Breakfast Sandwiches
- 1 can (16 ounces) buttermilk biscuits
- 1 package (12 ounces) bacon
- 8 eggs
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon butter
- 1 green bell pepper, chopped
- 1/2 onion, chopped
- 5 slices cheese
- Heat oven to 350° F.
- Place biscuits on baking sheet. Bake 12-16 minutes, or until golden brown.
- Cut bacon slices in half. In skillet, cook bacon until crispy. Drain and set aside.
- In large bowl, whisk eggs, salt and pepper.
- In skillet, melt butter. Pour egg mixture into skillet. Add bell pepper and onion. Cook until eggs are thoroughly cooked but still moist, stirring occasionally. Add cheese over egg mixture and mix thoroughly until cheese is melted.
- Split warm biscuits. Spoon egg mixture over bottom of biscuit. Top mixture with two pieces bacon and add top half of biscuit.

Spanish Potato and Onion Omelet

- 1 cup olive oil, divided
- 4 Yukon Gold potatoes, peeled and cut into 1/8-inch slices (about 4 cups)
- salt, to taste
- pepper, to taste
- 2 medium onions, thinly sliced (2-2 1/2 cups)
- 6 eggs
- 4 ounces cured, cooked ham or prosciutto, diced
- In large saute pan, heat 3/4 cup olive oil. Cook half potatoes until tender and golden, turning often. Drain. Season with salt and pepper, to taste. Repeat with remaining potatoes.
- Add 4 tablespoons olive oil to pan. Cook onions until soft, about 15 minutes. Add potatoes to onions.
- In large bowl, beat eggs. Add eggs to potato and onion mixture. Stir in diced ham or prosciutto. Reduce heat to low and cook 8-10 minutes until golden brown on bottom. Invert platter on pan and flip omelet onto plate. Add remaining olive oil to pan; slide omelet back into pan.
- Cook until golden brown on bottom.
- Slide omelet onto serving plate. Let cool. Cut into wedges.

- 1/2 cup, plus 6 tablespoons, all-purpose flour
- 6 tablespoons unsweetened cocoa powder
- 1 cup, plus 2/3 cup, granulated sugar, divided
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup 2% milk
- 1/4 cup canola oil
- 2 eggs
- nonstick cooking spray
- 1 1/2 quarts ice cream, any flavor
- 3 large egg whites
- 1/8 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- Heat oven to 350° F.
- In large bowl, whisk flour, cocoa powder, 1 cup sugar, baking powder, baking soda and salt. Make well in center of dry ingredients. Add milk, canola oil and eggs. Whisk until blended. Beat batter until smooth, about 3 minutes.
- Pour batter into 9-inch, round, greased cakepan. Bake 25-28 minutes. Cool completely on wire rack. Wrap in plastic wrap and freeze 1 hour.
- In glass bowl, spray with nonstick cooking spray. Layer inside of bowl with plastic wrap, draping some over edges of bowl.
- Scoop ice cream into bowl until full. Level ice cream. Place overhang of plastic wrap over ice cream. Freeze 2 hours.
- Unwrap cake and place on plate. Unwrap ice cream and place on top of cake. Wrap both together and freeze 2 hours.
- In medium bowl, beat egg whites and cream of tartar until frothy. Add remaining sugar and vanilla extract; beat mixture to form stiff peaks.
- Heat oven to 500° F.
- Unwrap stacked cake. Place on oven-safe plate. Spread meringue, creating swirl motions around cake. Bake 2-4 minutes until meringue peaks are brown and remaining meringue takes on dry appearance.
- Serve immediately or cover with plastic wrap and place in freezer.

Ham Spinach Fiesta Crêpes
Makes: 8 servings (2 crêpes each)
Prep: 10 minutes
Chill: 30 minutes
Cook: 25 minutes
- 1 1/2 cups nonfat milk
- 1 1/3 cups all-purpose flour
- 3 eggs
- 1 package (15 ounces) frozen chopped spinach, thawed and well drained
- 1 jar (16 ounces) Pace salsa con queso
- 8 slices (1 ounce each) smoked fully-cooked ham
- 1 cup Pace Picante sauce
- 4 ounces shredded Cheddar cheese (about 1 cup)
- Place milk, flour and eggs into a blender. Cover and blend until mixture is smooth. Refrigerate for 30 minutes.
- Stir spinach and salsa con queso in a medium bowl.
- Pour about 3 tablespoons of batter into a hot, greased nonstick skillet or crêpe pan, swirling skillet to spread batter over bottom of skillet. Cook for 1 minute or until crêpe is golden on both sides. Remove crêpe from skillet. Repeat, making 16 crêpes in all and stacking cooked crêpes.
- Place 1/2 slice ham onto each crêpe. Top each with 3 tablespoons of spinach mixture. Roll up crêpes around filling. Place filled crêpes seam-side down into 2 (2-quart) shallow microwave-safe baking dishes. Top with picante sauce and cheese.
- Microwave, one dish at a time, on high for 2 minutes or until cheese is melted.
Tip: Chill time is important for this recipe, because it allows bubbles in batter to subside, which makes crêpes less likely to tear during cooking.
Tomato-Feta Frittata
Makes: 6 servings (1 wedge each)
Prep: 20 minutes
Bake: 40 minutes
- 7 eggs
- 1/2 cup water
- 1 cup cooked regular long-grain white rice
- 3 ounces crumbled feta cheese (about 3/4 cup)
- 2 ounces shredded Cheddar cheese (about 1/2 cup)
- 1/2 cup Pace Picante sauce
- 2 tablespoons chopped fresh cilantro leaves
- 1/2 teaspoon dried oregano leaves, crushed
- 3 Italian plum tomatoes, sliced
- Heat oven to 400°F. Heat greased, oven-safe 10-inch skillet in oven for 5 minutes.
- Beat eggs and water in large bowl with a fork or whisk. Stir in rice, feta cheese, Cheddar cheese, picante sauce, cilantro and oregano. Pour egg mixture into skillet. Arrange tomato slices on egg mixture.
- Bake for 40 minutes or until eggs are set. Cut frittata into 6 wedges.
Tip: You can use any type of cooked rice for this recipe. It's a great way to use up leftover rice from your take-out Chinese dinner.
Breakfast Pizza
Makes: 6 servings (1 slice each)
Prep: 20 minutes
Cook: 10 minutes
Bake: 5 minutes
- 1 tablespoon butter
- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- 1/4 cup chopped Canadian bacon
- 1 (12-inch) prepared pizza crust
- 8 eggs, beaten
- 1/4 teaspoon ground black pepper
- 3/4 cup Pace Picante sauce
- 2 ounces shredded Cheddar cheese (about 1/2 cup)
- 2 tablespoons chopped fresh cilantro leaves
- Heat oven to 400°F.
- Heat butter in a 10-inch skillet over medium heat. Add onion, pepper and bacon, and cook until vegetables are tender.
- Place pizza crust onto a pizza pan or baking sheet. Place in oven to warm.
- Stir eggs and black pepper into skillet. Cook and stir until eggs are set. Spoon egg mixture onto pizza crust. Top with picante sauce. Sprinkle with cheese.
- Bake for 5 minutes or until cheese is melted. Sprinkle with cilantro. Cut pizza into 6 slices.
Fiesta Breakfast Casserole
Makes: 6 servings (about 1 1/2 cups each)
Prep: 15 minutes
Chill: 2 hours
Bake: 45 minutes
- 1/2 pound bulk pork sausage
- 12 slices Pepperidge Farm White Sandwich Bread, cut into cubes
- 1 1/2 cups shredded Cheddar cheese
- 1 cup Pace Picante sauce
- 4 eggs
- 3/4 cup milk
- Cook sausage in 10-inch skillet over medium-high heat until well browned, stirring often to separate meat. Pour off fat.
- Spoon sausage into 2-quart shallow baking dish. Top with bread cubes and cheese. Beat picante sauce, eggs and milk in medium bowl with fork or whisk. Pour picante sauce mixture over bread mixture. Stir and press bread mixture into picante sauce mixture to coat. Cover and refrigerate 2 hours or overnight.
- Heat oven to 350°F. Uncover baking dish.
- Bake 45 minutes, or until knife inserted in center comes out clean.
Tip: Prepare dish the night before and pop into oven in the morning. It's great when you have overnight guests. Add a simple side of sliced melon and breakfast is ready!

- 4 slices Farmland Hickory Smoked Thick Cut Bacon
- 1 teaspoon olive oil
- 4 cups baby spinach (optional)
- 1 tablespoon butter
- 4 eggs
- 4 glazed doughnuts
- 4 slices real cheddar cheese
- Fry bacon for 10 minutes, until outside is crispy and brown.
- In large, deep skillet over medium-high heat, heat olive oil and saute spinach until wilted. Set aside.
- In another large skillet, melt butter over medium-high heat until melted. Carefully crack eggs into skillet and fry until yolk is done.
- Assemble sandwiches as follows: doughnut bottom, spinach, egg, slice of cheese, bacon, doughnut top.
Bacon and Egg Breakfast Pizza
Makes 1 pizza
- 1 package (16 ounces) Farmland Hickory Smoked Bacon
- 1 can (10 ounces) refrigerated pizza crust dough
- 2 cups frozen hash brown potatoes with onions and peppers, partially thawed
- 1/4 cup chopped green bell pepper
- 4 eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup (4 ounces) shredded cheddar cheese
- Heat oven to 425° F.
- Cook bacon according to package directions; drain.
- Press crust into lightly greased 14-inch pizza pan, forming 1/2-inch rim. Bake 5 minutes.
- Arrange potatoes, bacon and green pepper over crust. Whisk together eggs, milk, salt and pepper; pour over pizza.

Angel Sherbet Cake
Prep time: 30 minutes
Freeze time: at least 1 hour or until hard
Yields: 10 servings
- 1 pint raspberry sherbet
- 1 pint lime sherbet
- 1 Angel Food Cake loaf (store bought, approximately 7 x 3 inches)
- Topping:
- 2 cups heavy whipping cream or 12-ounce container frozen whipped topping, thawed
- 3 teaspoons sugar
- 1 teaspoon lemon juice
- Line two bread pans, approximately the same size as the angel food cake, with plastic wrap. Soften sherbet. Scoop lime sherbet into one pan and raspberry sherbet in the other. Spread sherbet with a metal spatula dipped in hot water. Sherbet should be approximately 1/2 inch deep. Refreeze sherbet in pans for at least 1 hour or until hard.
- Trim edges of angel food cake with a serrated knife to even them; cut cake into three lengthwise slices.
- Remove frozen lime and raspberry sherbet from freezer. Alternate layers, cake, sherbet, cake, sherbet and cake. Cut off any oversized sherbet or cake to ensure that cake and sherbet are even on all sides of the cake. Refreeze until solid; can be frozen up to 3 days if wrapped well in plastic wrap.
- Before serving, prepare cake topping by whipping the cream until very thick. Add sugar and lemon juice and whip mixture until soft peaks form. Spread whipped cream on cake. Refreeze cake until ready to serve.
- Remove cake from freezer and let soften 5 to 10 minutes. Slice with an electric knife. If desired, place cake slices on pools of strawberry or raspberry sauce and top with a lemon twist and mint leaves.
Wheat Berry Tuna Salad
Prep time: 15 minutes
Cook time: 60 to 90 minutes
Yields: 4 to 6 servings
Serving size: 1 1/2 cups
- 1 cup wheat berries
- 4 cups water
- 1/2 teaspoon salt
- 1 cup cherry tomatoes, diced
- 1/2 cup celery, diced
- 1/2 cup cucumber, diced
- 2 cans Albacore tuna packed in water, drained
- 2 eggs, hard boiled, chopped (optional)
- 2 tablespoons flat leaf parsley, coarsely chopped
- 1/2 cup Italian dressing
- 1/8 teaspoon salt
- 1/8 teaspoon fresh ground pepper
- Place wheat berries, water and salt in a sauce pan and simmer for 60 to 90 minutes until tender when you bite down on them.
- Drain well and allow to cool.
- In a large bowl, toss together with the remaining ingredients. Serve chilled.
Burrito Bites
Prep time: 10 minutes
Chill time: 30 minutes
Yields: 4 servings
Serving size: 1 tortilla roll-up
- 4 (9-inch) whole wheat tortillas
- 6 tablespoons smooth peanut butter or reduced-fat cream cheese
- 1 cup fresh spinach or torn romaine leaves
- 1 large stalk celery, cut into thin 3- to 4-inch sticks (12 sticks total)
- 1/2 cup carrots, shredded or matchstick
- 1/2 cup fat-free plain yogurt or low-fat ranch dressing (optional)
- Spread 1 1/2 tablespoons peanut butter or reduced-fat cream cheese on each tortilla, leaving 1 inch of clean space at the top edge of each tortilla. Layer spinach leaves on top of peanut butter. Place three celery sticks across the middle on top of the spinach; sprinkle with shredded carrot.
- Keeping the clean edge at the top, roll tortillas up tightly from the bottom, folding in the sides after the first roll. Wrap each burrito tightly in plastic wrap and refrigerate for at least 30 minutes. Remove plastic wrap. Cut each roll into 1/2-inch slices, inserting a toothpick into the burrito before each cut is made.
- Serve with yogurt or ranch dressing.

- 1 cup fat-free milk
- 1/2 cup applesauce
- 1 tablespoon fat-free vanilla yogurt
- 2 eggs
- 2 teaspoons grated orange peel
- 1 cup all-purpose flour
- 1 cup low-fat granola
- 1/2 cup whole wheat flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- In large bowl, combine milk, applesauce, yogurt, eggs and orange peel. In medium bowl, combine remaining ingredients. Stir the dry ingredients into the wet ingredients and mix just until dry ingredients are moistened. Do not over mix.
- Heat nonstick griddle to 350°F. For each pancake, pour 1/4 cup of pancake batter onto hot griddle. Cook each side until puffed and dry around edges. Turn and cook 1 to 2 minutes longer or just until golden brown.

- 2 10 3/4-ounce frozen pound cakes, crusts removed, sliced into 1/4-inch-thick slices
- 3 cups vanilla ice cream, slightly softened
- 4 cups raspberry sorbet, slightly softened
- 1 pint fresh raspberries, rinsed and picked over
- 3 tablespoons Chambord, or other raspberry-flavored liqueur
- Prepare the pan: Trace and cut out a 9-inch circle from parchment paper and fit it into the bottom of a 9-inch springform pan.
Cut out a 3- by 27-inch strip of parchment and fit around inside of pan. Tape to secure parchment paper and set aside. - Assemble the cake: Cover bottom of pan with a single layer of pound cake slices and spread ice cream evenly over cake. Freeze until ice cream hardens - about 25 minutes.
- Spread 2 cups sorbet over ice cream, followed by another layer of pound cake slices. Return cake to freezer for 10 minutes.
- Combine raspberries and Chambord together in small bowl. Remove cake pan from freezer and place berries evenly over cake.
- Top with a final layer of pound cake and remaining sorbet. Wrap tightly with plastic wrap and freeze until firm - at least 4 hours.
Upside-Down Honey Cheesecakes

- 1 cup sugar
- 1/3 cup honey
- 1/4 cup (1/2 stick) unsalted butter
- 1/3 cup water

- 1 cup sour cream
- 2 teaspoons fresh lemon juice
- 2 teaspoons vanilla extract
- 4 large eggs, room temperature
- Assorted fresh berries (for garnish)
- Preheat oven to 300°F. Butter twelve 3/4-cup ramekins or custard cups.
- Place 1 cup sugar, honey, and butter in heavy medium saucepan. Stir over medium heat until butter melts and mixture is blended.
Increase heat to medium-high and bring to boil. Whisk until mixture darkens slightly and candy thermometer registers 300°F, about 5 minutes. - Remove from heat; add 1/3 cup water (mixture will bubble vigorously); whisk to blend. Divide topping among ramekins (about 2 tablespoonfuls for each). Divide ramekins between 2 roasting pans and chill while preparing filling.
- Using on/off turns, blend cream cheese and brown sugar in processor, scraping bowl occasionally. Add sour cream, lemon juice, and vanilla; process until smooth. Add eggs 1 at a time, processing just to blend between additions. Divide filling among ramekins.
Add enough hot water to pans to come halfway up sides of ramekins. - Bake cheesecakes until set, about 35 minutes. Remove from roasting pans and chill until firm, about 1 hour. DO AHEAD: Can be made 2 days ahead. Cover and keep chilled.
- Run thin knife around sides of ramekins. Invert onto plates, scooping any remaining topping from ramekins over cheesecakes. Garnish with berries.

- 1 1/3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 2/3 cup sour cream
Topping
- 1 quart strawberries, hulled, thickly sliced
- 1/3 cup granulated sugar
- 1 tablespoon lemon juice
- 1 1/2 cups cold heavy cream
- 3 tablespoons confectioners' sugar
- 1 tablespoon vanilla extract
- Heat oven to 350° F. Line 12 standard muffin cups with paper liners.
- In medium bowl, whisk flour, baking powder, baking soda, and salt. In large bowl with mixer on medium, beat butter and sugar until light and creamy. Beat in eggs, 1 at a time, then vanilla. With mixer on low, alternately beat in flour mixture and sour cream until combined. Continue to beat on medium until batter is thick and smooth.
- Spoon batter into a zip-top bag. Snip a 1/2-inch corner from bag and fill liners slightly less than two-thirds full. Bake 24 to 26 minutes, or until lightly golden and a pick inserted in the center of a cupcake comes out clean. Cool in pan on a wire rack 5 minutes; remove cupcakes from pan and cool completely.
- Toss strawberries several times in a bowl with sugar and lemon juice until very syrupy. In large bowl, beat cream, confectioners' sugar, and vanilla until soft peaks form.
- Use a skewer to poke several holes into top of each cupcake. Spoon some syrup from bowl over top, allowing it to absorb into cupcakes. Top with sliced berries and a dollop of cream. Arrange a few sliced berries in cream and drizzle with remaining strawberry syrup.

Amazing Muffin Cups

- 3 cups refrigerated shredded hash browns
- 3 tablespoons melted butter
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 12 links Johnsonville Original
- Breakfast Sausage
- 6 eggs
- 2 cups (8 ounces) shredded 4-cheese
- Mexican blend cheese
- 1/4 cup chopped red bell pepper
- Chopped fresh chives or green onions, for garnish
- Place 12 paper liners in a muffin pan; spray liners with cooking spray.
- In bowl, combine hash browns, butter, salt and pepper. Press hash brown mixture into the bottom and up the sides of the muffin cups.
Bake at 400°F for 12 minutes or until lightly browned. - Meanwhile, cook sausage according to package directions; cut into 1/2-inch pieces. Divide sausage between muffin cups.
- Combine eggs, cheese and bell pepper. Pour over sausage. Sprinkle with chives. Bake for 13 to 15 minutes or until set.
Sunrise Breakfast Casserole

Yield: 12 to 15 servings
- 2 packages (12 ounces each) Johnsonville Breakfast Sausage Links
- 9 eggs
- 3 cups milk
- 1 1/2 teaspoons ground mustard
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 packages (20 ounces each) refrigerated shredded hash browns
- 2 cups (8 ounces) shredded cheddar cheese
- 1/2 cup diced sweet red pepper
- 1/3 cup thinly sliced green onions
- 2 cups salsa or picante sauce, optional
- Place sausage on a 15 x 10 x 1-inch baking pan. Bake at 375°F for 15 to 20 minutes or until sausage is no longer pink, turning once; drain and slice into 1/4-inch coins.
- In large bowl, combine eggs, milk, mustard, salt and pepper. Add hash browns, sausage, cheese, sweet red pepper and green onions; mix well. Pour into a greased 13 x 9 x 2-inch baking dish. Cover and refrigerate overnight.
- Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350°F for 65 to 70 minutes or until set and golden brown.
Let stand 10 minutes before serving. - Serve with salsa or picante sauce if desired.
Blue Ribbon Skillet
Prep Time: 15 minutes

- 7 links Johnsonville Original Breakfast Sausage
- 3 tablespoons canola oil
- 4 cups refrigerated shredded hash browns
- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- 1/4 cup chopped orange bell pepper
- 1 jalapeño pepper, seeded and chopped
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup (4 ounces) shredded 4-cheese Mexican blend cheese
- In large skillet, cook sausage per package directions. Cut links into 1-inch pieces and set aside.
- In the same skillet, heat oil over medium-high heat. Add hash browns, onion, green and orange peppers, jalapeños, salt and pepper. Cook for about 10 minutes until hash browns are lightly browned and tender, turning occasionally.
- Return sausage to skillet and sprinkle with cheese. Cover skillet for 2 minutes until cheese is melted.
Option: This recipe can be doubled to make a "2-Skillet Breakfast." Cook sausage in one skillet and hash browns, onion and peppers in another skillet.
Easy Sausage Roll-Ups
Prep Time: 15 minutes
Cook Time: 15 minutes
Yield: 16 roll-ups
- 1 package (12 ounces) Johnsonville Breakfast Sausage Links
- 2 containers refrigerated crescent rolls (16 rolls total)
- 1/2 teaspoon cinnamon
- 2 tablespoons sugar
- Prepare sausage according to package directions. Drain and set aside.
- Unroll crescent roll dough according to directions on package. Place one cooked sausage onto one end of a dough triangle. Roll dough around sausage according to directions on dough package and place on jelly-roll pan with the seam side down. Repeat with remaining sausage and dough. (You will have 2 extra rolls. Bake and enjoy with jam.)
- Mix cinnamon and sugar together and sprinkle evenly over roll-ups. Bake according to directions on dough package. Serve hot.
Suggestion: Serve with warm maple syrup, honey or your favorite preserves for dipping.
Sausage Mushroom Quiche
Yield: 8 servings
- 1 package (12 ounces) Johnsonville Original Breakfast Sausage Patties
- 1 1/2 cups sliced fresh mushrooms
- 1/4 cup chopped onion
- 1/4 cup chopped sweet red pepper
- 1/4 cup chopped green pepper
- 1 package (3 ounces) cream cheese, softened
- 4 eggs
- 1/3 cup half-and-half cream
- 1 cup (4 ounces) shredded Monterey Jack cheese
- 1 cup (4 ounces) shredded cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Dash ground nutmeg
- 1 pastry shell (9 inches), baked
- In skillet, cook sausage over medium-high heat for 3 minutes, chopping into small pieces. Add mushrooms, onion and peppers. Cook and stir 5 minutes longer or until sausage is no longer pink and the vegetables are tender; drain well and set aside.
- In mixing bowl, beat cream cheese until smooth. Gradually beat in eggs and cream.
- Stir in cheeses, salt, pepper, nutmeg and sausage mixture. Pour into baked pastry shell. Bake, uncovered, at 350°F for 40 to 45 minutes or until a knife inserted near center comes out clean. If necessary, cover edges of crust with foil to prevent over-browning. Let stand 10 minutes before serving.
