  • 1 teaspoon poppy seeds
  • 2 cloves garlic, minced, divided
  • 1/4 cup parsley, chopped
  • 2 teaspoons thyme leaves, chopped
  • 1 teaspoon rosemary, chopped
  • 1/4 cup dried cranberries, chopped
  • 2 tablespoons pecans, chopped

  1. Cut each cream cheese block into three squares. Roll each square into ball.
  2. In small bowl, combine caraway seeds, poppy seeds and half the garlic.
  3. In second small bowl, combine parsley, thyme, rosemary and remaining garlic.
  4. In third small bowl, combine cranberries and pecans.
  5. Roll two cheese balls in seed mixture, two in herb mixture and two in cranberry mixture.
  6. Cut each ball in half and serve with crackers, fruit or vegetables, if desired.

Lemon Curd:

  • 1 cup Domino Golden Sugar
  • 2 tablespoons cornstarch
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 6 tablespoons water
  • 1/4 teaspoon salt
  • 6 egg yolks
  • 1/2 cup (1 stick) unsalted butter, at room temperature, cut into 1/2-inch cubes

Whipped Cream:

  • 2 cups heavy whipping cream, cold
  • 2 tablespoons Domino Golden Sugar
  • 2 teaspoons pure vanilla extract

Trifle:

  • 1 cup blueberry jam
  • 12 ounces fresh blueberries, plus additional for garnish, divided
  • 1 pound cake, cubed
  • lemon slices, for garnish
  • mint, for garnish
  1. To make lemon curd: In medium saucepan, stir sugar and cornstarch. Stir in lemon juice, lemon zest, water and salt. Cook over medium heat, stirring constantly, until thickened. Remove from heat and gradually stir in three egg yolks; mix well until combined. Stir in remaining egg yolks. Return to heat and cook 2 minutes, stirring constantly. Remove from heat.
  2. Stir in butter; mix until incorporated. Cover with plastic wrap, touching surface of lemon curd to prevent curd forming skin. Refrigerate until completely cool.
  3. To make whipped cream: In large bowl, beat cream, sugar and vanilla until soft peaks form. Do not overbeat.
  4. To make trifle: Mix blueberry jam with 12 ounces fresh blueberries. Place one layer cubed pound cake in bottom of trifle dish. Top with layer of blueberries. Add dollops of lemon curd and whipped cream. Repeat layering ending with whipped cream.
  5. Decorate trifle with lemon slices, fresh blueberries and mint.

Easy Brunch Quiche

Serves: 12

  • 1 package (10 ounces) frozen broccoli with cheese
  • 12 slices bacon, chopped
  • 1/2 cup green onions, sliced
  • 1 cup mushrooms, sliced
  • 4 eggs
  • 1 cup milk
  • 1 1/2 cups shredded cheese, divided
  • 2 frozen deep dish pie shells (9 inches each)
  1. Heat oven to 350 F.
  2. In medium bowl, add broccoli and cheese contents from package. Microwave 5 minutes, or until cheese is saucy. Set aside.
  3. In skillet, cook chopped bacon 4 minutes. Add green onions; cook 2 minutes. Add mushrooms; cook 4 minutes, or until bacon is completely cooked and mushrooms are tender. Drain onto paper towel over plate. Set aside.
  4. In medium bowl, whisk eggs and milk until combined. Add broccoli and cheese mixture. Add 1 cup cheese. Stir to combine. Set aside.
  5. In pie shells, divide drained bacon mixture evenly. Divide broccoli mixture evenly and pour over bacon mixture. Sprinkle remaining cheese over both pies.
  6. Bake 40 minutes.
  7. Cool at least 12 minutes before serving.

Note: To keep edges of crust from burning, place aluminum foil over pies for first 20 minutes of cook time. Remove after 20 minutes and allow to cook uncovered until completed.

  • 2 teaspoons freshly squeezed lemon juice
  • 2 bananas, divided
  • 1 egg, beaten
  • 1/4 cup pure maple syrup, divided
  • 4 teaspoons butter, melted
  • 2 tablespoons vegetable oil, divided
  • 1/8 teaspoon ground cinnamon
  1. Heat rice and quinoa according to package directions.
  2. In large bowl, whisk flour, baking powder, baking soda and salt.
  3. In medium bowl, whisk milk and lemon juice. Let stand 5 minutes.
  4. Mash 1/2 banana. Transfer to milk mixture. Add egg and 1 teaspoon maple syrup; stir to combine. Stir in melted butter.
  5. Pour milk mixture over flour mixture. Whisk just until combined; do not overmix. Fold in rice and quinoa. Let batter rest 10-15 minutes.
  6. Preheat large nonstick skillet over medium heat; brush with 1 teaspoon oil. Once skillet is hot, reduce heat to medium-low.   • 1/3       cup diced ham
  • 1          clove garlic, minced

  • 1          cup heavy cream
  • 2          tablespoons finely chopped fresh chives
  • 2          tablespoons Dijon mustard
  • 1          cup shredded sharp cheddar cheese
  • 1/2       cup grated Parmesan cheese, divided
  • 1/3       cup breadcrumbs
  • 2          tablespoons butter, melted
  1. Preheat oven to 450 F. Prepare rice according to package directions.
  2. In large bowl, toss Brussels sprouts, ham, garlic, olive oil, 1/4 teaspoon salt and 1/4 teaspoon pepper. Place on parchment paper-lined baking tray and roast 12-15 minutes, or until caramelized. Decrease oven temperature to 425 F.
  3. In large bowl, toss rice, Brussels sprouts mixture, cream, chives, Dijon mustard, remaining salt and remaining pepper. Stir in cheddar and 1/3 cup Parmesan cheese. Transfer mixture to greased, 2-quart baking dish.
  4. In small bowl, stir breadcrumbs, remaining Parmesan and melted butter. Sprinkle over rice mixture.
  5. Bake 12-15 minutes, or until golden brown and bubbling.

Ham Spinach Fiesta Crêpes

Makes: 8 servings (2 crêpes each)
Prep: 10 minutes
Chill: 30 minutes
Cook: 25 minutes

  • 1 1/2 cups nonfat milk
  • 1 1/3 cups all-purpose flour
  • 3 eggs
  • 1 package (15 ounces) frozen chopped spinach, thawed and well drained
  • 1 jar (16 ounces) Pace salsa con queso
  • 8 slices (1 ounce each) smoked fully-cooked ham
  • 1 cup Pace Picante sauce
  • 4 ounces shredded Cheddar cheese (about 1 cup)
  1. Place milk, flour and eggs into a blender. Cover and blend until mixture is smooth. Refrigerate for 30 minutes.
  2. Stir spinach and salsa con queso in a medium bowl.
  3. Pour about 3 tablespoons of batter into a hot, greased nonstick skillet or crêpe pan, swirling skillet to spread batter over bottom of skillet. Cook for 1 minute or until crêpe is golden on both sides. Remove crêpe from skillet. Repeat, making 16 crêpes in all and stacking cooked crêpes.
  4. Place 1/2 slice ham onto each crêpe. Top each with 3 tablespoons of spinach mixture. Roll up crêpes around filling. Place filled crêpes seam-side down into 2 (2-quart) shallow microwave-safe baking dishes. Top with picante sauce and cheese.
  5. Microwave, one dish at a time, on high for 2 minutes or until cheese is melted.

Tip: Chill time is important for this recipe, because it allows bubbles in batter to subside, which makes crêpes less likely to tear during cooking.

Tomato-Feta Frittata

Makes: 6 servings (1 wedge each)
Prep: 20 minutes
Bake: 40 minutes

  • 7 eggs
  • 1/2 cup water
  • 1 cup cooked regular long-grain white rice
  • 3 ounces crumbled feta cheese (about 3/4 cup)
  • 2 ounces shredded Cheddar cheese (about 1/2 cup)
  • 1/2 cup Pace Picante sauce
  • 2 tablespoons chopped fresh cilantro leaves
  • 1/2 teaspoon dried oregano leaves, crushed
  • 3 Italian plum tomatoes, sliced

Tip: You can use any type of cooked rice for this recipe. It's a great way to use up leftover rice from your take-out Chinese dinner.

Makes: 6 servings (1 slice each)
Prep: 20 minutes
Cook: 10 minutes
Bake: 5 minutes

  • 1 tablespoon butter
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped Canadian bacon
  • 1 (12-inch) prepared pizza crust
  • 8 eggs, beaten
  • 1/4 teaspoon ground black pepper
  • 3/4 cup Pace Picante sauce
  • 2 ounces shredded Cheddar cheese (about 1/2 cup)
  • 2 tablespoons chopped fresh cilantro leaves
  1. Heat oven to 400°F.
  2. Heat butter in a 10-inch skillet over medium heat. Add onion, pepper and bacon, and cook until vegetables are tender.
  3. Place pizza crust onto a pizza pan or baking sheet. Place in oven to warm.
  4. Stir eggs and black pepper into skillet. Cook and stir until eggs are set. Spoon egg mixture onto pizza crust. Top with picante sauce. Sprinkle with cheese.
  5. Bake for 5 minutes or until cheese is melted. Sprinkle with cilantro. Cut pizza into 6 slices.

Fiesta Breakfast Casserole

Makes: 6 servings (about 1 1/2 cups each)
Prep: 15 minutes
Chill: 2 hours
Bake: 45 minutes

  • 1/2 pound bulk pork sausage
  • 12 slices Pepperidge Farm White Sandwich Bread, cut into cubes
  • 1 1/2 cups shredded Cheddar cheese
  • 1 cup Pace Picante sauce
  • 4 eggs
  • 3/4 cup milk
  1. Cook sausage in 10-inch skillet over medium-high heat until well browned, stirring often to separate meat. Pour off fat.
  2. Spoon sausage into 2-quart shallow baking dish. Top with bread cubes and cheese. Beat picante sauce, eggs and milk in medium bowl with fork or whisk. Pour picante sauce mixture over bread mixture. Stir and press bread mixture into picante sauce mixture to coat. Cover and refrigerate 2 hours or overnight.
  3. Heat oven to 350°F. Uncover baking dish.
  4. Bake 45 minutes, or until knife inserted in center comes out clean.

Tip: Prepare dish the night before and pop into oven in the morning. It's great when you have overnight guests. Add a simple side of sliced melon and breakfast is ready!

Raspberry-Strawberry Yogurt Smoothie

Servings: 4

  • 1 cup low-fat vanilla yogurt
  • 1 cup unsweetened frozen raspberries
  • 1 cup unsweetened frozen strawberries
  • 3/4 cup low-fat milk
  • 1 cup ice (about 12 cubes)
  1. Blend all ingredients in blender until smooth. Serve immediately.

Pulled Pork Soft Tacos

Prep time: 8 hours, 35 minutes
Servings: 6

For pork:

  • 2 pounds boneless pork loin roast
  • 2 tablespoons brown sugar
  • 1 tablespoon ground ginger
  • 2 garlic cloves, smashed
  • 1 small white onion, coarsely chopped
  • 1/2 cup orange juice
  • 2 limes, cut in half

For tacos:

  • 1/2 cup nonfat sour cream
  • 1 teaspoon cumin
  • 2 scallions, trimmed and chopped
  • 12 soft corn tortillas (6 inches each)
  • 1 1/2 cups shredded reduced-fat Colby Jack
  • 1  bag (8 ounces) shredded red cabbage
  • 3/4 cup fresh salsa
  1. Trim excess fat off roast. In small bowl, combine brown sugar and ginger; rub generously over roast. Place in slow cooker with garlic, onion and orange juice; cook on low heat 8 hours (or high 4-6 hours.)
  2. Transfer pork to large bowl and shred with forks. Strain pork liquid from slow cooker and pour over pulled pork to moisten. Squeeze lime juice on top and mix well. Divide into 12 servings.
  3. In small bowl, mix together sour cream, cumin and scallions.
  4. Cover each corn tortilla with 2 tablespoons cheese; microwave 20 seconds. Top with pulled pork, 2 teaspoons sour cream mix, 1 1/2 tablespoons shredded cabbage and 1 tablespoon salsa. Fold and serve immediately.

Buffalo Chicken Dip

  • 2 cups shredded cooked chicken
  • 1 package cream cheese (8 ounces), softened
  • 1/2 cup Frank's RedHot Original Cayenne Pepper Sauce or Buffalo Wings Sauce
  • 1/2 cup ranch dressing
  • 1/2 cup crumbled bleu cheese or other shredded cheese
  • green onions, chopped (optional)
  1. Heat oven to 350 F.
  2. In shallow, 1-quart baking dish, combine all ingredients.
  3. Bake 20 minutes, or until mixture is heated through. Stir.
  4. Garnish with chopped green onions, if desired. Serve with tortilla chips, crackers and/or vegetables.

Sweet Chili Meatballs

  • 1 pound lean ground turkey or ground beef
  • 1/3 cup Japanese panko crumbs or bread crumbs
  • 1/4 cup cilantro, finely chopped
  • 3 green onions, chopped
  • 1 tablespoon fresh ginger, finely minced
  • 1 large egg, beaten
  • 1/2 teaspoon salt
  • 12 ounces Frank's RedHot Sweet Chili Sauce, divided
  1. Heat oven to 350 F.
  2. Mix ground meat, panko crumbs, cilantro, green onion, ginger, egg, salt and 1/4 cup sweet chili sauce. Form into one-inch meatballs.
  3. Place meatballs on lightly greased baking sheets.
  4. Bake 20 minutes, turning once halfway through. Put meatballs in slow cooker on warm.
  5. With slow cooker on low to keep meatballs warm, pour remaining sweet chili sauce over meatballs. Gently stir to coat.

Buffalo Chicken Wings

  • 2 1/2    pounds chicken wing pieces 
  • 1/2       cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1/3       cup butter, melted 
  • blue cheese dressing
  • celery sticks
  1. Heat oven to 450° F.
  2. In foil-lined pan, bake wings 30 minutes until crispy, turning once.
  3. In bowl, combine sauce and butter.
  4. Toss wings in sauce to coat completely.
  5. Serve with blue cheese dressing and celery sticks.

Chili

  • 2          pounds ground beef
  • 1          large onion, chopped
  • 1          can (28 ounces) crushed tomatoes in puree
  • 1          can (15-19 ounces) kidney beans, undrained
  • 1/4       cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 2          packages (1 1/4 ounces) chili seasoning mix
  • shredded cheddar cheese (optional)
  • scallions (optional)
  • sour cream (optional)
  1. In large, nonstick pot, cook beef until browned.
  2. Add onion; cook 3 minutes. Drain.
  3. Stir in tomatoes, beans, sauce and seasoning mix. Heat to boiling. Stir often.
  4. Simmer, partially covered, 15 minutes, or until flavors are blended. Stir often.
  5. Garnish, as desired, with shredded cheddar cheese, scallions and sour cream.

Buffalo Chicken Dip

  • 2          pounds Kirkwood Never Any! Chicken Breasts
  • 1          cup Burman's Hot Sauce 
  • 1/2       cup Tuscan Garden Buttermilk Ranch Dressing
  • 8          ounces Happy Farms Cream Cheese, at room temperature
  • 1          teaspoon sea salt from Stonemill Sea Salt Grinder 
  • 2          teaspoons pepper from Stonemill Peppercorn Grinder 
  • 1          cup Happy Farms Colby Jack Shredded Cheese
  1. In slow cooker, combine chicken, hot sauce, ranch, cream cheese, salt and pepper. Turn slow cooker to high and cook 2 hours and 30 minutes.
  2. Shred chicken. Add cheese to slow cooker and stir. Turn slow cooker to warm and enjoy with tortilla chips, baguettes or crunchy veggies.

Tip: For easy shredding, place cooked chicken breasts in stand mixer with paddle attachment and turn on low until shredded.
