs, separated
- 1/2 cup Pillsbury BEST® All Purpose Flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- Powdered sugar
SPICED WHIPPED CREAM:
- 1/2 pint whipping cream
- 3 tablespoons powdered sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
- HEAT oven to 350°F. Line bottom of a 9-inch springform pan with parchment paper. Coat paper with no-stick cooking spray. Place chocolate and butter in medium microwave-safe bowl. Microwave on HIGH power 45 to 60 seconds or until chocolate is melted and smooth when stirred.
- COMBINE coffee, potato flakes, cinnamon and cayenne in large mixing bowl, stirring until moistened. Blend in sugar and vanilla. Blend in chocolate mixture and egg yolks. Stir together flour, baking powder and salt. Gradually blend into chocolate mixture.
- BEAT egg whites on medium speed of electric mixer until stiff. Add to chocolate mixture and blend on low speed until completely blended, scraping sides and bottom of bowl frequently. Pour batter into prepared pan. Bake 55 to 60 minutes or until set in center. Cool completely in pan on wire rack. Remove from pan. Sprinkle liberally with powdered sugar.
- COMBINE whipping cream, powdered sugar, cinnamon and vanilla in medium mixing bowl. Beat on medium speed of electric mixer until stiff. Serve with cake.
Maple Glazed Pork Tenderloin
Makes: 4 servings
Prep Time: 7 minutes
Cook Time: 12 minutes
- 1 teaspoon dried thyme leaves, crushed
- 1 teaspoon dried marjoram leaves, crushed
- 1/4 teaspoon salt
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 pound pork tenderloin, cut into 1/2-inch slices
- 1 tablespoon butter
- 2 tablespoons Hungry Jack Original Regular Syrup
- COMBINE thyme, marjoram, salt, onion powder and garlic powder in large resealable food storage bag. Seal bag and shake well. Add pork slices. Seal bag. Shake to coat.
- MELT butter in large nonstick skillet over medium-high heat. Add pork mixture. Cook and stir 8 to 10 minutes or until pork is browned and no longer pink in center. Add syrup. Cook and stir until pork is glazed.
Spinach Salad with Warm Maple Dijon Vinaigrette
Makes: 4 servings

- 1/4 cup Hungry Jack Original Syrup
- 3 tablespoons cider vinegar
- 4 teaspoons Dijon mustard
- 1 teaspoon fresh thyme leaves, minced, or 1/2 teaspoon dried thyme leaves

- 1/4 teaspoon pepper
- 1/2 cup Crisco 100% Extra Virgin Olive Oil

- 1/2 cup crumbled blue cheese
- 2 tablespoons crumbled cooked bacon or real bacon bits
- WHISK together syrup, vinegar, mustard, thyme, garlic, salt and pepper in a medium microwave-safe bowl until well blended. Gradually whisk in oil, stirring until thickened.
- COMBINE spinach, apple, cheese and bacon in a large bowl. Just before serving, microwave vinaigrette on HIGH for 30 to 45 seconds or until warm. Drizzle salad with desired amount of vinaigrette; toss salad and serve immediately.

Spanakopita Puffs
- 1 package puff pastry sheets
- 1 tablespoon unsalted butter
- 1 small onion, diced
- 10 ounces frozen chopped spinach, thawed and drained
- 4 ounces light cream cheese, softened
- 2 eggs, divided
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled garlic and herb feta cheese
- 1 tablespoon cold water
- Heat oven to 375° F.
- Thaw folded pastries 15 minutes. Once thawed, unfold sheets to thaw out flat.
- In a large skillet over medium heat, melt butter. Add onions and saute 3 - 5 minutes, or until tender and translucent.
- Stir spinach into softened onions. Continue cooking, stirring frequently, until water from spinach evaporates and spinach is mostly dry. Transfer spinach mixture to large bowl.
- In small bowl, blend cream cheese with one egg, salt and pepper until smooth. Fold cream cheese mixture into spinach mixture to combine. Stir in feta cheese and set aside.
- Line baking pans with parchment paper or silicone baking mats.
- On floured surface, roll one sheet of puff pastry out to 10 by 12 inch rectangle. Cut sheet in half lengthwise, then again widthwise to form four 5 by 6 inch rectangles. Place rectangles on prepared baking sheets.
- Place spoonful of filling onto center of each cut pastry. Whisk remaining egg with cold water to create egg wash. Lightly brush egg wash around perimeter edges of each pastry square.
- Pick up short side of pastry and fold over filling toward other short side. Press edges to seal before crimping with fork. Repeat with remaining pastries.
- Brush small amount egg wash over top of each pastry. Cut small slits on top of each pastry to allow filling to vent steam while cooking.
- Bake 25 - 30 minutes, or until pastries are evenly browned on top.
- Transfer pastries to wire rack. Cool 8 - 10 minutes before serving.

Cherry-Glazed Duck Breast Salad

Servings: 4
Cherry Vinaigrette:
- 2 cups dried cherries, divided
- 3 cups hot water
- 1/3 cup raspberry vinegar
- 1 cup extra-virgin olive oil
- salt, to taste
- freshly ground black pepper, to taste
- 2 Maple Leaf Farms Boneless Duck Breasts
- 6 cups loosely packed baby spinach leaves, washed and trimmed
- 2 cups blue cheese
- 2 cups slivered almonds
- To make Cherry Vinaigrette: In small saucepan over low heat, cover 1 cup cherries with water. Bring to simmer, cover pan and remove from heat. Let cherries soak in hot water 15-20 minutes. Strain cherries and reserve liquid.
- In food processor or blender, puree cherries until smooth, adding reserved liquid as necessary. Add raspberry vinegar to cherry mixture. With blender or food processor on low, slowly add olive oil, reserving about 2 tablespoons. Season mixture, to taste, with salt and pepper. Set aside Cherry Vinaigrette.
- Heat grill to medium heat. Remove skin from duck breasts. Rub with remaining olive oil and season liberally with salt and pepper. Pour some Cherry Vinaigrette into separate container to use as glaze; reserve remaining for dressing. Using pastry brush, coat duck breasts with Cherry Vinaigrette.
- Cook duck until crisp and dark brown (about 5-6 minutes), turn over and recoat with Cherry Vinaigrette. Continue cooking until second side is crisp and brown, brushing with vinaigrette as needed, about 4 minutes, or until internal temperature reaches 155 F. Remove to cutting board and let rest at least 5 minutes.
- Place spinach in mixing bowl. Toss spinach with enough dressing to coat leaves. Add blue cheese, almonds and most of remaining dried cherries, reserving some of each for garnish. Season with salt and pepper.
- Divide spinach mixture among four bowls.
- Slice duck breast thinly on bias, starting at one end of each breast with knife at 45-degree angle.
- Fan slices of duck on top of each salad. Sprinkle each salad with crumbled blue cheese, almonds and dried cherries.

- 2-3 sun-dried tomatoes

- Toast bread; set aside. Wash and pat dry arugula; set aside.

- 1 slice artisan country white bread
- 1/4 cup fresh spinach, wilted
- water
- 1 soft-boiled egg
- ice
- 1 garlic clove, chopped
- 1 teaspoon olive oil
- 2 tablespoons Sabra Classic Hummus
- red pepper flakes, for garnish
- salt, to taste
- pepper, to taste
- Toast bread; set aside. Wash spinach; set aside.
- Fill small saucepan with enough water to barely cover egg; bring to boil, cover and reduce heat. Cook egg 6 minutes, remove from heat and plunge into ice bath to stop cooking. Peel egg; set aside.
- In medium skillet, saute chopped garlic in olive oil approximately 3 minutes; add spinach and stir 2 minutes, or until spinach begins to wilt. Remove from heat.
- Spread toast with hummus. Add wilted garlic-spinach. Cut egg in half and place on top of spinach. Sprinkle with red pepper flakes, salt and pepper.

Dressing:
- 1/2 cup plain non-fat yogurt
- 1 lemon, juiced
- 2 tablespoons green onions
- 2 tablespoons olive oil
- salt, to taste
- pepper, to taste
- 1 ounce walnuts (about 14 halves)
- cayenne pepper, to taste
- 1 bag (8 ounces) spinach
- 1 can (6 ounces) crab meat or fresh lump crab
- 1/2 cup lentils, cooked
- 1 grapefruit, cut into sections
- Heat oven to 300° F.
- To make dressing: Mix yogurt, lemon juice, green onions and olive oil. Add salt and pepper, to taste.

- 4 slices bacon, cut crosswise into 1/2-inch-wide pieces
- 3/4 pound boneless, skinless chicken breasts, cut into 3/4-inch pieces
- 10 ounces (about 4 cups) farfalle (bow tie) pasta
- 2 1/2 cups reduced-sodium chicken broth
- 4 cloves garlic, minced
- 1 1/2 teaspoons dried Italian seasoning
- 1/2 teaspoon coarsely ground black pepper
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 3 cups baby spinach leaves
- 1 cup halved cherry tomatoes, for garnish
- Place removable pan inside programmable pressure cooker. Using saute function, cook bacon, uncovered, until crisp. Use slotted spoon to remove bacon from pan. Drain bacon on paper towels. Leave 1 tablespoon drippings in pan; discard remaining.
- Add chicken to bacon drippings in pan in two batches. Using saute function, stir-fry chicken 2-3 minutes, or until cooked through. Use slotted spoon to remove chicken from pan. Repeat until all chicken is cooked. Press cancel.
- Stir pasta, broth, garlic, Italian seasoning and pepper into drippings in pan. Secure lid and set pressure release to sealing function. Select high pressure setting and cook 5 minutes. Press cancel.
- Allow pressure to release naturally 5 minutes. Move pressure release to venting function to release any remaining steam. Remove lid.
- Stir cream into pasta mixture. Using saute function, cook and stir, uncovered, until boiling. Boil, uncovered, about 4 minutes, or until sauce generously coats pasta, stirring frequently. Press cancel. Stir in chicken and Parmesan cheese.
- Place spinach and bacon in large bowl. Pour pasta mixture over top. Toss until combined. Ladle into serving bowls. Top each serving with tomatoes.

- 1 pound lean ground turkey
- 1 cup chopped onion
- 1 can (15 1/2 ounces) kidney beans, rinsed and drained
- 1 can (15 ounces) no-salt- added tomato sauce
- 1 can (14 1/2 ounces) diced tomatoes with green chili peppers
- 1 2/3 cups reduced-sodium chicken broth
- 1 tablespoon chili powder
- 1/2 teaspoon garlic salt
- 1/4 teaspoon pepper
- 8 ounces (about 1 3/4 cups) elbow macaroni
- 1/2 cup 2 percent or whole milk
- 2 tablespoons all-purpose flour
- 2 cups (8 ounces) shredded Mexican blend cheese
- 3/4 cup plain fat-free Greek yogurt or sour cream
- Place oil in removable pan of programmable pressure cooker. Place pan in pressure cooker. Using saute function, heat oil until hot. Add turkey and onion. Cook, uncovered, about 5 minutes, or until turkey is no longer pink, stirring to break up. Press cancel.
- Stir in beans, tomato sauce, diced tomatoes, broth, chili powder, garlic salt and pepper. Stir in macaroni. Secure lid and set pressure release to sealing function. Select high pressure setting and cook 5 minutes.
- Allow pressure to release naturally 2 minutes. Move pressure release to venting function to release any remaining steam. Remove lid.
- Stir macaroni mixture. Whisk together milk and flour. Stir into macaroni mixture. Using saute function, cook and stir, uncovered, 1-2 minutes, or until boiling. Press cancel.

- 2 tablespoons butter or clarified butter
- 4 cups chicken broth
- 4 ounces (about 2/3 cup) wild rice, rinsed and drained
- 1 teaspoon dried thyme leaves
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 12 ounces skinless, boneless chicken breast halves, cut into 3/4-inch pieces
- 1 cup plain low-fat Greek yogurt
- 2 tablespoons flour
- 1/2 cup whipping cream
- In Dutch oven, cook carrots, onion, celery and garlic in hot butter about 2 minutes, or until tender, stirring occasionally.
- Stir broth, wild rice, thyme, salt and pepper into vegetable mixture. Bring to boil. Reduce heat. Simmer, covered, 40 minutes. Stir in chicken pieces. Return to simmer, covered, 10-15 minutes, or until rice is tender and chicken is done.
- In small bowl, whisk together yogurt and flour. Gradually whisk in cream. Stir into chicken mixture. Cook and stir over medium heat until boiling. Boil 1 minute. Ladle into bowls.

Tomato Soup with Homemade Olive Oil Croutons
Prep time: 10 minutes
- 4 tomatoes
- 3 grilled red bell peppers in oil
- 1 shallot
- 1/2 cup Bertolli Extra Virgin Olive Oil, plus additional for brushing on bread
- 3 tablespoons sherry vinegar
- 1 clove garlic
- 10 basil leaves
- salt, to taste
- pepper, to taste
- 4 slices crusty bread
- Cut small cross in bottom of tomatoes and submerge in boiling water 30 seconds. Let tomatoes cool in ice water 30 seconds then remove skins.
- In blender, blend tomatoes, red bell peppers, shallot, extra-virgin olive oil, vinegar, garlic, basil, salt and pepper, to taste, until mixture is smooth. Add mixture to large pot and heat, stirring frequently.
- Cut bread slices, brush with olive oil and grill 2 minutes per side over medium-high heat until visible grill marks have formed.
Healthy Beet Hummus
Prep time: 15 minutes
- 3 beets
- salt, to taste

- 2 cups canned chickpeas
- 2 tablespoons sesame seed paste or tahini
- Heat oven to 375° F.
- Peel beets and boil until soft; season with salt and olive oil.
